    *GUEST’S NAME:* Sam Glass *CULINARY SCHOOL AFFILIATION:* Culinary Institute of America, Hyde Park, New York *BIO:* Chef Samuel Glass CEC, CCE, AA, is a Chef/Professor teaching at Centennial College’s School of Hospitality, Tourism and Culinary Arts. Chef Glass was the lead faculty member for the development and implementation of the school’s two-year Culinary Management program and the one-year Culinary Skills – Chef Training program. A member of the American Culinary Federation (ACF) and the Canadian Culinary Federation (CF), Glass was the 2005-2006 Chef of the Year for the Central Region of the CF and received an ACF President’s Medallion in 2006 for his contributions to the culinary profession. In 2008, he was inducted into the ACF’s honor society, the American Academy of Chefs. He is also a recipient of the Service Award from the American Academy of Chefs in 2015, recognizing his numerous volunteer activities at both home and abroad. Chef Glass is a proud Canadian graduate of the Culinary Institute of America (1982). Upon graduating, Chef Glass worked at the Windsor Arms hotel in Toronto. From there, he travelled to Israel, where he worked at the Jerusalem Hilton. After a working as a “stagiaire de cuisine” for six months in France, he returned to Canada, working at the Millcroft Inn. His next position was at the Park Plaza hotel, where he was responsible for the opening of the hotel’s kosher facility. Chef Glass then worked as Executive Chef for Caterers York, one of Toronto’s largest kosher caterers. His next position was that of Executive Chef at Oakdale Golf and Country Club in Toronto. Chef Glass then made the move to teaching, becoming a culinary educator over eighteen years ago. Chef Glass takes a proactive role in culinary education, having completed his M.Ed at Brock University. He has published academic articles on culinary curriculum and has also volunteered as a mentor through the Adopt-A-Ship program of the ACF with the U.S. Navy. Over his career, Chef Glass has worked and taught on three continents and four countries, contributed to cookbooks, competed both locally and internationally, participated in community culinary events, and is recognized as an expert panelist on many industry topics. Chef Glass is also a certified TrainCan Sanitation instructor. He is a Certified Executive Chef, Certified Culinary Educator, Approved Certification Evaluator and is also a member of the Certification Commission of the American Culinary Federation.     *GUEST’S NAME:* Stacey Welch-Andrade *CULINARY SCHOOL AFFILIATION:* Johnson & Wales University, North Miami, FL *BIO:* Chef Stacey’s passion for cooking started at home when she first purchased an Easy Bake Oven with her own money at the age of 7 and made various "creations" for her Mom and Dad. This love of cooking was solidified at age 11 when Stacey first watched the Lifeftime Television show "The Main Ingredient" with Chef Bobby Flay. During high school, Stacey had various food service industry jobs, including one at a local smoothy shop were she was the supervisor of actress Megan Fox. After graduating from the culinary program at her high school in Stuart Florida in 2004, Stacey enrolled in the College of Culinary Arts at Johnson & Wales University's North Miami campus where she received her Associates and Bachelors Degrees. Chef Stacey met he husband Victor while on her JWU internship in Germany. They are both chefs and have been married for ten years and have two daughters Isabelle and Gabriella. In 2015 they relocated to Massachusetts where Victor had accepted an employment opportunity at a private country club in South Hamilton as the Executive Chef.     Story #012 - Christopher Terry

    *GUEST’S NAME:* Christopher Terry *CULINARY SCHOOL AFFILIATION:* Johnson & Wales University, North Miami, FL *BIO:* Chef Terry’s passion for cooking started at home with interest coming from his mother and grandmother’s cooking. A former student of St. Joseph’s Academy and Princess Margaret School, Christopher went on to receive his Associates Degree in culinary arts from the Antigua & Barbuda Hospitality Training Institute. During his studies at the institute, he worked as a commis cook at the Trade Winds Hotel, which is where he was first introduced to a professional kitchen. In 2009, he was given the opportunity to be a part of the opening team at the Sugar Ridge Hotel, where he was quickly promoted to Chef de Partie *.