Welcome back to The Keto Vegan Podcast! I'm Rachel—your host, kitchen alchemist, and apparently, serial cheese-maker with the memory of a distracted goldfish. So, confession time: I was halfway through perfecting what I genuinely thought was a brand-new smoked garlic tofu cream cheese when I had a vague flashback. You know the kind—like déjà vu wearing a tofu-stained apron. A quick scroll through my own episodes later and yep… turns out I've already done a tofu cheese. Oops. BUT! Before you roll your eyes and mutter “she's lost the plot,” let me assure you—this version's had a glow-up. It's bolder, smokier, and comes with roasted garlic swagger. So while this may technically be Cheese 2.0, it's also an ode to creative forgetfulness and embracing your inner culinary goldfish. In this episode, I'll walk you through the new take on the tofu cheese recipe—with lashings of liquid smoke and mellow roasted garlic—plus the accidental genius moments, inevitable ramblings, and why I might just need to start labelling my fridge contents and my podcast archives. So, grab a spoon (and maybe a notepad to remind yourself later what you made), and let's dive into this delicious little case of cheesy déjà vu.   Ingredients 1 16-oz block extra firm tofu 1/2 cup refined coconut oil 2 Tbsp lemon juice 2 Tbsp apple cider vinegar 2 Tbsp mellow white miso paste 2 Tbsp extra virgin olive oil 1 clove garlic 2 tsp sea salt 1/2 tsp ground black pepper 1/4 cup plain unsweetened non-dairy milk Instructions BLEND: Add all ingredients to your food processorand process starting on a low speed and slowly increasing to high. Blend on high for about 4-5 minutes, stopping to scrape the sides down as needed. The mixture will get really smooth and shiny towards the end which is exactly what we want! If it's not shiny yet, keep blending. SET: If you just want to use this cheese as a spread, transfer the mixture to a large airtight container. If you want a cheese that holds its shape on a platter or can be moulded into a log, transfer the mixture to a silicone mold or plastic-lined airtight container. Cover and place it in the fridge for at least3-5 hours to fully set.  If you're shaping the vegan goat cheese, I would let it set in the fridge for at least 6-8 hours. SHAPING(optional): To make this vegan goat cheese substitute look as legit as possible, you can also mold it into those classic goat cheese logs once it's set. Just pop the cheese out of the silicone mold or lift it out of the plastic-lined container. Then, use your hands to form the mixture into 2-4 tubes. Wrap these tubes in plastic and place them back in the fridge for at least another 60-90 minutes before serving.  SERVE: When you're ready and the tofu cheesehas firmed up, remove it from the fridge and unwrap it or pull it out of the silicone mold as needed. Serve as a spread with a cheese knife onto crostini, crackers, bread, cucumbers, or all your favourite veggies. Use it to veganize all your favourite recipes that call for soft goat cheese! STORE: Store leftovers in an airtight container in the fridge for 5-7 days. You can also freeze leftover cheese in an airtight container for up to 8 weeks. Defrost in the fridge until thawed through. This takes about 3-4 hours depending on the size of the serving you're defrosting. It all started with my mission to craft the ultimate vegan cheese using tofu—rich, creamy, and totally keto-friendly. But here's the twist: somewhere along the way, I stumbled upon a recipe tweak that led to a surprise discovery—a keto houmous! Yes, you heard that right. It's smooth, garlicky, and perfect for those low-carb crackers or crudites. In this episode, I'll share the step-by-step process for both recipes, the lessons learned along the way, and a few tips to elevate your vegan keto game. Whether you're here for the cheese, the houmous, or just a bit of culinary inspiration, you're in for a treat. So grab your apron, and let's get stuck in! These cutout cookies are wonderful, particularly at Christmastime when you can use prized seasonal cookie cutters. You will not believe how wonderful your house will smell when you bake these. Another plus is that the dough can be prepared in advance. Make it up to 1 week ahead and freeze. Defrost it overnight in the refrigerator, then let it stand at room temperature for 15 minutes before rolling.Crystal sugar has larger granules than granulated sugar and is used for decorating. While optional, it makes these look pretty. The sugar can be purchased at baking supply stores and some supermarkets.

