These little fritters are just the thing to make before corn disappears for another year and cherry tomatoes are still around for a bit longer too. Sometimes called hush puppies, they're puffier than usual fritters, crispy and soft. Watch that the corn in them doesn't leap out and bite you! Make 6-8 Ingredients 1 large egg 3 tablespoons plain flour ½ teaspoon baking powder ½ teaspoon salt and pinch pepper 1 cup corn kernels 100g cherry tomatoes, halved or quartered 1 tsp cumin seeds Small handful fresh coriander, chopped Splash of iced water as needed Cooking oil for shallow frying 3 tablespoons sour cream to serve Pinch chilli powder to serve Lime wedges to serve Method In a bowl whisk together the egg, flour, baking powder and salt and pepper. Stir in the corn, tomatoes, cumin and coriander until combined to a thick, chunky batter. Add a little iced water if it seems too stiff. Heat enough oil in a small pan or saucepan to be able to shallow fry tablespoonfuls of the batter until golden brown. Cook in batches. Mix chilli with sour cream and serve with fritters. Variations Replace cumin with grated lemongrass. Add 2 rashers of chopped bacon or ham. Replace cumin with chopped basil or oregano and shower with grated parmesan to serve. I love VEG FRITTERS but the frying process is a drag.Bee Wilson is an English food writer and author of the column Table Talk. Her cookbook THE SECRET OF COOKING is genuinely wonderful and from it Simon and I have both drawn huge amounts of inspiration.400g potatoes, grated500g zucchini, grated1 small onion, finely diced1/2 clove garlic, finely gratedsalt, pepper and a soft herb like mint, chopped3 eggs75g self-raising flour (gluten-free = ok)Sprinkle the potato-zucchini mixture with a teaspoon of salt, toss then leave in a sieve while you prepare everything else.Turn the oven on to 180C.Add about 4 tbs of olive oil to each roasting pan and put in oven to heat.Combine all the other ingredients. Squeeze, wring and throttle the grated vegetable to get out as much liquid as possible. Mix it in with everything else, then portion out to fritter size portions (like a crumpet but thinner) into the hot oil, which should sizzle.Cook for 10 mins per side, check for doneness. Imgur AlbumSpecial Ingredients - NoneSpecial Equipment - KitchenAid Grain Mill AttachmentOatmeal Muffins -Preheat oven to 425ºF1 cup all-purpose flour1.5 cups oatmeal1.25 teaspoons baking powder3/4 teaspoon cinnamon1/2 teaspoon baking soda1/2 teaspoon salt1 cup whole milk1/3 cup avocado oil1/2 cup maple syrup2 eggsCombine the milk and oats and let stand for 10 minutes. Then, combine the rest of the ingredients and distribute evenly among 12 muffin paper liners. Bake at 425ºF for 7 minutes. Reduce oven temperature to 350ºF and continue baking for an additional 15 minutes.Zucchini Fritters-1 cup sour cream2 tablespoons chopped cilantro1/2 teaspoon ground cardamomThe zest and juice of one limeCombine these ingredients, mix until smooth, refrigerate until ready to serve.For the fritters, coarsely grate 1 large zucchini or 3 small ones. 2 shallots2 cloves of garlic, choppedZest of two limes1/2 cup flour2 eggs2.5 teaspoons ground coriander1/5 teaspoons ground cardamom4oz feta cheese, crumbled2 cups avocado oil, for fryingSalt and Pepper to tasteMix together all ingredients, saving the cheese separate from the batter. Pat a small wad of batter in the palm of one hand. Place a few studs of crumbled feta in the center and form a quenelle out of the batter in your palm. With the oil heated to 300ºF, gently fry each fritter for 10-12 minutes until golden brown.Croque Madame-6 ounces butter2 tablespoons flour1 cup whole milk1 bay leaf1/2 teaspoon salt1/4 cup finely grated parmesan cheese12 ounces coarsely grated Swiss cheese8 slices of sourdough bread8-12 slices of ham4 eggsMelt half the butter in a saucepan. Add the flour and bay leaf and cook until a foamy roux has formed. Before the flour browns, stir the milk into the roux and stir continuously until the sauce comes back up to a simmer and homogenizes. Remove from heat, season with salt and pepper, and stir the parmesan cheese and half the Swiss cheese into the sauce. Lay out 4 slices of bread. Top with 2-3 slices of ham and a slathering of the cheese sauce. Cap with another piece of bread and then fry the individual sandwiches in butter to brown. Remove to a baking sheet. Top with the remaining cheese sauce and the remaining Swiss cheese. Place under the broiler in the oven until the cheese is bubbled and browned. Fry an egg for each sandwich. Lay the sunny side up egg on the hot cheese and serve.

In the world of dogs, some come with pedigrees and champion bloodlines that win dog shows time and again, and others are...well, mutts. Unlike their purebred cousins, mutts are what Bob Ross would call “happy little accidents.” While working dogs are bred for a specific purpose such as bird hunting or warming a lap, mutts seem to march to the beat of their own drum. And that's the very best thing about mutts; their personalities. On National Mutt Day, celebrate the uniquely weird dogs that make the most loveable pets. Fritters are associated with comfort and come in three types: the basic dough kind, the battered meats and vegetables and the small cakes made from chopped food such as corn. Frying food in oil has been around for thousands of years and almost every culture has a tasty version. The technique of batter frying, however, was introduced by the Spanish and Portuguese in the late 16th century. This culinary inspiration spread to Japan, where it became known as tempura. Today just about anything can be frittered from beignets to squash blossoms. And of course there's always good ole' apple. Welcome to July 16th, 2022 on the National Day Calendar. Today we celebrate coloring outside the lines and a Southern staple. Before the invention of the printing press, books were copied by hand. This tedious work was carried out by monks, who labored day and night to replicate the pages. To break up the routine, some monks began doodling in the margins of the books. They drew everything from flowers and dragons to rabbits with swords. While the illustrations did not always come from the text, the eye catching watercolors brought the work to life. Today, illuminated manuscripts are priceless. So the next time your toddler draws in their books, remember that today's crimes may be tomorrow's treasures. Celebrate World Water Color Month with a blank book to doodle in. You might find a great way to beat boredom for yourself! Corn was an important part of Native American culture, but Europeans knew nothing of it until the 15th Century. When settlers of the New World learned how to prepare corn from Native Americans, they included this new ingredient in traditional recipes, creating foods like cornbread. In the Southern United States, corn was used to make two regional favorites, which are often confused with one another. The johnnycake is made with cornmeal and is prepared like a pancake. Corn fritters are made with corn kernels in the batter to form a dough patty that is fried in oil. This delicious Southern treat can be served as savory or sweet, or as a meal on its own.
