Bob Cork's Cider Career Bob Cork Bob Cork has 40 years of experience in cider making, starting in 1980. Initially an apprentice engineer, he transitioned to cider making, thanks to his engineering background. He now works as a cider-making consultant, still contributing to the legacy of Showering Cider Mill. The Evolution of Showering Cider Mill and Babycham Entrance to Showering Mill Showering Cider Mill, made an undeniable mark for a perry called Babycham. The mill has evolved over the years, modernizing its equipment while maintaining traditional cider-making techniques. During the production of Babycham, horizontal tanks for producing this widely popular drink. At the time they were laid outside and eventually a buidlign was built around the tanks. The Shepton Mallet Cider Mill is the second largest mill in the UK and over the years it expanded to include a variety of ciders, while continuing to produce Babycham, the popular Fever brand and today a traditional cider called Showering Triple Vintage. The Traditional and Modern Blend: The Triple Vintage Matthew, Daniel, Jonathan Showering and Ria Windcaller The Triple Vintage cider, created by the Showerings blends three vintages to produce a high-quality product. Bob Cork in this episode discusses how it is made using bittersweet and bittersharp apples, fermented with a wee bit of natural yeast and then a cultured yeast. The cider is matured to achieve a balanced, high-quality cider. Key to the cider-making process, is low-temperature fermentation and controlled maturation. Bob Cork's Advice for Aspiring Cider Makers Bob advises aspiring cider makers to approach the craft with passion, as it requires significant investment and a long-term commitment. He emphasizes the importance of a solid business plan and understanding the market's cyclical nature. Despite the challenges, he believes in the future of cider, with increasing consumer interest in high-quality, craft ciders. What do you think of when you think about a pint of Timothy Taylor's Landlord? Is it a seamless marriage of hop, malt, yeast and water? Or is it perhaps the pristine vistas offered by the hills and dales of Yorkshire? God's Own Country they call it, modestly. Maybe it's about that duff pint you had in a random Soho pub that tasted of idleness and regret? All three perspectives are valid. There is a lot that goes into the production, consumption and (potentially) enjoyment of this near universally acknowledged and appreciated beer. One that is the second largest cask beer by both volume and value in the United Kingdom, neatly behind the ubiquitous Doom Bar from the Molson Coors-owned Sharp's (which also makes Landlord the largest independently produced cask beer in the UK.) 19 million pints of this pale, Yorkshire bitter are supped, swilled and scoffed at every single year. That's quite a feat, when you think about it. It is these reasons that stimulated our latest long read: A Polyptych of a Pint, by Rachel Hendry. As a feature it is one that came into being thanks to a little bit of serendipity. While Rachel and I were wrapping up the production of an earlier piece she wrote for us on the history of Babycham, at the end of an email she opted to include a couple of sentences that indicated she wished to write about Landlord. By coincidence I had also been sitting on the open offer of a tour at the brewery, and suggested she might like to join me, as research on her yet-to-be feature began in earnest. That tour was led by the current CEO of Timothy Taylor's, Tim Dewey. An ex-spirits man who formerly led marketing at brands like Smirnoff and Drambuie, he's sat in the big chair at Taylor's for over a decade now, and announced his impending retirement earlier this year. More serendipity, then, in that Rachel and I were lucky enough to catch Tim before he started to enjoy a well-earned retirement. In this episode join Rachel Hendry and Matthew Curtis as we chat to Timothy Taylor's CEO Tim Dewey about all things Landlord. Find out why it's one of the most well loved, and indeed, talked about (and argued over) cask beers in the country in this must-listen-to episode of our podcast. We're able to produce The Pellicle Podcast directly thanks to our Patreon subscribers, and our sponsors Loughran Brewers Select. If you're enjoying this podcast, or the weekly articles we publish, please consider taking out a monthly subscription for less than the price of a pint a month.