The sisters share a story about the first recorded road trip ever, road trip best practices for moms and share the best burger recipe.WHATS FOR DINNER:Steakhouse Burgers (from Once Upon a Chef)INGREDIENTS2 pieces white sandwich bread, crusts removed and cut into 1⁄4-inch pieces 1⁄3 cup milk21⁄2 teaspoons kosher salt1 teaspoon freshly ground black pepper3 garlic cloves, minced11⁄2 tablespoons Worcestershire sauce2 tablespoons ketchup3 pounds 80 to 85% lean ground beef3 scallions, white and green parts, very nely sliced (optional) 8 hamburger bunsINSTRUCTIONSPreheat the grill to high heat.In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into 3⁄4-inch patties about 41⁄2 inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.Oil the grilling grates. Grill the burgers, covered, until nicely browned on the rst side, 2 to 4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.Freezer-Friendly Instructions: e uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.

In this solo podcast, Bryan provides an introduction to heat pumps, explaining the basics of how they work and key considerations in a way that is easy for anyone to understand. He starts by reviewing some core HVAC principles - that heat moves from higher temperatures to lower temperatures, the three main methods of heat transfer, and the concept that temperature is really just a measure of molecular movement. He then explains that a heat pump works by taking heat from a place that doesn't matter, like the outdoors, and putting it where it is wanted, like inside a home. This is the opposite of an air conditioner. The only difference in the actual equipment is the addition of a reversing valve to change the direction of refrigerant flow and a defrost control board. He talks about the need to defrost the outdoor coil when ice builds up and what happens in that mode. Some key challenges and design considerations he covers when using heat pumps include: dealing with defrost and where the melt water will go, keeping the outdoor unit free of snow, supplemental heating systems for when the unit can't keep up, increased electrical load, and factors like the climate zone, home efficiency, electricity prices, and infrastructure. He emphasizes that with good design focused around heat pumps, they can work efficiently even in cold climates. You wanted to learn so lets do this. Its so fun cooking with you!Crispy Parmesan Prosciutto PastaIngredients 1 lb Linguine pasta 3 cloves garlic minced 2 cups heavy whipping cream 4 oz Parmigiano Reggiano grated 3 oz Prosciutto Mozzarella Panino chopped 8 oz mushrooms slicedInstructions1. Cook pasta as directed on the package. While pasta is cooking, add minced garlic and mushrooms and 1 tbsp butter to a large skillet over medium heat. Cook for 1-2 minutes, until butter is melted and garlic is fragrant. Add cream and bring to a boil. Add the grated Parmesan and allow to simmer for 5 minutes, or until sauce begins to thicken. Pour the cream sauce over the cooked and drained pasta. Toss with chopped prosciutto. Season with salt and pepper.Sticky Chinese Pork BellyIngredientsSlow Cooked Pork Belly: 2.2 lb (1Kg) rindless pork belly slices chopped in half (each piece being approx. the length of your index finger) 4 1/4 cups (1 Litre) hot chicken/veg stock 1 thumb sized piece of ginger peeled and finely chopped 3 cloves garlic peeled and chopped in half 1 tbsp. rice wine (I just use whatever I have on hand) 1 tbsp. caster sugarGlaze: 2 tbsp vegetable oil pinch of salt and pepper 1 thumb-sized piece of ginger peeled and minced 1 red chilli finely chopped (or tsp crushed red pepper) 2 tbsp Honey 2 tbsp brown sugar 3 tbsp dark soy sauceInstructions1. Add all the slow cooked pork belly ingredients to a pan (not the glaze ingredients) I use a cast iron casserole pan like this

