Welcome! My guest today is a dietician whom I met at a conference last August. I’ve become a fan of Cassie Bjork and her “Eating to be Skinny” approach to health and nutrition. I’m excited to have her on the show today! Cassie describes her work as being a “dietician detective” in which she looks for evidence and symptoms in her clients, and then puts the puzzle pieces together. “We help you narrow down the suspects included in your personal crime scene that keep you from being skinny and living a healthy life.” Cassie shares the following about her life, her work, and her nutritional recommendations: Her own sugar addiction brought her to the lowest and unhealthiest point in her life, so she got off the blood sugar roller coaster and made some changes. America’s biggest nutritional problem is SUGAR ADDICTION! Forget the low-fat, low-calorie approach to trying to lose weight! Cassie identifies some key areas that are usually the missing puzzle pieces in nutrition: keeping inflammation down, managing stress, supporting thyroid function, gut health, hormonal balance, proper sleep, avoiding artificial sweeteners and processed foods, and being careful with alcohol consumption. In making nutrition changes, gut health is the top priority! Cassie shares her “three-prong approach” about what we SHOULD be doing, including the supplements we should all take every day. Cassie’s formula for nutrition is “PFC Balance.” Her template can be customized for anyone, but use protein, fat, and carbs in balance with eating every 3 hours to “stay ahead of the hunger.” She also shares sample meal plans that she uses every day! Hormone balance is crucial! Cassie explains the relationship between insulin and glucagon in the body’s fat burning/fat storing processes. Fad diets are not usually the answer! Many women try intermittent fasting and ketogenic diets and then come to Cassie for help. “When we deprive our bodies of food, nutrients, and healthy fats, then our metabolism slows down to conserve energy. That’s why low-fat and low-calorie DOES NOT WORK! After 20 minutes add cheese and continue cooking over low heat MaryLou's Collards and Kale This recipe seems so simple and yet it is never the first thing people think of. It is a great way to get in broth when you are eating a real food nutritional approach. We have this at least 4-6 nights a week it is delicious. When we eat chicken we boil thighs in the broth for 15-20 minutes and then season skin on thigh and broil for 5 minutes or so to crisp (best fried chicken without coating with bad ingredients). Collard GreenKale“Better than Bouillon” (I prefer the organic vegetable)Water Fill Dutch oven half way with water (the Dutch oven cooks collards faster) Add bouillon paste to taste (I add a spoon full at a time, mix well and taste the broth and if it is to watered down I will add more paste or if it is to strong I will add more water). Add Collards and Kale (I use a handful of each and that depends on the size of the pot and the amount of water you added) boil covered for approximately 15 minutes and you are done!

Recipie: Gina Reig's Creative Curry Clafouti (As we discussed during the show, it is pronounced "cla-FOO-tie," and it's kind of like a quiche. It keeps well and is super yummy!) Ingredients: • 6 eggs• 6 tablespoons melted grass-fed butter/ghee/coconut oil cooled to room temp. + 1 pat for greasing pan• 3/4 cup coconut milk• 4 cups cooked, chopped chicken (optional) You can sub any cooked meat and/or greens, onions, etc.• 2 tablespoons curry spice, or to taste• Sea Salt & Pepper to taste Directions: • Preheat oven to 400° F.• Butter a 10” round or 13×9” baking dish• Whisk together eggs, fat & coconut milk until frothy.• Mix in chicken or other meats/veggies and spices and pour into baking dish.• Bake about 45 minutes or until top is golden brown and puffy. Today is special for a few reasons: First, Jimmy's not here- he's taking a break to write a new book. Second, It's our special 70th episode. Woot! Of course it is also special because of our great guests Adam Kosloff and Mark Spurbeck who are joining Dietitian Cassie and guest-host Kevin Kennedy-Spaien today. Adam is the author of Beyond Caloriegate and the voice of the Escape From Caloriegate podcast and Mark is one of Minneapolis' most prestigious personal trainers through his company Fit Twin Cities. You can learn all about both of them at:Adam Kosloff's , andMark Spurbeck's  Here are the articles Cassie and Kevin discussed with Mark and Adam: Today's recipe is Adam's dad's pot roast from their book, The 12 Essential Low Carb Cooking Skills: Plus, 49 Simple, Scrumptious Low Carb Diet Recipes. Pot Roast (Serves 4 to 6) Pot roast is a good simple one-pot meal that requires a minimum of fussing. Like any braise, it takes some time to prepare. It is easily prepared in a slow cooker. (Follow manufacturer's directions for cooking time and temperature.) This recipe is very basic, but fail-safe. Ingredients:1 (3 to 4 lb.) pot roast (chuck, top or bottom round)2 tablespoons extra virgin olive oil1 (14 1/2 ounce) can chopped tomatoes2 cups beef stock2 onions, coarsely chopped2 garlic cloves, chopped3 large carrots, peeled and cut on the bias into 1" pieces2 celery stalks, chopped4 ounce cremini mushrooms, quartered1 tablespoon herbs de province2 bay leavesKosher salt and pepperChopped flat-leaf parsley, for garnish Preheat the oven to 375 degrees. Season the meat on all sides with salt and pepper. In a Dutch oven, brown the meat on all sides in the extra virgin olive oil. Add the tomatoes, the onions, the herbs de province, the bay leaves and the rest of the veggies. Make sure all the herbs and veggies are immersed in the liquid. Bring back to a boil. Tightly cover the pot and place it in the oven. Roast for about 3 hours, or until the meat is tender. When done, remove the pot from the oven. Remove the meat and allow it to rest on a cutting board. If the jus is too thin, return the pot to the stove top and boil to reduce it. The jus should be thin but well-flavored. Correct the seasoning. Slice the meat and serve accompanied by the veggies and jus, garnished with parsley, or, you can serve a few chunks of the beef atop some pureed veggies with a bit of the jus over top and garnished with the parsley (yum!).
