Chad Draizin of Portland’s 50 Licks sold his first scoop of ice cream in 2009 at a street fair. After several years of pop-up events and selling to local grocery stores, he opened his first brick-and-mortar shop in 2013 in the Clinton Street neighborhood, but it was in 2017 that Draizin says his business transformed with the opening of the E. Burnside & 28th location - on a busy corner near dozens of restaurants and a movie theater right across the street. Business boomed, and he was able to open another location in Northwest. That’s why the fire in May 2024, which consumed the inside of the historic building, was so devastating. But Draizin managed to keep the other stores going and create a pop-up location at Washington Square Mall. He joins us to share what recovery over the last year has looked like, and his hopes for getting back into his dream location on Burnside.

Corey McCoy, CEO of KOK Wings & Things, joins Discover Lafayette to discuss his unexpected journey into success as a restaurant entrepreneur. Growing up in a military family, he lived all over the country before moving to Lafayette to attend UL and become closer with his father. Corey served in the National Guard for six years while in school, with a top secret clearance as he worked as an Intelligence Imagery Analyst. KOK Wings & Things was founded in 2016, when Corey, Avery Bell, Tre'Jan Vinson and Jared Johnson were Kappa Alpha Psi, Inc. fraternity brothers at UL - Lafayette and living together on a shoestring while attending college. The foursome would cook chicken wings and sauces for friends, beginning with the traditional wing recipe Corey's dad provided them. They enjoyed hosting social events at their home to raise money for their fraternity. In order to pay for the cost of the food and supplies, they started charging for their wings. Word spread about the delicious wings and the "Kitchen on Klinton" thus began out of their home kitchen on Clinton Street. And things went smoothly until one day, the local police came knocking on their door, informing them that it wasn't legal to operate a commercial kitchen out of their home. They realized it was time to 'change up' their operations. KOK began with an initial investment of $250 chipped in by the the partners. As Corey says, "It was everything we had!" In the beginning, the young men would put fryers in the back of a U-Haul as they went looking for customers. In time, they were ready for a food truck. Avery's dad offered to help build a food truck on a flatbed trailer, which they found on Craig's List. KOK would park for a few months at a time around Lafayette as they built up a dependable clientele for their wings and sauces. As KOK became more professional, their goals for growth did also. Once they saw that they had a viable business model, they worked to scale the operations From the beginning, the four young men divided up the tasks of running the business. Corey became the CEO (even when they were still cooking in the back yard) and was in charge of organizing the overall operations of KOK. Avery was in charge of ordering food and supplies, Jared was the Chief Financial Officer, and Tre'Jan was in charge of marketing. It gave them an organized method to focus on growth. Corey credits Heidi Melancon of the Small Business Development Center for helping KOK get their first loan, get free consultations, and get their business bearing. He also credits LEDA and the UL Business school for its help for which he will always be grateful. KOK didn't charge sales taxes for the first two years. This turned around when Adam Curry, a CPA with Darnall, Sikes & Frederick, ordered a meal and realized that no sales tax was collected. He helped the partners get their tax and financial records in order and get their business model organized for a sustainable business model. The Lafayette location is in the former Gallagher's Restaurant, which property is still owned by Nidal Baldeisi. He traded free rent for a few months in exchange for the KOK partners' working to renovate the building as they built their profits. They rented fork lifts from Lowes, got family and friends to help, and they were off in pursuit of a successful brick and mortar business. Corey taught 8th grade history at Acadian Middle when he graduated from UL in 2016 as they built up their business. He worked until KOK turned profitable in order to ensure that he could make a paycheck. The first two years, none of the men took any paycheck from the business. With a solid track record of growth, KOK Wings now has locations in Lafayette, New Iberia and Baton Rouge. Corey and his partners have grown their company from the grassroots level into a multi-million-dollar company with over 50 employees. KOK Wings & Things sells much more than wings and sauces.

