While visiting his hometown of Miami, Florida, during his recent book tour, Andrew finally had the chance to meet and interview with chef Michael Beltran of Ariete, Chug's Diner, and Eva and The Oyster Bar--all in Coconut Grove. Michael is also the host of the excellent Pan Con Podcast, which you should by all means check out. After years of corresponding by Instagram messages, Andrew and MIchael sat down for a conversation that is shared differently on their two shows: Michael and producer Nicolás Antonio Jiménez (who produced the session, and recorded and mixed the sound) ran the entire two-plus-hour dialogue on Pan Con Podcast. We're sharing pieces of it here as Special Conversations, starting with this episode about how a chef can stay true to themself while also drawing and satisfying customers. It's an honest, frank conversation that we think is very timely and entertaining. Our thanks to Metro for their support. Visit their website today to learn more about how they can make your restaurant kitchen and office more efficient. THINGS YOU SHOULD KNOW:Andrew is a writer by trade. If you'd like to support him, there's no better way than by purchasing his most recent book, The Dish: The Lives and Labor Behind One Plate of Food (October 2023), about all the key people (in the restaurant, on farms, in delivery trucks, etc.) whose stories and work come together in a single restaurant dish. We'd love if you followed us on Instagram. We're back with another foodie film recap and review as we talk Chef, Jon Favreau's 2014 passion project that follows Carl Casper a chef who, after embarrassing himself in an online flame war to a food critic, loses his job at a popular L.A. restaurant and begins to operate a food truck with his young son on a cross country road trip. It's a comedy drama with not only a lot of a heart but also plenty of gratuitously sexy food shots to go around. In 2018, I went to Miami and interviewed the delightful food journalist Carlos Frias. Carlos spoke lovingly of his father, who was saved from hard labour in a Cuban prison camp by his ability to cook. It is clear from this interview how much Carlos's father influenced his love of food. Carlos and I also talk about our shared love of yucca, recommends Miami's Palacio de los Jugos and how to make mojo. I should be in Miami now – fun in the sun! Cuban food rules. And even though Kirk and Lindsey don't eat Cuban food often, that doesn't stop them from having hot takes about it. The two debate plantains vs. yucca, would they eat a Cubano sandwich from a non-Cuban place, the best way to eat black beans and rice, is rum overrated, the greatness of guava & cheese strudels and how shameful it is that Lindsey doesn't like them, and why Kirk hates…HATES…flan. In this episode of Veggie Doctor Radio, I interview Raydel Hernandez, a home chef who learned how to veganize his family’s authentic cuban recipes. About featured guest: Raydel Hernandez is a first generation Cuban American, home cook and culinary author. His dishes are authentic, delicious and distinctly Cuban. Heavily influenced by traditional Cuban cooking, Raydel's culinary sensibilities were shape by his family experience, primarily his grandmother Pilar Mejido. After learning how to cook Cuban food using traditional ingredients, Raydel became a strict vegetarian, and spent 10 years experimenting with plant based ingredients to achieve a Cuban/Vegan fusion which maintains the integrity, and delicious flavors of the original recipes, all with the goal of promoting a long and healthy life through the foods we eat. This week Jon and Nick decided to debate something on the podcast. No, really, they actually disagreed about something and had a lengthy, oftentimes distracted (what else is new) discussion on consensus among scientists. If that's not interesting to you, don't worry. I lied about the lengthy part, and not about the distracted part. The PoddiMouths also give some 2020 travel tips, talk about food, and a new book.Support the show (https://www.patreon.com/user?u=15325671) Disclaimer: This post contains affiliate links. In this episode of Food Out Loud, we meet Asori Soto, filmmaker, and director of the documentary Cuban Food Stories. The documentary takes us on a tour of Cuba through the eyes and the food of the locals. The film is split into chapters, each one taking us to a different place on the island, meeting new people and discovering new traditions. Some moments in the film leave you longing for a simpler time, questioning what the higher calling is. In Cuban Food Stories, you discover a culture being preserved through food and a people who take pride in that mission. You find yourself thinking of your grandmother's cooking, for me a taste and feeling that I haven't experienced in years. It made me wonder, maybe I need to get more in tune with my heritage and the recipes my family passed down for generations before those stories start to become forgotten.

Hey guys. And the (title) reason is because both of them look great, come with high (but not too high) expectations, and try their best to pay homage to their original creative roots. Both of them flop, however, in most ways. Cuba is a lovely country but the food is an attempt to make dishes familiar North Americans, but with lacking ingredients and familiar brand flavours. Much of it is great, but much is just a bowl of butter (story in podcast). Solo was a "Star War's flavoured movie", not an original magical, fresh I.P. from Lucasfilms, but the Walmart off brand version of it that calls them Laser Swords. Not a bad watch, but bottom of the Star Wars totem pole. The movies were a mixed-bag, as Deadpool 2 was delicious and a ton of fun. I'll get into some random stuff and catch you guys up, but let me know what you like and or didn't, and such.Cheers!

Journal Entry: Week09We're going out to dinner with Ana's folks. Get on the A - whoosh out of Brooklyn . We get to this little Cuban place in the village and are treated to a hearty eat and drink session as we hear about the modern dance ballet of Carmen. Packing up and heading out into the cold - we are aimed towards the bar Fat Black Pussy Cat. While shooting some pool we've got a multimedia experience courtesy of one of those wide screen LCD bastard intrusion devices bars are so found of now a days. Besides a lot of music I could have lived without I did get to see the video for the Scissor Sister's "I Don't Want to Dance" which is incredibly good and may I suggest YouTubing that particular piece.I take a break and head to the men's room where I find a delightful little CD hanging out waiting for me to help myself. Hail modern distribution techniques! While there are only 3 of 6 tracks that aren't scratched to oblivion, I find at least one of them tolerable and think it significant that I have not thrown it away yet.Across the street from the juke joint we're at is the Blue Note - I take a peak in and see that it is Ahmad Jamal playing tonight. I swoon but it is not meant to be, we walk on.Seeing the trendy masses yearning to recreate authenticity (but this time with less anguish) at various clubs and bars Ana nearly goes into berserker kill mode over the tragedy of recapturing the village's spirit by capitalist means. Before the slouching towards Bethlehem begins we load up on the A and head back home.Good Night Brooklyn Leaving Brooklyn: Luz Mob - The SelecterCuban Food: Cubanismo - CuborleansVideo Killed the Night Out: Scissor Sisters - I Don't Want to DanceI Found it on a Urinal: iBeat - Strangest DreamThe Blue Note has Long Lines: Ahmad Jamal - MisdeamonerThe Myth of The Village: Bob Dylan - Subterranean Homesick BluesBack Home in Bed-Stuy: Will Stratton - Night Will Come
