Coopers have used everything from torches to infrared lamps to toast the inside of barrels. Now, a technique pioneered by the wine industry is making its way into whisky: the use of heated Icelandic magma stone formed by volcanic lava. It's said to provide a more consistent toasting than other methods, and Dewar's is the first to use the technique in whisky. We'll talk about it with Dewar's master blender Stephanie Macleod on this week's WhiskyCast In-Depth. In the news, more tariffs on whisky could be coming this week, while Whisky Magazine hands out its annual World Whiskies Awards and Icons of Whisky Awards.

The Australian Distillers Association is the peak body for the 700 craft distillers that are now spread across the country, up from just 40 a decade ago. I work pretty closely with the ADA and its chief executive Paul McLeay in my day job as media & communications manager of Spirits & Cocktails Australia. In this bonus episode, Paul and I catch up for a quick chat about the ADA Conference coming up in Brisbane on April 28 to 30, 2024, which is the association's 20th anniversary year. I know quite a few of you are in the distilling industry, so Paul and I will hope to see you there. Since we were already sitting down for a chat, I took the opportunity to ask Paul about the latest global accolades for Australian distillers at the World Whiskies Awards, and how his members are coping in the challenging economic environment. Live Whisky Events Are Returning...Are We Ready?

Virtually every major whisky event worldwide in the past year has been cancelled, postponed, or gone virtual because of the Covid-19 pandemic. Now, live events are returning in Florida, Texas, and Nevada over the next month as vaccination rates in the U.S. rise, and more event promoters are preparing to return later this year. Is it too soon, and can live whisky events be done safely? Dave Sweet's Whiskey and Barrel Nite event last September in New Jersey was one of the few in-person events that went on as planned, with no Covid-19 cases later connected to the event. Now, his team is preparing to hold what may be the largest whisky event in a year. Nearly 500 tickets have been sold for the Whiskey Obsession Festival in Tampa April 8th, even though many major whisky brands will not be participating. We'll talk with Dave Sweet about the event's health guidelines and his timeline for a "return to normal" on WhiskyCast In-Depth. In the news, Ardbeg has opened its new stillhouse, Beam Suntory is reviving some of Glen Garioch's past, and we have highlights from Whisky Magazine's World Whiskies Awards and Icons of Whisky Awards.

In 2015, Teeling Irish Whiskey opened Dublin's first new distillery in 125 years.Brothers Jack and Stephen Teeling have recently achieved another significant milestone with the launch of Teeling Single Pot Still, the company's interpretation of this classic whiskey style that is unique to Ireland.In this interview recorded on May 29, 2020, Stephen and I discuss the origins of single pot still. Branching out and exploring Australian Whisky in this week’s episode with David Vitale, Founder of Starward.  Starward Australian Whisky was founded in 2007 but recently released in the US with two solid expressions; Nova Single Malt Whisky and Two-Fold Double Grain Whisky. We were able to enjoy both of with Founder David Vitale via Skype. Since its Australian debut in 2016, Starward Nova has received numerous accolades including two gold medals at the 2016 San Francisco World Spirits Competition for both the “World’s Best Craft Distilled Whisky” and the “Best Australian Single Malt Whisky”. Starward was also named “Best Australian Whisky Innovator” from Icons of Whisky and crowned “Best Australian Single Malt” by the World Whiskies Awards in 2016 and 2017. Starward was founded by David Vitale in 2007 in Melbourne, Australia and is a modern Australian whisky, matured in Australian red wine barrels.  The ingredients used to distill Starward are a day’s drive away from the Melbourne-based distillery. The red wine barrels that mature the whisky are built around a broad cross section of big Australian reds, including 100L Barossa Shiraz barrels. The quick turnaround time between the barrels being disgorged at the winery and arriving at Starward means that the barrels retain much of their original character that is apparent in the flavor and texture of the whisky.  You’ll find ample red fruit notes and complex aromas, we definitely enjoyed the departure from our usual American bourbons and ryes.    