Broadcast from KSQD, Santa Cruz on 10-03-2024: In response to several listener emails, Dr. Dawn expands on the benefits of Nori powder and Rhamnan sulfate, including their effects on cholesterol and the glycocalyx. TheThe type of Nori seaweed species with the high amounts of Rhamnam sulfate is monostroma nitidum (Japanese name Hitoegusa,) and can be obtained online at Https://okume.us. She then took a little time to recap the antiviral, anti-glycemic, and cardiovascular benefits of Rhamnan sulfate found in certain seaweeds. The doctor then emphasized the importance of hot water extraction for seaweed and mushrooms as dried powders to increase bioavailability of beneficial compounds. In response to another email, Dr. Dawn addressed green tea's interaction with iron which binds and prevents absorption and its potential impact on EGCG's antioxidant properties. This lead to a brief reassuring discussion about internet memes around the safety of tea consumption and debunking concerns about lead contamination in most commercial teas. We then heard about the potential link between a common artificial fragrance Musk Ambrette, which is implicated in causing early puberty in girls as young as 9 years old. Dr. Dawn briefly comments on the need for a new economic model to address the growing threat of antibiotic-resistant superbugs and the need for new antibiotics. A discussion on so-called anti-nutrients in foods, including lectins, oxalates, and phytates, and their actual impact on health. Fermentation not only changes the taste and texture of these foods but also has significant metabolic impacts.A key benefit of consuming fermented foods is the reduction in glycemic load, which helps control blood sugar and insulin levels. Dr. Bikman highlightes studies showing that fermented milk improves glycemic control and lipid profiles in people with type 2 diabetes. Send us a Text Message.A viewer, Barry, asked about consuming carbs and whether it is possible to become ketogenic while still consuming carbs, such as bread. Stephen explained that it is possible to enter a ketogenic state as long as the carb intake is low enough. He also mentioned that while he supports all healthy lifestyles, he personally believes that animal proteins provide all the necessary nutrients and that even small amounts of vegetables can have negative effects due to their lectin and oxalate content. He suggests keeping vegetable intake to a minimum and focusing on consuming animal protein and fats. This discussion covered the effects of certain compounds in foods, such as turmeric and ginger, on the body and how they can be harmful when consumed in large amounts. It was suggested that these compounds, particularly oxalates and phytates, should be limited in the diet and eliminated, if possible, to improve health and well-being. Thank you so much for listening to my podcast. The worst part of Richard's health was his anxiety; he wouldn't be able to leave his house, car, or office. Richard never felt good enough to be around other people. Eventually, Richard realized that bread made his belly swell. So, he gave it up. Within 30 days of ditching bread, Richard lost 28 pounds. Starting keto has completely changed Richard's life; luckily, every factor of his life has improved. [26:20] Cholesterol Isn't The Enemy; In Fact, Cholesterol is Essential For Health Cholesterol is essential for life. It's imperative for cell formation, cell communication, nutrient absorption, nutrient transportation, and hormone production. The brain and the myelin sheath are made of cholesterol. Lacking cholesterol would be detrimental to your health. There is a massive miscommunication when it comes to cholesterol. LDL is proactive; it heals the body and repairs it. The two main contributing factors to heart disease are grains and seed oils. Seed oils do not help lower cholesterol. Reducing carbohydrates and seed oils is the best way to have healthy LDL. [35:00] Is Your Cholesterol Profile Damaged? Richard Explains Where Your Markers Should Be There's a simple way to see whether your cholesterol profile is damaged. Triglycerides are one of the most significant factors; aim for less than 0.5%. HDL should be greater than 1.5. The triglyceride to HDL ratio should be below one. You're in good shape if your cholesterol profile is around these markers. Remember, cholesterol is essential for life; every cell in the body is made of cholesterol. [39:45] You Can't Store Fat Without Insulin From Carbohydrates, Sugars, and Seed Oils We can't store fat without insulin. Insulin is secreted by the pancreas when we consume carbohydrates. Many people will eat carbs before going to the gym to have the energy to burn fat. However, when insulin is elevated, it tells the body to store fat. Eating carbs will make it almost impossible for us to burn fat for fuel. Insulin puts a biological lock on our fat stores and prevents them from leaving. Carbohydrates and sugars will increase insulin. Seed oils will also impact insulin; they cause insulin resistance. [42:40] The Foods You Eat Could Be Blocking Your Ability To Feel Full Leptin is a satiety hormone. It tells us that we have eaten and that we are full. Seed oils will block leptin. If you aren't feeling full, you will consume more food. Grains are high in lectins; they cause five times more fat storage than insulin. Lectins in grains will also block leptin. The worst part of Richard's health was his anxiety; he wouldn't be able to leave his house, car, or office. Richard never felt good enough to be around other people. Eventually, Richard realized that bread made his belly swell. So, he gave it up. Within 30 days