How do you take a hot restaurant concept national without destroying it?This week's episode of the Restaurant Business podcast A Deeper Dive features Chris Schultz, the CEO of Voodoo Doughnut. The doughnut chain was founded in Portland, Oregon, in 2000 by Kenneth Pogson and Tres Shannon. It quickly gained a reputation for off-the-wall doughnuts—we'll let you check out the website for the names of said doughnuts—and a brilliantly pink color scheme. The company has been expanding rapidly with private-equity owners. We talk with Chris about some of the changes the company has made and how the chain can make itself ready for growth without losing the irreverence that helped it gain popularity in the first place. And we also talk with Schultz about the chain's expansion strategy, and whether that strategy can work for a concept that focuses largely on treats.

On the surface, successful growth in business might seem to be about rapid expansion. But that's not the right strategy for every business. Joan Wilder (Kathleen Turner) is a popular romance author who gets a crash course in nonfiction when she has to save her kidnapped sister by delivering a treasure map to the criminal duo Ralph (Danny DeVito) and Ira (Zack Norman) in Columbia. Luckily, somewhat foolhardy, yet trustworthy, Jack Colton (Michael Douglas) shows up and agrees (for money) to guide Joan, which helps her find herself in her own adventure. Oh boy, are there going to be some crocodiles! Romance as well! Romance and crocodiles! Juan (Alfonso Arau) is a huge fan of Joan's writing! Let's go jungle-trucking with him! Meanwhile, Zolo (Manuel Ojeda) is going to mustache-knife his way to that treasure. RTS are intrigued by the cave tchotchke and boating in downtown New York. Host Marvin Stockwell talks to VooDoo Doughnut founder Ken Pogson in Portland, Oregon. Even a for-profit business is a cause to those hearty souls who take the risk, but Voodoo Doughnut has had a charitable thrust since its earliest days. Ken explains how the company's philanthropy started simply enough with giving away day-old doughnuts, and how it grew along with the business into larger checks that do more good. Ken and Marvin also explore Ken's Memphis roots. Back in the mid 1980s, Ken was Marvin's first real boss at the old Fare Four movie theater. Ken was shaped by Memphis' 80s and 90s Antenna Club music scene and his friends in the Grifters. Throw in Memphis pro wrestling and Prince Mongo's various establishments, and all of a sudden the Voodoo Doughnut brand makes complete sense. It's uniquely Portland, but has Memphis' hands all over it.

Fall means doughnuts, at least for Cort. Here's a look back to May 2023 and our conversation with Chris Schultz, CEO at Voodoo Doughnut. Chris Schultz, CEO of Portland's iconic brand Voodoo Doughnut, joined the company in 2017 to bring his 30+ years experience in the restaurant industry to the company. Prior to taking over the leadership of Voodoo, he helped Mod Pizza expand nationwide and before that, worked at Starbucks during its rapid expansion. Since coming aboard, he's helped Voodoo expand into new markets and weather a pandemic. We talk about bringing Voodoo and its Portland ethos to new markets, what the criteria is, and how it's been accepted. Chris drops hints at new locations and also announces a new paintjob for their flagship store, taking place as we spoke. We get to know a bit about Chris, too. Where he eats in Portland, what he thinks of Blue Star, as well as his love of the Pacific Northwest after transplanting here from Southern California 20 years ago. Chris Schultz, CEO of Portland, OR-based Voodoo Doughnut, has four decades of restaurant industry operations and growth experience. Before joining Voodoo Doughnut in 2017, he was Senior Vice President of Operations for MOD Pizza, where he led the concept's expansion from a single unit to 350-plus locations. In this episode, Chris shares the story of two friends' desire to fuse hospitality with a bold and edgy product to open the first Voodoo Doughnut in 2003. At their first location, squeezed between two nightclubs in downtown Portland, they joked about “world doughnut domination”. In 2008, they opened a second unit. Today, Voodoo Doughnut boasts 17 locations in six states. Chris shares with the Corner Booth his plans for product innovation, business culture, and growth. “Although there will be 24 units in operation by the end of the year,” says Chris, "I see us creating a series of stores rather than a chain." He explains, “It's important [for the units] to be similar rather than identical," adding, “We win when we adapt to the neighborhoods we serve." As far as product, says Chris, "we must remain crave-able." Chris takes a hire-for-attitude approach to staffing. "We hire interesting people with the will because we can teach the skill." He reminds all he works with, however, not to take themselves too seriously. "We make doughnuts after all."

