At just 27 years of age, Rasika Venkatesa has already put herself in position to plan her first restaurant. Currently serving a tasting menu in her residency at Fulgrances Laundromat in Greenpoint, Brooklyn, (though March 1, 2025), Rasika attended hotel management school in India, worked her way up from commis to chef de partie at The French Laundry, and attained the position of chef de cuisine at Mourad in San Francisco. (As if that weren't enough, she also recently competed on Top Chef.) After relocating to New York City in 2024, Rasika is currently planning a brick-and-mortar incarnation of her pop-up Mythily (named for her grandmother and North Star). The restaurant, like the pop-up, will offer a personal and progressive take on Southern Indian cuisine (specifically the food of Tamil Nadu), and Rasika is refining dishes and menus in her current residency. Though the episode didn't produce any or memorable dishes, it did what an early episode is supposed to do: Begin the separation of the contenders from the long-shots. Hey All and thanks for joining me again on this week's Industry Night. So excited to spend this month at Tony & Joe's down on the waterfront in Georgetown. If you live in the DMV or have ever visited this city chances are you've been here. They have one of the best patios. It looks out on the Potomac with views of the Kennedy Center. Seriously on a gorgeous day you want to sit out on that patio with a tray of fresh shucked oysters and a glass of Rose and watch the boats go by. So special thanks as always to Greg Casten for being such a tremendous supporter of me, this show and the work that I do. I'm going to chat with Greg in a minute about the history of Tony and Joes and Tony - Greg's Uncle Tony - who was such a character and just recently passed away. Later in the show, I'll be chatting with good friend and wine authority Winn Roberton. Winn runs the show at Michael Mina's Bourbon steak and I love talking wine with him. And by the end of today's show, you will too. But first — one of my favorite things to do is talk about where I am eating and I kid you not, I have been seriously out and about and eating all the good things — mostly! -I celebrated the Lunar New Year with Scott Drewno & Danny Lee at Chiko for their Lunar New Year Tea — They brought in Jill Nguyen of Capitol Jill Baking and Caroline Ta of Sweets by Caroline — ginger scones, dumplings, tea sandwiches and milk buns -Popped into Fiola for a glass of Mt Etna Bianco & airy gnocchi -Love a Rasika check in and on a Friday it is hopping -I've been to Moon Rabbit twice in the last two weeks — it is that good — you may have listened to my show with Kevin Tien & Susan Bae and team that I did there before they opened and everything that we talked about — their intention, commitment, passion — it all ends up on the plate. There's also a really sunny vibe — they are all so happy to be there and be open and be serving delicious mod -Vietnamese. Do not miss the pate chaud or any of Susan's desserts. -I stopped by Tail Up Goat. They are now doing a tasting menu only in the dining room so I just sat at the bar had a wonderful glass of La Croix Gratiot Les Zazous — a truly lovely white that Bill Jensen recommended. He also poured me a funky wine - Sipon from Slovenia — and of course he poured me a riesling because it makes him crazy that I don't like it an I have to tell you — he didn't even try. He poured me a riesling that had a sweet finish and I was like you gotta be kidding me. When I bring in Winn we are going to talk about Somms and their love of riesling Last one — although I have so many more places that I have been — I went to Service Bar. Now if you know me you know I'm not really a cocktail drinker. But it had been a minute since I had been in and I was looking forward to catching up with Christine Kim. Again, the city was pretty lit up. U Street had bars filled and people waiting on lines to get in and other people pouring out of the bars. So fun. They play amazing music and if you are a cocktail drinker while the place looks like a hole in the wall — the cocktails are thoughtful, balanced and well made Okay! On to today's show! When you are at Bourbon Steak there is a very tall individual walking around busily taking care of all the patrons — you cannot miss Winn Roberton the head sommelier at Bourbon Steak. The outcome is an increased public trust and positive attitude toward science, ultimately strengthening the connection between the public and scientists. Join us for a look at the forefront of research in our region and meet the students who are leading the latest wave of scientific discovery. Rory Mcguire: Automating science by putting the lab on a chip Computers used to be the size of rooms, and now they fit in our pockets. Biology, chemistry, and medical research on the other hand still require big, expensive lab spaces. But what if we could shrink the lab down to the size of a phone, or maybe even smaller? Putting a lab onto a chip could make research more accessible to underfunded institutions, cut the wait time between a doctor's visit and getting a diagnosis, and reduce hazardous biological and chemical waste, among other benefits. Motivated by these possibilities, Rory McGuire is developing a “lab-on-a-chip” that uses electrical signals to manipulate liquids and molecules on a palm-sized platform that can all be controlled from your laptop. Rory Mcguire does research at the intersection of computation and biology. Sometimes this means using DNA as a hard drive to store digital data, and sometimes this means using electronics to automate biological experiments. Rory has spent the last 2 years developing open-source hardware and software with the aim of making biology and chemistry research more accessible, efficient, and equitable. Keenan Ganz: Predicting where the next wildfire will burn Recent large forest fires in the American west have placed wildfire, and its consequences, in the public eye. For nearly a century, forest managers have suppressed fire in naturally burning forests and used public awareness campaigns to portray wildfire as a destructive and wasteful force. But, recent scientific work and recognition of Indigenous land practices point to the opposite interpretation: fire is crucial to keeping our forests healthy. Keenan's work is about helping us live with fire. He studies how computer models can help us prepare for when the next fire will burn. Keenan Ganz is a graduate student in Remote Sensing at the University of Washington. He uses specialized cameras on satellites and drones to study forest health and wildfire. One day, Keenan wants to build an improved forecasting system to understand when and where wildfire will burn next. Rasika Venkataraman: How understanding the environment of cancer can help us treat it Blood cells develop and mature in a spongy environment within our bones called the bone marrow. The bone marrow and blood cells are in constant communication with each other making sure the ‘blood headquarters' is functioning smoothly, replenishing blood throughout life. A small population of humans is born with a mutation in a specific gene, which puts them at risk of developing blood cancer later in life. A mutation is a change in our genes, which are codes that tell our body to function a certain way. To understand how this mutation causes blood cancer, we need to study its function in blood cells as well the bone marrow environment. This will shed light on potential disruptions in the communication between the blood cells and the bone marrow, which could then be leveraged to improve blood cancer treatment in patients that have this specific mutation. Rasika Venkataraman is a third-year graduate student at the University of Washington's Department of Lab Medicine and Pathology. Her research focuses on studying a specific hereditary mutation in DNA that causes blood cancers. She aims to investigate how this mutation alters the environment in which the cancer cells develop and grow, to improve the treatment of blood cancer.

We speak to Rasika Prashant, co-founder and Chief Marketing Officer of Soulfull Foods which is now a part of Tata Consumer Products. We've also changed the format of the episode a bit - the last 10 or 15 minutes are a Business Munchies discussion where we discuss an idea with Rasika.So what is Soulfull? It's a food brand that's build entire around Millets, aka Ragi or Nachni - they have cereal, instant dosa mix, and other products that are all made from Ragi. The discussion with Rasika starts from a realisation that Millets or Ragi are a healthier alternative than wheat and rice and ends with Soulfull's acquisition by Tata Consumer Products for 150 crores.We also discuss how they got their initial set of customers, how they thought about offline distribution before the pandemic and how they quickly pivoted to an online focused model after the pandemic. One incredible story in this discussion was how Rasika and her co-founders personally interviewed 300 customers for 2 hours each to gain more consumer insights. That's 60 days of interviews if they did 10 hours of interviews everyday. No wonder Tata wanted to buy them.Big Announcement!
