Hi Bakers, This pastry is my favorite thing to make when you want a homemade pie but don't want all the fuss! The rustic free-from galette takes minutes to assemble and bakes in under half an hour. Adding salted caramel on top elevates the fresh fruit and crust to something a bit more complex and suitable for a fancy dessert. You won't regret making this beauty! Enjoy ~Carolyn Gluten-Free Salted Caramel Peach Galettes Crust Dry 2 cups gluten-free flour 1 teaspoon sweet rice flour ¼  teaspoon xanthan gum ½  teaspoon salt 1 teaspoon plain protein powder isolate 1 teaspoon granulated sugar ⅔ cup cold butter, cut into small chunks 2 tablespoons shortening Wet 3¼ tablespoons ice water Add dry ingredients to a medium-sized bowl and whisk thoroughly.  Cut in the butter and shortening with a fork, pastry blender, or fingertips until the mixture resembles bread crumbs but still has some pea-sized bits of butter. Add the ice water gradually while stirring and stop when the mixture makes small clumps. Try pressing it into a ball. If the dough stays together, stop adding water. Mix dough to completely combine and then divide into 4 portions. Roll each piece into balls and flatten it into discs. Let dough rest in the refrigerator for use at a later time or use immediately. Galette Filling Sugar Mix  ⅔  cup granulated sugar 4 teaspoons cornstarch 1 teaspoon lemon zest a pinch of salt 4 cups fresh peaches (can also use nectarines or plums) Topping Salted Caramel Sauce Large grain salt Preheat the oven to 400F. In a small bowl mix together sugar and cornstarch until no lumps remain. Add the lemon zest and set aside. Slice large fruits no bigger than ¼ thick or chop into small ¼” chunks. Add the fruit to ¾ the sugar mixture and stir gently to mix.  Roll out the galette crust on a lightly floured silicone mat or cutting board. Flour the top of the dough as well to prevent sticking. Roll into a rough circle about 1/16 of an inch thick. Patch any holes in the dough or edges by pressing them together gently. Repeat for each portion of dough. Place a spoonful of the remaining sugar mix in the center of each dough circle extending outward leaving about 1½ - 2 inches clear. Then place about ⅔ cup of fruit in the center by arranging it in a row or piling it into the center. Gently fold the dough edges over the fruit center by about ½ inch. Repair any tears by smoothing them with your hand or using any extra dough to patch them. Brush the edge of the dough with an egg wash (one egg mixed with 1 tablespoon of water) and sprinkle with large-grain sugar.  Bake the galettes for 20-25 minutes or until the crust is browned and the fruit is bubbling. While the galette is hot from the oven, brush with the salted caramel sauce and sprinkle with large grain salt. Serve immediately or let cool to room temperature. These galettes are best eaten the day they are made since they have a lot of juice that can make the dough soft over time.

‘I've always gained a great deal of pleasure out of cooking — it's one of the most exquisite ways to look after yourself, to stay grounded, to keep yourself company and be reminded that we are all far more capable than we know. And I've needed this more than ever of late.'  Nici Wickes has written a number of books, spending six years as a food editor for Viva and NZ Herald, and five creating and testing recipes for New Zealand Woman's Weekly, and contributing her craft to various other media.  Over the last few years, she's been through a lot, the pandemic, floods, cyclones, and a bout of covid saw her losing her appetite not only for her beloved craft, but also the search for life's joys.  ‘More From a Quiet Kitchen' is a celebration of her return to her joy, crammed with heart-warming dishes such as ‘chowder for comfort', ‘corn and bacon risotto', and delicious desserts such as ‘lemon cheesecakey cake'.    To celebrate the book's release, Nici's recipe of the week is ‘Parisian rice pudding with salted caramel sauce', a taste of what this new cookbook has to offer.    Parisian rice pudding with salted caramel sauce  Good old rice pudding – elevated to exceptional heights!     Ingredients  1 ½ cups whole milk   ⅓ cup + 1 tablespoon risotto rice   2 tablespoons sugar   1 vanilla bean, split and seeds scraped (or 1 teaspoon vanilla extract)   ¼ cup cream, whipped   Salted caramel sauce   ½ cup caster sugar   2 tablespoons water   1 tablespoon butter   100ml cream   ½ teaspoon sea salt or more to taste    Method  Bring milk, rice, sugar, vanilla bean and seeds to a slow simmer in a pot. Simmer for about 25 minutes, stirring every time you think of it, until it thickens and the rice is creamy and cooked. Set aside to cool.   