Beijing Duck and the Pandemic: The story of Chicago's iconic Sun Wah BBQ with Kelly Cheng, General Manager Times certainly have been challenging for our nation's restaurants during these pandemic times. Come join us as Kelly Cheng tells her savory story of her family's iconic restaurant and its place in Chicago's culinary history. Kelly will also regale us with the story of Chinese barbecue and the secret of preparing Beijing duck. And she will share how she and her family and their business have struggled through and survived the pandemic. A bit of history: Sun Wah BBQ started its journey in New York's Chinatown where it was crammed into a storefront hardly wider than nine lengths of roast ducks. Its founder, China-born Eric Cheng, continually refined his skills as a Hong Kong style barbecue chef. While Sun Wah did well, it was still “a crowded fish yearning for larger oceans,” Kelly Cheng said. Eric and wife Lynda took their four toddlers to Chicago and made their dream grow. In the spring of 1987, they opened Sun Wah BBQ in Chicago's Uptown neighborhood, a few doors away from the Argyle Redline Station. Over the next two decades, Sun Wah BBQ accumulated a legion of enthusiastic diners and the restaurant helped transform the neighborhood. The children became fixtures on weekends and holidays, learning the fundamentals that would help them ultimately expand their parents' heart and soul. In 2018, they received America's Classics award from the James Beard Foundation. By September 2008, three of the four children (Kelly, Michael, and Laura) grasped the baton to lead Sun Wah BBQ into its next phase. Each had been developing skills that would feed into the continued success of the restaurant. Kelly earned her MBA from DePaul University, Michael followed his father's teachings on mastering Chinese BBQ, and Laura completed her degree from the Kendall College of Culinary Arts. In 2009, Sun Wah moved around the corner to 5039 N Broadway, an historic building, four times the size of their Argyle restaurant. The Chengs were now able to showcase Chinese barbecue to the max, with their star dish, Beijing Duck, winning national acclaim. The Coming Drone Policy Wars Matt Cagle Technology and Civil Liberties Policy Attorney, ACLU of Northern California Eric Cheng General Manager, DJI SF and Director of Aerial Imaging, DJI Your private drone opens up limitless possibilities – how can manufacturers and policymakers ensure you are able to realize them? As private drone ownership becomes the norm, drone makers and lawmakers will need to make important policy decisions that account for the privacy and free speech issues raised by this new technology. What legal and technical rules are being considered right now, and how might they affect your ability to do things like record footage at a city park, monitor police at a protest, or fly near a government building? These decisions will dictate the technical limitations (or lack thereof) placed on drones, and the legal consequences of operating them. Join Eric Cheng, General Manager of DJI SF and DJI's Director of Aerial Imaging, and Matt Cagle, a Technology and Civil Liberties Policy Attorney with the ACLU of Northern California, to discuss the policy issues at this leading edge of law and consumer technologies. Matt Cagle is a Technology and Civil Liberties Policy Attorney at the ACLU of Northern California. At the ACLU-NC, Matt's work focuses on the privacy and free speech issues raised by new services and technologies, including surveillance equipment, social media services, and connected devices. Last fall, Matt co-authored Making Smart Decisions About Surveillance: A Guide for Communities, a paper that provides a framework for communities considering surveillance technology proposals. Matt has worked in private practice advising technology companies on the privacy issues related to new products and services. Matt has substantial experience responding to state and federal law enforcement requests for online user information, and he co-authored reddit's first ever transparency report. Matt regularly speaks at conferences ranging from SXSW to RightsCon, and he served on the privacy committee for Oakland's controversial surveillance complex, the Domain Awareness Center. He grew up in Southern Arizona, studied Latin American history in Guatemala, and holds a JD from Stanford Law School. News 'GMA' Flies Drone Over Erupting Volcano Live ABC's Good Morning America television show flew two quadcopters over the erupting Bardarbunga Volcano in central Iceland. And they broadcast the video live on national TV. Eric Cheng, DJI Director of Aerial Imaging, was on hand to operate the main quadcopter while a chase DJI provided additional coverage. The live video of the volcano was spectacular. This wasn't a puff piece - it was a very public demonstration of using a drone for science. With last week's drone crash on the White House lawn, and now this, public awareness of small drones is increasing. Alibaba Beats Amazon to Drone Delivery The Wall Street Journal calls Alibaba, “China's — and by some measures, the world's — biggest online commerce company.” With e-commerce activity of $248B, it's bigger than eBay and Amazon.com combined. Now Alibaba is conducting a three day package delivery test for customers that are within a one-hour flight by quadcopter from their warehouses in Beijing, Shanghai and Guangzhou. They've posted a promotional video online. FAA Grants Eight More UAS Exemptions Exemptions under Section 333 were issued to Total Safety U.S. Inc. for flare stack inspections, Slugwear, Inc. (dba LikeOnATree Aerial) for aerial photography and surveys. Team 5, LLC; Shotover Camera Systems LP; Helinet Aviation Services, LLC; and Alan D. Purwin were given an exemption for film and television production. This brings the total number of exemptions to 24. At the same time, the FAA amended the exemptions previously granted to Pictorvision, Inc. and Aerial MOB, LLC to let the companies fly additional types of small UAS. As with the last round of exemptions, "the proposed operations do not need an FAA-issued certificate of airworthiness because they do not pose a threat to national airspace users or national security." The FAA says they have received 342 requests for exemptions from commercial entities and individuals. UAV real estate Co. to expand nationwide following FAA exemption Real estate video and production firm Burnz Eye View received an exemption from the FAA in January. Mark Burns started the company 3 years ago and has a team of 15 in San Diego. With the exemption, he wants to expand to cover the entire U.S. To do that, he needs pilots. Specifically, UAV operators that have private pilot's licenses or multi-hour experience flying UAVs. An understanding of platform maintenance will also be needed. Americans OK with police drones - private ownership, not so much: Poll A Reuters/Ipsos online poll of 2,000 people conducted Jan. 21-27, 2015 showed that 73 percent of the respondents said they want regulations for small drones. Forty-two percent oppose private ownership of drones. They think they should be restricted to officials or other experts. Thirty percent were OK with private drone ownership, and 28 percent were undecided. Underwater photographer, digital wizard, musician and writer, Eric Cheng of Wetpixel.com recently decided to add underwater videography to his repertoire.
