Os portugueses até podem suportar que se diga que os seus descobrimentos foram, em grande parte, uma história de crimes que deixou como grande legado a maior transferência populacional forçada intercontinental. Até podem suportar que insultem Vasco da Gama ou Cristiano Ronaldo. Haverá sempre alguns, mesmo que sejam uma minoria, que acompanharão estas críticas. O que os portugueses não aceitam, e aqui o consenso aproxima-se da unanimidade, é que ponham em causa a sua gastronomia. Em julho de 2015, houve quem dissesse pior do que isso. Alguém se atreveu a escrever que a nossa cozinha era mesmo a pior do mundo. O conhecido crítico britânico de restaurantes Giles Coren escrevia, no “The Times”, a maior ofensa que um português pode ouvir. A reação dos leitores portugueses foi semelhante a um tsunami de ódio, deixando insultos e até ameaças de morte. No Twitter, Coren até perguntou se havia algum dispositivo para silenciar, naquela rede, um país inteiro, tal a dimensão viral da indignação. Cinco anos depois, quando o jornalista Ricardo Dias Felner escreveu, aqui no Expresso, um texto com um título provocatório: “E se a cozinha portuguesa não foi a campeã do mundo?”. [TW//Drug Misuse, Suicidal Thoughts] Today I welcome singer, songwriter and author of the Amazon bestseller The Joy of Addiction, Sebastian Wocker. Aged 17, Wocker landed the principal part of Woof in the 1983 European tour of the musical Hair where, suffering teenage angst, low self-worth and low self-esteem, he went into a deep depression and had to throw in the towel after two months. He returned to his safe haven of drugs and alcohol in London, where he auditioned for and got into LAMDA (London Academy of Dramatic Arts), only to drop out after two days because he 'couldn't stand all those happy clappy prima donnas'. The real reason? He was an addict, hopelessly hooked on drugs and alcohol and didn't want to be found out. Sebastian takes us on a compelling journey down the abyss of alcohol, cocaine, speed, cannabis, hallucinogen and prescribed drug addiction, leading him to various rock bottoms and 'dark nights of the soul'. Then, aged 21, a moment of inspiration: a seed planted by his long suffering mother finally got him into the 12-step programme, offering him the life-changing gift of recovery. For anyone struggling with addiction, he shares how he got himself out and continues to live life, a day at a time — a free man. Having found recovery in 1987, Sebastian formed indie-rock band Yeah in 1990, playing the London, Hamburg and Berlin club circuits. After a five-page interview with Die Zeit Magazine in 1992, Yeah appeared on various radio and TV shows and in 1993 was awarded The John Lennon Talent Award in Hamburg. In 1998 he wrote and produced World Cup Crescendo for TV impressionist Alistair McGowan. In 2002 he signed as a songwriter for Global Chrysalis Publishing, writing numerous songs for Cherry Red Records and Universal Records and released his solo album: Don Sebastiano, The Spaghetti Tree. In 2007 Wocker recorded the soundtrack of German movie Pornorama with Mousse T and, in 2010, was the singing voice for Tobias Menzies in the award winning independent motion picture Forget Me Not. Sebastian has written as a journalist for The Independent, Mr Partner Magazine (Japan), Camden New Journal and Ham and High Express. He is currently journalist and editor of the Hampstead Village Voice and has interviewed various household names including Emma Thompson, Russell Brand, George Graham, Giles Coren and Martin Bell. Wocker is currently recording an audiobook for his best selling book The Joy of Addiction, out on Audible from February 2024 and is writing the sequel: The Joy of Relapse. He is currently the lead singer/song writer of indie band Ridiculous with Jon Moss, Erran Baron-Cohen and Peter Noone. The Times and The Sunday Times are joining forces again for this year's Christmas appeal, asking readers to support three charities working to address urgent issues affecting vulnerable adults, children and the places in which we live.One of the charities this year is the Refugee Councils of Britain, comprising the Refugee Council and its Scottish and Welsh counterparts. They provide assistance to 20,000 adults, families and unaccompanied children each year who have fled bloodshed and persecution in their homelands, sometimes arriving with only the clothes on their backs after perilous journeys.Nestor Masudi arrived in the UK with nothing, but now he can cook with the very best. In a world where awful things keep coming back, we need something amazing to come back. Something magnificent and brilliant and mindblowing. Something like the goddamn TickyOff Boyz packing another galaxy humping episode of the solar system's favourite podcast* The Goddamn TickyOff. *We