We welcome a man with clear rules on food! Chris McCausland is a comedian, author, and Strictly Come Dancing champion. Within minutes of sitting down with Nick and Angela, he's critiquing the Dish chair and explaining the mathematical shape of a Pringle, setting the tone for a brilliantly entertaining episode. Chris is one of the busiest people on the circuit, with his tour Yonks spanning years, multiple legs, and even multiple shows in a day. Alongside that, his memoir Keep Laughing tells the story of his life, from growing up in Liverpool and losing his sight, through to becoming one of the UK's most loved stand-ups. He tells us how the book came together without a plan, why writing about his early life proved more interesting than his comedy career, and how Strictly opened him up emotionally in ways he never expected. Chris is greeted with a cold Fentimans ginger beer and salt and vinegar Pringles – his favourite! Next up, Angela served a piping hot cottage pie using a recipe by Martha Collison, with a side of Savoy cabbage. Angela's hearty dish makes quite the impression! Tom Davis is an actor, comedian, podcaster, writer and proud south Londoner. Fresh from delivering the goody bag for Romesh Ranganathan, he settles in with us for a proper catch-up over a delicious pie. Tom's latest tour, Spudgun, sees him return to the comedy circuit after a period away from the stage. You'll have seen and heard from him plenty in that time, though, with acting credits including Wonka and A Thousand Blows plus TV appearances on shows including A League Of Their Own and, of course, his weekly podcast with Romesh, Wolf & Owl. Tom famously started out in comedy when he was working on building sites, but less is known about his time in the restaurant industry. He chats to us about his work in the kitchen, including a spell at The Connaught, which sadly didn't overlap with Angela's time there. Air Week: February 16-22, 2026 Annie Laurie We celebrate one of the heroines of Rhythm & Blues and early Rock n’ Roll as Annie Laurie takes the spotlight on this week’s “Juke In The Back.” Not much is known about her early years except that she was born in Atlanta in 1924. Her first recording was “St. Louis Blues” with bassist and bandleader Dallas Barley and from there she toured with Snookum Russell before Paul Gayten asked her to join his band in New Orleans. She made the “Crescent City” her new home and recorded the first hit version of Buddy & Ella Johnson’s “Since I Fell For You,” helping to make it a standard. Many classic recording with Paul Gayten followed with a few more making the charts before she began recording on her own on Columbia’s newly reactivated Blues subsidiary, Okeh Records. The Okeh sides were harder-edged and more contemporary R&B sounding, but none of them charted. A short stint with Savoy proved unfruitful, but she did get to record with Hal Singer’s band, which included guitar legend, Mickey Baker. She was back in the R&B Top 5 in 1957 with “It Hurts To Be In Love” for DeLuxe, but by the early ’60s, she gave up music for devotion to God. Ruben's an old friend from Amsterdam, a native Aruban who bartended in Amsterdam and London, and whose life was changed by a Diplomatico rum training he attended while working as a flair bartender at London's famed Roadhouse. (That training was given by none other than Declan McGurk, himself a former flair bartender, who went on to become Director of Bars at The Savoy, leading them to a #1 spot on W50BB, and is now Commercial Director for Boatyard Gin) Ruben went back to Amsterdam with rum in his heart and started Spirited Union rum, inventing “botanical rum”as a category in the process, delivering orders in person, on his bicycle, for the first few years. He then crowdfunded (!) buying the former Our/Vodka distillery & bar from Pernod-Ricard, whose bar, cocktail classes and rum blending workshops have made it the #1 activity in the Netherlands on TripAdvisor. (Last week's episode was with Brendan Bartley, btw, who bought the Our/Vodka NY bar & distillery and reopened it as Hello Hello Cafe & Bar and Silent Alibi distillery, making 11th Hour Coffee liqueur and more). Ruben's gone from strength to strength with Spirited Union rum, exporting across Europe, to the UK, and to five states in the US (where their first customer was Whole Foods!) and recently started Pineapple Drinks Club to import & distribute founder-led brands in the Netherlands. Full Text of Readings The Saint of the day is Saint