Peeling the Onion: Discovering the Layers of Health

No matter what illness or discomfort the body experiences there is always a solution. Most lifestyles and diets are appropriate if they bottom line is finding balance and that may look different for each person. Stress leads to disease!Michelle Berzack is a long time holistic chef formerly trained in the Macrobiotic lifestyle brought to America from Japan by Michio Kushi. Along with being a chef Michelle is a biologist and expert vegetable gardener. For over 20 years Michelle has experienced and tried out many ways of healing, landing on the most effective method which is listening to what her body and mind do through conscious practices. Instead of following the guidelines of one method or one practice Michelle takes something from every country, diet, practitioner, and person she has come across. After seeking Tibetan doctors in India, exploring foods of Japan, Thailand and North Africa, living according to strict Macrobiotic guidelines, eating only raw foods, then vegan foods, vegetarianism, Paleo (vegetarian), Ayurvedic, even consulting specialized doctors in America, Michelle has come to the conclusion that working to achieve a state of equilibrium is what leads to healing the body and preventing disease.

This week, I'm excited to welcome to the podcast Steven Acuff to the podcast. He began eating natural food in 1971 with his discovery of macrobiotic food.  At different times between 1980 and 1987 he studied with macrobiotic author and lecturer Michio Kushi in Boston, Massachusetts to further his understanding of macrobiotic food therapy and oriental body diagnosis. Steven has taught many international seminars, including joint seminars with Shizuko Yamamoto, a world-renowned master of shiatsu massage. These courses furthered his knowledge of this Japanese style of massage and his understanding of the energy flow within the body and its importance for healing. Some questions asked during this episode: How do you define macrobiotic food? Should we be concerned about the acid-alkaline balance of our food or is it a myth? Should we be worried about chemicals if buying non-organic produce? https://180nutrition.com.au/ Stu (00:48) This week, I'm excited to welcome Steven Acuff to the podcast. Stephen is a nutrition consultant offering a holistic approach to self-healing health and wellbeing. He's an expert in the field of the macrobiotic diet and his book, Eating the Wu Way, takes into account personal needs that otherwise often get overlooked with a common one-size-fits-all approach to food. In this episode, we discussed the principles of the macrobiotic diet, explore the acid alkaline balance and dig into the potential roadblocks that a modern day diet could present. Over to Steven. Stu (01:31): Hey, guys. This is Stu from 180 Nutrition, and I am delighted to welcome Steven Acuff to the podcast. Stephen, how are you? Steven (01:39) I'm well here at Stockholm, Sweden. The morning has started and I'm full of energy. Stu (01:44) I was just mentioning, I'm kind of getting to the reverse end of the scale as we're coming to the evening in Byron Bay in Australia, but all good. Thank you so much for offering some of your time today. But first up, for all of our listeners that may not be familiar with you or your work, I'd love it if you could just tell us a little bit about yourself please. Steven (02:03) Well, it began, my journey with organic foods, in 1971 at the age of 25. Just out of curiosity, I had no health problems, but I was involved in the original environmental issues and it made sense to me to eat organic food. So I went to a lecture about macrobiotic food and decided I'd give it a try for a week. And so here I am, 50 years later, talking to you about it. Steven (02:33) I've spent most of my adult life in Europe. I come from Oregon originally, but Europe drew me. I always had an affinity for it. I have four children and nine grandchildren here. Went to 1999 to Australia, met a lovely Aussie lady who came to our center to learn more about macrobiotics and we hit it off. So I came down there and it was love at first sight when I came to Australia. And had I not had all of my family already here, I would already be immigrated there. Australia's the perfect place for me because it's got that laid back quality of the US, and yet it's got a sophisticated European nature to it also. So for me, it's just like tailor made. Steven (03:22) In fact, I remember one man I met at a UK summer camp, a health camp, was asking me about Australia and he said, "The Australians are interesting." He said, "You know, basically they're Californian with an East London dialect." For full interview and transcript: https://180nutrition.com.au/180-tv/steven-acuff-interview/