checked, and aliens think all that NPR nonsense, and Maron, and that buff fella and the freakynomics chap all SUUUUUCCCCKKK. We are massive in Saturn and could not be bigger on Pluto. Don't write in to our email address that I've forgotten to tell me: ‘Oh well actually Pluto isn't classified as a planet now actually I think you'll find actually'. Because if I could remember the damn login then I'd reply: ‘Actually, don't be unkind to Pluto. you can't take that designation away just because someone cleaned the lens on Hubble and found that Pluto was actually just some birdmess on the glass that made it appear as if there was a planet there. She and her friend Mel Giedroyc first appeared as a comedy duo at the Edinburgh Fringe over 20 years ago and together they presented the first seven series of The Great British Bake Off. Born at the end of the 1960s, Sue grew up in Croydon, the eldest of three siblings. By her own description a "shy and awkward" child, she nonetheless made it to Cambridge University to study English. She and Mel met at a Footlights open mic gig soon after she'd arrived. Their first joint high-profile success was landing a new live daytime programme on Channel 4 called Light Lunch, which turned them into household names. Sue also formed a second presenting partnership, making historical food programmes with Giles Coren. When she was 38 she was diagnosed with a benign brain tumour which left her unable to have children. Sue has been in a relationship with the TV presenter Anna Richardson since 2013. Wine Work. Sometimes in my travels, I meet a person whose excitement and passion for what they do is so all-encompassing I decide I must talk with them immediately. Meet Erin Scala, sommelier at Petit Pois and Fleurie restaurants in Charlottesville, Virginia.  I met Erin during an incredible and completely unplanned experience at Fleurie during the Virginia Festival of the Book. Chef Nora Pouillion, Gail Hobbs-Page, and Martha Stafford invited me to dinner, so of course I said yes. When I observed Erin's enthusiasm for pairing wine with food, I asked her to be on the podcast right then and there. Erin came to the wine world unexpectedly when she started working in restaurants to support a burgeoning career as a drummer. Which ultimately brought her to Fleurie. One day she overheard the chef talking with the distributor about a wine that smelled of olives. This created a spark of interest. After tasting this wine paired with a tapenade, a passion was born. Soon after she was spending all of her extra time and money buying wine, reading about wine, learning and living the world of wine. Her approach to pairing is unique and fascinating. The Washington Post agrees. As a sommelier, Erin observes her customer closely. What do they order? Is it meats or a light salad? Are they trying to impress a date or client? Do they butter their bread heavily or not at all? Do they drink their water without ice? What cocktail are they enjoying? Only after gathering this information does she make her suggestions to give the diner perfect synergy between food and wine. She keeps records of what wine they ordered last time and whether or not they enjoyed it. This kind of attention to detail ensures excellent customer service. It's a challenging skill to create a wine list. You must choose ones that taste good, are a good value, but still meet your bottom line. How does she make her selections? By not padding it with popular selling varietals instead choosing carefully, making sure each wine pairs well with the food served in each restaurant. She pulls from her past experience as a musician to "compose" every pairing, using music-related words to describe the wines to folks who might be intimidated by the numerous choices. It's worth it to put your trust in the sommelier if the wine list looks good. They took the time to create it and know it better than anyone. Pro tip: doing a bit of research on the sommelier and learning what wines they're passionate about prior to visiting can enhance your dining experience. What is Erin's "passion point"? We talk about it. Above all, don't be intimidated by the sommelier. Talk to them frankly about your needs, likes, and dislikes. They are there to guide you, not make you look stupid. Trust them. Although you don't need certification to work as a sommelier, in the current era of booming demand the profession is becoming more academic by the minute.  