On October 27, 1988, McLean County Coroner William Anderson had just come from the Central Catholic vs. University High School football game. Afterward, he was due to meet with members of his re-election campaign to go over strategies. Before the meeting, Anderson was volunteered by the others to get beer for the meeting. He went to the closest store, S&S Liquor Store, located at 703 N. Clinton Street in Bloomington-Normal Illinois. Anderson grabbed a six-pack and headed home for the strategy session. Just two to three minutes later, after having made it only a few blocks, Anderson's pager went off, alerting him to go back to S&S Liquor Store. Ivan's journey began with a dishwashing job at a sushi bar when he was 15. He discovered a culture and cuisine that would shape the rest of his life. Upon graduating high school, Ivan decided to major in Japanese language and literature at the University of Colorado, Boulder. After graduating, Ivan immediately moved to Japan to teach English and he quickly cemented his love of everything Japanese. He returned to the US in 1990 and enrolled in the Culinary Institute of America, and began his culinary training. Upon graduation from the CIA, and stints at Mesa Grill, Lutece, and Restaurant Associates, Ivan returned to Tokyo to live in the country that he fell in love with. He had still never given thought to combining his love for cooking and Japan, but that was soon to change. Ivan was anxious to start a food-related business in Japan but was unsure of which direction to take. He thought about opening a cooking school, a sandwich shop, even a pizzeria. It was his wife's suggestion that he open a ramen shop. This move seemed destined for failure in a country where ramen enjoys a cult-like status. Incredibly, Ivan not only succeeded but became one of the top ramen shops in Tokyo, an unheard of accomplishment for a foreigner. In 2010 a second shop, Ivan Ramen Plus, was opened. In 2012, Ivan returned to NY with the hopes of opening a business back home, while continuing to operate his two shops in Tokyo. In the meantime, his cookbook  "Ivan Ramen" was published. His first venture in the US, Ivan Ramen Slurp Shop, opened at the Gotham West Market on 600 11th Avenue in November of 2013 to huge crowds and critical acclaim. Soon after, his US flagship, Ivan Ramen opened at 25 Clinton Street on New York's Lower East Side. Although only Ivan Ramen remains open, it continues to enjoy critical acclaim and has been mentioned in countless magazines, websites, blogs, and television programs. Ivan is widely recognized as the American authority on ramen and all things Japanese. His effortless crossover from American to Japanese cultures has given him a distinct advantage. He speaks fluent Japanese and has a deep understanding of the culture which allows him to present a product that appeals to both Japanese and American audiences. In February of 2017 Ivan was featured in the hit NETFLIX series CHEF'S TABLE, instantly vaulting him into the company of some of the world's great chefs and restaurateurs. The goal of pretty much every business is to grow. It's the beating heart of capitalism. But scaling up is complicated. The bigger you get, the bigger the problems get. And it's not a 1:1 ratio. The learning curve can get steeper and steeper as your operation adds new locations, new employees, new revenue streams.  Growing pains, however, are a good problem to have. Yes, the struggle is real. But if you're doing it right, so is the payoff.  Corey McCoy and his partners at Kitchen on Klinton learned on the job quickly as their operation took flight. In 2016, they started selling chicken wings out of their house on Clinton Street in Lafayette to pay the party bills.  By 2018, they built a food truck welded to a flatbed trailer. Later that year, they were in a brick and mortar shop near UL. Then came two more locations that later closed.  Kitchen on Klinton is again poised for growth and has been well recognized for its success. Corey and his partners received the Young Entrepreneurial Business of the Year award from the U.S. Small Business Administration.  If you're in agriculture, business is always growing. Jerry Hale has spent his life farming. He grew up on a 7,000-acre cotton farm in Rayville, Louisiana. Growing up, his family farmed white cotton. King Cotton. The prime crop of the South.  And then, Jerry discovered brown cotton.  Acadian Brown Cotton is an heirloom seed, believed to be the first cotton found in Louisiana. The Acadians used it for their textiles when they arrived here. And sort of forgot about.  Acadian Brown Cotton produces a shorter fiber than conventional cotton, but it's a more sustainable product. Brown cotton plants can bloom over and over, while white cotton plants are discarded once they're picked.  