With various different preparations in modern mixology, the New York Sour is also strange in that it's gone by many monikers over the years, and despite what we now call it, its creation holds little or no ties to the Big Apple. Here to explore the New York Sour with us today is the legendary bartender, consultant, and singer/songwriter, Frank Caiafa. These days, Frank works as the spirits portfolio director for Banville Wine Merchants but you may also be familiar with his work as an author, having published The Waldorf Astoria Bar Book in 2016 (link below). There's only one thing that cocktail drinkers love more than having a drink: talking about the bartending scenes in rival cities and towns. Inspired by an opinionated 1902 newspaper story about the quality of cocktails across the country, on this episode of Fix Me a Drink, award-winning hosts David Wondrich and Noah Rothbaum discuss the state of regional drinks in the U.S. today and what they'd love to see in the future. New York Sour Contributed by David Wondrich INGREDIENTS 2 oz Straight rye whiskey .5 oz Lemon juice .25 oz Orange juice 1 heaping tsp Sugar .5 oz Dry red wine, such as Pinot Noir or Cabernet Glass: Cocktail, chilled DIRECTIONS In a shaker, stir the sugar into the lemon and orange juices. Add the rye and fill with ice. Shake, and strain into a chilled cocktail glass. Carefully float the wine over the top. The best way to do this is to put the wine in a smaller container–a small bottle or cruet and pour it slowly over a bar spoon held just above the surface of the drink to break the wine's fall. Distribute the wine by gently spinning the glass around its vertical axis–just grasp the stem and twist it–again, gently–while the base of the glass rests on the bar top. We'll have a normal sour and a New York Sour and talk about what it could possibly be like. Bourbon. Lemon juice. Sometimes egg white. Also, we play a game. We're going to start posting our recipes here like we're legit or something:Whiskey Sour:2 oz bourbon.75 oz lemon.5 oz Demerara syrup1 egg whiteDry shake all ingredients until egg white is very foamy. Add ice, then shake 12 more seconds. Serve in coupe with lemon twist as garnish. New York Sour:2 oz bourbon.75 lemon.5 Demerara syrup1 oz red wine (Shiraz)Shake all but the wine 12 secs, pour into rocks glass with large ice cube. Float red wine on top to finish. No garnish.

We are excited to welcome on of the founders of our favorite downtempo collective, Heimlich Musik, to our bartender family: Oliver Rottmann mixed a fantastic New York Sour for you. Oliver is a wonderful storyteller, not only with his studio mixes as it actually was a liveset that amazed us a few months back: his closing set of the Heimlich floor at the Nature Playground festival in 2017 has such an amazing vibe, no question we wanted him to mix a cocktail for Schirmchendrink! Today, Olivers musical projects focus all on the Heimlich collective. There is a bunch of big shows coming up, such as the Bucht der Träumer Festival, Heimlich Showcases in Munich and Berlin this fall and, of course, further events in the Heimlich homebase Vienna, Austria. Further collabs are planned with Russia’s Leveldva collektive and their friends of Journey to Tarab. Sounds like busy times ahead of this weeks bartender! We chat with Bartender Craig Schidelo about Bartending, Competitions and how to advance your career. We’ll also talk to Sorab Silawri from Filibuster Distillery. Filibuster put on a nice Holiday gathering at Club Macanudo, with some nice cigars and great Filibuster whiskey. Book of the Week: Bourbon Curious by Fred Minnick This book gets into serious detail about Bourbon, with an exploration of many brands broken down into categories: Grain-Forward, Nutmeg-Forward, Carmel-Forward, Cinnamon-Forward, and Select Limited Edition and Special Releases. Very helpful is the chapter “How to Taste Bourbon”. This chapter gives great practical information about improving your tasting skills and even gives some homework! There are worksheets, for example, what are your top ten memories and what are the aromas associated with them? There is also a long list of flavors that you can expect to smell and taste in Bourbon – everything from Allspice to White Pepper. Cocktail of the Week: New Yorker This is from the Speakeasy book from the Employees Only Bar, but Bar Manager Robert Krueger found it in an book from the 1930’s called Booth’s Cocktail Book. 1 ¾ oz high proof Rye, such as Wild Turkey 101 1 oz Freshly Squeezed Lemon Juice ¾ oz Simple Syrup Place above ingredients in a Collins glass with ice and give a brief shake, (“short shake”). Top with 3 oz Club Soda and then float ¾ oz of dry Red Wine on top. (Try using an iSi Soda Siphon for the Club Soda) This is a variation on the New York Sour with the addition of Club Soda. There are few more natural things to do on a Friday night after a long week than to belly up to the bar and enjoy a beverage. Last Friday I had the pleasure of meeting up with Charles Tappan, Mixologist with Pernod Ricard at Looney's in Bel Air to taste Jameson Black Barrel Irish Whiskey and discuss its distinctions as compared to the Jameson Original with which most are familiar. The primary distinctions between the Black Barrel and the original are that the Black Barrel is aged approximately twice as long as the original – and that the casks that they use are undergo additional charring to ‘full alligator‘ or Level #4. The increased length of aging in these re-charred barrels creates a spirit that still retains Jameson Original's sweet nutty core, but adds to it a baking spices and a fruitiness that stand out on the mid-palate and finish. Perfectly enjoyable on its own, yet another great feature of the whiskey is its ability to come through when used in cocktails. And Friday night we tasted one of Charles' favorites – the New York Sour. [Basic components are 2 parts whiskey (in this case Black Barrel), 1 part Lemon juice, and 1/2-1 part Simple Syrup (depending on your sour preference), with a light handed red wine floater on top.] Cheers!
