Today's episode of Hangout with Sujata features the brilliant architect of a burgeoning international culinary empire; Simon Rogan. Simon is an internationally renowned, award-winning chef, recognised as one of the pioneers of the farm-to-table movement. In 2002, Simon opened his debut restaurant L'Enclume in The Lake District village of Cartmel, with a focus on hyperlocal and seasonal ingredients. The restaurant currently holds three Michelin stars, the top spot in the Good Food Guide and five AA Rosettes, as well as the top ranking in La Liste with Simon Rogan being the first British chef to achieve this. In 2017, Simon was recognised as the AA chef of the year, and is currently vice president of the Bocuse d'Or UK team.Simon opened Rogan & Co, his second venture in Cartmel in 2008 which won its first Michelin star in 2018 and currently holds three AA Rosettes. In 2016, Simon launched Aulis Cartmel, a six-seater chef's table experience. In 2011, Simon established Our Farm in The Lakes, which provides the restaurant group with high quality, sustainable produce. A London outpost of Aulis arrived in October 2017 as a stand-alone dining destination, a twelve-seater chefs table experience in central Soho. Simon expanded his restaurant portfolio to Hong Kong, opening Aulis in January 2019 and Roganic in February 2019. Roganic Hong Kong was awarded its first Michelin star in December 2019. Simon opened Henrock in October 2019, an informally elegant restaurant set within Linthwaite House, a contemporary country house hotel in the heart of the Lake District. In 2020, in response to the global pandemic, the group launched Home by Simon Rogan, Simon's delivery offering, providing regularly changing three-course 'at home' dining experiences created in The Lakes. In 2021, Simon's efforts towards sustainability were recognised with the newly introduced Michelin green star, awarded to both L'Enclume and Roganic Hong Kong. In 2022, Simon opened a Hong Kong-based bakery and natural wine bar The Baker & The Bottleman. L'Enclume was awarded its third Michelin star, the first restaurant in the north of England to do so. This coincided with the group celebrating 20 years since Simon opened L'Enclume. In early 2023, he expanded his portfolio to Valletta, Malta with the opening of ION Harbour by Simon Rogan. This was followed by an expansion into Thailand with the opening of Aulis Phuket in December of the same year. Our guest this month has been described as “hospitality personified”.Sam Ward is the managing director of the Umbel Restaurant Group, a collection of restaurants launched by chef Simon Rogan, who's considered one of the pioneers of the ‘farm-to-fork' movement in the UK.The group's holdings include one restaurant in London, three in Hong Kong, and three in the Lake District village of Cartmel — including the group's flagship restaurant L'Enclume, which turned 20 earlier this year.Named the UK's top restaurant for four years in a row by the Good Food Guide, L'Enclume won a third Michelin star in February — making it the only restaurant north of London to receive that accolade. Sam Ward has been integral to the Umbel restaurant group's success. Born and raised a few miles from Cartmel, he worked at Rogan and Co — the group's more casual eatery — in his early twenties, before moving to London and working at The Ritz hotel as a sommelier.He returned to Cartmel in 2012 to head up L'Enclume's FOH team, helping it become a culinary destination on a par with the likes of Noma or Blue Hill at Stone Barns. Chef Danni Barry became the second woman in Ireland ever to earn a Michelin star while working at Eipic in Belfast in 2016—the first being none other than the legend Myrtle Allen, at Ballymaloe House in 1975. Barry is a powerhouse in the kitchen with a resumé that any young chef would aspire to. I've tried so hard to get on board with Timeless Child....I really have indeed. But unfortunately, I have some issues...In this podcast, I touch on what I think fails the Timeless Child storyline both in execution and in the fundamental ideas. I also speculate what will be done with the story going forward.NOTE: I didn't discuss this in the episode but think I do allude to it: I actually don't have too many issues with canon being reframed/rewritten--mostly because Classic Who does this all the time. I do think that New Who has made this more difficult to do, however, and is better about canon continuity (until Chibnail's time). I may return to this in its own episode someday.  I may also return to Timeless Child to directly discuss it in relation to the Cartmel Master Plan--which was a direction that the show was considering going in the 7th Doctor era before it was cancelled. Writer Andrew Cartmel's series of Vinyl Detective novels became an instant favorite of mine after discovering the first installment at Lawrence's Raven Bookstore at the end of 2018. Since then, I've gone on to devour all four volumes in the series of novels about a London-dwelling music afficionado whose business cards state that he can find any record for anyone -- for a fee. They're utterly charming books, and fans of records, cats, and coffee -- such as myself -- will find themselves racing through each installment, each of which is filled with witty banter and fast-paced action. We spoke with Cartmel from his home in London about the books and last year's soundtrack release for them.

