How does a pot-themed brand become one of the industry's fastest-growing restaurant chains? This week's episode of the Restaurant Business podcast A Deeper Dive features Marc Torres, the CEO of the fast-growing sandwich chain Cheba Hut. The Fort Collins, Colorado-based chain has picked up its growth in recent years behind franchising and strong average unit volumes. System sales grew 29% last year, according to Restaurant Business sister company Technomic. Average unit volumes are well over $2 million, far higher than traditional sandwich concepts. Marc discusses Cheba Hut, its history and performance, including why it generates those volumes. We also talk about franchising. He also talks about the company's pot theme, and how it convinces customers and landlords that it is more than that. Cheba Hut does not sell any THC, and Torres notes that its marijuana theme can only get the company so far. Ultimately its food does the talking. We're talking Cheba Hut on A Deeper Dive, so please check it out.

I met Matt Heath at our LoCo Social at Cheba Hut in April, where he had just finished up meeting with Marc Torres, Cheba's  CEO and my guest on Experience #139.  We had an awesome and interesting conversation, which led to a zoom and then booking this podcast, and I look forward to the day when LoCo Think Tank can hire his creative team to create a clever campaign - as their stuff is just so fun! Matt founded Party Land in the Los Angeles area in 2018, and moved the HQ office to Fort Collins for a change of scenery not long into the Covid lockdowns of 2020 and beyond.  He has had an incredible career journey, working with some of the fastest growing and most innovative marketing agencies in the industry, and leading campaigns for Arby's (We Got the Meats), Buffalo Wild Wings, and Netflix - among others.  His first big client after launching Party Land was Liquid Death, and if you've noticed that Men's Warehouse is moving back into cultural relevance - that has Matt's fingerprints on it too.  And - Matt's earlier chapters of life were no less incredible.  His grandfather and family were effectively marijuana kingpins of Eastern Oregon, with multiple grow ops, sophisticated processing, and a significant dealer network.  Going to grade school with grown-up secrets was emotionally challenging, and Matt struggled for years before finding a creative outlet in music - initially jazz, and then punk.  He tried to sign up for the Air Force when he was 17 to escape his town and home life, but his parents wouldn't sign the paperwork - and that launched him on a 10 year professional music journey!  A music festival allowed the band a window into the next level of success - and they didn't want it!  And the advertising career began.Warning:  This Episode is a world-class ADHD squirrel chase with a pair of goofs, and you can basically hear us becoming friends during this conversation.  So please join me in getting to know the Founder and Chief Creative at Party Land, Matt Heath, on The LoCo Experience. The LoCo Experience Podcast is sponsored by: Logistics Co-op | https://logisticscoop.com/