* In 2010, Chef Terry was awarded Young Chef of the Year by the Antigua Hotel’s and Tourist Association. It was during that same year that he was selected to be a part of Team Antigua for Taste of the Caribbean, where his team won both silver and bronze medals. His career was quickly taking off as he competed in numerous local competitions, such as the Mango Festival, the Seafood Fiesta, the Wadadli Music Festival Cook Off and the Smoking Hot BBQ Challenge. At the same time, Chef Terry had many of his recipes featured in several local magazines, such as Food & Drink Magazine, Liat Zing Magazine and Antigua Summer Guide. In 2012, while working at both the Jumby Bay Resort and as a private chef, Christopher started the youngest award winning BBQ team of the Caribbean called the Smoking Grillers. His team travelled far and wide competing and winning medals in BBQ competitions, including events in Antigua, Puerto Rico and Tennessee. In 2014, Chef Terry took his love of BBQ to another level when he completed a certification in professional BBQ from the Texas Beef Council. After a stage at Le Talbooth in England to further his international knowledge and experience, Christopher enrolled at Johnson and Wales University in North Miami, Florida to pursue a Bachelor’s Degree in Culinary Arts and Foodservice Management. While at the university, Christopher continued participating and winning in many culinary competitions. He also pursued outside certifications, such as the Wine Spirits Education Trust’s (WSET) Level 2 Certification, as well as continuing to gain experience in local restaurants and resorts. A few of these opportunities were a Junior Sous Chef’s position at the Ocean Reef Club, a Private Chef for an American NFL Football Player, and a paid apprenticeship with a well-known Florida ice carver. After his graduation from JWU in May of 2014, Chef Terry traveled and worked in many well-known establishments and represented Antigua & Barbuda at Caribbean Week NYC in the years 2015, 2016 & 2018. From 2017 to 2019, he held the position of Sous Chef at Sandals Royal Barbados 2017-2019. In April 2019, he received the Artisan Award at the Antigua & Barbuda National Youth Awards. Most recent, Chef Terry obtained his certification as a Chef De Cuisine form the American Culinary Federation (ACF).     Chef Aran Goldstein is both a teacher and an entrepreneur who is dedicated towards building skills and intuition around food and cooking for his students and clients so they can live the life they want.Aran graduated from Northeastern University in Boston and received his degree and training in culinary arts from the New England Culinary Institute. His work experiences are many, from brigade work in boutique hotels, stints in Michelin star properties in Italy, to opening a restaurant in China. As an educator, Chef Goldstein has taught hundreds of culinary and baking lessons, from an organic farm cooking school to current medical students learning about food as medicine.     *NAME:* Nikki Pettineo *CULINARY SCHOOL AFFILIATION:* Johnson & Wales University, North Miami, FL *BIO:* Chef Nikki Pettineo started her culinary training in 2005 at Johnson and Wales University in Miami, Florida. She quickly began her career as a private chef for some of the most talented athletes in the NFL by executing heathy, power-packed meals for players from the Miami Dolphins, Tampa Bay Buccaneers and New York Giants. She has opened an acclaimed South Florida restaurant, cooked all over the world on a Super Yacht, and taught culinary education courses to students at Keiser University. Chef Nikki happily calls Tallahassee home. She writes, produces and directs an educational YouTube Channel called “Nikki Talks Food” and appears at Brown’s Kitchen Center as a guest chef teaching culinary classes for adults interested in learning true culinary techniques.     Chef Dennis Littley started cooking at a very early age and drew his early inspiration from Graham Kerr, the Galloping Gourmet. After completing his training as a chef's apprentice, he went on to work at white tablecloth restaurants, in corporate executive dining, and finally at an all-girls Catholic high school. After 3 years at the school, he created a Culinary Training Program that brought acclaim to the school and was used as a model for other schools around the country via the foodservice company he worked for.After retiring from professional cooking, Dennis became a food blogger, where he would become known as Chef Dennis by his fans and readers worldwide. He has expanded that content creator role into a food & travel blogger, a chef speaker, a brand ambassador, and a digital strategist.     