ORN Zoë Harcombe show notes 9/6/22 Epert in nutritional research In a study in the 70s, she found no evidence dietary fat is harmful. Found more health incidents and mortality when PUFAs were substituted for saturated fats. Found that dietary interventions had no positive influence and quite likely evidence of harm. They are not evidence-based. With protein norm at 15%. a maximum of 30% dietary fat means carbohydrates will be 55%. Harder now to uncover author and sponsorship conflict of interests. Relentless campaigns now against meat and dairy. But no evidence there. Do they want us sick? Eat Real Food. Potato is a real food but not a high nutrient food. Will the starch mess you up? Not if you're metabolically healthy. Could cause oxalate issues. Real food doesn't put fat and carbohydrate together in one package, except for nuts. But people find the combo irresistible, and food manufacturers take advantage. If you're feeling well, don't go near a doctor and don't test. Don't have overwhelming evidence that processed foods are bad. Difference between sugar in fruit and packaged sugar? None. Body doesn't know where the glucose/fructose/sucrose molecule came from. Five A Day Fruits and Vegetables is a complete fairy tale. What does sugar do in the body? We have 4 grams of glucose in our bloodstream at all times. After consuming sugar, insulin gets released to get glucose out of the blood, fructose goes to the liver. Too much fructose causes NAFLD, too much glucose causes diabetes. Hyperinsulinemia – high insulin state as a response to habitually too much sugar. Too much sugar smashes body's delicate mechanism for glucose control. Need a new paradigm on cholesterol. Statins are not the answer. Dairy – Zoë personally eats a lot of it. We don't need fiber. Carbohydrates are not an essential need. Fiber is a subset of carbohydrates and therefore not needed. Can it be a benefit? No trial evidence that says it's any good. Population studies show people who eat fiber tend to be healthier, but they don't prove it's the fiber that is causing the health benefit. Cereal companies want you to think fiber is needed. Eggs are really good. The yolk has the nutrients. Main sugar in rice is glucose. Average serving has 100 grams carbohydrate. Overeating high carb sources can cause blood glucose to drop below 4 gm because of insulin response, causing hypoglycemia. Want blood glucose to be even. With a habitual keto or carnivore diet, the body runs on fats. Fat is the fuel we don't run out of. If eating high meat, do you need extra fat? No, eat the food as it comes. Eat the fat on the meat, don't add more. Don't add butter to the steak if trying to lose weight. Burn the body's fat, not dietary fat. Mixing fat and carbs is the best way to add weight. Studies showing association between red meat and heart disease are population studies showing association between heart disease and affluence. Why don't dairy and meat industries defend themselves? Do you spend time with your kids in the kitchen or is that an off-limits area? Is it a struggle to get kids to eat even a bite of the main meal you're serving because they'd rather have "kid-friendly" food? Maybe you want them to eat real food but you aren't sure how to get them to cooperate? Don't despair. First, if your child is fond of kids' meals and not so eager to eat veggies, you're not alone. You might not have noticed, but our culture is likely working against your nutritional efforts at home! "Children tend to rise to the culinary bar we set for them, and children's menus in America set the bar very low indeed." Michele Humes Parents who eat healthy foods and avoid fast food have kids who do the same. If you want a child who enjoys healthy eating, eat healthy food. What if you came to the game a little late? Well, there's always room for improvement. I'm here to prove it. Let me use my experience with my six kids as proof. Get Free Knife Skills Class How I got my kids to eat anything I put in front of them My first child came along before I studied nutrition. She had regular trips to get happy meals. Her Nana let her have ice cream and chicken nuggets for breakfast because "that was all she would eat." As my family continued to grow and I gained knowledge of the benefits of eating a whole food diet my standards for the dinner table shifted. When I became aware of the risks of eating junk food and fast food, I stopped eating it and so did my kids. By this time, I had four children. They'd been introduced to salad with much cajoling, bribery, and tears. While the start was rocky, they eventually grew to love vegetables and regularly eat a wide variety with no bribes. My last two children were born well after I stopped going to fast food and started eating salads and drinking green smoothies. They'll eat anything healthy, literally anything. I've never had either of them put up a fuss. As a matter of fact, their palates are more mature than many adults I've met. Not only are they willing to eat asparagus, artichoke, collard wraps, whole grains, and fish that's not breaded, they ask for it. They've eaten sushi, sashimi, veggie burgers, guacamole, hummus, and more. When we go out to eat, they order off the regular menu because they enjoy food and they want to try it all. They regularly eat healthy meals because that's what they like. By the time I was training their palates, I was no longer sold on "kid-friendly" foods. Now that they are both teenagers, they are fit, healthy, and will eat anything I put on the table. Anyone can teach their child to make better food choices My friend Samantha has five young children who eat "like adults" because she's a foodie and has never catered to the mistaken belief that kids will only enjoy kids' meals. I hear you, though, you might be part way through your parenting journey and your children are already sold on kids' meals. You may currently be a short-order cook, preparing one meal for yourself and a another for your kids. I get it, I've been there. That's why I am so happy to introduce you to Katie Kimball. She has been teaching kids to cook for years, including her own children who cook meals for her family. Cooking skills benefit a child for the rest of their life. First, eating healthily can help them avoid childhood obesity. In addition, it establishes the habits of a healthy lifestyle. One of the things Katie recommends in the podcast (are you listening to it now?) is exposure buckets. She explains that each exposure to a particular food counts as a step toward your child eating (and enjoying) that food. Using the example of a carrot, the first exposure is at the grocery store, second is in the kitchen while preparing dinner. That creates a cascade of reactions that cause inflammation (inflammation is an immune response) Anti-inflammatory diet Clean diet The first most basic thing to do is to do lower inflammation in the brain is to eliminate gluten, dairy (casein), and sugar gluten and casein fuel trigger an autoimmune reaction called molecular mimicry that fuels the vicious cycle of neuroinflammation What has gluten in it? Learn how to read your food labels. Most food labels have to say if it has wheat (gluten) in it Wheat, barley, soy sauce, some condiments Anything that is “enriched”, “self risen” Graham or durum flour, food starch Emulsifiers Most of the fake meats have gluten Hydrolyzed vegetable protein Malt Cammett Rye Oats, unless certified gluten free Stabilizers Thickeners Wheat starch, wheat bran, wheat germ, semolina What has dairy in it? Milk Whey Casein Anything lacto-based (although some lactobacillus is dairy free) Brown sugar and caramel Binding agents More chronic severe symptoms may need more dietary controls than the above Autoimmune paleo diet: Fruits, vegetables ,grass fed meats, wild caught fish Ketogenic diet: has the most research around it for neuroinflammation. Can be hard to maintain How you exercise affects inflammation. Subthreshold high-intensity interval training protocols are best It's better to do something rather than nothing. It is ok if you can't fully overhaul your diet overnight. Take it in small bits. Chelsie focuses on easing people in by assessing where they are at and making small changes over a period of time. Maybe it is starting with just cutting sugar or gluten and then see how you feel When you actually feel a difference you will be more inspired to make more changes. That is when you can introduce other changes Get through two weeks of cutting sugar. You do detox and don't feel well at first; but it gets better!!