We start our episode this week checking in with friends of the show Doughnut Workers United, who have finally won their union at Voodoo Doughnuts in Portland, OR after years of organizing. It only took two days for the strike by food service workers at San Francisco Airport last week to win huge gains. We also give a brief update on where the different rail unions are in the contract ratification process. Workers at the Philadelphia Museum of Art struck this past week when management refused to agree to grant workers raises that would cover inflation. The drive to unionize Trader Joe's has spread to another store, this time in Brooklyn, and unfortunately the company's union busting has followed. As the auto industry shifts to electric vehicles, the UAW faces an uphill battle to ensure the new EV jobs are unionized. Over 13,000 incarcerated workers went on strike against the system of mass incarceration and prison slavery they face over the past week, and the state has responded with violence and attempts to starve the workers out. Finally, as always, we check-in with the Starbucks Workers United movement and discuss the list of contract proposals that the union has released. Houstonians are passionate about their doughnuts: Is it light and crispy? Is it too heavy? Is it just a chunk of wet fried dough? Or maybe it's too sweet, too lurid, or gives you thoughts of the “diabeetus” guy? At any rate, the Canadian fast food chain Tim Hortons has dared set up shop here, which prompts a City Cast team discussion of what's good in the Houston doughnut world: Krispy Kreme vs. Shipley's, or maybe all the great boutique shops like Voodoo Doughnut. So... will the newcomer with the Justin Bieber tie-in (a.k.a. the "Timbiebs Doughnut") even stand a chance in Houston? Visit our Website! You can sign up for the newsletter there, and subscribe to the podcast. (We promise, it will make you a much better Houstonian!) Also, join us on twitter! We are gaining steam every day... We love people of all races, genders, ethnicities and disabilities… but that doesn't mean we won't make a joke about you! In this week's episode we feature Tres Shannon and 'Cat Daddy' who started Voodoo Doughnut in 2003 in downtown Portland. They are known for their creative doughnuts, like the now infamous maple bacon doughnut, and operate seven stores and one food cart. And, of course, the world knows that 'good things come in pink boxes'.
Too soon! Too soon! What are we doing here again, eulogizing one of our musical icons? And yet, there it was: Thursday's news about the death of Prince. This man meant so much to dancers, deviants and DJs.XRAY-FM radio host and DJ for Lifesavas Rev Shines started us down the path. He's scheduled to work at a Three Kings night next month, featuring the music of Prince alongside Stevie Wonder and Michael Jackson. He says it's going to be nuts.“It's making me do my homework,” Rev told us. “I grabbed everything I could find.”As Portland's Hollywood Theatre gears up for a Thursday showing of “Purple Rain,” and Voodoo Doughnuts cranks out a line of purple-frosted, raspberry-filled donuts in honor of the late, genre-busting genius, we went out to talk to two guys carrying the funk forward: Trumpet guru Farnell Newton and funk bandleader Tony Ozier. They joined forces two years ago as the record label FN Beats Galore. Their celebrated lineup, Othership Connection, had a big gig opening for George Clinton this month. And they join in the global remembrance of Prince.“It's a part of the lineage of the music that we play,” said Farnell. We chatted them up about what Prince meant to funk, and what's new with FN Beats. They're hatching plans for a festival of black music this fall — something they promise will showcase Portland's best. Take a listen.