Jerry took two cups of brown cotton seeds from a friend and kicked off a burgeoning eco-tourism business. Today, he grows around 2 acres of brown cotton and represents around 300 growers. In 2021, he represented Acadiana at the Selvedge World fair of Textiles in London. According to the National Weather Service, on Tuesday night there will be a small chance for rain, but the highest chance for showers and potentially a thunderstorm will be after 1 a.m. on Wednesday morning. Iowa City police released officer body camera and squad car video clips Monday it says shed more light on a public intoxication arrest last week that remains under review. The arrest late Friday of Daria Brown, 22, on S. Clinton Street was partially captured on a video circulating on social media. That video shows the arrest from one angle as a combative Brown is put into custody in the back seat of a police vehicle as an officer punches her. Video released by the department shows the arrest from other angles, including one that shows Brown trying to grab a Taser off of an officer's belt as he places her in the vehicle. Brown faces one count of public intoxication, two counts of interference with official acts, four counts of assaults on persons in certain occupations and one count of disarming a police officer. The city said the arrest remains under review in accordance with its use of force policy. Iowa athletics made $3 million from alcohol sales after sales tax in 2021-22 — thehttps://www.thegazette.com/hawkeye-football/beer-in-kinnick-a-brew-haha-or-something-less/ ( first year of fully selling alcohol at games —) according to documents obtained by The Gazette via a public records request. Most of the revenue after sales tax — $2.4 million of the $3 million — came from football games or the spring open practice at Kinnick Stadium. Three football games — Sept. 4 against Indiana, Oct. 9 against Penn State and Oct. 16 against Purdue — had more football sales than any sport had in its entire season. Iowa earned $338,839 in revenue after sales tax from men's basketball games, $180,458 from wrestling matches and $77,415 from women's basketball games. Before 2021, alcohol was only available in suites and premium seating areas. UnityPoint Health-St. Luke's Hospital has announced a $25 million expansion of its heart and vascular center, a move to help providers meet a growing patient demand for more specialized and minimally invasive services, officials say. Construction is expected to begin sometime this summer on the Cedar Rapids hospital's Nassif Heart Center. The project, which will take place over the next two years, will consolidate cardiac and vascular care into the center and will expand existing services. The move will help alleviate space constraints, and help providers meet the growing demand for services locally Patient demand for cardiovascular services has been growing at St. Luke's and other health systems in recent years, and it's not solely driven by the growing senior population in Iowa. Advancements in medical technology have opened the door to a greater number of patients becoming candidates for surgery.

Ivan's journey began with a dishwashing job at a sushi bar when he was 15. He discovered a culture and cuisine that would shape the rest of his life. Upon graduation from high school, Ivan decided to major in Japanese language and literature at the University of Colorado, Boulder. After graduating, Ivan immediately moved to Japan to teach English and he quickly cemented his love of everything Japanese. He returned to the US in 1990 and enrolled in the Culinary Institute of America, and began his culinary training. Upon graduation from the CIA, and stints at Mesa Grill, Lutece, and Restaurant Associates, Ivan returned to Tokyo to live in the country that he fell in love with. He had still never given thought to combining his love for cooking and Japan, but that was soon to change. Ivan was anxious to start a food-related business in Japan but was unsure of which direction to take. He thought about opening a cooking school, a sandwich shop, even a pizzeria. It was his wife's suggestion that he open a ramen shop. This move seemed destined for failure in a country where ramen enjoys a cult-like status. Incredibly, Ivan not only succeeded, but became one of the top ramen shops in Tokyo, an unheard of accomplishment for a foreigner. In 2010 a second shop, Ivan Ramen Plus, was opened. In 2012, Ivan returned to NY with the hopes of opening a business back home, while continuing to operate his two shops in Tokyo. In the meantime his cookbook "Ivan Ramen" was published. His first venture in the US, Ivan Ramen Slurp Shop, opened at the Gotham West Market on 600 11th Avenue in November of 2013 to huge crowds and critical acclaim. Soon after, his US flagship, Ivan Ramen opened at 25 Clinton Street on New York's Lower East Side. Both restaurants continue to enjoy critical acclaim and have been mentioned in countless magazines, websites, blogs, and television programs. Ivan is widely recognized as the American authority on ramen and all things Japanese. His effortless crossover from American to Japanese cultures has given him a distinct advantage. He speaks fluent Japanese, and has a deep understanding of the culture which allows