Claude Achaume has been working as the private rooms manager for the exclusive 5 Hertford Street Private Club in London for several years and in this podcast, he shares his experiences and some interesting anecdotes that have made headlines! Angela Hartnett has become one of the most high-profile women in the restaurant world. Now, as well as running her many restaurants, she has turned her hand to podcasting as the co-host of the Waitrose podcast ‘Dish' with Nick Grimshaw. Having first studied history, Angela went on to work for Gordon Ramsey for 17 years, despite many of her male colleagues thinking she would last a week or two at most, something she discusses here. She got her first Michelin star at The Connaught in London in 2004 and opened her restaurant Murano in Mayfair in 2008, winning a Michelin star within 4 months of opening. In 2022 she was awarded an OBE for services to the hospitality industry and the NHS during Covid. However, his life took an unexpected turn in 2018 when he suffered a traumatic spinal injury that left him without the use of his legs and feet.But Fergus refused to let this define him. With unwavering determination, he underwent surgery and embarked on a journey of recovery that would defy all odds. Through sheer willpower and the support of his loved ones, Fergus regained movement in his toes and went on to accomplish something truly extraordinary.In a remarkable display of strength, Fergus completed a 206-kilometer walk from his injury site in Athenry, Galway, to the National Rehabilitation Hospital in Dún Laoghaire. This incredible feat not only symbolized his personal triumph but also raised €70,000 for the hospital that played a crucial role in his recovery.He serves as an ambassador for Darkness into light Athenry, raising awareness of mental health challenges associated with life-changing injuries.In recent times Fergus is also known for his rowing endeavors. He was medically evacuated from a rowing vessel called Cushlamachree in the Atlantic Ocean. The Singapore flagged tanker, Hafnia Shenzhen, responded to a request for assistance from the US Coast Guard and brought Fergus on board. He had to leave his rowing partner, Damian Browne, behind due to a suspected blood clot. Fergus's rowing journey aimed to set a new Guinness world record in their purpose-built Seasabre 6.2m craft, from New York to Galway.Fergus's journey is a shining example of the resilience of the human spirit and a reminder that there are no limits to what one can achieve when faced with adversity. William Butler Yeats is widely considered to be one of the greatest poets of the 20th century. He was born in Dublin. His father was a lawyer and a well-known portrait painter. Yeats was educated in London and in Dublin, but he spent his summers in the west of Ireland in the family's summer house at Connaught. The young Yeats was very much part of the fin de siècle in London; at the same time he was active in societies that attempted an Irish literary revival. His first volume of verse appeared in 1887, but in his earlier period his dramatic production outweighed his poetry both in bulk and in import. Together with Lady Gregory he founded the Irish Theatre, which was to become the Abbey Theatre, and served as its chief playwright until the movement was joined by John Synge. His plays usually treat Irish legends; they also reflect his fascination with mysticism and spiritualism. The Countess Cathleen (1892), The Land of Heart's Desire (1894), Cathleen ni Houlihan (1902), The King's Threshold (1904), and Deirdre (1907) are among the best known. After 1910, Yeats's dramatic art took a sharp turn toward a highly poetical, static, and esoteric style. His later plays were written for small audiences; they experiment with masks, dance, and music, and were profoundly influenced by the Japanese Noh plays. Although a convinced patriot, Yeats deplored the hatred and the bigotry of the Nationalist movement, and his poetry is full of moving protests against it. He was appointed to the Irish Senate in 1922. Yeats is one of the few writers whose greatest works were written after the award of the Nobel Prize. Whereas he received the Prize chiefly for his dramatic works, his significance today rests on his lyric achievement. His poetry, especially the volumes The Wild Swans at Coole (1919), Michael Robartes and the Dancer (1921), The Tower (1928), The Winding Stair and Other Poems (1933), and Last Poems and Plays (1940), made him one of the outstanding and most influential twentieth-century poets writing in English. His recurrent themes are the contrast of art and life, masks, cyclical theories of life (the symbol of the winding stairs), and the ideal of beauty and ceremony contrasting with the hubbub of modern life. Dr Selina Guinness is a lecturer in English (Irish Literature) in the Department of Humanities and Arts Management at IADT. Her memoir about farming on the fringes of the city, The Crocodile by the Door, was published in 2012 by Penguin Ireland. In this episode, Justine interviews Italian Chef Marco Zampese as he shares about his love of pasta as well as his earliest and fondest first memories of food, with a family tradition of the breaking down of the pig for charcuterie.Marco's background saw him grow in many restaurants, and even as a chef to the Italian professional Cycling Team but in 2012, after graduation, a chance phone call from a friend and the lure of London's dynamic restaurant scene saw him travel to the UK to work at 1 Michelin star Wild Honey in Mayfair. He intended London to be the first stop on his global travels; however, he quickly flourished and developed as a chef under Anthony Demetre's tutelage. He was promoted to Sous Chef after just six months and thrived in the fast-paced, detail-focused Michelin kitchen.Next, Marco was looking for a new challenge, and Demetre kindly suggested he consider Hélène Darroze's London restaurant. After a successful trial, he started working at Hélène's two Michelin starred restaurant ‘Hélène Darroze at The Connaught' in January 2014, joining the team. He rapidly climbed the culinary ranks, was promoted to Junior Sous Chef after just few months, then Sous Chef and became Head Chef in 2018. Melissa sits down with Claridge's archivist Kate Hudson and lead butler Michael Lynch, who have intimate knowledge of the hotel's rich history and its legendary guests. Claridge's has undergone numerous renovations over its 169-year history, most recently a first-of-its-kind renovation from 2016 to 2021, chronicled in the BBC documentary series, The Mayfair Hotel Megabuild. Despite the extensive renovation, Claridge's miraculously stayed open throughout the entire process, a testament to their commitment to providing high-quality luxury service. We natter about designing luxury hotels as two of Guy's long-term projects are Dublin's The Shelbourne and London's Connaught hotels. Guy joined Oliver Laws after finishing his commission as a Royal Naval Officer and credits the training with being able to work with demanding clients including first boss, David Laws. ‘I was used to dealing with eccentric characters,' he says, ‘they were no more challenging than the average Admiral, captain, or even my parents'. His work often involves historic or listed buildings and interiors - ‘Finding the subtle interplay between authenticity and taste is the very essence of what we do and are known for'.