Danni Barry (@Danni_Barry) is the 2nd female chef in Ireland to have achieved a Michelin star. Danni’s cooking career began with Michael Deane in 2003, that gained a Michelin Star in 1997 and held it for fourteen consecutive years. After four years in Deanes, she travelled to cook in restaurants throughout South Africa, Australia and New Zealand, then later to Spain, spending time learning from the cultures, chefs and restaurants where she worked along the way. Danni was appointed to head up the kitchen at Simon Rogan’s restaurant in Cartmel, Rogan & Co., internationally famous for its locally sourced, seasonal produce. Danni worked there for two years until Michael Deane head-hunted her to come back to Belfast to take the helm at Deanes EIPIC in 2014, where she gained the Michelin Star within just eighteen months of the opening, adding the 15th Star to Deanes.

But he doesn't bargain on the devious Doctor and the arsonous Ace, ably abetted by a racist rozzer and an uncontrolled control experiment. WHOOVERVILE 5.0  INTERVIEW 3 Andrew Cartmell Andrew Cartmel (born 1958) is a   and , and former  of. He has also worked as a script editor on other television series, as a magazine editor, as a comics writer, as a  lecturer, and as a . Cartmel took a post-graduate course in Computer Studies and worked on  for Shape Data Ltd (now ) in ,  during the mid-1980s. He then turned more to writing and managed to gain an agent on the strength of two unproduced scripts, also attending workshops run by the  Drama Script Unit. In late 1986, when he was in his late twenties, Cartmel was hired as the  for the  of the iconic science-fiction programme , having been recommended to the producer  by the producer's agent, who had seen some unproduced scripts Cartmel had written. Cartmel worked on the programme for the next three years, overseeing the final three seasons of its original run on . He brought in several young, new writers and despite declining ratings, tried to take the series in a new creative direction. The most significant legacy of this new direction might have been the so-called "", a back story developed with other writers that restored some of the mystery of the Doctor's background and could have explained exactly who he was. Although hints were dropped in the two full series Cartmel edited, the proposed revelations never materialised on screen as the programme was taken off the air in 1989. When production of Doctor Who was placed on indefinite hold, Cartmel became script editor on the BBC's popular medical drama series  for one season. During the 1990s he wrote comic strips for  and  and threeDoctor Who novels for  in their  series. This series had used elements of the "masterplan" as part of their overall story arc for the Doctor, particularly in the last Seventh Doctor novel , written by . In 1999 his first original novel, The Wise, was published in Virgin's short-lived series of new science-fiction novels, Virgin Worlds. The same year, he became editor of the science-fiction magazine , although the appointment was a short one and he left the magazine in 2000. Since then, he has written several pieces of Doctor Who fiction: in 2000, , an audio drama for '; in 2003, , a  for Telos Publishing; and, in 2005, , a novel for . He developed a script for the third series of  entitled 'The Jinx', but it was dropped when the show's format was reworked. In 2010, Cartmel worked as script editor for '  line, overseeing the adaptation of story ideas created for Doctor Who's unmade  into audio dramas (released in 2011). In addition to script editing the four "Season 27" stories, Cartmel wrote two scripts ( and ) and co-wrote a third, , with . As well as Atom Bomb Blues, 2005 saw the publication of: Script Doctor - The Inside Story of Doctor Who 1986-89, an account of his work on the Doctor Who television series; Through Time: An Unofficial and Unauthorised History of Doctor Who; and two  spin-off novels, Judge Dredd: Swine Fever and : Day of the Dogs'. Cartmel has also written a novel set in the world of 's  television series for . The novel, released on February 15, 2008, is entitled Miss Freedom. Common themes and techniques in Cartmel's novels include: animal rights; the use of animal perspectives; and extended metaphors of animal behaviour. These elements appear in the three Virgin New Adventures novels, the original novel The Wise, the Judge Dredd novelSwine Fever and the audio play Animal. In 2001 Cartmel briefly returned to television as the script editor on the second season of 's fantasy / adventure series , writing what proved to be final episode of the series. His first stage play, End of the Night, a thriller with gothic overtones, was produced by Long Shadow Productions in the summer of 2003.

