Hugh Fearnley-Whittingstall is a multi-award-winning British chef, writer, broadcaster and campaigner, best known as the creator of River Cottage. He joins the Go To Food podcast fresh from the release of his new book, High Fibre Heroes, before settling into a gloriously wide-ranging conversation full of stories from a life spent cooking, eating, questioning and occasionally causing national outrage.Hugh looks back on childhood in Gloucestershire, learning to cook alongside his mother, helping make shepherd's pie from leftover roast lamb, and later becoming the “pastry chef” for her 1970s dinner parties. He shares tales from Oxford dinner parties, smoked haddock obsessions, and his time at the River Cafe, where he made lemon tart for Rose Gray and secretly doubled the chocolate in Elizabeth David's chocolate cake — only to be politely rumbled by Elizabeth David herself. The conversation also revisits Hugh's early television years, from Cook on the Wild Side to TV Dinners, including the infamous placenta pâté episode that earned an Ofcom complaint and became part of British food TV folklore. He reflects on the beginnings of River Cottage, moving from London to Dorset, learning from farmers, foragers and local characters, and building a world that helped change the way Britain thought about food, farming and self-sufficiency.Along the way, there are stories of roadkill rumours, wild boar charcuterie, Gordon Ramsay's pigs, Jamie Oliver, school food, restaurant culture, barbecue hogget, decorative garnishes, and why you should never put an oyster shell on mashed potato. Funny, thoughtful and occasionally surreal, this is Hugh Fearnley-Whittingstall at his storytelling best.Order Hugh's new book High Fibre Heroes - https://shorturl.at/9Wk19Watch and Subscribe To Our Youtube Videos Here - https://www.youtube.com/@gotofoodOrder Ben's Incredible Book - All You Can Eat - By Clicking Here - https://www.amazon.co.uk/All-You-Can-Eat-British/dp/1805221523Get 2 Months of Blinq For Free - With Code - GOTOBLINQ - https://blinqme.com/Order The Greatest Meat In The Country From HG Walter Here & Have Restaurant Quality Meals From Home - www.hgwalter.com Hosted on Acast. Today's guest is Amber Guinness—cookbook author and co-founder of The Arniano Painting School. Amber grew up in the Tuscan countryside, where food was a way of life and meals were all about gathering, generosity, and instinct.  Amber joins host Kerry Diamond to talk about her latest book, “Winter in Tuscany: Cozy Recipes and the Quanto Basta Way,” and the philosophy that guides her cooking: quanto basta, or “as much as you need.” It's a beautifully simple idea that encourages cooks to trust themselves, embrace imperfection, and focus on flavor over formulas. Amber shares stories from her childhood in rural Italy, her time working at London's iconic River Cafe, and how she came to host intimate painting retreats at her family home, where she cooks for guests using recipes passed down through generations.  The two also dive into Amber's favorite dishes, from lemony meatballs and “drunk” spaghetti to cozy lentil stews and emergency pantry pasta. Plus, Amber talks about writing three books in three years, the magic of Tuscan olive oil, and why sometimes the simplest meals are the most memorable. This week, The Go-To Food Podcast closes out the year inside one of London's most talked-about dining rooms. Recorded at Café Cecilia on the canals of Hackney, the episode finds hosts Ben and Fred sitting down with chef owner Max Rocha at the height of Christmas service. It is warm, chaotic, funny and deeply human, the sound of a restaurant in motion as one of Britain's most influential young chefs reflects on how he got here.Rocha speaks with striking honesty about his journey through Spring, River Cafe and St. John, and the mentors who shaped him, particularly the late Skye Gyngell. He unpacks how Café Cecilia exploded from a modest, family-run opening into one of the hardest tables to secure in the country, without PR, without hype chasing, and without compromising on food that is rooted in simplicity, seasonality and care. This is a masterclass in building something quietly exceptional, one plate at a time. The conversation goes far beyond the pass. Rocha opens up about burnout, addiction and the pressure of sudden success, describing how sobriety and exercise quite literally saved his life and his restaurant. He talks about rewriting kitchen culture, setting boundaries, banning hangovers, and creating an environment where young chefs can learn properly, from butchery to bread, rather than just survive service. It is one of the most candid discussions of mental health in hospitality you will hear this year.Along the way, there is food, a lot of it. Guinness bread and butter, fritti with anchovy and sage, deep fried bread and butter pudding, big steaks, Dublin restaurants worth travelling for, and the dish Rocha would put in the Go-To Hall of Fame. Thoughtful, generous and quietly profound, this episode is a fitting end to the year and essential listening for anyone who cares about