As summer turned to fall in September of 1976, three of the four former Beatles found themselves in challenging situations. Ringo Starr's new LP Rotogravure was bursting with pride and ambition from its principle artist, but a lukewarm reception by critics and the public illuminated the first cracks in Starr's successful three-year hit-making streak. Never one to give up, Ringo doubled down on the album's promotion - filming several music videos for the record's singles as well as embarking on a radio interview tour wherein the former fab talked recording, writing, and his recent engagement to fiancé Nancy Andrews. George Harrison's troubles were monetary, having lost the monumental copyright court case over his hit 1970 single My Sweet Lord and its similarities to the 1963 Chiffons hit He's So Fine. As George awaited the judge's punitive damages order, John Lennon, Yoko Ono, and baby Sean were in Massachusetts visiting with macrobiotic diet guru Michio Kushi. While the meeting went well, the Lennons were subject to increasing attention from fans and local press, eventually driving them home from their retreat. Paul McCartney's fortunes weren't quite so tumultuous - as the Wings Over the World tour entered its final leg in a stint of shows across Europe to the same roaring crowds and rave reviews that had greeted the band in North America. Stops in Austria, Italy, Germany and even Yugoslavia (becoming the first Beatle to perform from behind the "iron curtain") marked the continued success and validation of Wings, a welcome and well-earned feat for the McCartneys. Join me in this conversation with Macrobiotic Chef Mayumi Nishimura.  Formerly Madonna's private chef, Mayumi is the author of over eight cookbooks in English and Japanese including her most well-known cookbook, Mayumi's Kitchen, Macrobiotic Cooking for Body and Soul.  Mayumi describes how her teaching has changed during the pandemic.  The demand for celebrity dishes and gourmet food had been replaced with a return to basic principles to ensure good health.  She often surprises her students by introducing opposing points of view.  She encourages students to adopt the principle of non-credo, meaning “question everything.”  For Mayumi, an open mind is essential and preferred over a dogmatic or rigid approach.  Mayumi describes her approach to life and career as unconventional (she splits her time between Alaska, Massachusetts, and Japan when she is not otherwise teaching internationally).  She views both Michio Kushi and Madonna as exemplars of this credo, meaning that in each moment they did what was necessary without much regard for convention.  They both followed their innate wisdom.  Mayumi has cultivated appreciation though her long-time martial arts practices.   Unlike what most people think, marital arts is not so much an opportunity to defeat a foe, but to learn how to care for yourself and your partner.  Developing this understanding has been an important lesson for Mayumi.  In her culinary classes, Mayumi emphasizes that taking the time to master the simple and minimal can offer infinite possibilities.  While a broad repertoire can be enjoyed, it is not essential to make a nourishing, delicious meal.  In her book Mayumi's Kitchen, she uses the term “petite macro,” to encourage people to start where they are - meaning it's ok to make one small change per week.  By encouraging her students in this way, she puts them on the path.  Mayumi believes that macrobiotics offers an opportunity to study yourself.  If offers the answers of how to live your life.  The pandemic has given her the opportunity to appreciate all the gifts life has offered her and to acknowledge our interconnectedness.  Finally, for Mayumi, laughter is the cure and love is the answer – in cooking and life.   Facebook:  mayumi.niimiInstagram:  @greenshisoReferences:  The Plant Paradox: The Hidden Dangers in "Healthy" Foods That Cause Disease  by Steven Gundry, MD.The Book of Macrobiotics: The Universal Way of Health, Happiness & Peace  by Michio Kushi with Alex Jack. The Macrobiotic Path to Total Health:  A Complete Guide to Naturally Preventing and Relieving More than 200 Chronic Conditions and Disorders by Michio Kushi with Alex Jack.

