Wash and chop squash, onions, and peppers, add to a big bowl. Add peeled garlic cloves and cherry tomatoes. Drizzle with olive oil, season with salt and pepper. Grill until slightly charred. Mix 1 cup yogurt or sour cream with a few hits of hot sauce. Mix thoroughly. Top rice with grilled veggies and spicy yogurt. Enjoy! Zucchini Bread Ingredients:⅓ cup melted coconut oil or extra-virgin olive oil or canola oil ½ cup honey or maple syrup2 eggs½ cup milk of choice or water1 teaspoon baking soda1 teaspoon ground cinnamon + more to swirl on top2 teaspoons vanilla extract½ teaspoon fine-grain sea salt¼ teaspoon ground nutmeg1 ½ cups grated zucchini (you'll need 1 small-to-medium zucchini, about 7 ounces—gently squeeze out excess moisture over the sink before stirring it into the batter)1 ¾ cups white whole wheat flour or regular whole wheat flourInstructions:Preheat oven to 325 degrees Fahrenheit. Grease a 9” x 5” loaf pan to prevent the bread from sticking.In a large mixing bowl, combine the melted coconut oil and honey. Beat them with a whisk until they are combined. Add the eggs and beat well.Add the milk, baking soda, cinnamon, vanilla, salt and nutmeg, and whisk to blend. Switch to a big spoon and stir in the zucchini (be sure to squeeze excess moisture out of the zucchini first). Add the flour and stir just until combined.Pour the batter into your greased loaf pan and sprinkle lightly with additional cinnamon.Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean and the center of the loaf springs back to the touch. Let the bread cool in the pan on a wire rack. At its heart, Lughnasadh is the celebration of the first grain harvest. Think barley, wheat, corn ... everything golden and glowing under the sun right now. It's that time of year when the fields are full and heavy with the results of long months of effort. Our efforts! The sun has been shining, the rains have come and gone, and now the Earth is ready to give us what we've worked for. Lughnasadh honors the labor of the season. The planting, the tending, the showing up again and again (even when it's hard). It's a time to pause and recognize and say ... hey, we did something. We made it grow. Whether it's a physical garden or something more symbolic, this is when we start to see the fruits of our effort. But here's where it gets beautifully bittersweet. Lughnasadh is also a moment of sacrifice. To harvest the grain, we have to cut it down. The grain must die so we can be fed. That's powerful stuff. It's not just a celebration ... it's a recognition of the sacred exchange: life feeding life. This sabbat reminds us that letting go isn't always a loss. Terri Conroy is an Irish herbalist, homesteader, and YouTuber under the name Danu's Irish Herb Garden in Connemara, Ireland. After a reading from Irish mythology about reincarnation during the founding invasions of Ireland, we begin with Terri describing the dramatic landscape where she lives & how the likes of her family subsistence farmed along the windy coast; from cutting turf in the bogs for their winter's heating to the use of various herbal remedies. For her first numinous story, she tells of a mysterious night in her youth, when without the cottage window she heard enchanting fairy music. Of course fairies open up folk-mythic conversations about the Tuatha dé Danann, the gods and goddesses of Irish mythology: the salmon of knowledge, fairy trees, Dian Cécht the healing god, and family anecdotes about the fairies in the fields and the ragged ghosts along the roads, ghosts who hearken back to the devastating mid-19th-century potato famine. From there, we hear about the Celtic holidays of the year, highlighting the upcoming summer festival of harvest, sports and crafts, Lughnasadh. “I have done nothing all summer but wait for myself to be myself again,” wrote Georgia O'Keeffe to fellow painter Russell Vernon Hunter from her desert hermitage in 1932.I am writing to you today from a cottage along the rugged coast of New England. This is the kind of salt-cured day I often dream about from the desert. The atmosphere is low and thickly layered, daylight fused with a deeper blue now as we arrive at the far fringe of summer. Black-headed gulls and egrets convene as the tide recedes, and a soft fog absorbs every sound but the rolling hush of morning waves. A steaming mug keeps rhythm with the tick of