Some people nerd out about beer in general. Others go wild for water profiles, hop varieties, or yeast strains, but in Don Tse's experience, not enough people are paying attention to malted barley. It's something he's been passionate about for a decade, and a topic he finally gets to explore in-depth in his first piece for Good Beer Hunting. In that Critical Drinking op-ed, titled “Fight the Power — How Craft Malt Is Central to Taking On Beer's Industrial Complex,” Don explains how the barley of today shouldn't be the barley of yesterday. Typical crops are bred to resist disease and blight every few years. But in North America, barley that's now widely planted has been around for three decades and is the main source of what's used for malt in beer recipes. Why? Well, it takes time, money, and a lot of buy-in to change a monoculture crop like barley. That change is finally coming, thanks to investments from researchers at Cornell University, breweries like Allagash, and other forward-thinking farmers ready to make malt craft again. In our conversation, you'll hear Don talk about why it took so long for him to pursue this passion project, why as a Canadian he's focused on American farmers, why he's so stoked on things like protein levels and output, and what sort of potential and future he sees in the North American barley industry. He doesn't expect people to be as nuts about the subject as he is. But he hopes that we'll all start to care, at least a little, to keep moving craft beer and our shared agricultural future looking bright.
Decoction mashing is a traditional method of stepping the water and grains through different temperature stops in brewing by taking a portion of the brew to a separate vessel, bringing it to a boil, then returning it to the main mash. It is laborious. And it is time consuming. But proponents of decoction mashing say it is worth the extra effort. Biotransformation are flavor- and aroma-releasing reactions during brewery fermentation. Lately, there has been much discussion of biotransformation in hoppy beers like IPAs where bound thiols are released when yeast interacts with them. So hops provide not only bittering acids and flavorful oils, and yeast provides not only alcohol and esters, but the combination of yeast interacting with hop chemicals (and sometimes malt chemicals) produces new flavors. In November 1975, the Anchor Brewing Co. released what it called, simply, “Our Special Ale.” The beer quickly became known by two other things on the label: a generic Christmas tree smack-dab in the center and the words, “Merry Christmas and a Happy New Year.”Writing in All About Beer, Tom Acitelli notes that Anchor's seasonal in 1975 was the first from an American brewery since Prohibition, and marked the advent of the modern Christmas beer in the United States. After 1975, Anchor would regularly tweak both its Christmas ale recipe and label. Now in its 47th year, the beer is once again on shelves and on tap. On this episode of the All About Beer podcast hosts Em Sauter and Don Tse dive into the wonderful world of Kolsch. Kölsch takes its name from the Cologne (Köln in German) dialect, which is known as Kölsch. The beer is a pale yellow, soft, refreshing ale, sometimes brewed with a touch of wheat malt and usually lightly hopped. It can be quite sweet from the malt or perhaps a bit more bitter from the hops, depending on the brewer. At a glance, a glass of kölsch can easily be mistaken for a standard pilsner, and perhaps that's done on purpose in these modern times. Much like a pilsner, a typical kölsch is about 5 percent alcohol by volume in strength.The only beer protected by the European Union, kölsch lays claim to an “appellation controllée.” At the Kölsch Convention in 1986, 24 breweries in Cologne and nearby towns agreed that a beer could only be called a “kölsch” if it met the following criteria:1) Brewed in Cologne or the immediate area2) Top fermented3) Pale in color and clear4) Filtered5) Brewed between 11 and 14 degrees Plato (a brewer's measuring unit)6) Served in a 20-centiliter stange (a tall, narrow, straight-sided glass)For original articles or to read the vast archives or to check out All About Beer. follow us on Twitter @allaboutbeer and Instagram @allaboutbeer. This episode the Don of Beer is back. Don Tse updates us on his legendary beer counter and his recent trips to craft breweries outside of Canada. During the break we get serious with Mama T, and afterwards Josh and Jonathan write a love letter to their ideal guests on the show. This week's guest is Don Tse, beer writer and entrepreneur, owner of Craft Beer Imports and Far Out Exporters, and the man who has famously drank over 20,000 different beers. Today we're speaking with Don Tse, a former lawyer who's love for beer has taken him on a journey to tens of thousands of pints of beer, and a mission to take Canadian craft beer global. You're probably already familiar with Don's work here in Alberta, his company Craft Beer Imports is responsible for the famous Craft Beer Advent Calendars, which contains many beers that can't be tried anywhere else. Self-proclaimed beer geek Don Tse shares how he came to be known as The Don of Beer, another Canadian traveller shares their embarrassment anonymously as a canfessional, and we keep geeking out when Tami Miguens joins the podcast to talk robotics, AI, and Calgary's tech scene. Don Tse, better known as The Don of Beer, plans a Beastie Boys parody band with Josh and Jonathan, because these boys have to fight for their right to barley. Previously known as "Beers to You," Don's role as Calgary's beer guru lets him tell the story of Canadian beer, and he's got 20 years of beer geek-dom to back it up. His mission in telling the Canadian beer story doesn't stop with his trusty notebook though, as we learn that his beer import company famous for beer advent calendars will also be getting Canadian brews into the glasses of discerning beer drinkers across the world. This episode's canfessional, titled "This is why we can't have nice things" tells the story of a group of Canadian travellers whose antics left them shamed out of Southeast Asia. Our second guest this episode is Tami Miguens, co-owner of Calgary tech company Ripeda Consulting, and tech literacy education advocate. We discuss her volunteer work with Calgary high school robotics teams, which she explains is just one of many approaches to get kids comfortable with problem solving through code, preparing them for the jobs of tomorrow.