Joey Henderson returns to the podcast to talk about heat pumps and inverters. The reversing valve, defrost cycles, and auxiliary heat can cause confusion for people who have primarily worked with furnaces or straight-cool A/C systems. Heat pumps use defrost cycles and bring on the auxiliary heat when the coil is ice-bound, which can present a challenge; we need to maintain cold coils without going into defrost all the time.  Even though heat pumps were significantly less effective in years past, we will still see reduced performance in very cold conditions with the newer inverter-driven systems. Proper design, installation, and commissioning will also help occupants get the best performance out of their heat pumps. Inverters offer plenty of advantages for the cooling aspect of heat pumps, too, especially when it comes to achieving longer runtimes for dehumidification. They can also float their coil temperature, much like how refrigeration systems can use floating suction or head pressure. Condensate assemblies absolutely must be run properly to prevent backed-up drains and other related problems. Liquid line sizing and proper commissioning are also especially crucial for ductless inverter-driven systems. Nick is solo on this episode, and reflects on an article by Greg Morse. Expanding on the Proverbs 12:27, Nick is noticing areas where he has gotten worn down and lazy. In the examples it doesn't just point to hunters not roasting their game, but points to areas where we as men have lost motivation and slacked. The Beautiful thing is we can alway get back up, and get better. This year, maybe one of your resolutions is to eat healthier or add more plant-based foods to your diet. Or maybe you're a vegetarian looking for some recipes to shake up your menu. Or maybe you're trying to move beyond high carb meals. Cook and food blogger Vasudha Viswanath has you covered in her new cookbook, The Vegetarian Reset. She joins to discuss and take listener calls.   Saag Lasagna Recipe from The Vegetarian Reset Here I replace the traditional meat sauce with a glorious spinach gravy that I typically use for saag paneer, and use ricotta for simplicity instead of the béchamel. This is a rich, unique dish that will rightly take center stage at every dinner party. In the photo the recipe was doubled and baked in a 9-x-13in baking dish, which is great for a crowd.   Ingredients 2–3 medium zucchini (1 lb/450g) 1½ tsp salt, divided, plus more forsprinkling zucchini 1 Tbsp ghee, or butter 1 tsp cumin seeds 1½ cups/240g diced onion 1 Indian green chile, jalapeño pepper, or Thai chile, chopped 1 Tbsp grated ginger 1 Tbsp minced garlic 1 cup/240ml water 1 lb/450g fresh spinach, if frozen thawed 1 tsp garam masala 15 oz/425g whole-milk ricotta ½ tsp cracked black pepper 2 oz/56g grated low-moisture mozzarella   Directions Step 1. Slice the zucchini lengthwise into 1/16 in/1.5-mm-thick slices using a mandoline slicer or knife. (Be very careful while using a mandoline; always use cut-resistant gloves.) Place the zucchini in a colander over a bowl, sprinkle it lightly with salt, and set aside for 15–20 minutes to draw out the moisture as you make the saag. Step 2. Preheat the oven to 400°F/200°C. Heat the ghee in a medium saucepan over medium heat. When hot, add the cumin seeds and wait until they are aromatic, then add the onions. Increase the heat to medium-high, and cook, stirring occasionally, until golden brown and caramelized. Step 3. Lower the heat to medium, add the green chile, ginger, and garlic, and sauté for 30 seconds. Pour in the water and bring to a boil. Mix in the spinach gradually and cook until it just wilts. Add the garam masala and 1 teaspoon salt and mix well. Turn off the stove and use an immersion blender to blend the spinach mixture until smooth. Step 4. Mix the ricotta, remaining ½ teaspoon of salt, and the pepper well in a bowl and set aside. Pat the zucchini slices dry with paper towels. Step 5. To assemble, in an 8-x-8-x-1 1/2 in/20-x-20-x-4-cm baking pan or casserole dish, layer one-third of the spinach saag, one-third of the zucchini slices, and half the ricotta. Repeat. Top the last layer of ricotta with the remaining spinach saag and zucchini slices, and sprinkle mozzarella evenly on top. Step 6. Bake for 40–45 minutes, or until the cheese melts and turns golden brown in spots. Serve hot. Cooking Notes Freeze leftovers in an airtight container for up to 2 months. Defrost in the microwave.