Chef Jennifer Lee grew up in Mystic, Connecticut where she has had a love and passion for baking and cooking since a very young age. While other kids her age were watching cartoons, she was watching the Food Network. As a young teenager in high school Jennifer started working at her relative's Chinese dim sum restaurant, beginning as a hostess and busser, and eventually working into more advanced positions in both the front and back of the house.During her later years in high school, Jennifer accepted a position at a bake shop in Mystic Connecticut, where she worked in the front of the house taking orders and assisting customers, eventually becoming a barista, and helping in the kitchen with the baking.After graduating from high school, Jennifer enrolled at the Culinary Institute of America in Hyde Park, New York where she graduated with an associate degree in baking and pastry arts. During her time at the Culinary Institute of America, she opened her at home bakery called J Lee Bakery, which specialized in cakes, cupcakes, and French macaroons.Besides baking, Jenn has always had a love for photography and videography. In the past couple of years, she has started her own YouTube channel which focused on her time at the Culinary Institute of America to share her experience with her viewers who may be interested in attending the college one day. She then started an in-home personal chef service called Ripe Personal Chef Services, where she prepared meals and boutique dinner parties for discerning guests. After growing the company to mid-six figures, with 8 chefs and some very high cliental, she relinquished control to start other business ventures. With a BA in Psychology from Boston University, she has always been obsessed with understanding why people do what they do and what is stopping them from getting what they want.     Raised in a family of restaurateurs, Chef Rudy Kloeble grew up assisting in the kitchen and bakery that his dad owned in Idyllwild, CA. He did this from a very young age, starting out doing odd chores such as stuffing donuts and peeling potatoes, and continued working in the family businesses thru high school and into his first semester of community college.Rudy was then nudged by his dad and uncle to go to visit his other uncle in Germany and attend a Hotel School, which he did. He then went on to get his culinary apprenticeship in Munich. After he completed his apprenticeship, Rudy stayed on in Germany working for a Swiss company for 2 years, where he worked many events such as Oktoberfest and cooking for royalty and celebrities such as the King of Spain.He eventually returned home to the United States to help his uncle with his ranch where he was a self-made farmer for five years growing a variety of crops and raising chickens, pheasants, turkeys, goats, and cattle. He eventually left the ranch and opened and operated a Cafe in San Diego for 3 ½ years before selling it and going into teaching. He started teaching classes at a local wellness center before joining the faculty at the Art Institute San Diego where he was employed for 11 years.     Chef Mario Limaduran is a native of Bolivia and immigrated to California when he was 14 years old. Raised in a hospitality-driven family, Mario's love of food first began when his grandmother helped him make pizza for his classmates as a young boy. From that moment, combined with an infatuation with the movie Ratatouille, Mario fell in love with the feeling of making people happy through culinary arts.Chef Mario attended both the North Miami and Denver campuses of Johnson and Wales University, receiving an associate's degree in culinary arts and a bachelor's degree in culinary nutrition. While all his school friends were playing during summer vacation, Luis was learning how to work the garde manger station at Eurasia. Soon after finishing high school, Luis got a cooking diploma from the Academia de Artes Culinarias in Panama. In 2008 Luis enrolled at Johnson & Wales University in North Miami, Florida where he earned an Associate Degree in Culinary Arts and a Bachelor’s Degree in Food Service Management. During his time at Johnson & Wales, Luis won several competitions, including the San Pellegrino Almost Famous Chef in 2010.     Chef Judy Doherty's passion for cooking began with helping her grandmother make raisin oatmeal for breakfast. From there she held her first food service job at 15 and was then accepted into the Culinary Institute of America at age 18 for their AOS degree where she graduated second in her class. From there, Judy went on to the Fachschule Richemont in Switzerland where she focused on pastry arts and baking.Being a lifelong learner, Chef Doherty worked as an executive pastry chef for Hyatt Resorts for over 8 years before returning to school where she received a Bachelor of Science degree from Johnson & Wales University, graduating with Summa Cum Laude distinction.     Story #053 - John-Michael Collins