Former Doctor Who script editor Andrew Cartmel (1987-1989) joins us this week to chat about a new project, reviving the "Cartmel Masterplan" - Doctor Who Fan Fiction Illustrated! With Hans Christian Vang as his partner for this exciting new crowdsourcing proposal, Andrew is onboard to further the legendary "Cartmel Masterplan" - the term given to the restoration of mystery and mystique that typified his time on the show. Iceworld is a space-trading colony on the dark side of the planet Svartos. It is a mysterious place of terror and rumour ruled by the callous and vindictive Kane, who buys supporters and employees and makes them wear his mark iced in to their flesh. Kane's body temperature is so cold that one touch from him can kill. In Kane's lair is a vast cryogenic section where mercenaries and others are being frozen and stored, with their memories wiped for future unquestioning use as part of an army; including a freezer cabinet into which Kane deposits himself when he needs to cool down. There is also, most peculiarly, an aged sculptor who is carving a statue from the ice. The TARDIS materialises in a refrigeration sales section on Iceworld and the and venture outside. They soon meet up with their roguish old acquaintance, , who owes Kane a substantial amount of money. Glitz has come to Svartos to search for a supposed treasure guarded by a dragon. It is located in the icy caverns beyond Iceworld and by chance Glitz has a map, which he won from Kane in a gamble – in fact, Kane wanted him to have the map because he wishes to use Glitz as a pawn in his own search for the treasure. Thus the map contains a tracking device in its seal. Kane in return has Glitz's ship, the Nosferatu, which he orders destroyed. Without realising he is being used, Glitz heads off on the search with the Doctor in tow – though women are not allowed on the expedition so Mel stays with a young, rebellious waitress they have met called . It is only a matter of time before Ace behaves appallingly to customers and is fired. Mel is stunned to hear that Ace is a human from late twentieth century Earth who only arrived on Iceworld after a bizarre chemistry experiment caused a time-storm in her bedroom. Kane's staff are not happy. Once they have taken his coin they are his for life – as Ace wisely realises when she rejects such an offer. Officer Belazs was not so clever, and is keen to escape Kane's service. She thus arranges for the Nosferatu not to be destroyed, hoping to use the craft to escape Iceworld. When this fails she tries to persuade Officer Kracauer to help her overthrow Kane, but he is one step ahead. Their attempt to alter the temperature in his chambers and kill him fails, so Kane exacts his revenge and kills them both. The same fate awaits the ice sculptor who has now finished his statue, which is of a woman called Xana. In the ice caverns it has taken time but the Doctor and Glitz have encountered the dragon, which turns out to be a biped which did not so much breathe fire as fire lasers from its eyes, but not the treasure. Mel and Ace have now ventured into the caverns too and they meet their allies and are actually defended by the dragon, which guns down some of Kane's cryogenically altered soldiers who have been sent into the ice caverns to kill them. The dragon takes them to a room in the ice, which is some sort of control area and contains a pre-recorded hologram message. The hologram explains that Kane is one half of the Kane-Xana criminal gang from the planet Proamnon. When the security forces caught up with them Xana killed herself to avoid arrest, but Kane was captured and exiled to the cold, dark side of Svartos. It turns out that Iceworld is a huge spacecraft and the treasure is a crystal inside the dragon's head, which acts as the key that Kane needs in order to activate the ship and free himself from exile. The dragon is thus both Kane's jailer and his chance of freedom. Kane has overheard the location of the key through the bugging device on the map and now sends his security forces to the ice caverns to bring him the head of the dragon, offering vast rewards for such bravery. He also uses his cryogenic army to cause chaos in the Iceworld shops, driving the customers out and towards the docked Nosferatu. This is brutally accomplished. When the Nosferatu takes off Kane blows it up. The only survivors are a young girl called Stellar and her mother, who have become separated but both survive the massacre. Shortly afterward two of Kane's troopers succeed in killing the dragon and removing its head, but are