of ditching bread, Richard lost 28 pounds. Starting keto has completely changed Richard's life; luckily, every factor of his life has improved. [26:20] Cholesterol Isn't The Enemy; In Fact, Cholesterol is Essential For Health Cholesterol is essential for life. It's imperative for cell formation, cell communication, nutrient absorption, nutrient transportation, and hormone production. The brain and the myelin sheath are made of cholesterol. Lacking cholesterol would be detrimental to your health. There is a massive miscommunication when it comes to cholesterol. LDL is proactive; it heals the body and repairs it. The two main contributing factors to heart disease are grains and seed oils. Seed oils do not help lower cholesterol. Reducing carbohydrates and seed oils is the best way to have healthy LDL. [35:00] Is Your Cholesterol Profile Damaged? Richard Explains Where Your Markers Should Be There's a simple way to see whether your cholesterol profile is damaged. Triglycerides are one of the most significant factors; aim for less than 0.5%. HDL should be greater than 1.5. The triglyceride to HDL ratio should be below one. You're in good shape if your cholesterol profile is around these markers. Remember, cholesterol is essential for life; every cell in the body is made of cholesterol. [39:45] You Can't Store Fat Without Insulin From Carbohydrates, Sugars, and Seed Oils We can't store fat without insulin. Insulin is secreted by the pancreas when we consume carbohydrates. Many people will eat carbs before going to the gym to have the energy to burn fat. However, when insulin is elevated, it tells the body to store fat. Eating carbs will make it almost impossible for us to burn fat for fuel. Insulin puts a biological lock on our fat stores and prevents them from leaving. Carbohydrates and sugars will increase insulin. Seed oils will also impact insulin; they cause insulin resistance. [42:40] The Foods You Eat Could Be Blocking Your Ability To Feel Full Leptin is a satiety hormone. It tells us that we have eaten and that we are full. Seed oils will block leptin. If you aren't feeling full, you will consume more food. Grains are high in lectins; they cause five times more fat storage than insulin. Lectins in grains will also block leptin. In recent years, there has been a surge of interest in the potential negative health effects of lectins. What are lectins? They're a type of protein found in many plant foods such as legumes, wholegrains and some fruits and vegetables. If you take YouTube clips and popular diet books on their word, then these lectins are harmful to human health and are a major driver of inflammation, weight gain and many chronic diseases. Of course, to believe all this, you need to suspend the reality that humans have been eating these foods for thousands of years and it is only in modern times that we have been hit with all these major health problems. But hey, we need to blame it all on something I guess and lectins seem like a great way to sell books and get website clicks. Today, I am blessed to have here with me Dr Anthony Chaffee. He's an American medical doctor and Neurosurgical resident who, over a span of 20+ years, has researched the optimal nutrition for human performance and health. He claims that the majority of the so-called chronic illnesses are brought on by the food we consume and can be treated by switching to a diet tailored to our species.  About 23 years ago, when Dr Anthony was taking cancer biology at the University of Washington, they were learning about the roles of plants. Plants in general have about a million different defense chemicals that are used to poison and deter animals and insects from meeting them up. They need to be able to protect themselves because animals and insects are constantly attacking them.   They learned that quite a few plant toxins had already been demonstrated to be carcinogenic by researchers and that people had even recognized this fact. Brussels sprouts had 136 identified carcinogens, and then mushrooms had over 100. And then all of these different produce items that people would eat on a regular basis would have dozens and dozens of different carcinogens in them. That's why Dr Anthony is on full carnivore. Controlling blood sugar levels and insulin resistance are issues with diabetes. Lowering your insulin is the treatment for that. How may insulin levels be decreased? You lessen the level of carbs in your body. When you stop eating carbohydrates, your body will produce the right amount of carbohydrates, which will cause your insulin levels to decrease.  Dr Anthony hasn't heard of many people doing a Plant-based diet to cure type one diabetes but there are studies with ketogenic diets helping type one and type two diabetes. Some people with type one diabetes have radically changed how they manage their condition by adopting carnivorous or even ketogenic diets. They only need to provide a small amount of long-acting insulin, which will last them for the entire day, rather than many doses of the drug throughout the day. [18:52] All Plants Have Carcinogens! Why Plants Are Trying to Kill You There are undoubtedly things that have the potential to have hormetic effects. However, there is a claim that all of these plant toxins, literally millions of them, are not produced by plants for human benefit because we are not living in the Garden of Eden.  There's no actual evidence provided to say which chemicals are hormetic. At what dosage? Just get one leaf from your spinach or sage. That doesn't necessarily have all the same chemicals.  