    Chef John-Michael Collins was born in San Diego, CA and from his earliest memories growing up he can remember a life full of abuse, including physical, mental, and sexual. John-Michael tried to end his life at the age of 10 though thankfully his grandparents stepped in to rescue him from the foster system. Due to this traumatic upbringing, he never believed in himself, nor though he deserved anything good, which he believes is what set him up to make a lot of bad choices throughout the early parts of his life.These bad choices are what eventually caused him to end up in Federal Lockup for several years. While incarcerated, John-Michael ended up in the kitchen, starting in the dish room. However, he was a fast learner and quickly moved up the ranks to become the number two cook and the person who prepared the food for the officer's mess dining room.Once released, he found himself at a halfway house in Washington, DC with suggestions to seek out and apply for formal culinary training at the DC Central Kitchen (DCCK). He eventually applied, was accepted, and ended up graduating. After completing his training, he accepted a multi-week internship at The Ritz-Carlton, Pentagon City, which eventually turned into full-time employment.Chef Collins still currently works for the Ritz Carlton as a cook one but is looking forward to the next step in his culinary journey as he applies for various sous chef positions within the Marriott Company.     Story #005 - Tamara Earl

    *NAME:* Tamara Earl *CULINARY SCHOOL AFFILIATION:* Johnson & Wales University, North Miami, FL *BIO:* Tamara Earl has always loved to be in the kitchen since she can remember! Around the age of 12 is when she remembers really getting serious about food when she would make food for her family, with some dishes being “out of the ordinary” while other not so much. She remembers setting a timer and would then make something out of nothing, with whatever was available. She loved the rush and expectancy of the created dishes. Fast forward to high school, which had a culinary program available that she could take advantage of and participate in. This is also the program where she won the first ever CROP foundation scholarship that she used to attend Johnson & Wales University’s College of Culinary Arts on the North Miami campus. However, things were not all roses when she first arrived at JWU. Tamara remembers feeling lost to say the least. She had wanted to stand out however she recalls, “there were now so many of “me”!” She quickly adapted though and found her pace, learning with all the others. However, as she neared graduation, she still was not sure of what path to take or what part of the culinary industry she wanted to pursue. After graduating, she packed her bags and went back home to Delaware. Not knowing what was next, she fell into a deep depression. Everything she ever knew, loved and hoped for was no longer her reality. Nevertheless, she still needed to make money, so she bottled up her famous all natural strawberry lemonade and started selling it to the local shops. As the demand took off, she created a brand called Delectablez, added more products to the mix, and the rest is history. Today Delectablez consists of a full vegan and organic foods and beverage product line.     Chef Jorge de la Torre is the Director of Culinary Arts for Kitchen Network-Park Hill, a non-profit incubator/accelerator/commissary for minority owned businesses and a workforce development learning center in Denver, Colorado.Chef de la Torre graduated from the University of New Mexico with a bachelor's degree in business before going to the California Culinary Academy in San Francisco. After graduation from culinary school, Jorge worked at various restaurants in San Francisco and Hawaii. He then moved to Vail, Colorado, and worked for Vail Associates and was a chef/owner of a restaurant. He also worked for Whole Foods in Denver, many catering companies, and a steakhouse in NYC before finding his true culinary passion to teach.In 2001, Chef de la Torre began his career as a culinary educator, starting as a chef instructor for The Restaurant School at Walnut Hill College in Philadelphia, PA. He joined Johnson & Wales University at their Denver campus in 2002 as the director of culinary operations. He received his master's degree in Adult Education from Colorado State University in 2005 and was promoted to the position of dean of culinary education, a position he held until 2021 when the campus closed.Jorge is on the board for We Don't Waste, a nonprofit that picks up food from restaurants, stadiums, and caterers to distribute for free to those in need.     