LINKS: Find Starward on Facebook, Twitter and Instagram at @StarwardWhisky. Bisher ging es bei Dram Good eigentlich immer um Scotch Whisky oder Irish Whiskey. Ja, ab und an waren mal ein paar europäische Exoten dabei. Bourbon, Rye und andere American Whiskeys waren bisher eher unterrepräsentiert in unsrem Podcast. Daher widmen wir dieser ganze Folge den Amis. Wir besprechen, welche Erfahrungen auf dem Gebiet bisher gemacht haben und verkosten zwei Whiskeys, die wir jeweils gerade geöffnet in der Bar haben. Den Anfang macht der Woodford Reserve Double Oaked, ein Whiskey, der nach dem frisch ausgebrannten Fass nochmals ein extra heavily toasted Fass sehen durfte. Der zweite Kandidat stammt aus dem Hause Michter's und ist ein Straight Rye Whiskey. Neben den Whiskeys besprechen wir ebenso die unterschiedlichen Mashbills der verschiedenen Brennereien. Zwischendrin schweifen wir kurz ab und reden über die Sinnhaftigkeit der Verpackung von Whiskey. Ganz am Ende schauen wir uns aus aktuellem Anlass noch die Ergebnisse der World Whiskies Awards an. Fred Minnick is a national bestselling author & nationally recognized bourbon & spirits connoisseur, as well a U.S. Army veteran. While growing up in Oklahoma, the Oklahoma County News published his 1st story at the age of 15. Fred states he will never forget the feeling of seeing his name in print-he was hooked. In 1996, Minnick, joined the National Guard to help pay for college. After Fred graduated in 2001 from Oklahoma State University with a B.S. degree in Agricultural Comm./Journalism, he joined the Army as an infantryman, but once he learned the Army had jobs for Army journalists-he reclassified. By the time he graduated & started his career with a marketing firm in Wisconsin, he found himself serving in a mobile public affairs detachment, the week before 9/11, becoming an Army staff sergeant & ultimately a public affairs photojournalist who in 2003 served a 1-year tour of duty deployment to Mosul, Iraq with the 139 Mobile Public Affairs Detachment ending in 2004. During this time, Minnick suffered from various physical wounds & PTSD during the time-frame of roughly 2004-2009, sparing you the details, the “day-to-day” became a real challenge for him after Iraq, & while working for Networld Alliance as a restaurant trade editor, until fall 2006, Fred took the giant leap to go out on my own, & 1 of the 1st things he did as a new freelancer was write a list of categories he could write about. BOURBON was on that list.  From a technique he learned called Mindfulness on how to deal with his PTSD, it, in turn, became a GREAT technique for learning how to taste bourbon. Which is how he has become the industry’s leading spirits taster, traveling all over the world there was no one specializing in bourbon & spirit tasting at that time, YET publications wanted the information. There was a broad audience & the market could handle it. Before he knew it, a new career was born! His 1st bourbon story was published shortly thereafter, & never looked back as they say! In 2009 he penned his 1st book about his tour of Duty in Iraq called Camera Boy: An Army Journalist’s War in Iraq. The success of that book led Fred to author 6 different books & become a Wall Street Journal-bestselling author from 2009 until this interview with such titles as: 2016’s Bourbon-The Rise & Fall & Rebirth of an American Whiskey or 2015’s Bourbon Curious: A Simple Guide for the Savvy Drinker, or 2013’s Whiskey Women: The Untold Story of How Women Saved Bourbon, Scotch & Irish Whiskey or total diversionary topics away from distilled spirits such as 2010’s Certified Angus Beef History Book. Today he serves as a judge on the San Francisco World Spirits Competition & the World Whiskies Awards. He’s also judged multiple cocktail contests, including the national competitions for Old Forester, Four Roses & Citadelle Gin. Is the official “Bourbon Authority” for the KY. Derby Museum, has been the Chairman of the Brain Injury Alliance of KY.’s Brain Ball. Not to mention a spirits writer for multiple national & international periodicals such as USA Today/Scientific American/Parade Magazine/Caviar Affair /Whisky Advocate/Whisky Magazine/Tasting Panel/Wine Spectator/Sommelier Journal/Wine Enthusiast/Bourbon Review-a Hunting Magazine named Covey Rise & yes even the Costco Connection! As you have heard it wasn’t an easy road to where he sits atop the bourbon world, waiting on a new batch to write about and taste. But looking back at Iraq as a father, husband, successful author, and a sought-after spirits expert–he said he is in a good place now. Whisky Work. Without the E. It's a twofer on Edacious! In this episode, we hear from Marlene Steiner and Ian Thomas, both of Virginia Distillery Company in Lovingston, Virginia. Today's podcast is another chance to educate everyone on the American Single Malt spirit category and on Virginia Distillery Company who are making waves, collecting awards as they do. In March VDC was named the Best American Single Malt Whisky at the World Whiskies Awards, presented by Whisky Magazine. When their own single malt, distilled right here in Virginia, is ready in 2019? I've no doubt the medals will continue to roll in. Founder Dr. George Moore was a native Irishman and successful entrepreneur whose passions were Virginia and whisky. He raised his family here because it reminded him of Ireland and spent his life marrying his passions, working to establish