Then we all had dinner at Dos Caminos before our 7p Book of Mormon Show. At home, we heated up a cinnamon roll Laura went all the way downtown to get us from Losers. Sunday: we got bagels and then coffee, finished the TikTok video to the Two Strangers opening song and then hit the road. "The field recording I chose was rich with historical resonance, immediately reminding me of another sacred route in Japan—Kumano Kodo, an ancient pilgrimage trail deeply connected to spiritual tradition. This parallel between Camino de Santiago in Spain and Kumano Kodo in Japan felt natural, as both sites are UNESCO-designated partners in preserving cultural and historical heritage. "Fortunately, I had my own field recordings from Kumano and Koyasan temple, and as I listened, I was struck by how seamlessly the Buddhist chant and the Spanish gaida (bagpipe) intertwined. Their tonal qualities resonated in a way that evoked a shared sense of devotion, despite being from different corners of the world. "Rather than stopping at this musical dialogue, I wanted to create something immersive — an experience akin to walking along these sacred paths. To achieve this, I incorporated poetry from ancient Japan, reciting verses that reflect themes of journey, reflection, and spiritual connection. By layering these elements, I hoped to offer listeners — whether tourists, pilgrims, or those engaging from afar—a way to connect with the past and feel the enduring spirit of these landscapes. Today, to celebrate the fifth anniversary of the completion of my Camino Francés hike in 2018, I've invited two friends to the show to share their Caminos this year. Beth Bakke Stenjhem went for her second Camino Francés earlier this year with some friends. It wasn't entirely plain sailing, with some nasty injuries along the way. Also today, Frank Levine and his family took on the Portuguese Camino, from Lisbon to Santiago. His story has solidified my plans for the same hike next year, though Dana and I intend to start from Porto for a two-week hike. Chef James Avery worked his way from a pizza delivery boy to sous-chef, under the tutelage of iconic chefs including David Burke and Gordon Ramsay. In 2010, James jumped on a TV opportunity to work on the culinary production team for Gordon Ramsay's hit FOX television show “Kitchen Nightmares.”  CJA stayed on as a Consulting Chef for one of the show's renovated New Jersey restaurants before making his way back to Michael Mina's Sea Blue. In 2011, James joined BR Guest Hospitality helping to open Dos Caminos and its three sister restaurants at Harrah's Resort in Atlantic City. The following year, he returned to FOX television as the Blue Team Sous Chef on Gordon Ramsay's culinary competition show “Hell's Kitchen” for seasons 11-14. In the summer of 2014 he became the Executive Chef of the Asbury Festhalle and Biergarten and Executive Chef/Partner at the Bonney Read. He opened a farm-to-table eatery Farmly Neighborhood, and eventually launched "The Black Swan" in Asbury Park, a European gastropub serving British/Irish fare, imported beers, wines, and craft cocktails.
