Rose Gray, the business relationship director at Fox World Travel, got her start in the travel industry by walking into the agency her family used for their own personal vacations, and convincing them to hire her. At the time, she says that travel advisors were more “order-takers” and less “consultative,” and Gray would spend her days handwriting airline tickets and typing itineraries on a typewriter. She then spent the next 35-plus years in the industry, adapting to various technologies as the profession evolved, all while exploring and embracing new ideas. Now, as the business relationship director and tour manager at Fox World Travel (the 25th Largest Travel Agency on Travel Weekly's Power List), Gray still works with other advisors and traveling clients, albeit in a different way. She leads groups of clients all over the world as a tour manager for the agency, and is often found broadcasting her own radio show and podcast from the road. Fred Mora of Long Prawn jokes that sometimes he's the prawn's head and sometimes, the tail. He's not quite artist, not quite cook, somewhere in between.Fred and his creative collaborator Lauren Stephens are Long Prawn, a collective using food as a springboard to start conversations that traverse big ideas and observe parts of culture that have fallen out of focus. They have held various events and happenings over the past 8-10 years, working with chefs, artists, musicians and growers of food.Growing up, the energy at the Mora family table was theatrical, warm and chaotic. Yum cha every weekend was a solid ritual and cheekiness was a core value for some family members. Fred's grandmother, (treasured artist Mirka Mora) was apparently treacherous at the dinner table, especially when dining out. She would demand dessert first, then steak.It makes sense then that Fred has pursued his own creative food interests. Tax Vinegar is a project he toiled away at for some time, with beginnings as curious experiments during one of Melbourne's numerous pandemic lockdowns. He tells us that the breadth and depth that vinegar can add to your meal is huge - “it's like turning the brightness up on your phone screen”.Fred's recipe is mayonnaise and you can hear our genuine excitement in the interview - we were so delighted by this as we had seen the film ‘Monsieur Mayonnaise' by Fred's uncle years ago and loved it.The film is the true story of Fred's grandfather Georges during the French resistance. His spy name was Monsieur Mayonnaise, due to his rescuing and smuggling of children over borders using mayonnaise as his weapon. With artist Marcel Marceau, he discovered that if you could put enough mayonnaise on a baguette you would be able to hide documents in it and smuggle it past the gestapo. As the gestapo were fastidious about not getting their uniforms dirty, every time Georges passed a check point he was able to smuggle documents through. Italian chef Gennaro Contaldo talks about his long friendship and work with the late chef Antonio Carluccio, and the TV series they made together for the BBC, ‘Two Greedy Italians' in 2011 and 2012. Rose Gray, the business relationship director at Fox World Travel, got her start in the travel industry by walking into the agency her family used for their own personal vacations, and convincing them to hire her. At the time, she says that travel advisors were more “order-takers” and less “consultative,” and Gray would spend her days handwriting airline tickets and typing itineraries on a typewriter. She then spent the next 35-plus years in the industry, adapting to various technologies as the profession evolved, all while exploring and embracing new ideas. Now, as the business relationship director and tour manager at Fox World Travel (the 25th Largest Travel Agency on Travel Weekly's Power List), Gray still works with other advisors and traveling clients, albeit in a different way. She leads groups of clients all over the world as a tour manager for the agency, and is often found broadcasting her own radio show and podcast from the road. In this episode of Humans of Travel, listeners will hear Gray reflect on her decades in travel; how her female role models helped shape her; how she has embraced new technologies (hello, artificial intelligence!); and her best advice for new-to-industry travel advisors on how to be successful and have a fruitful, long-lasting career. Two years after starting the River Café, Rose Gray and I were asked by a publisher to do a cookbook. We replied sternly that we were chefs, not writers. But the more we thought about it, we realized that being a chef is about communicating. 30 years and 12 cookbooks later, we have just published our newest The River Café Lookbook for Kids of All Ages.It's a collaboration between a photographer, designers and chefs. When you hold any book in your hands, there's a story to be told about how it was created. Our guest today needs little introduction—but if you didn't grow up watching cooking on television over the past 20 years, here's the deal. Jamie Oliver pioneered a form of food television that brought cameras into the home in a way not previously seen. When the Naked Chef debuted on BBC Two in the UK and the Food Network in the United States in 1999, home cooking on TV was a stand-and-stir affair. Here, a young and floppy Oliver was cooking real food from a cool East London flat, talking viewers through the relative simplicity of making dinner. Oliver has gone on to write numerous cookbooks (selling 50 million in the UK alone) and create food TV that expanded beyond cooking, producing documentaries about the sugar industry and school lunches that transitioned his work from dude food evangelist to heartier activism. Oliver was a joy to have on the program, and we talk about the early days of his television career, working at the River Café with the legends Ruth Rogers and Rose Gray, and a pressing question: Blur vs. Oasis (while discussing bassist turned cheese maker Alex James). In 2008 she moved to LA to open Cecconis West Hollywood, and Soho House West Hollywood. All these experiences shaped Shelley's passion for space, product design, and the care of humans, as it all relates to hospitality.   “I believe my journey within this industry, and myself, is to find the interconnectivity of all components of it. In some cases that means dissecting your philosophy and seeing if it applies in all areas of your work: celebrating humans who do the work, and seeing hospitality in all acts not just the traditional.   Dissecting it has meant really looking at how this industry has contributed to the abuse of people, and what systems are in play within my own company.”

Kirsty Young's castaway is the chef and restaurateur, Ruth Rogers. Born in America, she has become one of the UK's most celebrated cooks. Despite not being a trained chef, she set up The River Café with her business partner, the late Rose Gray, in 1987. The focus was on high quality, seasonal produce cooked the Italian way. Many of today's top chefs including Jamie Oliver, Hugh Fearnley-Whittingstall, Theo Randall, Sam Clark and Allegra McEvedy began their careers in their kitchen. The café was awarded a Michelin star in 1997. The youngest of three children, Ruth Rogers' parents were both immigrants and very political. In the late sixties, she left America and moved to London where she joined other Americans protesting against the Vietnam War. In 1969 she met the architect, Richard, now Lord, Rogers and they married in 1973. The couple moved to Paris when Richard Rogers and his partners won the contract to design the Pompidou Centre. There she learned the importance of seasonality: subsequent visits to Italy shifted her passion to Italian cooking. Producer: Cathy Drysdale.

Their modest ambition was to make the River Cafe the best Italian restaurant in the world. Since then Ruth Rogers has been instrumental in changing the way we think about Italian food in Britain. Ruth reveals how her musical passions bring together her love of Italy, food, family, and the human voice. Her choices of music include the joyous ode to wine from Don Giovanni; a contemporary opera chosen for her husband, the architect Richard Rogers; a moving piano tribute to her late son; and a Bob Dylan song which recalls the time, growing up in Woodstock, when she turned down his invitation to watch him rehearse.
