405: Pete Gillespie of Garage Project and Hāpi Research Is Fighting the Forces of Homogenization

Homogeneity is the name of the game in certain circles of brewing—from massive brewers who standardize their hop lots by blending before pelletizing, or hop companies that blend lots to iron out highs and lows in a particular crop year. But for Garage Project (https://garageproject.co.nz) and Hapi Research (https://hapi.co.nz)'s Pete Gillespie, that search for the least offensive middle way removes the incentive for everyone to optimize for quality, expression, and individuality that's core to the idea of craft beer. In their brewing program, and in their partnership to pursue new hop varieties, character and unique experiences are the name of the game, and they're putting significant investment behind the pursuit. In this episode, Gillespie discusses: using supporting hops to accentuate lead hop characters the impact of pick time on hop expression variations within single field blocks of hop varieties the dynamic shift in Nelson Sauvin over the picking window terroir's impact on hop flavors and aromas exploring diverse growing areas for hops in New Zealand surprise impact in this year's hops like Southern Cross the inscrutable challenge and benefit of Riwaka Hāpi Research's investment in developing new NZ varieties secrets of selecting Southern hemisphere hops And more. A new report has found that beer makes up almost 1% of our country's GDP. Brewing accounted for $3.6 billion of our GDP last year and 1.3% of the national workforce is employed in the brewing industry, but alcohol excise duties often outpace inflation, and this is having an effect on the industry. Garage Project co-owner Jos Ruffell is calling for smaller hikes in excise tax to support the industry. "Our single largest ingredient cost each month is excise tax to the government," he said. New Zealand's population is smaller than the state of Colorado, but country's exports have had an outsized impact on craft beer over the past decade. From hops such as Nelson Sauvin, Motueka, and Riwaka, to the cutting-edge thiol-optimized Phantasm powder, New Zealand has made undeniable contributions to the flavor evolution of American IPA over the past decade. Jos Ruffel, cofounder of the Wellington-based Garage Project, has had a front seat for his country's evolution from craft beer follower to craft beer influencer. An avowed geek whose pivotal beer experience involved Pliny the Elder, Ruffel and partner Pete Gillespie founded the brewery with Pete's brother Ian in 2011. Their goal was to tap into the creative energy they felt from influential independent breweries half a world away. Today, they've become creative drivers, pushing exploration with their local hops, developing new ways of creating signature Southern Hemisphere thiol-driven flavors, and embracing dramatic service strategies in public-facing events. In this episode, cofounder Jos Ruffel discusses: engaging with ingredients as any chef or brewer should bringing transformational growth to the NZ hop industry through the Hāpi Research center using less glamorous but incredibly important supporting hops in blends maximizing for thiols using a variety of brewing techniques thiol stability and expression in fermentation phantasm powder and the variety of ways to use it in the brewing process the entourage effect between thiols and terpenes the outsized impact of thiol optimization in combination with other hops considering texture and time in beer flavor experience And more. “Simplicity is the ultimate sophistication.”Today I had the absolute pleasure to talk with the Owner of Strider bikes and founder of the All Kids Bike Foundation, Ryan McFarland. Ryan likes to tinker with projects, which is actually how he started creating a balance bike for his 2 year old son. After the balance bike getting a ton of attention he thought maybe there is some demand for a product like this, which turned into the global success of Strider Bikes. Ryan talks about focus and sticking with what you are good at and where you're needed. When Ryan heard about the shocking numbers of decline in children learning to ride bikes, he took it upon himself to boil down the problem to the simplest solution, which was to get biking into the public school eduction system. Ryan started the All Kids Bike Foundation which teaches kindergarten and Grade 1 students to learn how to ride a bike during PE class. It has been a great success so far as they are currently implemented in almost ever state across the country which massive potential and wide reaching impacts. This was an incredible conversation and Ryan dropped so many knowledge bombs that I'm sure you will gain some value from listening and walk away with several nuggets of gold. Business is Boring is a weekly podcast series presented by The Spinoff in association with Callaghan Innovation. Host Simon Pound speaks with innovators and commentators focused on the future of New Zealand. This week he’s joined by Nada Piatek, co-founder and MD of Again Again.Every year, New Zealanders throw out 300 million takeaway coffee cups. Even the ones that are compostable, most often aren’t composted – only one in 400 compostable coffee cups make it to the compost, in fact. Many people have Keep Cups, but not everyone always has their Keep Cup on them at all times. And then there aren’t many choices. But one New Zealand company is out to change that.Again Again offers a service where users can pay $3 to borrow a reusable stainless steel cup with a lid. Bring it back, and you will get your $3 back, with the cafe washing it for future use. It saves cafes money on takeaway cups, and it reduces waste. So far it’s helped remove 840,000 cups from the waste stream each year, and it’s only just getting started.Again Again began in Wellington, has 160 plus cafes around the country in the program, and is now looking to expand their impact and mission. They’re currently equity crowdfunding through PledgeMe – where they’re looking to raise at least $300k to help them expand to tackle other takeaway waste problems, including an exciting new project with Garage Project around their flagons. The company co-founder and MD, Nada Piatek joined us by Zoom, for a chat about how 20 years of entrepreneurship and sustainability initiatives led to this concept, the raise and the goals of the company. Communities looking after endangered speciesToday I am in Wellington and to be more precise: in the Aro Valley. And to be even more precise: on the reserve right next to my favourite brewery, Garage Project. This is simply a huge celebration, and it’s all about the Polhill reserve. Right above us on the hill, and the Polhill Protectors who are looking after this 70 hectares of scruffy regenerating gullies bordered by the suburbs of Brooklyn, Highbury and Aro Valley. Something extraordinary is happening here! For the first time in a century rare birds like kākā and tīeke/saddleback are living together with people in Wellington. The return of Aotearoa’s avian originals into this sweet slice of the Town Belt is courtesy of spillover from the Zealandia Ecosanctuary. The manu taonga are not in a zoo or exiled on an island, but in the wild in urban Wellington's backyard, five minutes from downtown. Polhill is one of Wellington City Council’s most popular reserves with thousands of mountain bikers, runners, ramblers, students, families, commuters, twitchers, dog-walkers and day-trippers using it every week. Polhill's protectors are the users of the reserve who are laying out the welcome mat for the spillover birds: by trapping pests and engaging in bush restoration efforts. Our kaupapa is to be neighbourly with our natives. This has become a really cool place; not just birds either! A few months ago I photographed a peripatus in a rotting log.But for the Polhill protectors this November it has been 5 years since the very first tīeke/saddleback was discovered breeding in the reserve, so we're going to have a party to celebrate all the community efforts that have gone into looking after Aro Valley's wild backyard. It'll be on the Garage Project forecourt, bands, stalls, kids activities etc and I'm sure will attract a decent turnout; it’s on from 1 to 5 pm.Oh, and according to my mate Paul Stanley-Ward, next step: Capital Kiwi! Imagine having kiwi back in Wellington; they’ve already deployed 2000 stoat traps and caught more than 100 stoats; target: 23,000 hectares under control with 4,400 traps by the end of the year.LISTEN TO AUDIO ABOVE

