Ob im Supermarkt, Hotel, Restaurant oder zu Hause: Millionen Tonnen Lebensmittel werden jedes Jahr weggeworfen. Mit im Müll landen die Ressourcen, die in den Lebensmitteln stecken: Wasser, Fläche, Energie, Arbeit, Futter, Tierleben. Lebensmittelverschwendung ist ein ökologisches, wirtschaftliches und natürlich auch ein moralisches Problem. Auch Kantinen und Mensen in Betrieben, Schulen und anderen Gemeinschaftseinrichtungen tragen dazu bei: Auch dort landen zwischen 20 und 30 Prozent der zubereiteten Speisen im Müll – sagt Lisa Erdmann vom baden-württembergischen Landeszentrum für Ernährung. Das veranstaltet einmal im Jahr so genannte "Messwochen" für Einrichtungen mit Gemeinschaftsverpflegung. Die zählen und dokumentieren über einen bestimmten Zeitraum, wie viel gekocht, gegessen und weggeworfen wurde. Diese Erfahrungswerte sollen dann auch anderen Küchen helfen, besser zu planen. Dabei könne schon eine kleine Änderung große Effekte haben, betont Erdmann in SWR Aktuell: zum Beispiel, dass Kundinnen und Kunden bei der eigenen Portionsgröße mitreden können. Für die Gäste weniger spontan, aber messbar gut gegen Verschwendung seien auch Bestellsysteme, über die Beschäftigte oder Schulkinder ihren Essenswunsch mit etwas Vorlauf anmelden. SWR Kultur Literaturredakteur Carsten Otte spricht unter anderem mit Kaleb Erdmann, Autor des Buchs „Die Ausweichschule“. Als „heiteres Trauerbuch“ beschreibt Otte den Roman, der in diesem Jahr auch auf der Shortlist für den Deutschen Buchpreis stand. Dieser handelt vom Amoklauf am Erfurter Gutenberggymnasium 2002, den Autor Kaleb Erdmann selbst miterlebt hat. Für Carsten Otte ist „Die Ausweichschule“ deshalb auch ein autofiktionaler Roman über die Grenzen des Schreibens. Einer in dem die Tat aus Sicht des elfjährigen Erzählers geschildert wird. Der Amoklauf habe in den Schülerinnen und Schülern lange nachgewirkt, „in ihnen gegärt“, aber Kaleb Erdmann habe auch „diesen wunderbaren Roman geschrieben“, so Carsten Otte.