a true whisky distillery in Virginia. Son Gareth and his wife Maggie carry on that tradition with VDC. First up? A complete tour of the process and a conversation with Distillery Director Ian Thomas. My favorite part? The Cask Room full of aging whisky. The minute you walk in you're hit with a wall of lovely smells, wood, oak and aging alcohol with hints of vanilla and caramel. Air so thick and redolent if you breathe through your mouth you can taste it. I never wanted to leave! "There's something about this industry where it's not quite instant gratification. You have to have a good bit of patience when making good whisky. There's something about walking into a space like that and seeing a sea of 7-800 casks resting and waiting...It fills me with joy." ---Ian Thomas How do you know when whisky is ready for bottling? Who makes the final decision? Sensory analysis and training your palate is a huge part. The distillers train themselves, but also take a wide-open approach involving a tasting panel made up of folks in the brand department, production, and on the corporate side. Even folks working as Guest Experience Managers get a say. The distillers take that data, reference it, and make some decisions. Ian hails from Memphis, Tennessee where he studied Biology. Beyond distilling, Ian and his team are working hard to promote American Single Malt Whisky as a viable, respected, clearly-defined product. "We're working hard with the American Single Malt Commission...to drive home this defining category of American Single Malt...We're really striving to help push this category...and get it defined...As a consumer, you always want to know what it is that you're purchasing...it's very much about knowing truly, if this is a single malt, there should be nothing blended into it." ---Ian Thomas  Does single malt reign supreme? Are blends better? We discuss both schools of thought. There is true skill to blending consistently and a couple of different approaches. But a truly great single malt can be a beautiful thing as well. Both require their own unique talents. Whisky, like wine, has terroir. VDC's whiskies use raw materials and water from Nelson County. They're barrel-aged in Virginia, making it a true Virginia whisky, distilled in Virginia with Virginia resources. This is whisky without the "e" folks. "To us bourbon is kind of a swear word, and really defining the difference between those categories and those types of whiskies...To us it's who we are. We're rooted in that tradition...owning it and making it ours. Our process is here stateside as an American whisky. It's a blend of old world meets new world, and kind of our spin on it." ---Ian Thomas Climate also plays a huge part in terroir. Whisky distilled here will taste different from one created on Islay or in the Scottish Highlands. Barrels are made of wood which is porous. They expand, contract, and breathe with every change in temperature and humidity, affecting the maturation process and taste. Climate data sensors live in every warehouse and minute information is constantly collected. The more data you collect, the more you learn the effects of climate, honing those a bit better to the maturation process. What does it mean to have a background in yeast? What is Ian's favorite part of the fermentation process? Give a listen! Next up we speak with Brand Director Marlene Steiner about more "Front of House" subjects like cocktails, distillery events, community initiatives, and of course The Virginia Whisky Experience Tour, a hands-on interactive educational foray into the origins of whisky right here in Nelson County. My favorite part? The antique alcohol still a generous neighbor donated to be a part of the tour. One very similar in appearance to ones mentioned by my Nelson County born-and-bred granddaddy. Another part? A presentation on the effects of Hurricane Camille which devastated this county back in 1969 and actually changed agricultural regulations, causing Nelson to become wet in more ways than one. Another natural disaster, forest fire, threatened the distillery just last Fall, but thankfully first responders were able to save the business. Nothing was damaged and neighbors stepped up, allowing firefighters onto their property to backburn, minimizing damage. VDC responded by creating their Nelson County First Responders Single Barrel, partnering with local coffee roaster Trager Brothers on this project, and all proceeds were donated to Nelson County First Responders. "We were just really happy to give back a little bit of love to our first responder teams...we had so many local teams that were on site very quickly...you just think about the amount of energy these people put in because they're all volunteers and so they're spending time away from family and friends. They're so community driven...we're really just so grateful for that...just their support and everything they did to help us...what better way to give back...we make whisky and we make good