him to present a product that appeals to both Japanese and American audiences. In February of 2017 Ivan was featured in the hit NETFLIX series CHEFS TABLE, instantly vaulting him into the company of some of the world's great chefs and restauranteurs. In the past few years, ramen shops seem to be popping up everywhere from Harlem to Flushing. Chef Ivan Orkin, who just opened Ivan Ramen Slurp Shop at Gotham West Market and published the memoir/cookbook Ivan Ramen, says that the reason ramen has gotten so popular is because it’s the ultimate comfort food. “It’s all in one bowl — it all gets eaten together,” he says. “There’s a lot of different flavors. There’s fat and salt. And I think it just hits all those different points we need to make us feel good. And it’s simple.” Orkin opened his first ramen shop in 2007 in Tokyo, and went on to launch his own instant ramen brand. Not bad — for a Jew from Long Island. Orkin says being an outsider in Japan had its advantages. “You have.. the obvious hook,” he said. “You slide open my little aluminum doors and there’s a white guy standing behind the counter, which certainly didn’t hurt. I won’t lie.” One of his specialties, noodles made with rye flour, had less to do with all the rye bread he ate growing up and more with the simple stuff that inspires him. “The flour is very different in the United States than in Japan,” Orkin explained. “It’s milled a lot more finely there. And here, you know, I ended up using rye. I do use rye in Japan but not in every one of my noodles. In some of my noodles I use toasted corn, in some I use whole wheat.” (Photo: Ivan Orkin and Amy Eddings at WNYC/Ivan Orkin) He only uses a small percentage of rye flour, though, because it doesn’t bind well. “It’s just enough to give a little bit of an aromatic punch,” he said. Orkin, a self-described geek who makes up noodle recipes in his head, confessed that he doesn’t remember his own cooking instructions line for line. So when it came time to take photos for the cookbook, he had to go about it like any home cook. “I opened up the book, and I read the recipe,” Orkin said. “I didn’t have any kansui on hand [so] I made it with Harold McGee’s recipe. And the [noodle] recipe really, really works. I mean, it’s dauntingly long and yet if you read it slowly and carefully, you can do each component one at a time.” Some parts can be made ahead of time and refrigerated. As for where to source the various Japanese ingredients, Orkin recommended heading out to the Japanese supermarket Mitsuwa in Edgewater, New Jersey. There’s a food court there with ramen and rice bowls to make the trip particularly worthwhile. Mitsuwa also holds seasonal ramen events with guest chefs flown in from Japan. Orkin may just be distracting the hungry masses by sending them to Mitsuwa for the moment. In addition to the 20-seat Slurp Shop, his storefront restaurant at 25 Clinton Street is set to open early next year, though he wouldn't specify a date. “I’ve given up giving dates because I’ve been getting chastised,” he said. “Apparently, one person Tweeted that I’ve redefined the word ‘soon’... Wylie Dufresne was born in 1970 in Providence, Rhode Island before moving to New York in 1977. In 1992 he completed a B.A. in philosophy at Colby College, Maine. After college, Wylie enrolled at the French Culinary Institute in New York and was then employed at Jo Jo’s from 1994 to 1997. He was then hired to work on the opening of Restaurant Jean Georges, eventually becoming the sous chef. In 1998 Dufresne was hired as chef de cuisine at Vongerichten’s Prime in The Bellagio, Las Vegas. In 1999 he left Prime to become the first chef at 71 Clinton Fresh Food, a 30-seat restaurant on Manhattan’s Lower East Side. Dufresne opened (named for the chef’s initials and the street address) in April of 2003, on Clinton Street on Manhattan’s Lower East Side. His partners in the venture are Chef Jean-Georges Vongerichten and restaurateur Phil Suarez. He is the winner of the 2013 James Beard Foundation Best Chef NYC award, American Chef and restauranteur who has redefined the culinary landscape with his careful attention to technique and thoughtful imagination. His restaurant pushed American avant garde cuisine to the next level by combining a voracious curiosity with a careful attention to scientifically sound techniques and creative innovation. Wylie has worked in restaurants since the age of 11 and feels drawn to the team mentality and physicality of working in a professional kitchen. He compares the experience to playing professional team sports, which was always a personal aspiration. After spending years working with Jean-Goerges and perfecting classic French techniques, Wylie set out to find his own style and opened to world wide acclaim. The dishes at pushed diners’ perceptions of what food should look and taste like, and challenged cooks to always push for perfection by consistently asking the question, “why”? Wylie has always hoped that diners, cooks, and chefs walk away from saying the experience made them think.
