For the past few months I have been considering a very specific subgenre of British beer, its place in the wider culture of British beer, and my own enjoyment of it. You might call the beverages within this category by the name saison, sour, barrel-aged, or even mixed-fermentation. None of these terms, however, feel like they do this category, how exciting it is, or what it actually means to people justice. The reasons why they don't are multifaceted—not to mention complicated—but the reason why it's important that we do find the terminology to describe them is because of the vast range of quality and deliciousness producers of these sorts of beers are making. Some of the most stunning things I have drunk over the last 12 months have so often been left to mature in barrels or foeders, typically with a variety of yeasts and bacteria, and sometimes other ingredients ranging from foraged herbs to harvested fruits. I estimate that there are at least 50 producers of these beers within the UK at the moment (and as part of this project I hope to catalogue them). Some of these producers, like Balance in Manchester and Mills in Gloucestershire, are making these kinds of beers outright. Others, like Burning Sky in Sussex and The Kernel in London are making them alongside an existing range of “clean” beers. Now there's a word that easily defines a pale ale, lager or IPA. For some reason, though, I don't think “dirty” is going to work for the beers we're trying to talk about here. But what about “wild?” Sure, it's not not perfect, and I don't think there's a one size fits all solution here, but it works for me. (And how the hell do you present a beer like this to someone who doesn't know anything about them and call them “mixed-fermentation?” Honestly, it's an overly technical term that does nothing to describe how a beer actually tastes, and we need to move on from it.)There's a lot of work to do to unpack the excitement occurring in British Wild Beer, and that's a project I have assigned myself this year. This podcast, recorded in June 2024 at FyneFest, was pretty much the starting point for that thinking. It features an all-star cast, including The Kernel's Evin O'Riordain, Burning Sky's Mark Tranter, Will Harris from Balance Brewing and Blending, plus Dan Wye, who spearheads Fyne Ales own wild beer project: Origins. For a long time I have been asking “who are these beers for,” and you will hear me ask it as part of this panel discussion. Perhaps the biggest lesson this chat taught me is that this doesn't matter, but the beers that are being made definitely do. But how much of do you know of the story behind these beers and the brilliant brewery that makes them?Because the Burning Sky team, led by founder Mark Tranter, prefer to let the beers do the talking.Founded in 2013, Burning Sky have made an indelible mark on UK beer since day one. The Sussex outfit, led by Mark, are a benchmark to many brewers across the diverse spectrum of this incredible liquid.And with the brewery celebrating its 10th anniversary last year, we invited Mark to tell us more about his journey in beer. Speaking at our Brewers Lectures in Bristol last month, he observed how the industry has changed in the last decade and the challenges the brewery has overcome. He explains why Burning Sky's rural location in Firle, East Sussex has both pros and cons, the development of their mixed fermentation offering and why when it comes to business, it's important to understand that everyone's aims and ambitions are different.

After having a very delicious sandwich at Poms Mackor in Salluhallen, we were on our way when we spotted some interesting beers at Falafels and Burgers. We were stuffed from the previous stop so we didn't get anything to eat here. We will come back to try those burgers and falafel. We did get two UK beers. Burning Sky Out of Vogue is an American pal ale made with cascade, chinnok, palisade, simcoe and centennial hops. It's a light refreshing and would pair nicely with one of those tasty looking burgers. Beak Parade is a hazy NEIPA. It's made with citra, mosaic and Idaho 7 hops. It's a strong blend of juicy tropical fruits. Life has a funny way of working out, even if you weren't sure what you were looking for in the first place.For Miranda Hudson and her co-founder and husband Bates, a chance encounter at a wedding a decade ago would eventually lead them to up sticks, start a new life in the country and open Duration Brewing – a farmhouse brewery making beers that belong.Duration Brewing secured planning consent to put their brewery on a scheduled monument site in a grade II* building back in September 2017.Early on, they worked with partners such Manchester's Cloudwater and Oslo's Amundsen to produce beers nomadically. That's in addition to an array of collaborations with UK breweries including Deya, Verdant and Burning Sky.But fast-forward and the Norfolk brewery would cap a successful 2021 with a sleuth of awards.This included being recognised with two of the highest accolades in UK Brewing as Best New Brewery and Best New Beer for flagship American Pale Turtles All The Way Down at our own Brewers Choice Awards.Collecting those awards marked the start of a busy few days for the Duration duo with co-founder Bates stepping away from the brew kit to deliver one of the opening talks at our annual Brewers Congress.A rare public speaker, Bates gave an impassioned and rousing talk on how in building the business he has worked in structures and processes to make beers that belong with a deep respect of their impact.As well as discussing circular waste practices he also talked of his ambition to not grow exponentially and perhaps instead do less with more to stay creative while also putting mechanisms in place to allow for owner-operators with staff equity.And we're sharing that very talk as this week's Brewers Journal Podcast... A new adventure begins, as friends and acquaintances meet at the Poison Apple pub, and learn of a danger that only they can prevent from crashing onto the walls of Gate Pass.
