You're in for a treat today! Anabel makes an extremely simple yet very satisfying vegetarian pasta dish. She is then joined by her friend Kyndal, host of Kyndal's Korner podcast, to talk all things creating! They discuss what podcasters/ general creatives should know when starting out, traumatic childhood events they realized affected them later, early 2010's YouTube inspirations, and how they'll know they've finally made it. Take a shot every time Anabel says "admirable!" Zucchini & chickpea penne with goat cheese and red chili flakes in garlic butter sauce: 1 large zucchini 1 can chickpeas, water drained 1/2 box penne pasta 1/2- 1 stick good butter 1/4 tsp or 1/2 clove minced garlic Goat cheese (topping) Red chili flakes (optional but so tasty) Olive oil, salt & pepper for cooking Preheat oven to 400F. Bring water to a boil for pasta, making sure to salt it. Cut zucchini into half moons. Drain chickpeas and add them to a sheet pan along with the zucc. Coat in olive oil, salt, and pepper. Toss around on sheet to coat. Cook in oven for 20~ish min, checking to make sure the chickpeas don't get overdone. Add pasta to water and cook 1 minute under the time it says on the box. Meanwhile, melt your butter in a saucepan on low heat. Once melted, add garlic and cook until light golden brown. Turn off heat as soon as this color is achieved to avoid burning. Add cooked pasta, chickpeas, and zucchini to butter sauce. Toss to combine. Top with goat cheese, red chili flakes, and cracked black pepper. Enjoy!
