Last year I came across an article in the Gothamist titled, A Taiwanese food crawl in the East Village with NYC writer Cathy Erway. I have of course heard of Cathy Erway and her cookbook and thought to myself, Why haven't I had her on Talking Taiwan as a guest yet? For those of you who aren't familiar with Cathy's work, she is a James Beard Award-winning food writer and author based in New York City. Her cookbooks include The Food of Taiwan: Recipes From the Beautiful Island and Win Son Presents: A Taiwanese American Cookbook. Her cookbook, The Food of Taiwan which was published in 2015 is the first cookbook from a major U.S. publisher to explore the food culture of Taiwan from home-style dishes to authentic street food. We talked about how publishers rejected the cookbook at first and how it eventually got published. She also has a Facebook page called The Food of Taiwan, and if you're a Taiwanese food lover, I highly recommend liking and following it. On the page, Cathy shares news about Taiwanese food like where to get the best Taiwanese food in and out of Taiwan, and new Taiwanese restaurant openings. Cathy Erway's journalism has appeared in The New York Times, Food & Wine, Eater, Grub Street, T: The New York Times Style Magazine and more. She is a columnist at TASTE, and received the James Beard Award for Home Cooking journalism in 2019. In 2021, she received the IACP Culinary Award for her column. At a CulinaryArts@SPAC event on January 26, 2024, Joe Donahue spoke with Josh Ku and Trigg Brown, authors of "Win Son Presents a Taiwanese American Cookbook." Josh and Trigg are the founders and owners of Win Son restaurant in Brooklyn - a full-service restaurant featuring taiwanese-american cuisine. Across the street is Win Son Bakery, a taiwanese-american café, bakery and restaurant. The ventures are highly acclaimed and successful.
The first time I went to Win Son bakery and café in Brooklyn, I wasn't sure what to expect. It's billed as a Taiwanese-American bakery, and I'm not too familiar with Taiwanese baked goods. I ordered a few things off the menu that sounded good, and after I brought them to the table, I started tasting my way around the tray, and everything I ate blew me away. Everything was delicious. The bakery and menu items take cues from familiar favorites, such as chocolate chip cookies and donuts, but I was delighted at how brilliantly they incorporated mochi, candied red beans, red rice, and scallions, along with raclette cheese, heritage bacon, and mortadella. It was the best of both (or many) worlds.I was especially drawn to the Fan tuan, rice rolls filled with eggs, bacon, and a crispy cruller in the middle. It was a great combination, and I could easily give up baguettes and croissants for breakfast if I lived closer. [And yes, they have a cookbook!]Another favorite is the egg and cheese scallion pancake breakfast sandwich, which is yet another great argument for combining the best of two culinary cultures, American and Taiwanese. declared it was the best breakfast sandwich of his life and the best thing he ate in 2023. Since meeting him, I've gotten to know Trigg, the co-owner and chef of Win Son, and count him as a friend. It was a pleasure to sit with him in the bakery (pardon any background noise in the podcast). He's fortunate to have pastry chef Danielle Spencer in the kitchen, who is a treasure, and is responsible for the delicious pastries, along with her staff.In the kitchen attached to the café, the savory breakfast items are made mostly to order, including the scallion breakfast sandwiches and the Fan tuan rolls. Trigg Brown is the chef and co-owner of Win Son and the coauthor of a really great new book, Win Son Presents a Taiwanese American Cookbook. Trigg and Matt share many mutual friends, and it was really cool for them to meet for the first time on the mic. Back then, I never expected to trade a Japanese citizenship for my special ex-colonial national status, as both a British Nationals Oveseas and a Hong Kong Chinese, until 2020. In 2011, Ian Winson went to his job as an engineer for Watercare in Onehunga in Auckland.An explosion occurred which killed one of Ians Collegaes. Ian survived the blast but was seriously injured. The accident cost him both his legs, caused severe injuries to his arms, and left him close to death.Before the explosion Ian's life had revolved around work, sport and family. In one day he went from being an Ironman competitor to an amputee requiring months of rehabilitation just to reach a stage of basic mobility.Ian story is an incredible one. He is the founder of the two brands Winson and Midas Bootmaker, where the first now is making the finest fully handmade dress shoes in the country, a true premium product of absolute top quality, while Midas focus on more affordable still excellent handmade Ready to Wear and Made to Order workwear boots. The company I work for, Skolyx, has been collaborating with Emil on a range of Ready to Wear Midas boots, and in recent years there are many around the world who have discovered the huge scene of especially workwear boot brands that comes out of Indonesia. The tradition of making boots by hand goes back to when the country was a Dutch colony, and today traditional shoe and bootmaking as well as other types of leather craftsmanship are relatively large industries for Indonesia. As you will hear, Emil Rahmana Putra is one of these obsessive souls that we have in the shoemaking world, we talked about how he ended up in the shoe industry and managed to build two successful brands, about how he to a large extent actually is a self-trained shoemaker, about his view on the success and challenges for the Indonesian boot and shoemaking scene, and much more.