While the rice cooks make the caramel. In a small pot, heat the sugar and water over a medium heat, swirling the pot if needed but not stirring, until the sugar has dissolved. Simmer for 5-7 minutes or until it has turned a lovely dark golden colour. Remove from the heat, whisk in the butter, cream and salt (it will spit and froth, but don't worry). Whisk until you have a smooth sauce.    To serve, fold whipped cream through the cooled rice pudding. Drizzle with sauce and sprinkle over hazelnuts. EPISODE 139 DETAILS Deer lottery and Elk or other big game lottery results are being announced. How have you faired in your state? Many states cut back on their license numbers for the big game tags due to the long winter this last year. Tigger & BEC were both surprisingly successful. Both Tigger & BEC were drawn for "any antlered buck tags" in their state. Having resident rifle buck tags means that they now are able to harvest either a mule deer buck or a whitetail buck. Were you successful? Have you noticed a drop in tags available for big game in your state? Big Game is considered such as deer, elk, moose, bear, and big horn sheep just to name a few. SPOTLIGHT   Age is ONLY a number. Today we spotlight one woman that's not spending her days bored sitting around the retirement home. 84-year-old Kim Knor of Grand Haven, Michigan spends her days skydiving instead. You heard right, Sky Diving. Kim Emmons Knor knew she wanted to skydive after her uncle brought home a military parachute from World War II.  After forging her parents' signatures, Kim Emmons Knor made her first jump back in 1959. She then sold all her possessions and bought a Eurail Pass and an open-ended plane ticket so she could travel as a “Parachute Enthusiast”, visiting 21 countries. Kim Emmons Knor was one of only two women to compete against men in the 1961 Team Tryouts at Fort Bragg, North Carolina, and in 1962 made history as a member of the first U.S Women's Parachute Team and they won Gold!  She has been inducted into the International Sky Diving Hall of Fame and Her long-time goal is to complete 1,000 skydives, currently, Kim Emmons Knor has 400 skydives to go to reach that goal! And last weekend, she completed 3 skydives! Can you imagine, 600 skydives completed? NOW that is pushing the limits and still doing so at 84 years of age! You're an inspiration Mrs. Kim Emmons Knor     NEWS Football Fans and Hunting Enthusiasts stood behind Carson Wentz, the NFL Quarterback when he made national headlines after returning from a Bucket List Alaskan Bear Hunt. The hunt was for an archery black bear and had been done so according to legal Alaska hunting laws.  What made this National News was when Carson Wentz shared the success of his hunt on social media the non-hunters grabbed at the opportunity to “Hate” on an Outdoorsman. The social media instagram post Carson Wentz shared was captioned, “Got the opportunity to spot and stalk black bear in one of our new favorite places on earth— Alaska! Incredible trip and an incredible animal!”  Carson Wentz has never been afraid to share his love for the outdoors and of course, social media along with National News outlets had a hay day trying to drag hunting, the outdoors and this NFL player's name thru the mud. In BEC's opinion, this was a well-played move by Wentz to relate to other like-minded people as Carson Wentz is like many proud Americans that love the outdoors, hunting, and football. Not too often, you will hear me become opinionated; but this one I feel was very overlooked by major news outlets. Our attention was placed elsewhere is what I am saying, and owning that thought. Here we go. Last week the US Department of Agriculture gave the green light for two companies to sell chicken meat that is “Lab Grown”. The companies, Upside Food and Good Meat, in an effort to be the first companies to sell meat that does not come from slaughtered animals; has created chicken using animal cells grown in a lab. Known as “Cultivated Meat', it is grown in steel tanks and produced on large sheets that are then cut into shapes resembling chicken cutlets and sausages. Currently, this new meat source will not be sold in grocery stores as it's more expensive to produce than traditional meat. If you're like BEC; she is not impressed with the approval on this one whatsoever, and we will leave it at that.   Strange Foods You Might Find… Venturing north of the border, Canada that is. There's a new cotton candy flavor being tested out by the dipping sauce company French's. French's has launched ketchup-flavored Cotton Candy!!  