killed in the process. The Doctor has meanwhile realised that Kane has been a prisoner on Svartos for millennia. He retrieves the head of the dragon and is then told by intercom that Kane has captured Ace but is willing to trade her for the “dragonfire”. The Doctor, Glitz and Mel travel to Kane's private chambers for the exchange. Kane rises to the Doctor's taunts but still powers up Iceworld as a spacecraft, which now detaches itself from the surface of Svartos. However, when Kane tries to set course for Proamnon to exact his revenge he realises he has been a prisoner so long that the planet no longer exists, having been destroyed through late-stage of its sun. In desperation, he opens a screen in the surface of his ship and lets in hot light rays, which melts him. The Doctor now loses a companion but also gains one. Glitz has claimed Iceworld as his own spacecraft, renamed Nosferatu II, and Mel decides to stay with him to keep him out of trouble. The Doctor acquires Ace instead, promising to take her home to via the “scenic route”. Continuity This story marks the final appearance of Bonnie Langford as a regular cast member. Langford would only reprise her role as Mel once on television, in (1993). Langford departed the series of her own volition after being dissatisfied in the role. In recent years, she has reprised the character in several audio plays by , including playing an alternate universe version of Mel in the Doctor Who Unbound audio . The character of Sabalom Glitz, with whom Mel departs to explore the galaxy, first appeared in . This story also marks the first appearance of Sophie Aldred as Ace. Aldred actually auditioned for the part of the Ray from (1987), but lost the part to . Briggs, who had created the character of Ace, had stated in Ace's character outline for Dragonfire that she had slept with Glitz on Iceworld. The -written novel Love and War implies (and his later novel Happy Endings confirms) that Ace lost her virginity to Glitz. The Doctor's acceptance of Ace as a companion is part of a larger game that would see its culmination in . In the novel by it is revealed that the Seventh Doctor mentally influenced the brighter and more idealistic Mel to leave so that he could become the darker and more manipulative Time's Champion. This story marks the only farewell scene between the Seventh Doctor and one of his companions. Mel's departure scene was adapted from Sylvester McCoy's screen test, where was hired to act as a departing companion and a villain. McCoy stated that he always liked that particular screen test script and he lobbied for its inclusion in Dragonfire. One of the alien customers in the cafe is an Argolin from . Ace's first appearance begins her habit of calling the Doctor "Professor". The Doctor corrects her here, but rarely objects to her continuous use of the name over the next two seasons. Story editor had suggested that writers read The Unfolding Text to familiarise themselves with Doctor Who and its history, which inspired Ian Briggs to quote the academic text in his script, in a playful . Features a guest appearance by Patricia Quinn. See also . The literal at the end of episode 1 in which the Doctor lowers himself over a guard rail to dangle over an abyss from his umbrella for no apparent reason comes under frequent criticism for its seeming absurdity. As scripted, the Doctor did have a logical motivation for his actions. According to Cartmel in a later interview, the passage leading to the cliff was meant to be a dead end, leaving the Doctor no option but to scale the cliff face. As shot, however, this reasoning became unclear. For the effects shot of the death of Kane, a wax bust of the actor's screaming face was made and filmed being melted down to a skull within, this footage being sped up to achieve the effect. Though this is very similar to the death of Toht in , for the family audience of Doctor Who the colour red was carefully avoided in the bust. , who had portrayed Toht in the film, was director Chris Clough's first choice to play Kane, but was unavailable and were also considered for the part of Kane, but both were also not available for the role. Reception On (now known as ) in 2003 to celebrate the 40th anniversary of , over a weekend DrWho@40weekend was shown which consisted of the best serials of each Doctor voted by the viewing public. Dragonfire was the serial chosen as the best seventh Doctor serial.[] DrWho@40weekend also included interviews with the cast and crew of the series overall. The voted the serial to be the best one of its season.
