Martin and Stefan remember when Cascade Brewing released beers into the European webshops. It was a huge moment for EU beer nerds. 10 years later, Cascade has ceased production sadly. They lament the demise of the sour powerhouse that helped bring sour beers to the mainstream. Cascade Blueberry Ale 2015 is from that first release and after 10 years, it's got a lot of life in it. It could probably go another 10 years. They follow it up with another sour powerhouse beer brewery, The Bruery Terreux. Sans Pagaie 2017 is a sour blonde ale with cherries. Mythmaking and superstition may play a role in others brewers' approaches to making lambic, but for Thomas Vandelanotte—brewmaster for Belgian breweries Timmermans (https://brtimmermans.be), Bourgogne de Flandres (https://www.bourgognedesflandres.be), and Waterloo (https://waterloo-beer.com)—science is a far better tool for achieving great-tasting beer that people want to drink over and over again. “I think it's important, first of all, to not talk about lambic as a wonder of nature, but it's something that can be completely scientifically followed-up,” Vandelanotte says. To that end, he and his team have engaged in deep study of their own brewery environment, the dynamics at play through fermentation and aging, and every barrel or foeder that finds its way into an oude gueuze blend. Their goal is balanced beer—flavorful, citric, not too acidic—and they're intentional in both adhering to the historical parameters of lambic brewing while also using all the modern abalyticak tools at their disposal. In this episode, Vandelanotte discusses: the 118 different yeasts they've found in their environment and fermenting beer growth dynamics over time of different yeasts in lambic the similarity of young fermenting lambic to New England IPA using oxidized hop pellets without destroying what's good about the hops themselves, because “lambic is not the [trash] bin of the hops industry” avoiding low-oil hop varieties and embracing hops of various origins, including U.S. hops the origin of barnyard character in lambic using a variety of barrel sizes and foeders for different fermentation and wood impacts analysis of foeders and barrels to build statistical basis for a theoretical blend that's confirmed or adjusted through sensory flavor differences in types of acid that don't track to titrations open fermentation at Bourgogne de Flandres to drive ester production fermentation dynamics in oud bruin And more. We made it out to Metro in Malmö. They have an interesting tap list but where they excel is their bottle list. They have a wide selection of bottles and cans to choose from. We started with an Orval. This Belgian pale ale is a true classic and just hits right every time you have it. It always makes you wonder why you don't drink it more often. Then we found a real diamond, a 3 Fonteinen Oude Kriek 2016. It's not everyday you see a 7 year-old lambic on a list that isn't crazy expensive. This has aged beautifully. That's too bad, because they are making some great beers and doing a lot of other cool things in Carrollton. On this visit we introduced their Woodcut Wild series of beers in Kriek, Framboise, and Peche. After brewing, the mash for these heads to Printer's coolship but does get a little punch up with some commercial strains when going into barrels. Oh yeah, they also brew with aged hops grown right at the brewery, and future beers will use fruit from their orchard. Neat. We chat with Specialty Brewer Josh Watterson and owner Greg Smith about the importance of terroir in brewing, something that was previously (mostly) ignored by American brewers. Pomona Island Tamaki I is a fruit beer from England. It's made with plums and grilled Hojicha tea added to a farmhouse sour. The result is a delightful blend of plums and tea. It's a playful beer that will be loved by some and disliked by others. Overall, a very fun experiment. De Ranke Kriek de Ranke 2021 is a 70% Belgian sour mixed with 30% cherry lambic. This is a beer that needs to be drunk fresh otherwise you'll miss the cherries. Since they are mixing two things instead of adding cherries to a lambic, you miss the complexity of the cherries that would evolve over time.

Neil will chat with Hans Izaak Kriek Dutch American political journalist, publicist, and author. As a fifteen-year-old boy, Hans Izaak Kriek knew what to become, and you probably guessed it—yes, a journalist. He got the opportunity to follow a training with the youth group Minjon of the national broadcaster AVRO. After his school education and military service, Kriek studied journalism at the People's University for self-study in Arnhem. He mainly prefers radio journalism. In 1970, Kriek got the opportunity to work as a freelance journalist for the local newspaper De Nieuwe Krant and the regional radio station RONO. And in the same year, he switched to the national broadcaster AVRO and worked for various programs, such as the news section of AVRO's radio news and AVRO's sports program, Panorama. He also produced documentaries, did inter- views, and presented the program himself. In 1975, Kriek was asked to work for the national broadcaster TROS and started working as a general reporter and editor. In 1980, they appointed him as a political reporter for socioeconomic affairs and a radio and television presenter. In 1995, Kriek quit his job at TROS and started his own company, Brain Box Media Training BV, in the Media Park in Media City, Hilversum, to coach and train politician leaders, captains of industry, chairpersons of social organizations, and spokespersons of various organizations. His specialty is training spokespersons for tele- vision performances, press conferences, and crisis communication. He worked with more than eight thousand essential people. The company grew into the largest company in the world with three TV studios and thirty-five top trainers. In 2004, TWBA/NL—part of the American communications company Omnicom, listed on the New York.

When Nino Bacelle and Guido Devos started homebrewing together in the 80's, Belgian beer was in the midst of a sea change. Consolidation was afoot as larger industrial breweries swallowed up smaller concerns, while an earlier generation of brewers had reached retirement age with few of the younger generation interested in carrying on the brewing tradition. The beers that they loved and grew up drinking were disappearing—subsumed by a wave of sweeter mass-produced crowd-pleasing beers. To be fair, there were (and continue to be) some historical holdouts. But generally speaking, bitterness was slowly leaving the lexicon of Belgian brewing. Bacelle, who grew up around beer (his father was a guezesteker, or blender, but did not brew), longed for the beers he had tasted growing up. Together with homebrewing partner Devos, he decided to launch a beer brand, De Ranke (https://www.deranke.be), to address the opportunity they saw in the market for beer that embraced bitterness. First was their Guldenberg Tripel, followed closely by what is now considered a paragon of hop-forward beer, the aptly named XX Bitter. Today, these beers feel familiar, but they were groundbreaking in their time and remain somewhat unique today due to the peculiarities of De Ranke's process. On this episode of The Outlines Podcast Jess talks about the 1958 murder of Mary Kriek a nineteen year old Dutch au pair living in Eight Ash Green, Essex. Mary disappeared on January 5th after getting off of a bus and starting to walk the 300 yards to her home. The next day her body was found in a ditch a 20 minutes drive away. Her murder would spawn a huge manhunt all over the Essex countryside and ultimately baffle detectives for 60 years to come.