Marc Torres started his journey with Cheba Hut in perfect “cheba” fashion - a failed drug test foiled his job prospects with the City of Fort Collins, and a snarky friend said “you should go work at Cheba Hut, I bet they don't drug test!”.  Marc started on the front line (and claims he remains an excellent sandwich maker) and worked his way up in the ranks to store manager, and eventually became the primary trainer for new franchisees.  He managed a premier location owned by the founder of Cheba Hut, Scott Jennings, and developed many of the systems and training processes that allowed the chain to grow and provide a consistent experience in new locations.  The stories of LoCo Think Tank and Cheba Hut are long intertwined - it was Scott that famously told your host in 2015 - “Bear, you should park that F&$%in' food trailer in your backyard and go get a job”.  A few years into his time with Cheba Hut, Marc got a DUI, and a year later - another one.  This began the “indentured servant” phase of his career, when Scott sent him to live and open a new location in Greeley - and where he reconnected with his now-wife.  He continued to bring value to the franchise, moving to Arizona for a few years to work on (mostly unsuccessful) West Coast expansion efforts, and then returning to Fort Collins as Director of Operations in 2010.  He became COO in 2014, and partnered with Scott and another franchisee to build an HQ-supported super-franchisee designed to open new locations and grow the brand and systems for further growth - and it's been working.  They've recently been among the fastest-growing franchises in the industry; now boast 55 locations and expect to bring 5 more online before year-end, and open another 12-15 locations in 2024!   Marc has been a LoCo Think Tank member almost as long as LoCo Think Tank has existed, originally part of the Thinkers Too chapter and a founding member of our first Next Level chapter.  He's a driven and authentic leader, a first generation college graduate, and you're going to love his heart - so please join as we share the special journey of Marc Torres and Cheba Hut “Toasted” Subs.Episode Sponsor: InMotion, providing next-day delivery for local businesses. Way back in 1981, a humble New York transplant named Jimmy Lambatos opened an innovative toasted sub shop at the corner of 13th Avenue and Grant. Denverites quickly fell in love with Quiznos, fueling the rise of a sandwich empire to more than 5,000 locations around the world by the mid 2000s. But now, as Westword's food editor Molly Martin reported last week, Quiznos is on the ropes, and that first location has been shuttered due to non-payment of taxes. So today, Molly returns to the show with producer Paul Karolyi and newsletter editor Peyton Garcia to talk through the rise and fall of Quiznos and the surprisingly Denver story of founder Jimmy Lambatos.  We discussed Molly's interview with Quiznos founder Jimmy Lambatos and Peyton's deep dive into the fall of Quiznos. Paul mentioned the recent auditor's report on Denver's response to the homelessness crisis.  All the other great local sandwich places we mentioned: Subculture (Cap Hill) Snarf's (Various) Cheba Hut (Various) Carmine Lonardo's Meat Market (Lakewood) Spinelli's (Park Hill) Little Arthur's Hoagies (Food Truck) Olive & Finch (Uptown and Cherry Creek) Marczyk Fine Foods (Cap Hill, Hale) Curtis Park Deli (Curtis Park, Cherry Creek, Boulder) Leven Deli Co. (Golden Triangle) For even more local sandwich goodness, we settled the great Snarfs vs. Cheba Hut debate on the show last fall.  Do you have nostalgia for Quiznos' early years? Established in 1998, Cheba Hut is the first marijuana-themed sandwich “joint” that provides customers with made-to-order food in an eclectic fast-casual environment. Seth Larsen, Chief Relationship Officer of Cheba Hut joined host Barbara Castiglia for an in-depth conversation about the Cheba Hut experience, their franchise operations, the impact of the pandemic, and how marijuana legalization is changing the company's plans for growth. With a focus on fresh food and incredible service, Cheba Hut has thirty-five locations across twelve states. Larsen points to a ‘green wave' during the last twenty years that has made marijuana and marijuana culture more palatable to consumers. While there has been some pushback on the theme over the years, Larsen notes the company's successes with converting customers who might be uncomfortable initially.Larsen started with the company as a franchisee and sees the company's commitment to food quality as one of the main attractions of the brand. “At the end of the day, we're all foodies. We've never gone backward on quality, only forwards even if it meant more money,” Larsen said. When it comes to finding the right franchisees and expanding their locations, Cheba Hut focuses on values. “We really put our franchisees up to our core values. We have the hustle, show respect, own it, pay it forward, and keep it real. Nice and simple,” Larsen said. “That's made it really easy for us to identify who's going to be a good fit.”

He brought with him the gift of Wyoming's Whiskey, and we got down to business. Your hosts, Nick (@kickholland) and Weston (@westonunruh) recover from episode 3 of GhostPee presents Blunted Comedy at the Cheba Hut and sadly are forced to address the continuing controversy surrounding the Miles Harmony interview. Listen to Richard discuss the hazards of being a nerd in Wyoming, doing stand up in and out of characters, and ferrying the youth of Wyoming to and fro their places of learning. Also, keep your ears peeled because there's a fantastic preview for an upcoming episode of Cop Doctor somewhere in there. Kick off your shoes, take a seat, and let us regale you with our tales from the road, as we have also just returned from the first installment of the Ghost P. Nick (@kickholland) and Weston (@westonunruh) were joined by Dan Jones (@danomanjones) and French Accent AKA Kevin Bennett (@pianoman69). As usual, there was drinking, there was laughter, there was merriment, there was irrationally misplaced aggression, and potential paranormal activity. We are also incredibly excited for the upcoming inaugural show of GhostPee presents Blunted Comedy at the Cheba Hut, this Saturday June 19th at Cheba Hut West (Taft and Elizabeth) show is free, starts and 9, live music, live comedy, full bar. They address some of the most pressing sports issues of the modern age. Weston gives some feedback about Nick’s play. They recount the wild and dangerous comedy adventure they and some of GhostPee’s friends had on the way to and from Boulder, where they added a little bit of Fort Collins’ spice. And then they bask in the warm radiant glow of all of the exciting new things that GhostPee has on it’s horizon: The House of GhostPee, GhostPee Presents Blunted Comedy at the Cheba Hut, and the Ghost P.