Chef Will Glass, co-owner and co-founder of HotSugarPop LLC, was born and raised in Pittsburgh, PA. Will developed a passion for Culinary Arts in high school and attended Johnson & Wales University in North Miami, earning a bachelor's degree in Culinary Arts.While at Johnson & Wales, Will immersed himself in school activities, becoming a member of the Leadership Team, Special Functions Team, and Collegiate Ambassador Team. After graduation, Will enlisted in the United States Army Reserve as a Food Service Specialist and later commissioned as a Food Service Warrant Officer. Will has multiple overseas and stateside deployments and currently serves as the Food Advisor for the 518 Sustainment Brigade in Knightdale, NC. Will has also worked in several hotels, restaurant, and hospitals on the East Coast.Will is married to the former Tiffany Templeton and they have three children. Their oldest son Tye has several food allergies and they struggled to find foods for him to eat. However, one of the foods Tye can eat is popcorn. Will and Tiffany popped popcorn for Tye as a snack for his lunch daily and soon began to experiment. Together they developed a recipe for kettle corn, and began sharing it with their friends, family and coworkers.     Story #049 - Joe Peroney

    GUEST'S NAME: Joe PeroneyCULINARY SCHOOL AFFILIATION: Westmoreland County Community College, Youngwood, PABIO: Joe Peroney's culinary career began in 2007 after his division with SONY Electronics outsourced all production overseas. Given the chance to pick a new career path, Joe enrolled in the culinary arts program at Westmoreland County Community College in Youngwood, PA. During his time at Westmoreland, Joe would serve as team captain for their ACF culinary knowledge bowl team and lead them to second place victory at the ACF nation convention in 2011. Joe would earn his degree in culinary arts, as well as a degree in dietetic technology, graduating in the spring of 2011.Upon graduation, he accepted a position at The Greenbrier Resort under Rich Rosendale CMC where he would spend the next six years. He would spend three of those years training under the culinary apprenticeship program, where he graduated at the top of his class, and was quickly promoted to sous chef and later chef de cuisine. While training at The Greenbrier, Joe also competed in 9 ACF sanctioned competitions, including ice carvings, buffet platters, five course, hors d'oeuvres and hot food competitions. Joe then moved to metro DC to open Roots 657 and the RC Culinary Lab with Rich Rosendale CMC. He would become the research and development chef for both properties and join Chef Rosendale hosting a variety of cooking classes such as modern equipment, sous vide, BBQ and CMC training. In February of 2020, Joe traveled to Stuttgart, Germany to represent the United States as a member of the ACF Culinary Team USA Regional team in the 25th annual IKA Culinary Olympics. The regional team earned a gold medal and was ranked third in the world for culinary artistry. Joe also competed as an individual at the IKA Culinary Olympics and was rewarded with a bronze medal for his work. Joe recently accepted the Chef de Cuisine position with The Rolling Rock Club.     GUEST'S NAME: Shane SchaiblyCULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FLBIO: Born and raised in a small town just outside of Tampa, FL, Chef Shane Schaibly has been in the industry since the young age of 14. He has worked in all facets of the industry from small, locally owned casual dining spots to high end hotels and everything in between. After graduating from Johnson & Wales University's North Miami campus with a degree in culinary arts, Chef Schaibly went on to work at The Ritz-Carlton, South Beach before returning home to the Tampa area to work as Pastry Chef, Catering Chef and eventually Sous Chef of Café Ponte in Clearwater. From there, Shane made the jump to the corporate world and accepted the position as the Corporate Chef for Front Burner Brands overseeing their various concepts including The Melting Pot, Burger 21 and GrillSmith. In this role Chef Schaibly helped develop menu items and the opening of new restaurants around the world, including in Canada, Mexico, Riyadh, KSA, Dubai, UAE, and Jakarta, Indonesia. In 2014, Shane moved on to First Watch Restaurants, Inc. as their VP of Culinary Strategy / Corporate Chef, working on revamping the existing regular menu and Seasonal Feature menu offerings along with fine tuning some the already fantastic fresh and healthy menu items.     