Also while in Canada, McDonald's has launched a new McFlurry Flavor - the Caramel Popcorn McFlurry!! And here at our local McD's we only get the option of Oreo or M&M. Come on, let us Americans be the guinea pigs first for a change! Lastly, if you're road tripping thru or near Columbia, Missouri. Sparky's Homemade Ice Cream has gone viral on social media for serving up Moutain Dew and Doritos Ice Cream that is green in color! If you've had ANY of these newest flavors, let us know what your palette thought, a Thumbs Up or Down! How To Enjoy The Fourth Of July Outdoors   Fishing! Tips from The Bend Show Field Staffer, Pro Angler Johnnie Candle. This week professional fisherman and fishing guide, Johnnie Candle, shares what is working right now for walleye fishing. Depending on where you are fishing; some lakes, rivers, and ponds may be showing signs of thick weed growth. To avoid getting hooked in the weeds, Johnnie Candle shares two types of jigs that are doing the trick and reeling in the trophy fish.    Fishing is the perfect sport to do alone or with the family. Novice or experienced, the sport of fishing is one that is truly a Lifelong Sport. At any age, one can pick up a spinning rod or fly fishing rod, and toss a line. #tightlines Are always the goal, but the rewards of reeling in fish, and the excitement is one hard to beat.    This summer and fall when heading out to enjoy the outdoors over the Fourth of July or any other holiday; remember the insect repellent. Across the country, there has been an increase in ticks which can result in nasty diseases that often go undetected such as Lyme disease. Mosquitos are another biter that can ruin a day fast, and this pest too can spread such diseases as West Nile. Be smart, "pack prepared" and don't forget the bug spray. Our household uses those with higher amounts of deet such as "Off Deep Woods", but that is up to you on what fits your needs.    And always remember the SPF, aka the sunscreen. BEC & Tigger recently upped their game, and are now using 50 SPF sweat and waterproof sunscreens. Worried you won't get that summer glowing tan; they are both still tanning but without as much of the worry surrounding skin cancer. A source claims that eats at chain restaurants, takes freebies when she can, and goes on all-inclusive vacations, including having recently stayed in Mexico at a chain all-inclusive resort. What's wrong with that?!? BEC loves hearing when our famous folks are down-to-earth people just like us. A penny saved is a penny earned in our book! YELLOWSTONE TV Drama prequel, 1923 starring Harrison Ford & Helen Mirren, the resolutions to those plot lines and other cliffhangers do not appear to be coming anytime soon due to the Writers Guild of America strike according to Country Living Magazine. Season one of 1923 ended in dramatic fashion, with the Dutton family ranch under attack while Spencer and Alex torn apart on their way to help save it. At this point, NBC Montana has commented that the project has been "delayed indefinitely" due to the Writers Guild of America strike.   FOURTH OF JULY FOOD TRENDS   Stir-Fried Rocks & Stone have become one of CHINA's HOTTEST food dish trends and it's making its way across the pond to the United States. Hear this one out… People are finding rocks and pebbles, taking the stones home and cleaning well these treasures before placing them amongst their stir-fry dishes while still hot…. WELL BEC hates to bust this cooking trend!! Rock Cooking or Hot Stones Cooking has been used for 1,000s of years! It's one of the Survival Basics taught if one is lost out in nature. Adding hot stones to a large bowl with a little oil and your meats and vegetables. Stir the stones and ingredients until the meat is well done. Just a tip thou, if you fail to stir it enough, BEC promises you it will burn. It's called stir fry for a reason. Heat up 10 or more stones in the embers, wash them off first then toss into your concoction for a “rock stir fry”! Now thinking about this new “Trend”... Our host, BEC, tells us how we never are too old or seasoned to have a "rookie mistake". After a typical day of hauling a long distance, pulling a 30-foot stock trailer, it was after a Long Day that she forgot the simplest of things. Tigger jumps in to share how BEC delivered horses home, however after unloading horses and being hot, and sweaty; BEC jumped into the pickup to move the trailer to unhook the rig only to forget to close the back trailer door! With Tigger running across the pasture, frantically waving and yelling; did BEC then realize her mistake. Thankfully the trailer and door were not wrecked but laughed saying, "Yup - we're never too good to not have a 'rookie mistake' and that we love our 'working pen woes'. As Tigger chimes in that they keep life real by working out relationship issues 'On-Air'. The Bend Show kicks off with laughs! SPOTLIGHT Road trips! Who doesn't love Road Trips?! The leaves of the huge vine didn't start to produce any leaves until 10 feet off the ground, making the plant identification a bit tricky.  