This interview is with an awesome Appalachian from Prestonsburg, Kentucky by the name of James Stiltner. In Eastern Kentucky, lots of folks have trail horses,show horses, and the occasional draft horse or mule however, James is a professional driver/trainer in harness racing! The Red Mile is a harness track in Lexington, but there is now a track in Corbin, Kentucky, making it easier for South East Ky, Tennessee, and Virginia to enjoy a day at the track and offer another attraction to our part of the world. James was raised in a good home, he was a well behaved child, but always had a need for speed. When he was 12 years old he competed against grown men in speed classes at the World horse shows, rode motocross, and now drives Standard bred horses in the harness races. Welcome to July 12th, 2022 on the National Day Calendar. Today we celebrate satisfying your sweet tooth and playing with your food. Pecan pie has been a Southern favorite since the 1800s, though its origins are a bit of a mystery. It all began with a simple custard of sugar, eggs, nuts, sweet milk and flour in a recipe that was published as Texas Pecan Pie. A version of this pie can be traced to Louisiana in the early 1800s but the Texas version was published in 1897 and folks began copying it ever since. Then in the 1930s the wife of an executive at Karo syrup company was said to have discovered a new use for corn syrup. She claimed to be the creator of the recipe that is now printed on every bottle of Karo syrup. It might not be an actual conspiracy but on National Pecan Pie Day go ahead and celebrate your favorite recipe that sums up the phrase, as sweet as pie. Jello has been a popular dessert with families everywhere. What you may not know is that Jello also played a part in one of the most beloved movies of all time. In the Wizard of Oz, Dorothy and friends arrive at the Emerald City and meet the Horse of a Different Color. Because all film effects were practical at the time, the horse needed to be colored for each shot. Paint wasn't a good choice because it would hurt the animal. But then someone came up with the idea to make a paste out of Jello powder and covered the horse's body. This safe and easy solution was perfect—except for the fact that the horse kept licking it off between takes. On Eat Your Jello Day, it's okay to celebrate by playing with your food! During this episode Matthew shares a little bit about his career in writing and the work he is doing in film and tv. In addition, he talks about the path he took to get an autism diagnosis in his 40's. He shares how his literal communication style has been both a strength and a challenge in his relationships and why his doctor once called him an "extrapolation engine". Matthew is divorced, has 3 children and shares a little about how he managed some of the aspects of family life and the experiences he has had with some of his other romantic relationships. Matthew also shares how he was diagnosed as hyperactive in elementary school and received many other diagnoses along the way, however autism had not even been a passing thought, until a friend (and her mother) suggested that he might be autistic. Mathewt began to read more about autism and then went to see several therapists who both told him that that they thought he was autistic. Matthew shares openly how his autism journey unfolded, as well as the advice he would give to others who may be on their own neurodiverse path.