GUEST'S NAME: Jesse MacDonaldCULINARY SCHOOL AFFILIATION: Culinary Institute of Canada, Charlottetown, Prince Edward IslandBIO: Chef Jesse MacDonald had no aspirations of becoming a chef when he was growing up in Launching, Prince Edward Island. His childhood home was located on the corner of his grandfather's large family farm, so he was able to spend ample time as a youngster gaining an appreciation for all things local. In middle school he quite innocently got a summer job washing dishes at Rodd Brudenell River even though he was born into a fourth-generation lobster fishing family. By the time Jesse graduated high school he was one of the lead cooks in the resort's main dining room. It was then that he decided to pursue cooking as a career and ended up enrolling that fall at the Culinary Institute of Canada, where he graduated from in 2010.Chef MacDonald spent time during and after culinary school apprenticing under Chef Warren Barr, formerly of The Inn at Bay Fortune, as well as Chef Dave Mottershall, formerly of Terre Rouge and Red Shores Racetrack & Casino, before accepting his first Sous Chef position at an Italian restaurant in Guelph, Ontario. After spending some time exploring the vast dining scene of Ontario, he took an extended trip to Europe where he was able to secure stages in hotels and restaurants in France & Italy. It was there that he met Pamela Rouch, a recruiter from Johnson and Wales University, while attending a hotel / restaurant convention in the city. She encouraged him to apply to JWU's College of Culinary Arts, which he did. His application was accepted, and Chef Webb packed up and relocated to Providence, RI in 1996.     GUEST'S NAME: Charles RedmonCULINARY SCHOOL AFFILIATION: Ivy Tech Community College, Muncie, INBIO: Chef Charles Redmon planned on making a career out of the military after he enlisted in the US Army in 1995. His plan however was cut short by an injury after just over 12 years of being an Infantryman / Combat Lifesaver. Now permanently out of the military, Chef Redmon needed to find a new career path. He was approved by the Veterans Administration to go back to school for training for vocational rehabilitation which is when culinary arts piqued his interest.Having had some previous food and beverage experience working in professional kitchens prior to enlisting, he believed getting a degree in culinary arts would be just what he needed to get his new career started. After enrolling at Ivy Tech Community College in Muncie, Indiana, Charles began his academic pursuit in their new culinary arts / hospitality management degree program.It was at Ivy Tech that Charles met his mentor Chef David Kain who was influential in motivating Charles to pursue his American Culinary Federation's Certified Executive Chef (CEC).     *GUEST’S NAME:* Colleen Grapes *CULINARY SCHOOL AFFILIATION:* Johnson & Wales University, Providence, R.I. *BIO:* Currently an adjunct professor for New York University’s Steinhardt Food Lab, Chef Grapes has been in the restaurant world as a pastry chef for over 30 years. She started her training at Johnson & Wales University in Providence, RI. While there, she worked for Al Forno restaurant which was the same time period when the restaurant received the James Beard award for best restaurant in the New England. After graduations, she moved to New York City where she worked as the pastry chef at Aja, before moving on to Time Café where she oversaw the pastry program at all 3 of their restaurants. Eventually she moved on the Butter restaurant and then the Metropolitan Opera House. Wanting a more intimate dining experience, The Red Cat was the next step and then eventually to The Harrison where she worked for 8 years. Other restaurants where she worked were Oceana for a few years before taking the position of Corporate Pastry Chef for the McNally group (Augustine, Balthazar, Minetta Tavern, Morandi, Lucky Strike). Chef Grapes also had the opportunity to work in Brooklyn where she oversaw the Dressler, DuMont and DuMont Burger. A friend who had a school program in Vietnam shared a teaching opportunity with her and after trying to get there for 5 years Chef Grapes made the leap and ended up in East Asia for 6 months where she taught everything from interview training to baking & cooking, as well as running the schools café called “9 Grains”, where the students worked.     *GUEST’S NAME:* Marilyn Baligod *CULINARY SCHOOL AFFILIATION:* Le Cordon Bleu, Bangkok, Thailand *BIO:* Chef Marilyn Baligod is from the northern part of the Philippines, called Pinukpuk, Kalinga, a very small town where civilization was very limited. Sharing the home with her parents and 6 brothers and sisters, Chef Baligod spent most of her time as a child watching her mom cook and bake. By the age of nine, Marilyn was cooking rice for the family over an open flame stove. At that time, she never thought that she would become a chef, instead her dream was to become a nurse and a lawyer which was her dad's dream for her. However, none of that happened and instead she ended up attending Le Cordon Bleu culinary school in Bangkok, Thailand where she studied culinary arts and trained to be a chef. A successful career followed allowing Chef Baligod to travel the world, opening various restaurants and teaching the art of Asian Cuisine to many.     *GUEST’S NAME:* Kami Smith *CULINARY SCHOOL AFFILIATION:* Johnson & Wales University, Providence, RI and Charleston, SC *BIO:* Prior to joining the world of food manufacturing, Chef Kami Smith began her life of pastry arts with the team at Emeril’s Restaurants and Marriott International Hotels located in heart of New Orleans, Louisiana. While in New Orleans, Kami was able to develop skillsets in breads, chocolate work, pulled and poured sugars, and helped manage the pastry team to support major event such as opening of the D-Day Museum, Super Bowl, Microsoft, Arthur Anderson, ACF National Conference, and so much more. With a strong sense to return to her roots in East Tennessee, Kami returned home and took the position of Pastry Chef at an adorable Victorian home known locally as The Troutdale Dining Room Restaurant in Bristol, VA. While there in Virginia, Kami was asked to spearhead the new culinary program and community bakery at Virginia Intermont College. She also became the local star of “Cooking with Chef Kami” in East Tennessee. However, a new opportunity in Atlanta, Georgia came up and Chef Kami left the bakery, the tv show, and her team, and joined Schwan’s Bakery, in Atlanta, GA as their newest Research Pastry Chef, where she and her team designed unique multi-layered cakes, brownies, tarts, pies, and cheesecakes for National Accounts around the country. She later joined Dawn Food Products as their Corporate Pastry Chef training the industry on their high-quality products.     GUEST'S NAME: Adam RoyCULINARY SCHOOL AFFILIATION: Joliet Junior College, Joliet, ILBIO: Chef Adam Roy was born and raised in Chicago, IL, USA. He started his career as a dishwasher in a small 9 table restaurant in his hometown of Frankfort, Illinois. He continued working there for many years and eventually took over as chef. After working in various other food and beverage establishments, he decided to attend culinary school and enrolled in the nearby Joliet Junior College where he earned an associate degree in Culinary Arts.After graduating from Joliet Junior College, he worked his way around the United States including being employed as a pastry cook in Chicago and a hot kitchen cook at the famous Mount Washington Resort in New Hampshire. Eventually the travel itch took over and he took a private chef's position on a luxury yacht that sailed the Mediterranean Sea including stops in Greece, France, Italy and Spain.His career continued in other areas of the globe when he was hand selected for a mini-ambassadorship and a 1-year exchange program in Germany, which is where Chef Roy learned the German language. Enjoying Europe, Chef Roy accepted a 1-year position in Zurich, Switzerland at the Dolder Grand Hotel. He then returned home to the United States before joining Holland America Line where he cooked on large cruise ships traveling the globe, from Russia and Northern Europe, to Hawaii and South America.Eventually Chef Roy left the ships and moved to Singapore where he worked while attend a 3-week Asian cooking school, learning traditional Chinese Dim Sum, Chinese BBQ, Thai Cuisine as well as Chinese Vegetarian and Regional Cuisines. This led to a job working as a chef de cuisine with the Novotel group in Bangkok, Thailand and then various chefs position working for the Shangri-la Hotel Group in 5 different hotels located in Oman, Malaysia and China for close to 10 years. In total, Chef Roy has lived overseas for more than 20 years and has worked in almost every hospitality industry situation one could imagine.     GUEST'S NAME: Jyaira MooreCULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL & Charlotte, NCBIO: Chef Jyaira Moore's "Culinary School Story” started in 2008 when she was getting ready to leave middle school and had to choose where she was going to go to high school. All of the high schools in her area had programs that she wasn't interested in, which was cooking, so Jyaira decided to go to a school 2 ½ hours away by school bus to pursue her dream of becoming a personal chef at the Jacobson Culinary Arts Academy at Tarpon Springs High School.After finishing all four years of high school at the culinary academy, Chef Moore wanted to continue her academic pursuit and immediately enrolled in the College of Culinary Arts at Johnson & Wales University's North Miami campus. After taking her first beverage lab, Jyaira was hooked and fell in love with spirits, liquors, and bartending in general. By the spring term of her freshmen year, she had started bartending in a nightclub to pay for her schooling.Once she had obtained her associates degree in culinary arts, Chef Moore decided to leave Miami and transfer to Johnson & Wales University's Charlotte campus in North Carolina. It was here that she obtained her bachelor's degree as well as continued knowledge in food and beverage. After working at the local Hilton Hotel, for a year and a half in both front and back of the house positions, Jyaira applied for a management position at a brand-new location they were building. She got the job and became an Assistant Food and Beverage director, the youngest person in the department in a management position.     Story #025 - Joyce Esther Calayag