Guinness World Record Beef Wellington - Famous chef Gordon Ramsay has set a new Guinness World Record for the largest Beef Wellington! He along with several chefs spent hours preparing the monstrous 56 lb Beef Wellington. That is one dish that we have yet to have attempted to make. A man scuba diving recently in a Love County, Oklahoma lake had quite the surprise when he discovered a GAS GRENADE. The diver immediately surfaced and called the police. Deputies quickly arrived and it was determined to be a LIVE GRENADE. A bomb squad was brought out to collect and then detonate the grenade. Talk about a close call, and in a mid-america lake to boot! We know metal fishing has become extremely popular for inland lakes and rivers, best be careful it may not always be treasure that is found! Inflation news from the United States Postal Service (USPS) that we hate sharing, but alas as we all love sending letters and postcards from our travels to our loved ones. If you are one of those, or a planner already thinking of holidays this upcoming year. Going into effect July 9th, 2023, these are the new prices. For the most part, letters that qualify for Forever Stamps and including domestic postcards, will all rise 3 cents per stamp. For example: the Forever Stamps wil go from 63 cents to 66 cents. International Postcards & Letters will raise by 5 cents, so an international postcard will go from $1.45 to $1.50. All these prices go into effect on July 9th, 2023. Can You Live In An RV Full Time? Traveling about the other day, call it out for a Sunday drive in search of untroubled waters… Meaning no white caps so that we could safely launch our kayaks for a little fly fishing… While we were enjoying the backroads, going from one small lake to another; We came across an RV boondocking that had suitcase solar panels set up! BEC & Tigger have done a lot of reading and research on these solar panels but have not had a chance to actually visit with anyone using said solar panels out in the field or while boondocking. So what did we do? Pulled the truck over, hopped out, and simply asked the man lounging in his lawn chair enjoying a peaceful lake view!  We learn that suitcase solar panels work great, as long as paired with the right or correct matching rechargeable batteries. What we didn't expect after learning about camping solar panel tips... Was this man is a Full Time RVer. Meaning someone who lives out of a motorhome, camper or recreational vehicle. Hear is a snippet of our visit with Mr. Kurt Wise, originally from California who after retiring from a 45 Plus year career, moved to Nevada and decided he was going to give RV Life a try Full-time. He has done so successfully and has no regrets. We learn how his family reacted when told that the 1600 sqft house was being sold and Kurt Wise would now reside full-time on the road in his recreational vehicle. To make it even more of a challenge, Kurt Wise, decided to boondock as much as possible. Boondocking is camping somewhere without electricity, water or any amenities one is accustomed to. We learn that owning a motorhome or camper has many pros but some cons too. The cons being able to understand that there will be maintenance such as oil changes, generator issues and learning to do as much work yourself will save time and money. FIELD REPORT Bend Field Staffer, Heather Krohe, owner of Little Rack Taxidermy, shares a Field Update. A kayaker had a close call recently when on the ocean felt his kayak bumped. Bumped hard. An Ohio couple recently was getting a little “Frisky” not too far off the trail. The couple forgot to remove their phone from a pocket… AND yes, you guessed it “Butt Dialed 911”. Officers were able to ping their phone location and followed them up the hill trail only to find the naked couple under a tree. Let's put it this way, the couple scurried to get dressed… and they were cited for “public indecency”.. LOL… Now the Outdoors can be extremely romantic… just maybe turn that phone “off” for a moment! ENTERTAINMENT Luke Combs - This man has been cranking out hits over recent years, from singing to songwriting, Luke Combs has landed himself as a mainstay on the country music charts. But Luke Combs wants all to know that he is a family man too. In a recent interview, he shared that he wants his son and future children to have as normal of a life as possible. That he does not want them to be on jets all the going around the world. Combs wants to be going on vacations as a family, and to have those memorable things he did not have. He wants them to ride bikes, have privacy and go fishing. Jay Leno - Recently in an interview Jay Leno was asked when he'll ever retire from Stand Up Comedian work, his response was, “A Stroke. Then you slow down. That's when you retire When you have your stroke.'