a wall-mounted clock, and occasional keystrokes move across the page.My family gathers here every summer. This is the cove where my stepmother dug among wet rocks for mussels and crabs with her many siblings and where, as teenagers, we built beach bonfires and popped firecrackers into the night sky. It is where my children set up their first lemonade stand with cousins and learned how to serenade periwinkles from their shells. This summer, a humpback whale made headlines when, mid-breach, it pitched its long body onto a boat, tossing a few local fishermen into the harbor.But salty quietude is the balm of this place today. Midway between the summer solstice and autumn equinox, August's Lughnasadh marks the beginning of the harvest in the Celtic tradition. It signifies an annual maturation — when boughs become fruit-laden and afternoons swell, sometimes bursting into rainstorms, before tapering into early evenings.What is maturation? The word comes from Latin, mātūrāre, meaning “to grow ripe.” Perhaps it is simply to slow down and stay with a gradual, faithful revealing — to allow the flavor of a thing to emerge in its own time. There is no need to push now, for the seeds have already been planted. The earnest prayers of earlier days have ripened into well-earned meaning.In 2021, actress, screenwriter, director, and producer Michaela Coel became the first Black woman to be awarded an Emmy in the Writing for a Limited Series category for HBO's extraordinary “I May Destroy You.” When she took the stage, she unfolded a small piece of paper and read:"I just wrote a little something for writers, really: Write the tale that scares you, that makes you feel uncertain, that isn't comfortable. This is a time to come together as a community to break bread and appreciate the abundance of the season. Baking a loaf of bread, gathering wild flowers, or making a corn dolly are just a few ways to honor this lovely liminal space between the end of summer and the beginning of autumn. As we take this quiet, rainy walk through the woods, envision all the ways you'll choose to mark this moment on the witch's calendar. What am I reading?It's Not a Cult by Lauren DanhofBread Therapy: Mindful Art of Baking Bread by Pauline BeaumontWhat am I playing on repeat?S&M by RhiannaWhat's for dinner?We're Moving Pasta Salad!1 lb pasta of choice Canned salmonCherry tomatoes halvedGarlicBread and butter pickles (and juice)Fresh basil Fresh parsley Mayo (let your soul guide you!)Grainy mustardSalt and pepperInstructions: Boil pasta per directions. Add halved tomatoes, canned salmon, and chopped pickles and garlic to a bowl. Add Mayo, mustard, and pickle juice to taste. Mix in warm pasta. Top with fresh herbs. Add salt and pepper to taste. Bread Pudding 1 loaf day-old bread cubed into 1-inch pieces5 large eggs lightly beaten1 cup brown sugar4 cups milk1 teaspoon pure vanilla extract1 teaspoon ground nutmeg1 teaspoon ground cinnamonInstructions:Preheat the oven to 350°F. Spray a 9x13 baking dish with nonstick cooking spray. Place the cubed bread into the prepared baking dish and spread it around into an even layer. Set aside.In a very large mixing bowl, whisk together the eggs, sugar, milk, vanilla, and cinnamon until fully combined. Pour the mixture evenly over the bread in the prepared baking pan, making sure all of the bread is coated. Beltane is a Celtic festival that marks the beginning of the warmer season, typically celebrated on May 1st. The origins of Beltane can be traced back to ancient Gaelic traditions and is one of the four Gaelic seasonal festivals, along with Imbolc, Lughnasadh, and Samhain. Beltane is a fire festival that celebrates fertility, growth, and the blossoming of the earth. It is a time when the veil between the human world and the spirit world is believed to be thin, allowing for easier communication with the divine and the fae folk. Traditionally, Beltane was a time for lighting bonfires, dancing around the Maypole, and performing rituals to honor the earth and encourage abundance and prosperity for the coming season. Today, Beltane is still celebrated by modern people as a time to honor the earth, connect with the cycles of nature, and celebrate the vitality and energy of the season. It is a time for planting seeds, setting intentions, and embracing the energy of growth and renewal that comes with the warmer months.
