While popular movies tell finite stories, the real lives of the people they feature don't stop when the final credits roll. Notch Brewing's (https://www.notchbrewing.com) Chris Lohring loves that more craft brewers are embracing lager, but he has some strong opinions about the best way to brew lager beer. “Crispy boys don't exist, lagers aren't dry,” he says. “Clean lager yeast is boring to me.” Refinement and distinction are his goals, not minimalism, and he uses all the tools in the brewer's toolbox to achieve them, adjusting mash schedules and malt bills to build body in low-ABV beers, moving lager mid-fermentation from quasi-open fermenters to conical fermenters before later moving to horizontal lagering tanks, reducing and timing decoction to fit the goals of individual beers, and considering the impact of mash rests on fermentability, among many other things. Herbal teas are a lovely way to be creative and experience herbs on a daily basis. Brewing herbal teas can take on different forms and tastes, including juice-like creations when dried berries are used as the main ingredients. These berry teas are a wonderful way to gain nutrient benefits from herbs. In this episode I am sharing my current favorite method for brewing herbal tea that feels more like a juice. Tea “Juice” Decoction ¼ cup dried elderberries ¼ cup dried hawthorn berries ¼ cup dried sea buckthorn berries ⅛ cup dried goji berries ⅛ cup dried rose hips 1 tablespoon hibiscus 1 tablespoon dried ginger 1 cinnamon stick 2 pieces turkey tail mushrooms 6 peppercorns 8-9 cups water Combine herbs and water in 4 quart stock pot. Cover and bring to gentle boil on medium heat. Turn to lowest setting, simmer for 40 minutes. Remove from heat, continue to steep covered until cool. Abstract: Objective: Based on network pharmacology, the response of Qing-tong-hua-yu Decoction (QTHY) to the regulation of EGFR/MAPK signaling cascade in cerebral ischemia-reperfusion injury was discussed and the possible mechanism of the protective effect of QTHY on the cerebral ischemia-reperfusion injury was studied. Methods: A compound-target disease-function-pathway network was established and analyzed based on the network pharmacology approach used in Chinese medicine. The correlation, which is between effect of the components of QTHY Decoction against CI/RI with EGFR/MAPK signalling cascade response, was observed. And then the degree of neurological deficits in each group was assessed after cerebral ischemia for 2 hours and reperfusion for 3 hours, 24 hours, 3 days and 7 days. Expression levels of EGFR and p44/42MAPK in ischemic brain tissue at different time points in various groups of rats were tested by Western bolt (WB), real-time quantitative PCR (RT-qPCR) and immunohistochemistry (IHC). Results: Network pharmacology analysis revealed that QTHY-mediated treatment involved 439 key targets, in which the effect of QTHY groups against CI/RI was associated with EGFR/MAPK signaling cascade. QTHY treatment reduced neurological deficit scores and improved ischemic changes in rats. In addition, QTHY promoted EGFR and p44/42MAPK expression in the SVZ through the EGFR/MAPK signaling cascade, with varying degrees of improvement at different time points. Conclusion: QTHY can better improve cerebral ischemia injury in CI / RI rats and exert the neuroprotective effect of cerebral ischemia-reperfusion injury. This may be related to the potential of QTHY to activate the EGFR / MAPK signaling cascade, which is consistent with the results of network pharmacology analysis. As much as craft beer places value on authenticity and artistry, it's not always an industry that likes looking backwards. Instead, the search for innovation—innovation in beer styles, in brewing techniques, and in the raw materials of beer—is what propels it forward. That means many older ways of doing things have been left by the wayside. On the malt side, with technological and agricultural advancements continuously improving crop yield and efficiency, are old-school brewing methods like decoction mashing even necessary anymore? Anthony Gladman thinks so. And he's not alone. In his piece for Good Beer Hunting titled “Pillars of Tradition — How a New Generation of Brewers Returned to Decoction Mashing,” which was published on July 20, 2021 as part of our Age of Rediscovery series made in partnership with Menabrea, Gladman dives into the deeply historical Lager brewing tradition, and what it means to the current roster of brewers around the world. He admits there aren't a ton of people devoted to decoction mashing today. But those who are often find themselves with beer that transcends the day-to-day and approaches true greatness.  In this podcast conversation, Gladman and I discuss the elusive definition of “drinkability” and what it means to him. We talk about the difference between “craft beer” and “crafted beer”—and there is a difference. We also unpack the perception of preciousness in brewing, and how it's not the same as honoring time-tested traditions honed over generations. He reveals what led him to explore this largely under-discussed (but very appreciated) brewing technique, and the regret that he felt when COVID prevented him from sampling the work of modern-day decoction masters on their own turf. It's a little bit of wanderlust, a dash of technical brewing talk, and a lot of fun.

Vienna-Style Lager (Description courtesy of Beer Advocate)Named after the city in which it originated, a traditional Vienna Lager is brewed using a three step decoction boiling process. Decoction Mashing is a way to conduct multi-step mashes without adding additional water or applying heat to the Mash Tun. It involves removing about a third of the Mash to another pot where it is heated to conversion temperature, then boiled and returned to the Mash Tun. Many brewers believe that the boiling of the mash gives the beer a flavor profile that cannot be achieved otherwise.Munich, Pilsner, Vienna, and dextrin malts are used, as well wheat in some cases. Its color reliably falls between pale amber and medium amber—there should be a reddish hue to examples of this style. Noble hops are used subtly, with the resulting beer having a crisp quality, a toasty flavor and some residual caramel-like sweetness. Vienna Lager and German Märzen have much in common. Malcolm Frazer of Brulosophy joins us to talk about a recent exbeeriment they conducted comparing beer flavor between decoction mashing and single infusion mashing of a German Pilsner recipe. Decoction is a age-old technique for achieving better extraction and hitting the mashing rest temperatures with less modified malts, but how much difference does it make in the beer flavor. Fans of decoction swear that it adds that little something extra you just can’t get from infusion mashing.
