"I feel like a foster parent." Outgoing chief Sue Rahr on hiring, leadership, and sexism at SPD

Sue Rahr’s tenure as Seattle’s Chief of Police is coming to an end. The interim chief took over the office during a rocky moment for SPD: she inherited a police officer staffing crisis and a workplace where senior staff had filed legal complaints over their treatment, alleging discrimination and sexism on the job . Rahr’s appointment to the position happened the same week, last June, as a deadly school shooting at Garfield High, setting off a series of discussions about public safety at schools, and in the Central District. And she was also in the awkward position of taking over the department from a chief who was initially demoted, and then fired for not being truthful about his alleged affair with a subordinate. It’s been an eventful almost 8 months. Chief Rahr sat down with Soundside host Libby Denkmann to discuss what’s changed during her time in leadership, and what still needs to happen at SPD. Seattle Mayor Bruce Harrell has removed police Chief Adrian Diaz from his post and replaced him with former King County Sheriff Sue Rahr, noting allegations against Diaz played a role in the move. A month ago, Harrell said he was evaluating everyone within the SPD, including the chief, amid a string of claims alleging sexual harassment and sexual and racial discrimination from department leaders. Diaz was accused by multiple employees in lawsuits and tort claims. He denied the allegations. On Wednesday, Harrell said Diaz would step aside and work on “special projects" after the two came to the "mutual decision." Rahr will serve as interim chief beginning Thursday morning, Harrell said. --- Send in a voice message: https://podcasters.spotify.com/pod/show/darien-dunstan3/message

Once a week just isn't enough! Enjoy new Tuesday episodes of the Craft Beer & Brewing podcast every other week, with different formats like this round table discussion as well as episodes where you get to ask the questions of our brewer guests! This round table discussion with Russian River, Cantillon, and Allagash kicks off the new series. Recorded in the coolship room at Russian River the morning of their Wild Friendship Blend event, the conversation between Rob Tod and Jason Perkins of Allagash, Jean and Florian Van Roy of Cantillon, and Natalie and Vinnie Cilurzo of Russian River explores both bigger picture questions about spontaneous brewing, and particular implementations and adaptations employed by the American breweries in making compelling beers using the traditional process. Topics include: - Stories from the earliest days of American spontaneous brewing - Sensory differences between spontaneous beer made at Allagash, Russian River, and Cantillon - The challenging in building a blend with "characterful" base beers - Creating environments that support better spontaneous brewing results - Tuning coolship rooms for more consistent and reliable production - The dynamics of spontaneous fermentation through a season - Reducing opportunities for failure - The various (and very different) ways each brewery ages and uses hops - Connecting spontaneous beer to consumers through experience And more. Minnesota's Surly Brewing (https://surlybrewing.com) has cultivated a brand image that's bold and in-your-face, but the next chapter of Surly's approach to brewing will be defined by achieving more with less, if head brewer Ben Smith has anything to say about it. From thiol-maximizing yeast in hazy IPAs that achieves big flavor with less hops, to refined and softer bitterness in new West coast IPAs, every assumption about how things "should be done" is under consideration. In this episode, Smith shares what they've learned from brewing a new thiol-focused beer with Other Half, Phantasm, and thiol-centric yeast from Omega Labs. But it wouldn't be a proper Surly episode without a discussion of West coast IPA and the ways they're tweaking and refining the classic approach to find new expression and connection. In this episode, Smith discusses: Maximizing their three pillars of quality, consistency, and stability Achieving more hop flavor with less hops and thiolized yeast Thinking about bitterness in terms beyond IBU Hopping methods to achieve flavorful and efficient results Deconstructing and reconstructing West coast IPA Managing hop creep at a production scale And more. 236: Forager's Austin Jevne Embraces Nuanced Flavor in Fruited Seltzers, Sours, and Barrel-Aged Stouts