An entire industry onto itself. New programs are springing up everywhere, a huge change from the past when this knowledge was passed down informally to each succeeding generation. What are the effects of the business becoming credentialed and maybe at times, dogmatic? We talk about that as well as the special challenges with regard to the drinking age in this country. Erin is currently working toward her Master of Wine (MW) degree. There are fewer than 300 of them in existence. Consider it a PhD in wine because as a pre-requisite she completed all three levels in The Wine and Spirits Education Trust and was awarded a Diploma of Wine & Spirits (DWS) degree. No small feat! We also talk about the Winemaker's Research Exchange in Charlottesville. The first group of its kind in the world! Wine makers, sellers, distributors, and sommeliers getting together to learn from each other doing research on grape varietals, experimenting with all sorts of different kinds of wine and comparing results. That's what I call a community connection! Why does riesling get a bad rap? Are wine consumers different in New York than they are here? How did the sommelier profession begin? How is the Fleurie name related to wine? What is orange wine and how is it made? Can we ever make grappa here in Virginia? Does she have unique challenges being a female in a male-dominated field? We discuss all of it. We also head down the rabbit hole and do a live wine tasting because I asked the question, "What is the ultimate good pairing?". Which of course meant we also had to experience the ultimate bad one. Such fun. Plus, I discovered my new favorite wine. What was in both pairings? Listen to find out! I recently dined at Fleurie again, where Erin's husband Joseph is a co-owner along with chef Brian Helleberg. The experience was extraordinary. I felt completely taken care of in every aspect. It got me thinking. How many restaurants out there are like that? Places where you feel you can totally relax the minute you step in the door because you can confidently put your trust in every person on staff. You don't even have to think, just sit down and say, "Order for me." Fleurie is definitely one of those places, and Erin's wine skills are a huge reason why. I love wine but don't know much about it. So I learned a ton during this episode and I know you will too. The biggest thing I learned? There are terrific wines in every category. So step outside of your comfort zone, don't order that sauvignon blanc you always do, and put your trust in a great sommelier like Erin Scala. Santé! Anne Ashworth: Pension tax reliefs for the higher-paid have already been reduced and more cuts are coming. The justification for this reform is fairness: the higher-paid have had it too good. But if you make company pension scheme membership less attractive to executives, this make it less likely that they will support these schemes - which will hurt the less well-off. This is just another Treasury tax grab, disguised as redistribution. Giles Coren: A survey commissioned by the Labour party has revealed that, "A disproportionate number of members who have joined since the 2015 general election are ‘high-status city dwellers' pursuing well-paid jobs”. This week Libby Purves is joined by Michael Allen, Giles Coren, Ludovico Einaudi and Priscilla Coleman. Michael Allen is a Chelsea Pensioner who served in the the Royal Engineers and Royal Military Police for twenty-four years before becoming a Chelsea pensioner in 2007. During his career he served all over the world including Germany, France, North Africa, Borneo and Hong Kong and was a bodyguard to Sir Alec Douglas-Hume. He's one of the Pensioners performing on their new album 'Men in Scarlet' released on Rhino Records. Giles Coren is the writer, critic, columnist and television presenter. In a new series on BBC Two, 'Giles and Sue Live the Good Life', Giles and Sue Perkins celebrate the 35th anniversary of one of the UK's best-loved sitcoms by going back to 1975 and trying their hands at self-sufficiency, recreating Tom and Barbara Good's lifestyle. Ludovico Einaudi is an Italian pianist and composer. Playing to sell out audiences around the world, his music appears in films and television shows including Channel 4's This Is England '86 and the BBC's Top Gear and Holby City, as well as film soundtracks for I'm Still Here, This is England and The Reader. He will be touring the UK in November to coincide with the release of a new album 'The Royal Albert Hall Concert' and DVD. Priscilla Coleman has been a court artist for over 20 years and works for ITN. Her sketches are featured in a new book 'Court Scenes' which mark many of the most important trials of that period including her first sketch of the Jeffrey Archer/Monica Coghlan libel trial, to the Heather Mills/Paul McCartney divorce and the freeing of the Birmingham Six. 'Court Scenes: The court art of Priscilla Coleman' is published by Wildy, Simmonds & Hill, and includes commentary by Paul Cheston, court correspondent of the London Evening Standard. There will also be an exhibition of Priscilla's work at the Royal Courts of Justice.
