Midt mellem deep tech-virksomhederne i DTU Science Park har fermenteringskokken David Zilber sit laboratoriekøkken.     Hylderne er fyldt med fermenteringskrukker og scoby'er, og de fire store, summende industrikøleskabe rummer et skatkammer af glas med syltet rabarber, asparges og alverdens andre grøntsager. Fremme på det centrale køkkenbord står redskaberne og råvarerne til Zilbers næste eksperimenter med at udvikle fremtidens smage og ingredienser.    Zilber er sprunget ud som fødevareforsker, men hans praksis og tænkning har længe været de dygtigste forskere værdig: Som chef for Nomas fermenteringslaboratorium stod han i spidsen for en skelsættende undersøgelse af madens mikrobielle grundlag, og som et sidestykke til sin eksperimenterende kokkegerning har han researchet sig til en dyb viden om den mikrobiologi, som både fermentering specifikt og smag generelt beror på.    Videnskaben er Zilber vokset op med. Hans far var fly-ingeniør for NASA og podede ham fra en tidlig alder med bøger om solsystemet, Carl Sagans 'Cosmos'-tv-serie og besøg på videnskabsmuseer, og siden da har hans videnskabsinteresse medført lidt af en sneboldeffekt.    I dag er videnskaben blevet hans store passion og hverdag, og som selvstændig laver han forskning for fødevaregiganten Chr. ONCE UPON A GENE - EPISODE 194 A Guide for Rare Disease Patient Advocacy Groups - Choosing and Designing a Patient Registry with Sophia Zilber Sophia Zilber has 28 years of experience in the pharmaceutical industry and she's a patient registry expert, volunteering her expertise to help the rare disease community in memory of her daughter who died from a mitochondrial disease called Leigh's syndrome.  EPISODE HIGHLIGHTS Can you tell us about yourself and your experience as a rare mom? My personal experience with rare disease started 6 years ago when my daughter was born with Leigh's syndrome. She became very sick at about three weeks old and she died a month later. Professionally, I work in data analysis for clinical trials in the pharmaceutical industry. Since the loss of my daughter, I have used my knowledge to help with patient registry data. I'm also currently on the board for the Cure Mito Foundation.  What is a patient registry? A patient registry is a collection of data that describes a specific disease which can be used for purposes such as clinical trials, research on the disease, understanding a disease burden, examining how people use the healthcare system or to look at the natural history of the disease. There are many valuable reasons to have a patient registry.  How do you determine the most valuable information to include in a patient registry? Understand the scope and what your group can realistically achieve. Think about what you want to get out of the registry, whether or not the data is accessible, if you want to recruit patients for clinical trials or if you will share insights with the community.  For small groups without money, how do they start a registry? When it comes to data, less is more. If you have a smaller data set with information relevant to the disease that shows specific findings about the disease, the quality of the data will be better. I recommend that every group has an advisor who can analyze the data dictionary, assess and understand it, and advise the appropriate format of the data based on the goals of the group. When you have data available in a good format, you can share insights and use the registry to advance the group's goals, and it doesn't have to cost a lot.  What advice do you have for groups who have a registry, but don't know what to do with it? Don't wait for researchers to take interest in the data because there's a lot you can do with it on your own. If you have data you can access and draw insights from, share that within the community to raise awareness. Print posters and share them at conferences. If you have the resources, write a paper to distribute. Make sure companies who do clinical trials know you have a registry. Know your data because the better you know your data, the more others will see the value in your findings.  Today is World Rare Disease day. It is only fitting that we speak to Sophia Zilber who is a statistical programmer, but also Board Member & Director of Patient Registries at the Cure MITO Foundation, about bridging the gap between the life sciences industry and patient registries in rare diseases. Sophia has experienced first hand how rare diseases lack both data and funding. Using her personal tragedy and statistical programming skills, Sophia engaged in patient advocacy groups attempting to collect patient data for research.  