whisky." ---Marlene Steiner The response was so great VDC now plans to do a charity cask every year. Taking potential disaster as an opportunity for community growth. What's better than that? Another part of caring? Sustainability. Spent grain from the distillery is given to Early Dawn dairy farm for use as feed. Extra CO2, a natural part of the brewing process, is funneled out naturally. An extra step not many other distilleries take. Another aspect is the Partner Program, working with local wineries and cideries like Grace Estate and Potter's Craft Cider (a past podcast guest) to trade barrels, which add flavors to whiskey, cider, and wine depending on the barrel used. As Brand Director, Marlene creates awareness, enthusiasm, and loyalty for the product. She helped construct the Visitor Center, the tour, works in product development, and keeps the team well-staffed and well-educated on hospitality. It shows. Unlike some places, this isn't a pour and go operation. You always feel welcomed and very knowledgable about what you're drinking. VDC is working to make sure their story gets out even if you're enjoying VDC in Boston or Chicago. Why is story important to a brand? After two years of victories for Pacific Rim whiskies, a single malt Scotch is back on top of the World Whiskies Awards. Old Pulteney's 1989 Vintage was named "World's Best Single Malt Whisky" in Whisky Magazine's annual World Whiskies Awards. Thursday night's announcement caused celebrations at the distillery in Wick and Inver House's main offices near Edinburgh. We'll discuss the results of this year's competition with judging panel chairman Neil Ridley, along with his plans to launch a new line of independent bottlings at the end of this month with his business partner under the "Exile Casks" brand. In the news, Heaven Hill takes "Distiller of the Year" in the Icons of Whisky Awards, Ardbeg shines some light on its new Dark Cove malt, and High West releases a "light" whiskey.

Whisky has inspired many musicians over the years, but Copper Dogs is turning that around. Four whisky industry veterans have turned to performing, though Sam Simmons, Cat Spencer, Rob Allanson, and Simon Roser won't be giving up their day jobs any time soon. They're performing at Balvenie Castle during the upcoming Spirit of Speyside Festival, and Sam Simmons joins us to discuss music and whisky on this week's WhiskyCast In-Depth. We have plenty of new whiskies to talk about this week from The Balvenie, Aberfeldy, Tomatin, The Glenlivet and more, while Kavalan's Taiwanese single malts are finally available in the US, Suntory's acquisition of Beam is almost complete, and Sullivan's Cove French Oak -- dubbed the World's Best Single Malt in last month's World Whiskies Awards -- is completely gone.

Craft distillers took center stage during Whisky Live New York on Wednesday evening, and we'll hear from several of them on this week's episode. Chip Tate of Balcones and Mike Reppucci of Sons of Liberty both won World Whiskies Awards last month for their whiskies, while Daric Schlesselman of Brooklyn's Van Brunt Stillhouse was making his Whisky Live debut with a four-grain American whiskey and a single malt. There's also plenty of news this week, as David Beckham takes some flak for teaming up with Diageo and Simon Fuller on the Haig Club single grain Scotch, the Scotch Whisky Association reports flat export numbers for 2013 and expresses concerns over Scotland's independence referendum, and Kentucky's Bourbon distillers help Gov. Steve Beshear pay off his NCAA basketball wager with Connecticut's governor.

"Whisky: The Manual" is for whisky drinkers who just want to enjoy a dram without having to know everything about it. He'll explain the logic behind his new book on this week's WhiskyCast In-Depth. In the news, Australia's Sullivan's Cove French Oak scores an upset win in the World Whiskies Awards as the "World's Best Single Malt", and we'll hear from distillery manager Patrick Maguire. You've probably never heard of the James Sedgwick Distillery, but South Africa's first whisky distillery has been producing some award-winning whiskies. Three Ships 5-year-old won top honors among blended whiskies in this year's World Whiskies Awards, and Bain's Cape Mountain grain is featured in Ian Buxton's new book "101 World Whiskies to Try Before You Die". Distillery manager Andy Watts tells us what makes his whiskies so unique in this week's episode. Four times each year, Woodford Reserve master distiller Chris Morris becomes the headmaster of the Woodford Reserve Bourbon Academy. His students get a one-day class on the intricacies of Bourbon, from the entire distilling process to nosing and tasting lessons. We'll listen as Professor Morris leads a recent class through some hands-on mashing experience as well. In the news, Whisky Magazine hands out the Icons of Whisky Awards and the World Whiskies Awards in London, and 192 years of whisky production comes to a close in the Scottish town of Kilmarnock.