Over the course of a day in Wellington’s famous Museum of New Zealand Te Papa Tongarewa, speakers such as Alexandra Nowell from Three Weavers Brewing Company, Matt Brynildson from Firestone Walker Brewing Company, and Paul Jones from Cloudwater Brew Co. gave talks with a focus on hops. Good Beer Hunting was there to capture a slice of the discussion.   Afterwards, the invited breweries poured for a small festival of 1,000 people. It was a surreal situation: seeing world-renowned breweries like Trillium, Other Half, Hill Farmstead. Tired Hands and Cellarmaker serving beer in New Zealand’s national museum.  *** “Crucial Taunt” is a great name for a fictional band, a beer, and a hacky-sack team—at least that’s what Matt Tarpey from The Veil and I decided when we caught up at the Hāpi Festival and Symposium. When I saw him pass me in the symposium hall, my immediate thought was, “Damn, that’s a nice Veil jacket.” Then I wondered why he looked familiar to me. It’s because The Veil was profiled in 2016 on Good Beer Hunting, complete with some incredible photography from Cory Smith. That story went live soon after the brewery launched; since then, Matt’s talents in the brewhouse have helped The Veil build a sterling reputation for hop-forward beers. In this fourth and final episode from our Hāpi Festival and Symposium, Matt also shares the story of his first helicopter experience, and even gives us a scoop on some expansion plans for the brewery. We learn that in part three of our Hāpi Festival and Symposium podcast series.  The Bruery, from Placentia, California is not a brewery that I had ever associated with hop-forward beers, so I was curious to know why they were at a hop symposium. After our conversation, I tasted Share This: Mole Imperial Stout—if I’m honest, it may have been one of the best beers I tried all day. Listen in.

The symposium and festival form the public-facing side of a hop-breeding initiative Garage Project has undertaken with New Zealand’s Freestyle Farms, and with backing from the country’s Ministry for Primary Industries. *** I was happy to talk to J.C. Hill from Alvarado Street Brewery, based in Monterey, California, as part of our Hāpi Festival and Symposium podcast series. I’d heard exciting things about his beers and loved the artwork on the labels. In our conversation, and in the following interviews, I really wanted to get an understanding of how the experience of visiting New Zealand hop fields would influence brewers when they got back into the brewhouse.  We also talk a bit about Cryo Hops, Italian Pilsners, and how good New Zealand tomatoes taste. The trio first made their presence known with the brewery’s “24/24” series: 24 beers released in 24 weeks to an eager Wellington public.  Since then, Garage Project has made its name by continuing to push boundaries with unusual creations and projects, such as layered beer designed to imitate a flat white, making beers for the Royal New Zealand Ballet, and even releasing a series of natural wines spiked with Lactobacillus or aged on unusual oak. Over the next seven years, they will also be working on the Hāpi project for the benefit of New Zealand’s hop growing industry. I had the chance to take Jos aside, as the festival was in full swing, so he could share just what it was all about. Listen in.