Francis de Sales Saint Francis de Sales' Story Saint Francis de Sales was destined by his father to be a lawyer so that the young man could eventually take his elder's place as a senator from the province of Savoy in France. For this reason Francis was sent to Padua to study law. After receiving his doctorate, he returned home and, in due time, told his parents he wished to enter the priesthood. His father strongly opposed Francis in this, and only after much patient persuasiveness on the part of the gentle Francis did his father finally consent. Francis was ordained and elected provost of the Diocese of Geneva, then a center for the Calvinists. Saint Francis de Sales set out to convert them, especially in the district of Chablais. By preaching and distributing the little pamphlets he wrote to explain true Catholic doctrine, he had remarkable success. At 35, he became bishop of Geneva. While administering his diocese he continued to preach, hear confessions, and catechize the children. His gentle character was a great asset in winning souls. He practiced his own axiom, “A spoonful of honey attracts more flies than a barrelful of vinegar.” Besides his two well-known books, the Introduction to the Devout Life and A Treatise on the Love of God, he wrote many pamphlets and carried on a vast correspondence. For his writings, he has been named patron of the Catholic Press. His writings, filled with his characteristic gentle spirit, are addressed to lay people. He wants to make them understand that they too are called to be saints. As he wrote in The Introduction to the Devout Life: “It is an error, or rather a heresy, to say devotion is incompatible with the life of a soldier, a tradesman, a prince, or a married woman…. It has happened that many have lost perfection in the desert who had preserved it in the world.” In spite of his busy and comparatively short life, he had time to collaborate with another saint, Jane Frances de Chantal, in the work of establishing the Sisters of the Visitation. These women were to practice the virtues exemplified in Mary's visit to Elizabeth: humility, piety, and mutual charity. They at first engaged to a limited degree in works of mercy for the poor and the sick. Today, while some communities conduct schools, others live a strictly contemplative life. Reflection Saint Francis de Sales took seriously the words of Christ, “Learn of me for I am meek and humble of heart.” As he said himself, it took him 20 years to conquer his quick temper, but no one ever suspected he had such a problem, so overflowing with good nature and kindness was his usual manner of acting. The only thing left for Cosimo III is to try to guarantee Tuscany's independence in the future, even though most of the great powers of Europe are working against him.ERRATA: In this episode I said that King Philip V of Spain and Elisabeth Farnese's firstborn son was Carlos. What I overlooked was that Philip V had a wife before Elisabeth, Maria Luisa Gabriella of Savoy, and they had three sons, Luis, Felipe Pedro, and Fernando. This is important because I suggested wrongly that Carlos stood to inherit both the Spanish crown, the duchy of Parma, and Tuscany if he were made the eventual heir. While his older half-brothers would die and Carlos *would* become King Carlos III of Spain eventually, at the time Cosimo III was still alive he was a possibility to keep Tuscany independent (if also very likely a satellite of Spain). At least it is true that Cosimo III was still opposed to the possibility, preferring instead to let Anna Maria Luisa appoint her own successor. I apologize for the error!

Brisa Carleton joins Carol Fitzgerald to talk about her debut novel, LAST CALL AT THE SAVOY, which is a Bookreporter Bets On selection. The inspiration for the book came when Brisa was visiting The Savoy Hotel in London more than a decade ago. She saw a footnote about Ada Coleman in a cocktail menu and was surprised that so little information existed about her. Ada was a prominent mixologist at the hotel from 1903 to 1925, and she invented many cocktails, including the "Hanky Panky." Brisa discusses writing a dual timeline for the book: the historical story about Ada and the modern one featuring Cinnamon Scott, an aspiring New York writer who travels to London to help her pregnant sister, Rosemary, at The Savoy. An award-winning Broadway producer with three Tony wins to her credit, Brisa also talks about her role as a producer and how it differs from being a writer.