cooking, creativity and staying human in a brutal industry. Anna Tobias joins us at Café Deco with a rollicking origin story: letters to Jeremy Lee straight out of Oxford, a crash-course at Blueprint Café (including emergency ice-cream runs mid-service), and the Garden Museum saga that sparked an industry-wide outpouring of support. From Hong Kong lettuce-wrap memories to Lower Saxony kale festivals, Anna's food map is as eclectic as her menu—anchored by that now-iconic egg mayonnaise (halved, dolloped, criss-crossed with anchovy) that made the New York Times list of must-eat London dishes. We get under the hood of Café Deco's quietly fanatical seasonal rhythm—veg first, always—then the “wet meat/dry meat” dance, beany stews that show off the market, and why the late-summer-into-autumn handover is peak cooking season. Anna talks River Café discipline, becoming head chef at Rochelle under Margot Henderson's watchful, open mind, and the P. Franco stint that sharpened her own voice. She's candid on staying relevant once the new-opening glow fades, the realities of PR, and why trends (hi, crudo) can flatten a city's food culture. There are stories galore: floods as true kitchen nightmares, the one thing that makes a customer instantly “worst,” and the trust Café Deco builds with regulars who come for comfort done properly. We finish with travel and nostalgia—Madrid's surprise-hit cod tripe rice, and the all-time Hall of Fame dish: her mum's broth with semolina dumplings—before Anna cues up our outro with Blondie's “Heart of Glass.” If you care about London cooking with backbone, this one's essential listening.--------Please leave us a great rating and a comment and share it with your friends - it really helps us grow as a show.If you're in the industry and are looking for the greatest POS system in the world than look no further -as Blinq are tearing up the rulebook—no long-term contracts, no hidden fees, and no per-device charges.Just £69 a month for unlimited devices and 24/7 UK-based support that's always there, in person when you need it.Built for hospitality, by hospitality, blinq is the fastest, easiest POS system on the market—so intuitive, anyone can use it. This week on The Go-To Food Podcast, we sit down with David Ellis—restaurant critic and Going Out editor at The London Standard, and the man who inherited Fay Maschler's legendary column.Recorded at The Orange in Pimlico (a place David knows but has never reviewed), this episode is a no-holds-barred look at the realities of restaurant criticism—from the dishes that blew his mind to the meals that nearly broke him.David talks about the awkwardness of replacing Jimmy Famurewa, why the pressure to be first in print still matters, breaks down what makes a five-star review, reveals why overhyped sandwich shops drive him mad (except Max's), and explains why he just can't recommend the River Cafe even though everyone else says it's iconic. We dive into the state of London's dining scene today, and why it's become safer, more cautious, and—frankly—more boring. As he sees it, too many places are playing to formulas, not passion. There's a creeping sameness to rotisserie chicken joints and bistros built to emulate proven hits like Josephine or Bouchon Racine. His feelings are just as strong when it comes to the nostalgia-fuelled revival of traditional pie and mash shops. Despite their place in London's history, he found the food itself diabolical, even after following the exact rituals—ordering properly, adding the chili vinegar—he still left wondering why these places deserve saving at all.He also shares his favorite meals of all time, from Pierre Koffmann's legendary pig's trotter to the surprise brilliance of sweetbreads at The Ritz, and a melon-sorbet combo that rewired his brain. Plus: the ice cream in St Ives, the secret market spots in Portugal, and the weekend food escapes he always dreams about.Smart, sharp, and unsparingly honest, this is David Ellis exactly as you want him—funny, thoughtful, and completely unfiltered.-------Please leave us a great rating and a comment and share it with your friends - it really helps us grow as a show.If you're in the industry and are looking for the greatest POS system in the world than look no further as Blinq are tearing up the rulebook—no long-term contracts, no hidden fees, and no per-device charges.Just £49 a month for unlimited devices and 24/7 UK-based support that's always there, in person when you need it.Built for hospitality, by hospitality, blinq is the fastest, easiest POS system on the market—so intuitive, anyone can use it. In Lockdown, when everything was closed, he had the chance to tinker on an idea he'd had for a while - a unique non-alcoholic aperitif. He eventually bottled it.On a chance encounter, that we talk about in this podcast, Imme joined him a few months later to turn Botivo into what it is today. A brand builder by trade - having led major brands across multiple categories, she joined Botivo as co-founder - and helped bring it to market - from restaurants like the River Cafe to chains like Waitrose, to raise capital