Before we get started today I want to tell you about a couple of upcoming GBH events happening right here in London this September. First up, we’re incredibly excited to be bringing New Belgium’s wonderful sours to British shores for the first ever time, in an event called Into the Wild. They’ll be pouring their 2018 iterations of Le Terroir, Transatlantique Kriek and, of course, La Folie, alongside some incredible cheeses selected by Cheesemonger Ned Palmer, meats from The Charcuterie Board and sourdough from Bread by Bike. We’ve also hand picked a small selection of brewers, cider makers and winemakers to pour alongside them, in an effort to showcase all things delicious and fermentation driven—and crucially—what they all have in common. Along with New Belgium themselves we’ll be joined by, Burning Sky, Cloudwater, Beavertown’s Tempus Project, Boundary, Oliver’s Cider and Perry and New Zealand’s Garage Project, who’ll be bringing natural wines from their Crushed series. It’s happening on September 5th at the Beer Merchants Tap in Hackney, and I hope to see some of you there.
We’re also busy prepping for this year’s Beavertown Extravaganza. We’ll be there again this year with two days worth of panel talks happening over the course of both sessions on the 7th and 8th of September. A few tickets are still available, but they’re selling fast, so head over to beavertownbrewery.co.uk to grab yours now, and we’ll see you there. Now onto this week’s episode—an experiment of sorts that ended up being a lot of fun to record. A couple weeks back I travelled to Sligo, on the West Coast of Ireland to visit The White Hag brewery, which happened to be celebrating its fourth birthday with its annual Hagstravaganza Festival. I can’t tell you how many emails and tweets I’ve had over the years from Irish beer lovers asking me when I was going to visit and experience the Emerald Isle’s thriving beer culture for myself. So, while at the festival, I tried to capture as much of that culture as possible in a series of shorter interviews. I hope you’ll agree that the passion, and enthusiasm for Irish beer is infectiously evident in each one of them. Over the next couple of hours you’ll hear from The White Hag’s head brewer, Joe Kearns. Tom Delaney, head brewer at Galway Bay Brewery, and his own mixed-fermentation project Land and Labour. Cormac Wall, an Irishman working for Honest Brew in London, who also recently started contributing to GBH’s b-Roll blog. Wayne and Janice Dunne, who collectively as The Irish Beer Snobs author a blog, and host a podcast of their own. Mark Twig and Maurice Deasy of Canvas Brewery, and Francesca Slattery, of London’s Five Points Brewing Company, who lives in Dublin and works as the brewery’s rep out in Ireland. The Irish beer market is a fascinating one, and also one not without its struggles. It’s an industry dominated by the giants of Heineken and Diageo via its Guinness Brand—the latter going as far as to serve as a core part of this nation’s identity for so many. However, what I found, was that if you scratch below the surface—even just a little—you’ll soon find a thriving set of young, entrepreneurial brewers, each one desperate to prove that the beer scene here is composed of far more than merely “the Black Stuff.” A quick note—this episode was recorded at a working beer festival, so there is some noise. But hopefully that’ll convey how fantastic the atmosphere was at this event.

Season 3, Episode 22 – New Zealand’s Garage Project recently became available in our local California bottle shops, so this week we’re seeing what the hype is all about…and the hype is real! Before we start the show this week, it should be noted that Matt wasn’t able to make it to Session 35 of Four Brewers due to personal affairs, and thus will not be on this episode or the next one. See you at Session 36, Matt! The first time we heard about Garage Project was at the Firestone Walker Invitation Beer Festival. A hyped brewery that came all the way from New Zealand, making insta-whalez that seemingly nobody in the States could get their hands on. Time has passed and the brewery has grown, and we’re happy to say that Garage Project is finally distributed in the United States. While awesome, there’s a price to pay for these imported brews. Garage Project doesn’t skimp on quality, so expect to fork out a little more cash than you normally would for an American craft brewery of the same caliber.  Garage Project Beers One thing that should be noted about this week’s beers is the freshness of the hoppier brews. Experience with imported IPA and DIPA tells the seasoned craft beer buyer to generally avoid them. Usually, it’s a very real case of #HopsSoFaded because the beer doesn’t hit shelves at its peak freshness. Garage Project’s importer, Craft Imports, seems to be on top of their game, delivering fresh IPA to our local bottle shops in such a timely manner that it tastes like they were bottled last week. This also speaks to the quality of Garage Project brews—they know how to maximize the hoppy freshness we all demand. #ThumbsUp Garage Project/Kyodo Shoji COEDO Brewery/Stone Brewing Collaboration The beers on the show this week range from hoppy, as mentioned above, to strange, but delicious. This week’s episode is a strong juxtaposition to last week’s in that Garage Project’s core is experimenting with unusual ingredients and making creative beers.  Garage Project is making interesting beer, and we’re stoked to finally have them available in California.