The Showering name is synonymous with both innovation and tradition in the world of cider for the past 187 years. In this Episode 425 of Cider Chat, Nick Showering shares a bit on his family's cider-making roots that stretch back over 400 years and in the past 180 years in the town of Shepton Mallet, Somerset, England. Nick Showering A Storied Legacy in Somerset The Showerings have been crafting cider in Somerset for nearly two centuries. It all began with a small pub, The Ship Inn, where cider was made and served locally. As generations passed, the family expanded their influence, eventually creating Babycham—a sparkling perry that revolutionized the beverage industry and played a key role in shaping British drinking culture in the 1950s. The playful brand with the signature reindeer brought a fresh, elegant option to women in a male-dominated pub scene. Hello Triple Vintage! Triple Vintage is made with 100% cider apples all grown in Somerset. The featured apple in this cider is Dabinett. Solera, the technique of blending different ferments, in this case three different vintages of high-tannin apples, creates a delectable cider that balances depth of flavor with an elegant finish for the Triple Vintage. Enjoy the Triple Vintage which is sold throughout the UK in fine dining establishments or online (link below) in a large stemmed red wine glass. Serve slightly chilled. The Triple Vintage comes in 375 ML bottles. What's Next for the Showerings? With their sights set on continuing to produce fine cider and Nick Showering clearly enjoying the challenge, time will tell. For now it appears it is all about maintaining a foot in the door of the ever increasing “fine cider” category and the prospects of introducing a new generation of drinkers to the possibilities of high-quality cider…making that very good news for the industry at large. We had the pleasure of interviewing Cham over Zoom video! Having amassed success spanning over three decades for his pioneering milestones and culturally-shaping achievements in the space of Dancehall, Reggae, Hip Hop, and more, Cham (p.k.a Baby Cham) has crafted an undisputable legacy that remains peerless to the greatest in class. Today the multi Grammy Award-nominated, internationally acclaimed artist unleashes the highly anticipated visual to his fiery single “Lock Down.” Lock Down takes on its masterful flare from the Clockwork Riddim, which is produced by eight-time Olympic gold medalist Usain Bolt. Bolt, in a few short years, has shown that there is nothing off the table for him, and that success follows in every endeavor as long as passion is upheld. WATCH “LOCK DOWN” HERE “Lock Down” find the dancehall legend in his element, spitting fiery, conscious-rooted lyrics over iconic bass-knocking beats made to uplift and rejoice. Cham encapsulates what life has been like in Jamaica for almost two years in a cinematically emotive way, using the extraordinary natives of Jamacia as leading stars for his genius real & raw storytelling.ABOUT CHAM The rich, bass-laced, fast-paced world of dancehall music means only the best of the best survive. Not many can go through a name change and still remain relevant. Many would say that even less can manage to take a break, tour the world and return to the scene to command an audience like never before. Clearly, you've never met the Grammy-nominated dancehall-superstar that is Cham. Having started in the music business by watching artists like John Wayne and Super Cat rehearse on his uncle's Waterhouse-based sound system, Studio Mix, Cham doesn't look at his musical career as a ‘job'. He has all right to, though. With his unmistakable voice and remarkable stage presence, Cham has made his name in dancehall all over the world. He first emerged on the dancehall kaleidoscope in the mid-1990s, making tracks on various juggling riddims including the immortal Showtime Riddim which spawned his hit Galang Gal. Then, in 2000, under the moniker Baby Cham, gave the world his debut album Wow: The Story, and hits such as Many Many, Boom Tune, Man & Man and more. The formula of Cham's deep baritone voice and rustic, lyrically lethal tracks made sure that he would stake his claim in the annals of music history. While musical naysayers continued yapping about the limited potential of dancehall, Cham's crossover hit Vitamin Sstruck a nerve… with the world. The song was perfect. Vitamin S racked up uncountable hours on disc jock turntables around the world, and led the artiste, whose real name is Damian Beckett, to a deal with Atlantic Records, where he joined fellow Jamaican Sean Paul and American rap stars like Lil' Kim and Fat Joe. His loyalty to Jamaica and Jamaica's culture never faded, and his goal was always to bring dancehall music to international ears. In fact, Cham can be quoted as saying, many years ago, that he wants Madhouse Productions to be an international household name. It came as no surprise when Cham and Madhouse worked together to produce Ghetto Story, his biggest hit to date. The song hit at the end of 2005, and again, Cham took over the world. The song was a narrative of the rough and rugged life Cham overcame to become the man he is today, through the thick and thin of some of Jamaica's toughest garrison communities and streets. Having put the song into perspective and silencing all naysayers yet again, Cham went a step further and attracted none other than Alicia Keys to remix the now worldwide hit single. The world waited on bated breath for the release of Ghetto Story's official video, and again the world watched in awe as Cham sent dancehall music to new heights, shattering glass ceilings on the way to the top. But that wasn't the first time Cham's unmistakable style and voice ended up on a track with an international artist. His list of collaborations includes Foxy Brown, M.I.A., Nina Sky, Mario and more. But for Cham, it's not about the accolades and the egos. Having amassed many more international smash singles over the year such as the high-tempo, club-rocking hits Wine, That Way and Tun Up, Back Way and more places Cham's versatility as an artist on display for the world to see across an array of generations.
