Steve and Bryan Co-founder of Old Caz Beer Bryan Rengel joins Steve Jaxon and Herlinda Heras in the studio on Brew Ha Ha today. Bryan was on Brew Ha Ha last August on this episode, and his partner Tom Edwards was a guest on this other episode from March 31, 2022. The first beer tasted today is called Chismosa Clara, their take on a Mexican Lager. There is an amber ale version. This is a lighter one, made to be like Modelo Especial. They are located in Rohnert Park which is growing and gaining popularity. A hazy IPA is the next tasting, called Early Sunset. It's an example of a creative process of starting with a special recipe that they make in kegs only, to see if it becomes popular. If it does, they will make a label and produce it. This is how they select which beers to produce more of. Old Caz is opening a new location in SOCO Village, right in the middle of the square. It is under construction now and their goal is to use the old taproom only for special events and to move the public tasting to the new place. I had the immense pleasure and privilege to have an interview with CEO and co-founder Garrett Marrero of the Maui Brewing Company during my vacation in Hawaii. I was born and raised in Honolulu Hawaii. I am a first generation Korean-American. After graduating high school I headed to the mainland. I started off in New York City for about 3 years, before moving to San Francisco, and lived there for a few years. I finally settled in Seattle for more than 10 years. Although I was involved in the food and beverage industry in all those cities, my culinary endeavors didn't truly begin until Seattle. I trained under Tamara Murphy, Ethan Stowell, Tiffany Layco, Zach Chambers and many other James Beard Award winning chefs. I have been fortunate to have moved up fairly quickly in this industry. I first started as a banquet prep not knowing how to hold a knife properly. I was trained intensely by a French trained Chef that worked under Thomas Keller in Napa Valley. She was my mentor, and took the time to teach me many of her techniques and skills that enhanced my growth in this career. Then two years later, I was promoted to Sous Chef. I moved back to Oahu, in the fall of 2015 and began working at Mariposa as a line cook. I was later hired at the Kahala Hotel and Resort as a sous chef, followed by Herringbone as an executive sous. Currently I work at Maui Brewing Company in Waikiki. Chef Terry Lynch has given me the wonderful opportunity to assume the Executive Chef position at Maui Brewing Company. Guest Biography Garrett Marrero is Co-founder & CEO of Maui Brewing Co. Garrett makes sure to drink the local beer everywhere he travels. For him, great beer reveals elements of the personality of a place and, hopefully, reflects a vibrant part of the local economy. It’s also the reason why, on his first visit to Maui in 2003, Marrero refused to accept the fact that Maui’s “local” beer was actually made on the U.S. mainland and shipped to the island. An investment consultant with bachelor’s degrees in economics and international relations, and an associate’s degree in finance, he recognized an opportunity to create a niche product in an untapped market. A beach kid from San Diego, he also saw in Maui a chance to live near some of the most beautiful beaches in the world. Garrett and his wife Melanie opened Maui Brewing Co. in January 2005 with a seven-barrel brewpub and 30 employees in the West Maui community of Kahana.