Pharmaceutical companies are often looking for data sources to understand diseases. And patient advocacy groups are eagerly collecting data in the hopes that it will make a difference for finding treatment and cures. But in many cases the data collected is not usable for actual research purposes. Currently there is no guidance on how to create a patient registry that will contain a high enough quality of data to be used for research. When a person has pure intentions, his deeds become so much more powerful. The Torah tells us Betzalel made the Aron Hakodesh in the Mishkan . That is the only vessel in which the Torah tells us who made it. The Meshech Chochma writes, the reason Betzalel was chosen for this job is because the Aron had to be made with the purest intentions, and Betzalel was the perfect candidate for it. In fact, Betzalel was chosen to oversee the entire construction of the Mishkan because he was able to know the intentions of each person who donated towards it. He was given a gift from Hashem – לחשוב מחשבות - and Hashem wanted the donations with the purest intentions to be used for the most important kelim . A pure deed with pure intent can do wonders. Rabbi Yoel Gold told a story about a man named Zev Zilber. Mr. Zilber and his wife flew into California for a wedding and, on their way to the hotel, they got a flat tire. They were in a Jewish neighborhood at the time. Mr. Zilber got out of his car to see if he could find help. It was 11:15 at night. He saw someone walking out of a shul down the block, apparently after he finished Arbit . He asked the man if he could help him with his flat tire and the man was more than happy to help. He got down on his hands and knees and, fifteen minutes later, he had the spare tire on the car. Mr. Zilber then offered to pay this man, but the man refused, saying he was so happy to be able to do a chesed for another Jew. Mr. Zilber then gave this man his card and said, “If you are ever in New York, please call me. I’ll help you with whatever you need.” He really wanted to do something right then and there as a token of his appreciation. There was something about Mr. Zilber’s sincere desire to give this man that made him open up to him. The man said, “There is something you could do.” He and his wife had been married for many years without children. He asked Mr. Zilber if he could give him a beracha . Mr. Zilber got very emotional. His eyes teared up and he took that man’s hand, closed his eyes, and with all of his heart, he blessed the man that Hashem should give him a baby. Ten months after that, Mr. Zilber received a phone call. It was that man saying, “Do you remember me from when I changed your tire?” “Of course,” replied Mr. Zilber, “how could I help you?” The man said, “I’m calling to tell you my wife just gave birth to our first child. Thank you for your beracha . Hashem answered our tefilot .” Mr. Zilber said afterwards, he’s just a regular Jew, but he truly meant every word of the beracha he gave that man and pure intentions go a very long way. A rabbi who teaches in an elementary school told me, it bothered him when he saw the boys having extra time and wasting it. He decided to donate some Tehillim books to the yeshiva, and he told the boys how much they could accomplish by reading just a few perakim each time they had a few extra minutes on their hands. He dedicated the Tehillim in memory of his mother-in-law Rachel bat Sarah – Rochelle Gemal - who passed away earlier this year. A little more than a month ago there was a snowstorm. That day, they were supposed to have the 11 th month araya for his mother-in-law where they would read the entire Tehillim and give eulogies. Due to the snowstorm, they had to cancel it. That same day, school was on for the morning hours but a few of the rebbes were not able to drive in. At about 12:00, a group of boys came to the Rabbi to tell him they decided together to use the free time they had to read Tehillim . They read the entire Tehillim that morning, l’ilui nishmat Mrs. Gemal. They had no idea that on that day was supposed to be her arayat and it got canceled. Hashem worked out that she still had the entire Tehillim read on her behalf. Her son-in-law had pure intentions in donating those Sifreh Tehillim and Hashem blessed his efforts in an amazing way. The more purity we have, the greater our deeds will be.