What kind of surroundings did it grow in? What kind of soil was it? What time was the pick? When must it be chosen as having to be freshman, it must be medicines. All of these objects' chemical makeups are altered by this. And so now all of a sudden, you don't know what dosage of digitalis you're getting. You can experience this beneficial hormetic effect in very small dosages. But it's in very controlled doses. [24:04] How can you tell whether something is working for or against you? You could follow an entire elimination diet. Do it for a month, then assess your feelings. After that, you introduce each thing one at a time. Some people are more resistant to these harmful chemicals and will have a better ability to detoxify these things.  [31:51] Eating The Right Animal Protein on the Carnivore Diet  Pick through exactly what you're eating. You can gain a small volume of muscle and bone and lose a large volume of fat and you'll gain weight, but your body composition will be different, and your clothes will fit differently.  [44:03] Heart rate variability: A sign to see if meat or plant toxic are good or bad for you? Nothing in meat will disrupt your heart's rhythm or bring on an arrhythmia. However, you might be hiding something. For example, your electrolytes are slightly out of balance, which is uncommon on a carnivorous diet. However, it may be claimed that when you switch to a ketogenic diet or a carnivore diet that is ketogenic from eating a lot of carbohydrates while your insulin is up, your levels of insulin suddenly go down. They had five doctors and one lawyer. Plus, they had a vegan doctor to argue against Dr. Paul. There was a lot of yelling, and Dr. Paul was barely given a chance to say what he needed to say. Paul invited them to his podcast to have an honest and genuine debate. None of them showed up. Eventually, Dr. Paul was getting a lot of muscle cramps, and he was getting heart palpitations at night. So, Dr. Paul started to reintroduce carbohydrates into his diet. First, he started to introduce honey into his lifestyle. After incorporating honey, Dr. Paul started to feel better. Blood sugar will spike when you include carbohydrates in your diet, especially honey. However, Dr. Paul's blood glucose tracing was very low. [22:50] Why Dr. Paul Doesn't Like The Term Insulin Resistance Paul doesn't like the term insulin resistance. He thinks metabolic dysfunction is a more precise term. He doesn't like to say insulin resistance because two types of insulin resistance are often confused and conflated. The first type of insulin resistance is physiologic insulin resistance. Humans have evolved a state known as ketosis, which goes hand in hand with physiologic insulin resistance. Then, there is pathological insulin resistance. Many people who exclude carbohydrates will see improvements in their physiology. [34:50] The Importance of Decreasing The Amount of Linoleic Acid In Your Diet Many people should decrease the amount of linoleic acid in their diet. We have to understand how much linoleic acid is in the foods we eat as humans. Soybean oil has 45 to 50% linoleic acid. Butter and tallow, which has rendered animal fat from cows, will have much lower levels of linoleic acid, around 2%. The composition of our cell membranes takes a long time to change. So, breaking down the linoleic acid will take a great deal of time. A low carbohydrate approach will help lower the linoleic acid in your diet. [40:00] What Happens When We Consume Too Much Linoleic Acid When we eat more linoleic acid, we can find more oxidized LDL. The oxidation and the instability of linoleic acid is one of the problems. There could be some potentially hormonal roles for linoleic acid that are negative as well. The underlying thing to consider here is an evolutionarily appropriate diet for humans. We consume much more linoleic acid than we ever have. [47:25] Should You Be Taking Fish Oil on The Ketogenic Diet? Fish oil spoils extremely fast. These oils are so fragile, and we're putting them in capsules, and we're presuming that they're not oxidized. The only place Dr. Paul is getting omega-3 is essentially from ruminant animal fat. Paul is not convinced that omega-3s are that beneficial or that we should be pumping ourselves full of them. There have been millions and millions of humans that have no access to coastal foods; they did just fine from eating land animals. [64:35] You Want To Push Your Linoleic Acid Consumption As Low As Possible Paul says to keep your linoleic acid consumption as low as possible. The human body can't make omega-6, but there's omega-6 in everything. The linoleic acid composition of a mother's breast milk changes based on their dietary consumption. If you look at the hunter-gatherers, their linoleic acid in the breast milk is much lower because they're eating so little linoleic acid in their diet. If you think canonically about what a vegetable is, it's the part of a plant that it doesn't want you to eat. Vegetables don't have a role in human health unless you want to go to great lengths to detoxify them. If you want to do vegetables, ferment the heck out of them and maybe do something like sauerkraut. Even some fruit can be problematic for humans. [88:10] Is There Really A Connection Between Eating Meat and Colon Cancer? We've been cooking meat for more than a million years. Calcium is an essential part of every human diet, whether you're getting it from bones or you're getting it from good sources of dairy. When you have more calcium in the diet, you tend to see lower rates of colon cancer. Overall, we should go back to the idea of what's evolutionarily consistent, and we try to understand that as best as possible to inform our behaviors. AND MUCH MORE!