Red Burning Sky is the latest work by Air National Guard Veteran Thomas Young. The novel was inspired by the real mission that is considered by many to be the greatest airborne rescue in history. Operation Halyard took place from August to late December 1944. Halyard successfully rescued 432 US aircrews and 80 allied troops from behind enemy lines. Thomas had over 5,000 hours as a flight engineer in C-130 and C-5 aircraft. During his career he deployed to Afghanistan, Iraq, Bosnia, Kosovo and the Horn of Africa. He is currently a commercial airline pilot. As part of the strategic war effort, the allies conducted bombing raids designed to shut down Germany's oil production. Many of these refineries were located in Romania. From October of 1943 to October of 1944 the 15th Air Force conducted 20,000 bombing sorties out of Italy. The cost was high, losing over 50% of their aircraft. However, they only lost 10% of their aircrews, many bailing out over the Serbian regions of Yugoslavia. Thomas describes the logistical challenges involved in these rescues including the fact that this region was “involved in a civil war in the middle of a World War.” He incorporated many of the real elements of this story into Red Burning Sky including the challenges of keeping so many rescued airmen off the radar of Nazi patrols, the ingenious code developed by the crews to confuse the Germans and the labor involved in carving landing strips using nothing but hand tools. While the characters in Red Burning Sky are fictitious, some were based upon real mission participants such as George Musulin, a former professional football player turned OSS Agent. General Draza Mihailovic, leader of the Chetnik detachments of the Yogoslav Army also plays a prominent role. MIhailovic refused offers of evacuation, choosing instead to stay and fight for his country. Tito's socialists won the civil war and Mihailovic was executed in July of 1946. Much of this operation remained classified for many years. Operation Halyard's story is preserved and advanced by the Halyard Mission Foundation.

I couldn't imagine Burning Sky Brewery and Blendery being located anywhere else. Situated in the village of Firle, nestled amid the rolling South Downs National Park, here is a brewery that's very much of time and a place. The beers it produces—from traditional cask ales, to US-inspired IPAs, and the sublime beverages that come from its barrel ageing program—are a reflection of this, and of the people who brew and blend them. In the latest episode of the podcast, I sat down for a chat with the brewery's founder, Mark Tranter. With over two decades experience in the beer industry, it was wonderful to get the opportunity to pick his brains, reminisce about some of these experiences, and to find out what the future has in store for Burning Sky.Visiting Firle, and the neighbouring town of Lewes, has become something of an annual pilgrimage for me. The first time I travelled there in 2017, Mark kindly arranged for me to visit the magical Harvey's Brewery, as well as some of the amazing pubs the town has to offer. On subsequent visits I've discovered new treasures, including Beak and Abyss brewery, as well as deciding on my definitive Lewes beer destinations. (The Brewers Arms, The Gardners, and Patch Beer Café, for those interested.) On this trip I was also lucky enough to brew a beer with Burning Sky which we called The Broad Spectrum of Joy, after the first chapter of my recent book, Modern British Beer. The beer was subsequently released a few months later to celebrate its launch. It was during this arduous day of brewing, on a scorching hot July day, that I found the chance to catch up with Mark, and record this conversation, which I hope you enjoy. Before we get started today I want to tell you about a couple of upcoming GBH events happening right here in London this September. First up, we’re incredibly excited to be bringing New Belgium’s wonderful sours to British shores for the first ever time, in an event called Into the Wild. They’ll be pouring their 2018 iterations of Le Terroir, Transatlantique Kriek and, of course, La Folie, alongside some incredible cheeses selected by Cheesemonger Ned Palmer, meats from The Charcuterie Board and sourdough from Bread by Bike. We’ve also hand picked a small selection of brewers, cider makers and winemakers to pour alongside them, in an effort to showcase all things delicious and fermentation driven—and crucially—what they all have in common. Along with New Belgium themselves we’ll be joined by, Burning Sky, Cloudwater, Beavertown’s Tempus Project, Boundary, Oliver’s Cider and Perry and New Zealand’s Garage Project, who’ll be bringing natural wines from their Crushed series. It’s happening on September 5th at the Beer Merchants Tap in Hackney, and I hope to see some of you there. We’re also busy prepping for this year’s Beavertown Extravaganza. We’ll be there again this year with two days worth of panel talks happening over the course of both sessions on the 7th and 8th of September. Now onto this week’s episode—an experiment of sorts that ended up being a lot of fun to record. A couple weeks back I travelled to Sligo, on the West Coast of Ireland to visit The White Hag brewery, which happened to be celebrating its fourth birthday with its annual Hagstravaganza Festival. I can’t tell you how many emails and tweets I’ve had over the years from Irish beer lovers asking me when I was going to visit and experience the Emerald Isle’s thriving beer culture for myself. So, while at the festival, I tried to capture as much of that culture as possible in a series of shorter interviews. I hope you’ll agree that the passion, and enthusiasm for Irish beer is infectiously evident in each one of them. Over the next couple of hours you’ll hear from The White Hag’s head brewer, Joe Kearns. Tom Delaney, head brewer at Galway Bay Brewery, and his own mixed-fermentation project Land and Labour. Cormac Wall, an Irishman working for Honest Brew in London, who also recently started contributing to GBH’s b-Roll blog. Wayne and Janice Dunne, who collectively as The Irish Beer Snobs author a blog, and host a podcast of their own. Mark Twig and Maurice Deasy of Canvas Brewery, and Francesca Slattery, of London’s Five Points Brewing Company, who lives in Dublin and works as the brewery’s rep out in Ireland. The Irish beer market is a fascinating one, and also one not without its struggles. It’s an industry dominated by the giants of Heineken and Diageo via its Guinness Brand—the latter going as far as to serve as a core part of this nation’s identity for so many. However, what I found, was that if you scratch below the surface—even just a little—you’ll soon find a thriving set of young, entrepreneurial brewers, each one desperate to prove that the beer scene here is composed of far more than merely “the Black Stuff.” A quick note—this episode was recorded at a working beer festival, so there is some noise. But hopefully that’ll convey how fantastic the atmosphere was at this event.
