The sounds of a busy hospital kitchen have changed over the years, including at Peace Arch Hospital in White Rock BC. New technology and pre-packaged meals, introduced for greater efficiency and cost-savings, have somewhat muted the clanging of pots and pans. But there's a new movement underway to return to an old concept: full-service food production, with meals prepared from scratch. In this episode of Power to Heal, you'll learn why these “production kitchens,” as they're called, are making a comeback – and how they can play a major role in creating shorter hospital stays and improved patient outcomes. Here's a hint: It's all about choice.Back in the 1990s, the Canada Food Guide – designed to help Canadians make better, more nutritional food choices – featured a simple, four-colour scheme representing a balanced diet. Variety of choice, it appeared, was in short supply. Later editions of the Food Guide acknowledged that a one-size-fits-all approach didn't address the complexities of Canada's rapidly changing demographics, with dietary needs based on age, religion, and cultural considerations increasingly coming to the fore. This posed a problem for kitchens in healthcare settings, many of which had been caught up in the trend toward lower-cost pre-packaged meals, known as “retherme.” But lately, and especially in countries like the United States and Great Britain, there has been a return to the “production kitchen,” a place where a more flexible, personalized menu of made-from-scratch meals can be produced from fresh ingredients. Dr. Adrianne Lickers Xavier is a remarkable academic who is currently serving as the acting Director of the Indigenous Studies Program at McMaster University, where she has made valuable contributions to the fields of Indigenous Studies and Anthropology. She earned her undergraduate degree in Anthropology from McMaster University and went on to complete her MA and doctorate at the esteemed Royal Roads University, where her research focused on Indigenous food systems. Dr. Xavier is a passionate and dedicated teacher who has designed and delivered courses in the areas of Contemporary Indigenous Issues, Indigenous Food Security and Food Systems, Indigenous Food Sovereignty, Indigenous Ways of Knowing and Methodologies. Dr. Xavier is a true scholar whose research interests include the study of Indigenous food security and sovereignty, Indigenous land connections and re-matriation, Indigenous food ways, and Indigenous ways of knowing. Her exceptional work in this area was recently recognized when she was awarded the new McMaster Indigenous Research Institute “Indigenous In-Community Scholar Fellowship” in 2020. This project aims to expand the understanding and capacity around food security and sovereignty in Dr. Xavier's community of Six Nations of the Grand River Territory. Her achievements were further recognized when she was awarded the prestigious Petro Canada McMaster Young Innovator Award for 2021-22, which allows undergraduates to engage in Indigenous research and focuses on building community. Dr. Xavier's appearance on Nicolette's first PhD podcast was a tour-de-force. She shared her insights on a range of issues, including the root causes of disease, food sovereignty versus food security, and the impact of colonization on access to nutritious foods that are part of one's heritage. She also touched on the ways in which racism acts as a barrier to food and disease, and how trauma can cause disease. Dr. Xavier underscored the importance of listening to our bodies and the foods it craves. She passionately believes that educating the next seven generations of people about food and history is vital, and that even social media can play a role in influencing the kinds of foods people are exposed to. Dr. Xavier's upbringing was centered around whole foods, as her mom grew everything or traded for other foods and she reflects on how this all changed when they moved to Canada. The new Canada Food Guide was recently released and includes an online suite of resources that better meets the needs of different users including the general public, policy makers, health professionals, healthcare centres, childcare centres, and schools. The Canada Food Guide has a long history of being used and is promoted by health professionals when supporting Canadians to eat well. The Food Guide can help influence the foods served and sold in Canada's public institutions like workplaces, healthcare centres, recreation centres, and schools. The speaker will provide guidance on the issues surrounding nutritious foods and beverages that are the foundation for healthy eating and as well, foods and beverages that can have a negative impact on health when consumed on a regular basis. Food skills as a practical way to support healthy eating will also be discussed along with current evidence on topics such as sodium, saturated fat and sugars, supportive environments for healthy eating. Creating supportive environments across settings, such as schools, healthcare centres, recreation centres and workplaces can help increase the influence of the guidelines and build understanding about the key features and content of the Food Guide. Speaker: Heather Mathur Heather is a Registered Dietitian with AB Health Services and has spent the last 22 years working as a Population and Public Health Dietitian. Previous to this position, Heather has worked in Edmonton, Stettler, Coronation and Thousand Oaks, California. Heather graduated from the University of Alberta and completed her two-year dietetic internship at the Medicine Hat Regional Hospital. Heather's current position concentrates on the social determinants of health with a focus on nutrition throughout the life cycle. Her work involves community development and nutrition education. AND Andrew Scheer was speaking to an audience of dairy farmers when he said he would overhaul the Canada Food Guide. That group was instrumental in clinching the Conservative Party leadership for him. They are aggrieved because dairy is no longer listed as an essential food group. What do the experts think? Libby reached obesity specialist Dr. Yoni Freedhof to find out. He is an associate professor of family medicine at the University of Ottawa and the founder of the Bariatric Medical Institute.

Yesterday we discussed the recently revamped Canada Food Guide. Most notably, the new food guide replaces meat with protein based foods. Lean meat is still a part of the food guide, but not featured as prominently as before. Dairy was also not mentioned as heavily in this year's food guide. Canada is getting a lot of praise for the new food guide, and one organization applauding Canada is a group named ‘EAT' EAT is a non-profit organization in Oslo, Norway and their goal is to change the global food system in order to promote a healthy population and a healthy planet. They recently published a study in the Lancet about what the world's population SHOULD be eating, and it helped to inform Canada when they were building the new food guide. Eine neue, umfassendere Strategie wird auch die Werbung und Kennzeichnung von Nahrungsmitteln neu regeln. Kanada ist für saubere, sichere und gesunde Nahrungsmittel bekannt. Gleichwohl gab Gesundheitsministerin Jane Philpott bekannt, dass die bereits strengen Richtlinien überarbeitet werden sollen. Kanadas heutige Lebensmittel-Richtlinien entsprechen nach Ansicht der Ministerin nicht mehr den Bedürfnissen der Bevölkerung. Verantwortlich hierfür seien die demografische Entwicklung und der veränderte Lebensstil. Neue Vorschriften für Verpackungen Geändert werden auch die Kennzeichnungsrichtlinien für Verpackungen. So sollen Konsumenten in Zukunft bereits auf der Verpackung sehen können, wie viel Natrium, Zucker oder gesättigte Fette ein Produkt enthält. Im Rahmen dieser Anpassungen wird Kanada zudem die Kennzeichnungsrichtlinien für an Kinder und Jugendliche gerichtete Produkte erneuern. Kanada folgt damit der Weltgesundheitsorganisation WHO, welche 2010 empfohlen hatte, die Vermarktung von Nahrungsmitteln und Getränken für Kinder und Jugendliche strikter zu regeln. Schweizer KMU, die Lebensmittel nach Kanada exportieren, werden die neuen Richtlinien einhalten müssen. Die Inkraftsetzung der neuen Richtlinien wird voraussichtlich 2019 sein.