Join me for a conversation with  Robert (Bob) Mattson as he describes his more than 50-year journey with macrobiotics.  Bob describes the year he spent in Oroville, California at the Vega Study Center with teachers Herman and Cornellia Aihara, both health pioneers.  While at Vega, he transcribed the "Morning Tea" sessions with Herman and Cornellia, a time when students and teachers engaged in informal Q&A over morning tea.  Bob shares the pearls of knowledge so freely offered during these sessions including:  "psychological/spiritual healing can occur in an instant while physical healing takes time."  Herman:  "Once a person changes his or her mind and decides to heal, this is the important 'instant' that is the spark that spurs healing."  Herman:  "For our spiritual development, we sometimes have to give up things we really cherish ( like smoking or sugar)."  Bob quotes from Verse 48 - Tao Te Ching – "In pursuit of knowledge, every day something is added.  In the practice of the Tao, every day something is dropped.  Less and less do you need to force things, until finally you arrive at non-action.  When nothing is done, nothing is left undone.  True mastery can be gained by letting things go their own way.  It can't be gained by interfering."  Bob:  "The world is gained by letting go - when we mature, we discover this is a more peaceful way to live and when we let go, we create the space for new ideas to emerge.  People who eat poorly - their judgment is impacted and rarely are they prepared to let go of old ways of thinking."  Touching upon his current writing project - the vocabulary for a new world constitution - Bob reckons with one planet, one global civilization.  He also speaks about a paper he wrote on microbial life - spurred by his conversations with E.O. Wilson, the prominent biologist and writer who he was chauffering at the time.  Most of us would be satisfied with Wilson's responses to questions posed; Bob however decided to conduct his own research.  He purchased 25 books on microbes from the Harvard Book Store and undertook an extensive research and writing project.  He claims it is no coincidence  that his most recent and current writing projects on microbes and personal rights are perfectly aligned with what the current state of the world -given the pandemic and the erosion of our most precious rights.  I queried as to what he learned in his role as a taxi driver, personal driver and chauffeur to many prominent individuals.  Bob:  "The rich and famous are actually quite ordinary, but caught some lucky breaks.  Many are quite expert in their chosen field, but this brilliance doesn't necessarily permeate to other areas of their lives."  He views one of the keys to a long and fulfilling life to always remain a student, something he learned from Herman Aihara.  Bob:  "By taking up a diet with whole grains and vegetables as primary foods, one stands a chance of undoing the systemic conditioning that we are confronted with early in life and beyond."  He truly adheres to the adage which he has created "whole grains whole brains."  Thank you Bob for an awesome conversation!

He also touches on his recent book relating to strengthening natural immunity to reduce the risk of viral and bacterial infection, including Covid-19.  (This book is titled Strengthening Natural Immunity, A Plant-Based Macrobiotic Approach and is co-written with Edward Esko and Bettina Zumdick.)  Alex introduces his new book published earlier this year, Spiral of History, The Arc that Bends Toward Justice, Peace & Love, which is intended to be the first book in a series exploring this critical juncture in the history of the human species where "the pace of modern life is accelerating rapidly, all boundaries are dissolving, and everthing is converging. All familiar institutions are breaking down:  family, church, school, hospital, brick-and-mortar store, union, and even the nation-state.  Age-old concepts of race, sex, gender, matter and spirit are in breathtaking flux."  As humanity ushers in a new era, few individuals are as daring and emblematic of futuristic thinking as Elon Musk.  I asked Alex to complete a facial diagnosis (macrobiotic/oriental medicine) - this is one indicia of the individual's constitution and balances/imbalances and offers insight as to what drives him/her. The First Lady of Nutrition Podcast with Ann Louise Gittleman, Ph.D., C.N.S.

A legend in the macrobiotic community, Bill Tara was the first person to be awarded the title, Macrobiotic Senior Teacher, by Michio Kushi. He is also creator of health education centers throughout Europe and North America. Lest you think that only vegans and raw food officios are interested in what he has to say, those following Keto, Paleo, and other popular diets need to tune in. Going against the grain with a newly reframed macrobiotic diet, Bill explains why some of the most popular diets right now aren’t good for the environment nor are they healthy for us. The post Beyond Macrobiotics – Episode 10: Bill Tara appeared first on Ann Louise Gittleman.
