On our hunt for Denver's best street tacos, we stumbled on a story we had to share: After decades working in other peoples' restaurants on the Northside, Jose Ramirez ventured into the suburbs to open Los Dos Potrillos in 2002. Serving his version of Colorado's famed green chile alongside dishes reflecting his hometown of Jerez, Zacatecas in Mexico, Jose gained a loyal following. Now Jose's sons, Luis and Daniel, have taken over Los Dos with big dreams to become the “Shake Shack of Mexican food.” The brothers now oversee four locations across the metro area, have launched a brewery, are planning a fast-casual spin-off, and have their sights set on 20 more new locations across Colorado in the next few years — including a massive, 8,000-square-foot Los Dos flagship in Castle Rock. He then went to Concordia Theological Seminary in Fort Wayne Indiana, where Pastor Dave graduated with a Master of Divinity degree in 1983. Their first parish was in Tobias Nebraska, then Burlington Colorado, then El Paso Texas, and finally, the last 25 years Pastor Dave‘s ministry was spent as Senior Pastor at Peace Lutheran Church in Arvada Colorado. He teaches third graders at the Studio School in Northglenn, CO. In addition to the standard curriculum, he writes plays for his students to perform as part of the arts curriculum. In his spare time, he performs all over town. Most recently, he has developed a drag character, Shirley Delta Blow, who hosts shows and bingo events. A big city girl with small town dreams, Shirley Delta Blow came west to seek her fortune. Good for you, Denver is as far as she got. She is an event hostess, a drag performer and a queen. Shirley performs on stages all over the state. Her unique and quirky style has lead to shows like Drag Machine and DragOn! at the Denver Center for the Performing Arts, and Drag Decades at the Clocktower Cabaret, now in its fifth year. She also reads books for children and their families at story times hosted by libraries and bookstores, as well as her FaceBook Live show, I Love That Story. In addition, Stuart travels and trains teachers all over the country in cooperative learning. And if that’s not enough, he enjoys reading, movies and his partner Jim. REAL Training is a club team directed towards youth and high school student athletes.