For Austin Jevne, cofounder of Forager (https://foragerbrewery.com) and now owner and head brewer of the Humble Forager (https://www.humbleforagerbrewery.com) brand, creative flavors are crux to brewing. While the brewpub that he founded with life and business partner Annie Henderson continues with their mission to provide compelling beer and food for the Rochester, Minnesota community, the Humble Forager brand has set more wide-ranging goals to bring their authentic and grounded approach to flavorful beer to a wider national market. Forager produces beers on a 7bbl system for their local fans. Humble Forager works through 100bbl batches produced at partners like Octopi in Madison, Wisconsin or Fair State Collective in Minneapolis, Minnesota. But a through line that spans all of their production is a focus on real ingredients and real fruit, used in thoughtful and expressive ways, no matter what the style. Whether quick sour, hard seltzer, or stout, the approach is the same—no extracts, high quality ingredients, and a progressive approach to technique to drive the best possible expression from the chosen ingredients. In this episode of the podcast, Jevne discusses their approach to recipes and process, including: Creating real fruit hard seltzers that are shelf stable for up to 18 months Using a three-stage pasteurization process to temper and stabilize fruit in quick sours and hard seltzer Layering fruit flavor with other herbal and tea notes to create flavors that evolve through the sip Searching for the best quality fruits from a variety of sources Finding the best sources for flavorful vanilla Working with high pectic fruits Accounting for expression of acidity in both fruited hard seltzers and quick soured beers Building a library of stout recipes and barrel types to create options when blending Employing an ingredient-by-ingredient method of concentrated infusion to carefully add flavor to stouts Deploying blended methods of coffee infusion using both whole bean and ground coffee for different flavor contributions And more. “A lot of people are assuming that fruited sours have a shelf life similar to hazy IPAs,” says Jevne. “And absolutely they do, from certain breweries. But if you have a process that changes that—we have a shelf life of 18 months with flavor stability in our fruited sours and people look at our shelf life on the bottom of the cans and get a little worried sometimes. But we've done multiple tests about the longevity of where that flavor's stable, and because of that [multi-step pasteurization] process, our beers are great and can sit in the back of your trunk on a hot Texas summer day, and they're not going to explode.” This episode is brought to you by: G&D Chillers (https://gdchillers.com): What if you could chill your beer with a more efficient chiller? The Answer? G&D Chillers new Micro Channel Condensers! The Eighth State (https://eighthstatebrewing.com) is small. Very small. The 3 bbl open vessel brewhouse sits adjacent to the taproom as brewing gear spills over on days when they're not open. Barrels are packed in every inch of unused space, and an assortment of plants creates a comfortable vibe in the small ground-floor space. It feels cluttered but relaxed in that creative way, and cofounder and head brewer Cameron Owens is determined to have some serious fun. The brewery is small, but has earned an outsized reputation for their flavorful beers—from fruited sours to ingredient-heavy barrel-aged stouts. But Owens is committed to doing things his way, even if that means more tank time and slower turns, in order to get the exact flavor he wants. In this episode of the podcast, focused on “quick” sour beers and ingredient-laden stouts, he discusses: Using a solera process with a Lacto and Sacch culture to create the base for fruited sour beers Packing fruited sours with live culture but sulfites to prevent refermentation Achieving “wild” flavors and minimizing sulphur expression without Brettanomyces Making complex beers more accessible to customers Blending fruits for contrast and juxtaposition, finding counter notes while creating tension Achieving vegan-friendly results without lactose Building multiple layers of flavor in big barrel-aged beers Adjusting the multi-day brew schedule for bigger beers, to aid fermentation Using a two-step process for certain ingredient additions, to increase impact And more. For the brewery, the goal is to stand out. They want to be exclusive, but not impossible to get. Most importantly, for a brewery their size, it's very important to keep excitement high and keep people coming through that door. As Owens says, “I really can't afford to just be average.” This episode is brought to you by: G&D Chillers (https://gdchillers.com): For nearly 30 years, G&D Chillers has set the mark for quality equipment you can rely on. 230: The Bitter Truth About Belgian Beer With Nino Bacelle of De Ranke

Craft Beer & Brewing Magazine Podcast

When Nino Bacelle and Guido Devos started homebrewing together in the 80's, Belgian beer was in the midst of a sea change. Consolidation was afoot as larger industrial breweries swallowed up smaller concerns, while an earlier generation of brewers had reached retirement age with few of the younger generation interested in carrying on the brewing tradition. The beers that they loved and grew up drinking were disappearing—subsumed by a wave of sweeter mass-produced crowd-pleasing beers. To be fair, there were (and continue to be) some historical holdouts. But generally speaking, bitterness was slowly leaving the lexicon of Belgian brewing. Bacelle, who grew up around beer (his father was a guezesteker, or blender, but did not brew), longed for the beers he had tasted growing up. Together with homebrewing partner Devos, he decided to launch a beer brand, De Ranke (https://www.deranke.be), to address the opportunity they saw in the market for beer that embraced bitterness. First was their Guldenberg Tripel, followed closely by what is now considered a paragon of hop-forward beer, the aptly named XX Bitter. Today, these beers feel familiar, but they were groundbreaking in their time and remain somewhat unique today due to the peculiarities of De Ranke's process. In this episode, Bacelle explains that process and more, including: The challenges of buying and brewing with whole cone hops Working with growers to source local Belgian hops Understanding the qualitative difference between whole cone and pellet hops Brewing with a kettle purposely designed for whole cone hops Using closed fermentation vessels to mimic open fermentation Two-stage cellaring with a free-rise fermentation followed by a cooler secondary fermentation then bottle conditioning Stylistic changes over time in classic Belgian abbey styles Differences in hop terroir De Ranke's blended approach to acid-forward beer And more. “The Belgian public is so used to sweetness from all the industrial beers they know,” says Bacelle. “Sweetness is easy selling, and bitterness needs a public that is more aware … and is willing to experience other tastes.” *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): What if you could chill your beer with a more efficient chiller? It's a striking spot for a brewery—the site of a former mill on a winding stream, with the village church looming overhead. Out behind Brasserie Au Baron (http://www.brasserieaubaron.com/) in Gussignies, you can literally throw a rock and hit Belgium in the neighbor's front yard. Yet this is a French brewery, officially, even if its influences are many—the traditions of Hainaut saison and French bière de garde mingle in beers such as Cuvée des Jonquilles and Saint-Medard, leaning into a distinctive heirloom yeast strain and locally grown ingredients. Brewing runs in the Ballieux family; while Xavier Ballieux represents the second generation to run Brasserie Au Baron, his grandfather Roger brewed in Belgium, France, and the Congo, moving from brewery to brewery as 20th century industry consolidation shuttered one after another. In his later years he advised his son Alain on setting up a brewhouse at the family restaurant in Gussignies. Their idea was to brew beers like those farmhouse ales that Roger remembered from his younger days in Hainaut. In this episode of the podcast, recorded at the brewery in Gussignies, Xavier Ballieux shares the story of their family trade and approach to brewing rustic ales. Among other topics, he also discusses the character and temperamental nature of their house yeast culture, which was originally sourced by his grandfather; his own perspective on the difference between saison and bière de garde; the use of elderberries in the darker version of the Saison Saint-Medard; and much more. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): For nearly 30 years, G&D Chillers has set the mark for quality equipment you can rely on.
