One of the most demonized foods in the natural health world is legumes. We hear that the anti nutrients in them are going to prevent absorption of nutrients and they will cause gas and bloating so they are not worth eating. What isn't talked about is the benefits of soluble fiber as it relates to bile and hormone and toxin removal. Karen Hurd helped her daughter recover after she was incapacitated from organophosphates in an insecticide spray. She says that beans were the ticket to restoring her health. She has a Masters of Science in Biochemistry from the University of Saint Joseph and now educates on the many benefits of beans and soluble fiber. "Some things take a lot of time to break down and enter into the bloodstream. That is not so with sugar. Whenever we put in sugar, it's what we call saccharide. Its molecular construction is such that it takes very little digestive effort - basically none - for it to cross the barriers that allow it into the bloodstream.""You produce insulin in response to the spike. So if you're going up really rapidly with your blood glucose levels, you're going to release a boatload of insulin to bring down your sugars just as rapidly. Insulin is very effective. We are thrilled to welcome back, Karen Hurd, Nutritionist and Biochemist. She has been practicing nutrition for 30 years and has helped over 30K people reclaim their health through her services, including her e-courses. The first time we talked with Karen was in the spring of 2020, where we introduced her and she shared her life and very personal story about what led her to do this work.  She talked about her nutrition philosophy and how to heal the body through the power of food. We highly recommend that you listen to episode #39 with Karen as it was our most popular episode so far.  She is full of so much wisdom and insight, and we love how Karen is so deep into the science, in particular with Covid-19, which she'll share with us today. Karen, in addition to her nutritional training, holds her masters degree in biochemistry. Her philosophy in approaching health is that of Hippocrates (the father of modern medicine) when he said, "Let food be thy medicine, and thy medicine be food." Karen applies her knowledge at the biomolecular level to understand the cause of the health problems we face and what dietary and lifestyle changes are needed to correct that cause and unlock our best health. In today's episode Karen shares her immunity building tips including an in depth discussion about the Covid-19 virus.  We discuss her immunity building protocol, which includes food (and yes we'll discuss sugar) but also simple lifestyle tips to help ward off any viruses, or reduce the symptoms if you do contract one.   We even talk about her view on doing a polar plunge and what temperature she recommends that you keep your room at night. Karen's goal is to live to 120 years old and she does everything in her power each day to help her live as long as she possibly can, which she shares with us in our conversation. After her 18-month-old daughter's tragic poisoning, and her subsequent quest to heal her daughter, Karen came up with a method of detoxing that, simplistic as it is at its core, no one had yet thought of. We are thrilled to bring you today's guest, nutritionist and biochemist Karen Hurd. In today's conversation we dive into Karen's powerful personal story about how she saved her daughter's life from organophosphate (household pesticide) poisoning ​by researching, studying and implementing her own program to save her little girl's life. Choosing to employ the alternative method of nutrition, she began to administer a plan for healing using the knowledge she had gained through her research. Much to the amazement of the doctors, her daughter began to improve. Within six weeks, her daughter had made such improvement that there were no more measurable signs of distress. The only question remained if any permanent neural damage would be manifest as she grew older. Her daughter is now 31 years old, with no signs of permanent neural damage or any other damage. We also discuss beans (and how they help remove toxins from the body), fiber, the "s" word SUGAR, hormones, and so much more. You will not want to miss this very moving and powerful episode. Karen is a graduate of the American Academy of Nutrition (now called Huntington College of Health Sciences) and completed her coursework in Comprehensive Nutrition. This institution is accredited by the Accrediting Commission of the Distance Education and Training Council (DETC), which is listed by the U.S. Department of Education as a nationally recognized accrediting agency. She received her Master of Science in Biochemistry from the University of Saint Joseph in December 2017 and is currently enrolled at The George Washington University in the Master of Public Health program. Karen holds a Bachelors of Arts degree in Languages (Spanish as a major, German as a minor) from Truman State University, graduating in 1980 Summa Cum Laude. She graduated from Kirkwood High School in 1976 ranking in the top 1% of the graduating class of over 600 students. Upon graduation from college, Karen entered the U.S. Army and served four years as an officer in the Military Intelligence Corps. During this time she completed the Officer's Basic Course, the Electronic Warfare Course, and graduated from the Nuclear, Biological, and Chemical Defense course as the Honor Student. She received the Army Commendation Medal for outstanding service upon completion of her tour of duty. In 1984, she resigned her Regular Army commission to raise her family. She completed her time in service holding the rank of Captain. Karen has been married to her husband, Steven, for 42 years. They have five children, ages 26 through 35 years. They reside in Fall Creek, Wisconsin. Karen also is the executive producer of Scene and Hurd Productions, a film production company. Karen Hurd is back and we are diving into the topic of acidity. Karen breaks down the difference between acidity and acidosis, the difference between blood acidity and bodily fluid acidity and dismantles many of the common beliefs surrounding this topic. We also touch on the topic of the Keto diet, how it relates to acidity and how it can be very harmful to the liver, kidneys, adrenals, and overall health if maintained as a long-term diet. Karen walks us through the massive storm of internal imbalances that can occur when maintaining a keto diet for longer periods. She points out that Type 1 diabetics are at a particular risk of inducing acidosis when eating a ketogenic diet and explains why. According to Karen, “We have made a scapegoat out of acidity” in an attempt to place blame for a lot of prevalent diseases today. She points out that too much acidity in the gut can actually lead to a wide range of negative health outcomes including, nausea, acid reflux, heartburn, ulcers, chronic, and more. However, Karen explains how the gut can become too acidic and provides a very simple strategy to balance this acidity in the gut to prevent and even reverse many illnesses.
