Chris O'Connor, VP of brewing operations at Prost in Northglenn, Colorado, has built a career on being a process nerd. He spent a decade in engineering for the pharmaceutical industry before switching gears and following his passion for brewing. His analytical approach to colllecting data, testing, and questioning conventional logic is a big part of what drives quality at Prost's award-winning lager program. The success spans three Great American Beer Festival medals in the past three years, including silver for Prost Pilsner in 2023 and two golds in 2025, for Schwarzbier and Viennal Lager. Despite that success, the production team recently made a leap, moving to a new house lager yeast—the Augustiner strain, instead of 34/70. In this episode, O'Connor discusses that careful process, plus: huskless endosperm mashing for a refined lager profile taking advantage of Prost's fully customized, five-vessel Kaspar Schulz brewhouse an intentional, eight-step decoction process—and completely changing it to accomodate a new yeast strain why they use “marine-blade” custom rakes to agitate the mash and decoctions using a vacuum-evaporation process after the kettle to drive off DMS precursors and other volatiles open fermentation and the impact of tank geometry using blind tasting, polls, and sales data to evaluate lagers made with the new yeast the palpable difference in sulfur impact from the 34/70 and Augustiner strains Ultimately, despite brewing traditional styles using traditional methods, O'Connor's view is that no process is sacred—challenge everything, test, observe, and always be ready to change. Serving his version of Colorado's famed green chile alongside dishes reflecting his hometown of Jerez, Zacatecas in Mexico, Jose gained a loyal following. Now Jose's sons, Luis and Daniel, have taken over Los Dos with big dreams to become the “Shake Shack of Mexican food.” The brothers now oversee four locations across the metro area, have launched a brewery, are planning a fast-casual spin-off, and have their sights set on 20 more new locations across Colorado in the next few years — including a massive, 8,000-square-foot Los Dos flagship in Castle Rock. Maurice Henriques is currently an attendance advocate for the Boulder Valley School District in Colorado. In addition, to his work in BVSD, he is the Head Track and Field coach at Niwot High School in the St. Vrain Valley School District, Under his leadership, the Niwot Track and Field team swept the Boys and Girls Class 4A Team Championships for the first time in the history of the school at last year’s state meet. Maurice - Coach Mo, as many people call him - founded REAL Training, REAL stands for Responsibility, Education, Athletics, and Leadership. REAL Training is a club team directed towards youth and high school student athletes. REAL Training is dedicated to helping students reach their full potential both on and off the field. http://realtrainingcolorado.comIn 2020, Coach Mo was recognized by the Positive Coaching Alliance as the National Coach of the Year out of 800 nominees. In addition to track and field, Coach Mo was a Defensive Back Coach and Defensive Coordinator at Ranum, Denver North, Fairview, Northglenn, and Thornton High Schools. He was a Defensive Back and four-year letterwinner at the University of Colorado from 1992 -1996. He also ran high school track and field in Texas, and he will never let you forget it.Maurice spent eighteen years as a Juvenile Intensive Probation Officer for the 20th Judicial District in Boulder County. In addition, Maurice also served as the Truancy Mediator for Boulder County from 2009-2016. Maurice has created several innovative programs for youth, including the JOCKS (Juvenile Outreach Creating Kinesthetic Skills), a running program that trained and ran in the 10k event named the Bolder Boulder. Receiving many accolades over the years for his coaching and work with at-risk youth, he believes that working with kids is his calling.
