Pear crumble with pouring cream and burnt blackberry marshmallow Crumble mix 200 gm unsalted butter 150 gm raw sugar 200 gm plain flour 50 gm wholemeal flour 50 gm chopped dates Preheat oven to 170*C. Blitz all of the ingredients until just combined, apart from the dates. Spread the mix out on 1 large baking tray. Bake for 15 minutes, remove from oven. Add in the dates and turn the mix over with a spatula or wooden spoon then return to the oven for a further 15 minutes until crunchy and golden. Allow to cool, before crushing into slightly smaller pieces. Pear, apple and berry filling 500 packman pears, peeled and chopped 500 gm granny smith apples, peeled and chopped 200 gm frozen blackberries 150 gm sultanas 100 gm raw sugar 2 tbsp sunflower oil Keep the pears and apples in cold lemon water whilst preparing them, to avoid turning brown In a large saucepan over a high heat sauté the apples, pears in the oil until they just start to gain a touch of colour and soften. Remove and in a large bowl combine with the remaining ingredients. Pouring cream 250 ml cream 1 tbsp vanilla paste Icing sugar if required Combine the pouring cream with the vanilla paste and set aside Blackberry marshmallow 350 gm caster sugar 30 gm liquid glucose 80 ml water 180 gm or 6 egg whites 1 tbsp freeze-dried blackberries Bring the sugar and water together in a pot and heat till 110*c, keeping the sides of the pot clean with a brush dipped in cold water. Start beating your egg whites at this stage, you want the egg whites to be stiff before adding the sugar, turn down to a medium speed to stabilize whites before adding sugar. When the sugar reaches 120*c, take of the heat and slowly pour over the egg whites. Turn the mixer up faster as the sugar blends in. Continue to beat until the egg whites are cool and glossy. Fold through the blackberry powder and place mixture into piping bags ready. To serve: Preheat the oven to 160*c Put 2-3 big spoonsful of the apple mix into the average sized cups (about 250ml capacity), then top with the same amount of the crumble mix. Place into the oven for 25 minutes insuring the crumble mixture doesn't colour any further. Remove the crumbles from the oven and pipe over a dollop of marshmallow, using a blow torch then to burn the top. Just before serving the pour a tbsp of cream into the crumble. We also continued our Gary Paulsen festival by listening to Northwind, which is about a Viking-era type of boy who has to survive alone on the sea.(listening to by self): Sisters in the Wind—I've barely begun this one, as I only recently finished listening to Warrior Girl, Unearthed. This is the third book following Firekeeper's Daughter, but it actually takes place temporally between the events of Firekeeper and Warrior Girl. I actually liked Warrior Girl, Unearthed more than Firekeeper's Daughter overall, but I was really left frustrated by the many holes in the ending. The Playhouse launched on September 15, 2020. At the time, Open-Door Playhouse provided Playwrights, Actors and Directors a creative outlet during the shutdown. Since its inception. Open-Door Playhouse has presented Short and One-Act plays from Playwrights across the country and internationally. In 2021 Open-Door Playhouse received a Communicator Award for Content for the Play Custody and in 2023 the play What's Prison Like was nominated for a Webby Award in the Crime & Justice Category.Plays are produced by Bernadette Armstrong, Sound Engineer is David Peters, sound effects are provided by Audio Jungle, and music from Karaoke Version. All plays are recorded at The Oak House Studio in Altadena, CA. There's no paywall at the Open-Door Playhouse site, so you could listen to everything for free. One of my favorite parts about writing my chocolate book was getting to explore, and share, the world of chocolate. Chocolate is a pretty wonderful ingredient all by itself. But I wanted to feature friends in the chocolate world, so I culled recipes from bakers, pastry chefs, chocolatiers, cookbook authors, and even bartenders for the book. For the revision of The Great Book of Chocolate, I completely rewrote the book (since so much has changed!) and wanted to include a chocolate marshmallow recipe. So I thought about Amanda Bankert of Boneshaker donuts in Paris, who taught me how to make vegan marshmallows, which were game-changers since many people have asked me about substitutions for the gelatin and egg whites that are normally used in marshmallow recipes. So when revising The Great Book of Chocolate, I thought, “Why not veganize chocolate marshmallows?” With the book coming out in less than a month, I then thought, “Wouldn't it be fun to have Amanda come over and make them with me in my kitchen?”So we made a video of us preparing them together. We had such a good time whipping them up, and it's great that anyone - vegan or not - can enjoy these delicious marshmallows. And next time you're in Paris, stop by Boneshaker for a donut and a cup of coffee. Like Amanda, her shop is one of the most fun things in Paris. And if you see her behind the counter, say hi for me, and enjoy the video!A few helpful tips to read before making the recipe:* Be sure to stir and scrape the bottom of the pot while the syrup is cooking to scrape up any agar-agar that's sticking to the pan.* The better (and darker) the cocoa powder, the tastier the marshmallows will be. I like Valrhona cocoa powder and Guittard cocoa rouge. King Arthur sells a double dark cocoa blend that I haven't tried, but any Dutch-process cocoa powder will do. Hershey's Special Dark is a sleeper in this category, and affordable.* You may have to do a bit of shopping to get the xanthan gum and agar-agar, a natural gelatin substitute, which, interestingly, is sold in French grocery stores. Natural food stores or online shops are good places to look where you live. In Paris, G. Detou sells them, as well as cream of tartar. The good thing is, you'll have them on hand for next time : ) * Aquafaba is the chickpea cooking liquid found in canned chickpeas, not jarred, nor is it the liquid from dried chickpeas that you cook at home. (Interestingly, aquafaba was “discovered” by a French opera singer.) In the U.S., generally one 15-ounce/425g can yields 3/4 cup (180ml) liquid, but you may want to get an extra can just to be sure. (You can use the chickpeas to make my really good hummus.) * It's nice to have a helper in the kitchen to steady the bowl while you fold in the cocoa powder, as I did with Amanda. If you're by yourself, resting the mixing bowl on a silicone baking mat will help keep the bowl in place. * And don't forget to pre-order The Great Book of Chocolate - it's out May 5th and you'll be the first to get a copy! That story features a wonderful listener in Scotland who is a money manager and made some fascinating comments about the last class series. I asked her if she'd be willing to share some of these thoughts on the phone, and she was willing, and that was this morning's story. A couple hours later I got a reaction audio from one of the people featured in the class series who we talked about in this morning's story. So I'm playing it. Because it's great and because the point of the class series is to talk about these things and this is almost like a real goddamn conversation! This week we covered a movie that we thought was a slasher at first, because it takes place at a Summer Camp and there's a "Doctor" stalking the kids dressed up like a high tech beekeeper. But it's not a slasher. It's a sci-fi thriller that has a cool twist ending. We spoil the whole movie so don't listen until you've watched it unless you're ok with spoilers! The story centers around a young boy named Morgan. It's his first summer at camp. But he has trouble fitting in. For starters, he's just at an awkward young age. But what doesn't help is that Morgan almost drowned not too long ago, so he has a lasting fear of water; something that won't be too popular at Summer Camp.