In episode forty of the Glow Journal podcast, host Gemma Watts sits down with the founder and CEO of Jouer Cosmetics, Christina Zilber.Christina Zilber has had an affinity for makeup for as long as she can remember. One of her earliest memories was playing with the makeup of her mother, a model, a career path Christina herself followed upon graduating from college. Christina hated modelling, and told me that it was in the makeup chair that she felt she had found “her people.” Watching and learning from makeup artists was her salvation, and it was there, on set and in the makeup chair, that the idea for Jouer was born. A makeup artist gifted Christina with a refillable palette, inadvertently answering Christina’s prayers for a palette filled only with colours and products that she would actually use. When she discovered that said palette did not fit in her evening bag, Christina began to develop an interchangeable palette system- one that was completely portable and customisable. The first incarnation of Jouer was born in 2004, and what began as an interlocking makeup palette system relaunched as a fully fledged cosmetics company in 2008- the Jouer that we now know and love. Beyond her work at Jouer, Christina also sits on the board of UNICEF, a role that has truly shaped her perception of what beauty truly is. She tells me that “We can't see beauty as something that's just superficial. Beauty is as beauty does. It is what you do in your life that makes you beautiful.”I think it’s important for me to note that we did record this in February when Christina was visiting Australia from the US, so the current state of the world isn’t touched on in this particular interview. Christina does, however, talk about the stock market crash of 2008 and how New York City became a ghost town. While this is, of course, completely different to what we’re now living through, this did feel, to me, like a message of hope- that we are in this together, and that we will come out on the other side. Another thing we talked about is the transformative power beauty can have on one’s mood. I imagine the notion that beauty has such transformative powers feels blasé to a lot of people right now, but I’m sure the vast majority of the people who listen to this podcast do so because they like how beauty makes them feel- so I promise you that I am going to continue trying my best to keep producing content that makes you feel good and inspired for as long as I possibly can. In this conversation, Christina shares how a product that didn’t sell ended up becoming a breakthrough for her brand, how she is overcoming self doubt, and how to stay true to your brand’s DNA while continuing to evolve. Around the time makeup palettes started coming out, she had an idea about having a built-it-yourself palette, where you can only have the colors that match you, instead of a bunch of colors you'll never want. She met with a consultant who loved her idea and with that help and confidence Jouer was launched in 2008! “I don't want to be slide 6 of 15 of the concealers you need now article. That won't sell my product.” She has sold her products on HSN, QVC, gotten into magazines and boutique stores, but influencer marketing is what's really blasted her business into the stratosphere. When she started working with influencers, she was able to double her business in a year! No wonder she's all in on it now. Danny Seamen is Director of MEF-Israel and a 31-year veteran of the Israeli government, having served as Director of the Government Press Office and Deputy Director General of the Ministry of Public Diplomacy and Diaspora Affairs. Since retiring from government, Mr. Seaman has been a media consultant and worked as bureau chief of Voice of Israel, an English language Talk Radio station, as well as editor of English language content at Mida.org.il, an online conservative Israeli current affairs and opinion magazine. Neri Zilber is a journalist and analyst on Middle East politics and culture, and an adjunct fellow of The Washington Institute. Prior to joining the Institute, he was a Tel Aviv-based fellow of the Institute of Current World Affairs from 2011 to 2013, traveling throughout Israel, the West Bank, and Jordan. In addition to reportage and commentary on Middle East affairs, Zilber consults for the private sector on regional political and economic risk. Previously, he worked as a researcher and analyst at the U.S. Library of Congress and the World Jewish Congress.

On today's episode of THE FOOD SEEN, when René Redzepi opened Noma in 2003, he couldn't have imagined that a small Copenhagen-based restaurant would send a ripple through the food scene by way of Nordic cuisine. The same goes for what we've recently witnessed in the world fermentation. An act of aging a piece of produce, or protein (see: chicken wing garum), is calculatedly manipulated, and matured, for maximum flavor through an ever-evolving relationship between microbes and humans, or that's how David Zilber puts it. As head of Noma's fermentation lab, Zilber tabulated his catalog of creation, now known as The Noma Guide to Fermentation, which documents the life choices of koji, kombuchas, shoyus, misos, vinegars, garums, lacto-ferments, and more … all which came to realization when somebody got drunk for the first time.
