The transition from high school to college can come with a steep learning curve. For many students, it's their first time juggling classes, laundry, roommates, a social life and all the rest without the help of Mom and Dad.The changes can be particularly challenging for young adults with special needs. So in 2020, the University of South Florida established UMatter. It's a program that gives extra support to students with intellectual disabilities, to help them succeed in college and beyond.As part of the program, UMatter students at USF St. Pete recently took a six-week cooking workshop with nutritionist, dietician and occasional Zest guest Wendy Wesley. The classes were held in the kitchen of Allendale United Methodist Church in St. Petersburg. Students learned to cook simple, weeknight recipes that they can replicate at home; then they ate what they cooked. The class also covered topics like menu planning, food safety and label reading.Dalia met up at the church with Wendy and one of her students, Taylor Moore. They discussed takeaways from the class, including recipe ideas for anyone living on their own for the first time.The UMatter program is only available for eligible students. I'm joined by chef, food blogger, photographer, recipe developer, and creator of Ask Chef Dennis®, Dennis Littley. He's an online cooking sensation known for sharing his recipes and techniques that result in restaurant-quality meals in under 30 minutes. After transitioning from chef to food services management, Dennis landed in the cafeteria of an all-girls Catholic high school. He was tired of the same old pizza and chicken nuggets, and decided to use his fine dining experience to revamp the menu. Eunice was a confident hard working woman, that loved God, her country and her family. She was proud of her accomplishments and rightfully so. Chef Dennis is a successful classically trained chef, now retired and a very popular travel and food blogger. He prefers to cook for others rather than cook a meal for himself. His grandmother taught him a lot about food and cooking and she passed down "the joy of cooking." And now Dennis is sharing the 'joy of it' with all of his readers. His grandmother was a teacher and his grandfather a minister. Eunice and her nine siblings were also all educated starting at a young age. All the children were born and raised in Texas and bilingual from an early age. Littley says of his mother's family "they were an all American family-all my uncles served in the Armed Forces and an uncle was at Pearl Harbor." Because Eunice was always studying and/or working, she never really had too much time to cook. She often worked nights so she could be home to see Dennis before and after school. Chef Dennis says that his mom, who he adored dearly, "influenced him and his love for cooking in an offhanded way." "Her lack of cooking skills and my love of food and her encouragement really helped push me in the right direction. She was the reason I really started cooking and went int this field." says Littley. Dennis loved to cook for his mom and says "I was never pressured into being a doctor or lawyer, my mother just wanted me to be happy." But he took care of his mom as well. At a young age, he would collect recyclable bottles and cans, ride his bike to the supermarket and buy food with the money he made to cook for his mom because she didn't have time to cook for herself. Dennis agrees that he gave his parents a hard time, a bit rambunctious, but he was named after the 'Dennis the Menace' tv character, after all.My guest, got his first full time job at 12 years old and became manager of a burger place, flipping burgers at 13 in Atlantic City, New Jersey right on the ocean.When asked what meal he'd cook for his mom if she were here today, Dennis reminisces about the rice, pepper, onion, bacon and cheddar cheese casserole his mom and he loved to eat till the dish was empty and everyone was happy. Later on in life, once Eunice had retired from nursing, she was able to embrace her time in the kitchen with her friends and found the ‘joy of cooking'.

On this episode of Make It Cute, Miles is joined by Dennis Littley (@askchefdennis) where they talk about travel experiences surrounding food, different experiences within the kitchen, and the future of food and the restaurant industry. Chef Dennis is a seasoned chef and experienced traveler and shares his love of food and a very easy recipe for a dish he experienced "for the first time" while traveling in Venice. Clams and Linguine Ingredients 1 lb of good quality Linguine (De Cecco Del Verde, or Barilla) 1 bag Farm Raised Little Neck Clams (bag of 50 or at least 15 clams per person) 2 cloves of Garlic sliced (less or more as desired) 1 Tablespoons Fresh Parsley chopped 1 Tablespoon Fresh Basil chopped Pinch of Crushed Red Pepper Pinch of Black Pepper Sprinkle of grated Romano Cheese 2-3 Tablespoons Extra Virgin Olive Oil Instructions Place large stock pot on stove to cook pasta per directions on the box Finely chop parsley and basil Chop garlic Rinse clams in cold water checking to make sure they are all closed, or that they will close when tapped. If they are open they are dead, do not use them! As soon as the pasta water is ready add the pasta and set your timer per instructions. Place a large saute pan on the stove and add the olive oil and garlic. Briefly saute the garlic then add the clams, basil and crushed red pepper to the pan and cover with a lid allowing the clams to steam open. If you have timed this correctly the clams will open with about two minutes to spare on the pasta, turn off the heat on the clams and keep covered until serving. Drain pasta, place in bowl and divide clams and sauce between them Sprinkle fresh chopped parsley on top of the clams and serve with grated Romano cheese. Learn more about your ad choices.
