The Toxic Truth About Restaurants, Plastics & Food with Chef Johanna Hellrigl

I didn't know too much about the impressive Johanna Hellrigl before this conversation — a friend suggested I interview her and I intuitively said yes on the spot. And I'm so glad I did! Johanna is the chef and founder behind Ama, an award-winning Northern Italian restaurant in Washington, D.C., and a board member of the Environmental Working Group who is revolutionizing what it means to nourish people — from the way she sources whole ingredients to how she cares for her team to the deeper intention behind every decision she makes. She is building a model of hospitality where indulgence, vitality, sustainability, and community coexist — proving restaurants can drive cultural and systemic change. This woman is doing the work, and you can feel it. Johanna's personal story also really moved me. As a chef, entrepreneur and mother, Johanna shares parts of her life that shaped the way she sees health, intuition, and what it means to truly take care of yourself in a world that can feel overwhelming and confusing. It's a powerful reminder of how much we're capable of when we start to question, listen, and trust ourselves more deeply. Many of us are aware of how to avoid toxins in and around our food at home, but I'll admit eating out was more of a blind spot for me. We get into the hidden plastic crisis lurking in restaurant kitchens, the truth about what's really in your pasta and why it hits so differently in Europe, the seed oil conversation with actual nuance, food waste, and so. much. more. Johanna shares practical swaps you can make today in your own kitchen to reduce your toxic load — no overwhelm, just empowered steps forward. We really covered it all! I left this conversation feeling inspired, grounded, and confident that our bodies are incredibly intelligent — and when we start to listen, everything begins to shift. Key Moments You'll Love ✨ :

In this deeply personal and heartfelt episode of 'A Millennial Mind,' I sit down with one of my closest friends, Dr. Rhona Eskander, as she opens up for the first time about her harrowing journey into motherhood. From experiencing a traumatic miscarriage and the emotional turmoil that followed, to navigating the complexities of fertility treatments, and finally, the unforeseen challenges of a high-risk pregnancy that led to an emergency C-section and a NICU stay for her baby, Rhona bravely shares it all. This conversation sheds light on the silent struggles many parents face, the societal pressures around fertility, and the importance of mental health and support during such times. I am incredibly grateful for Rhona's vulnerability and hope this episode fosters understanding and compassion for those facing similar battles. The news felt unimaginable. The grief is absolutely devastating. But we feel so much gratitude for the time that we did get to have with her. And we still have hope. Hope has continued to show up for us in so many ways. For now we will grieve and continue to think of ways to honor her life offline. Thoughts and prayers are more than welcome. In this episode, I'm joined by Ash Anderson, mother of three and recent graduate of The MatriBirth Mentor Institute. After a traumatic induction with her first baby, Ash was certain she was done having children. But what she came to realize was that it wasn't birth she was finished with—it was the hospital. We unpack what it took for Ash to walk away from the industrial model of care, how she and her husband navigated the residual fear from her first birth, and why healing her relationship with motherhood was a necessary precursor to welcoming another baby. From being coerced into interventions to catching her third baby alone in a moment of pure presence, Ash offers a grounded and powerful testimony to the transformation that becomes possible when a woman chooses trust, sovereignty, and self-responsibility.You'll Learn:Why “just in case” inductions increase trauma and strip women of autonomyHow hospital birth plans are powerless against coercive systemsWhat subtle manipulation in late pregnancy says about industrial birth prioritiesWhy even “holistic” midwives still operate within controlling paradigmsHow freebirth dissolves fear and restores deep body-trustWhy preparing for postpartum is a radical act of self-respectHow birth witnessed by children shapes the future of womanhoodWhat it means to birth alone and discover your strength, resilience, and sovereigntyThis episode is a reminder that birth doesn't have to be micromanaged, feared, or medicalized. It can be simple. It can be sacred. It can be yours if you choose it.Timestamps:[00:00] Introduction[02:11] Realizing the hospital birth system wasn't aligned with her values[14:16] Traumatic induction and vow to never birth that way again[19:39] Perspective shift on motherhood and discovering freebirth[32:52] Her first transformative experiencing freebirthing at home[50:04] Unexpected second freebirth completely alone[58:10] Breaking birth narratives and giving her children a new storyIf you want to connect more with Ash, follow her on Instagram and check out her website.Find more from Emilee on Instagram, YouTube and the Free Birth Society website.Disclaimer: Free Birth Society, LLC of North Carolina shares personal and educational stories and experiences related to freebirth and holistic care.