and hire a team. In this show, we talk about everything from how to run a business when you have a family, the secret to distribution and her killer playbook formula for perfect brand positioning - whatever you are building,. It's a perfect episode for anyone who's ever considered bottling one of their own creations, or wondered how to build a brand that stands out. I hope you enjoy the episode! Hosted on Acast. Jamie Oliver has built a culinary empire. He's a household name in the kitchen, writing 23 cookbooks and selling over 46 million copies. Oliver sprung into the spotlight 25 years ago with ‘The Naked Chef', a BBC Two cooking show that ran for three series. He landed the role after he appeared in the background of a BBC documentary about The River Cafe in Fulham, where he was working as a sous-chef at the time. Oliver told Newstalk ZB's Mike Hosking that he got lucky. “It was never planned,” he said. “I was never even supposed to be there that day ... Someone called in sick.” 25 years on, Oliver says time has given him a bit more perspective, and he tends to lean more towards experience and wisdom a little more than just enthusiasm. Oliver is currently on tour in Australia, performing live shows to promote his newest cookbook ‘Simply Jamie'. Coming from a humble background, the chef told Hosking he never thought he'd be able to travel internationally in this way. “I never thought I'd get here,” Oliver said. “I just thought it was out of my reach.” LISTEN ABOVESee omnystudio.com/listener for privacy information.

The only exception is if they are athletes.Maybe it's because everyone thinks, if pressed, they could act, sing or dance, but never run a race, ski downhill or score a goal. When Gary Lineker, one of the great footballers of our time, walks into The River Cafe everything stops.  He is one of the very few footballers never to have received a red or yellow card — consistent with who he is: principled, respectful and fair — values we share. We're also both in the world of podcasts - his company Goal Hanger has 18 million listeners a month. Gary and I also share the world of food. Look at his Instagram account and you will see as many photographs of what he is cooking as the games he is analysing on Match of the Day. I may not know what makes a good comedian, but I do know what makes a good father.  When Judd and I met in London — where his daughter Maude was playing the lead role of Sally Bowles in Cabaret — he told me this was the eighth time he'd seen it in three weeks. While I don't know what makes a good comedian, Judd certainly does. His advice to kickstart your writing: think of a topic and write down as many jokes and one liners as you can. Don't be scared if your first draft doesn't make you laugh out loud — keep going.  There are definite parallels between cooking and comedy. And paraphrasing his words, an aspiring chef should never panic if the first attempt doesn't taste quite right.  Eating and laughing; children and acting; movies and restaurants. He takes your arm and insists on seeing you to the lift. Then he goes down with you until you get to the street. This becomes a ten minute walk to the car park. A climb up the stairs, him holding your hand tightly until you find your car. Driving off, you see him in the rearview mirror waving goodbye. I was this woman, and Tom Hollander was this man. And his act of tenderness and compassion has stayed with me for 13 years. There are many stories about Tom Hollander. The best ones are told by him, not least his life in the day for the Sunday Times, the best in a great series ever written. He is a fantastic actor; White Lotus, Patriots, most recently captivating audiences as Truman Capote in Feud: Capote vs. The Swans. He sings beautiful songs to his six month old son. He's passionate about what he cooks and what he eats. He is a Surgeon General who sees love as a foundation for good public health. How rare to hear the word love as a solution to a diagnosis. It was really hard to hear her with the noise of pots and pans, the crashing waves of the Pacific Ocean. But her dazzling warmth travelled the 6000 miles. If the phone connection was poor, the friendship connection was instant.Last month, she was in The River Cafe with her family, and I was there with mine. They were sitting on table one, just a few feet from the pink wood oven close to the drama of the kitchen. And there she was, dazzling and warm. ‘How does all this work, Ruthie? How do you make sure that Matthew's ravioli comes out the same time as my asparagus bagna cauda.' ‘This kitchen', she said, ‘feels like the inside of a pinball machine with energy bouncing between the different stations. How do you all have the energy to do both lunch and dinner?'Now, I suppose if I went backstage to Plaza Suite, the play that Sarah is doing here with her husband, Matthew Broderick, I would have similar questions. ‘How does this work, Sarah? What do you do if someone forgets their lines? And how do you all have the energy to do a matinee and an evening performance?' Today we're here not miles apart, inches apart.
