What am I reading?Cackle by Rachel HarrisonWild Hope by Donna AshworthWhat am I listening to on repeat?Stubborn Love by the LumineersWhat's for dinner?Minimal Chopping Instant Pot Veggie Soup Ingredients:1-2 tablespoons Olive oil1-2 tablespoons tomato paste 1 onion1 squashDiced garlicFrozen cauliflowerFrozen carrotsFrozen potatoesChicken sausage or vegan sausage (diced) 1 can rinsed chickpeas8 cups veggie brothHerbs to ProvenceSalt & pepper Directions: Sauté onions and garlic in instant pot for a few minutes. Add chicken sausage, sauté for a few more minutes. Add tomato paste, stir for another minute. Add the rest of the ingredients. Set instant pot to “manual” for 7 minutes. Release pressure. Serve! Gingerbread Chai LatteIngredients2 cups milk (dairy or non-dairy)2 black tea bags1 tablespoon molasses1 tablespoon maple syrup1/2 teaspoon ground ginger1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/4 teaspoon ground clovesWhipped cream (optional)Ground cinnamon for garnish (optional)Instructions:Start by pouring 2 cups of your preferred milk into a small saucepan. Heat over medium until it begins to steam, but avoid boiling. While the milk heats, get your other ingredients ready.Add the Tea Bags: Once the milk is steaming, add 2 black tea bags to the saucepan and let them steep for about 5 minutes, ensuring they're fully submerged to release all the flavors.Mix in the Spices: After the tea has steeped, remove the tea bags. Add 1 teaspoon of ground ginger, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground cloves, and a pinch of nutmeg. Whisk thoroughly to combine all the spices.Sweeten the Mixture: Stir in 2 tablespoons of molasses and 1 tablespoon of maple syrup. Continue whisking until the sweeteners are fully dissolved and the mixture is smooth.Finish and Serve: Pour the gingerbread chai tea latte into your favorite mug. Top with whipped cream and a sprinkle of cinnamon or nutmeg if desired.