    *GUEST’S NAME:* Joyce Calayag *CULINARY SCHOOL AFFILIATION:* Center for Culinary Arts, Manila, Philippines *BIO:* Joyce Esther Calayag was 16 when she began her formal culinary training at the Center for Culinary Arts in Manila. She remembers that at the time this decision was not supported by her Filipino parents who were very traditional when it came to education. To them, culinary training was considered a vocational hobby and frowned upon. Coming from a family of doctors and engineers, Joyce was expected to go to college, complete a 4 year degree and then follow in the same path as they did. Of course, this put a tremendous amount of stress on Chef Calayag. Even before she began her studies, she had constant hesitation and self-doubt. On top of this, she couldn’t really afford the culinary school tuition because in the Philippines they don’t have student loan programs. Instead, students are dependent on their parents to pay for college or university. Luckily, her siblings pitched in and they were able to cover Joyce’s first year tuition. However, Chef Calayag was going to have pay after that so she immediately started applying for various scholarships so that she could continue pursuing her degree. Through her due diligence and perseverance, Chef Calayag was awarded a full academic scholarship for the remained of her studies. ** Enrolling initially to study culinary arts, Chef Calayag ended up switching to baking and pastry after the first year. French macaron and L’Opera gateaux are the two recipes that still inspire her to this day! Today Chef Calayag is a chef instructor who teaches students that are just like herself, who are pursuing their culinary dreams. And now many of her former chef instructors are her colleagues and supervisors. As an culinary educator for over three years, Chef Calayag still believes that cooking and baking are magical, with food being the common bond that connects and brings us together! Being a young professor, Chef Calayag recently made the decision to pursue a Master’s Degree in Adult & Vocational Education so that she can share even more knowledge with her students and be an effective mentor. Though she still believes the road to becoming a chef is not a glamorous route, but one that is physically demanding, mentally strenuous, and emotionally exhausting, she has no regrets and wouldn’t change a thing. Like all investments, it requires growth which takes time. There is a sacred concept that Chef Calayag and the other faculty at her school share and that is, “Students are like kernels of corn, and when given heat or pressure, the kernels will pop.     *GUEST’S NAME:* Samuel Spencer *CULINARY SCHOOL AFFILIATION:* Bishop State Community College, Mobile, Alabama *BIO:* Samuel Spencer grew up in Mobile, AL and has been passionate about cooking his entire life. He started his career as a fry cook at Kentucky Fried Chicken before moving on to a Catering Coordinator and Assistant to the Sous Chef position in the dietary department at Springhill Medical Center. Chef Spencer attended Bishop State Community College in Mobile, Alabama where he studied Culinary Arts. While pursuing his education, he served as the Class President and was named Outstanding Culinary Student of the Year. He was first in his class when he graduated in 2012. While in school, Chef Spencer was employed in the industry full-time and continued to hone his skills. After working as banquet chef and executive chef in the local area, he decided to move into education and accepted a teaching position as a Commercial Foods Instructor at Coastal Alabama Community College in Atmore, Alabama. Chef Spencer’s current position is the Food Service Director / Culinary Arts Instructor at Guided Discoveries / CampChop. A long-time member of the American Culinary Federation, he has earned his certified chef credentials, his Servsafe Food Protection Manager Certification, and is a Certified Proctor Instructor by the National Restaurant Association Educational Foundation. He is also an active member of the Metro Mobile Chefs & Cooks Association and is President of the ACF Gulf Coast Culinary Association, Pensacola Chapter. In the recent past, he was inducted into the Les Amis d’ Escoffier Society of Chicago, recognized as a 50 Executive Chefs and 50 industry leaders candidate, and was a recipient of the America Culinary Federation’s Presidential Medallion which exemplifies culinary excellence and leadership expertise.
