Translating coffee from one form to the next, and serving it in a way that further translates the value of that coffee into a rewarding experience for the drinker, is what the craft of coffee is all about. Today's guest has gone from translating languages to working full time in roasting and serving coffee and has some critically important insights to share from her journey. We are talking with 2024 Brewers Cup Champion from Turkey, Nida Fetullahoğlu ! Nida has been in the coffee industry since 2017. From Ankara, Turkey, Nida had a different career before coffee where she studied english translation and interpreting in college and has translated 4 books into Turkish on different subjects. Nida started as a barista in a boutique coffee shop in Ankara and fell in love with it thanks to the people she met along her career. She has been roasting since 2020 and is currently working in Tetra N Roastery as a junior roaster. On the latest episode of the Coffee Sprudgecast, Zachary Carlsen brews BlendIn Coffee Club's Colombia Los Nogales, the winning 2024 US Brewers Cup Championship coffee (which also happens to be their house decaf coffee!) Weihong Zhang of BlendIn Coffee Club in Houston, Texas, your 2024 United States Brewers Cup champion, took top honors in Rancho Cucamonga using a decaf Typica variety from Colombia, with a coffee he serves on bar every day. Pick up a bag of it online or in their cafe year-round. This is exactly what host Jordan Michelman did the evening Zhang was announced the 2024 champion! The decaf underwent a decaffeination process developed by Oscar Hernandez of Finca Los Nogales in Huila, Colombia. After de-pulping, the green coffee is then decaffeinated using, in part, its mucilage, which helps “[avoid] off flavors and [enhance] complexity with floral and fruity notes,” Zhang told Sprudge in an interview with Zac Cadwalader. Sprudge's coverage of the 2024 US Barista Championship in Rancho Cucamonga is presented in partnership with Third Wave Water. Zachary Carlsen replicates the brew process deployed on the Brewers Cup stage as accurately as possible (with a slightly different hand grinder and variety of Hario V60—listen in to find out more). The process is especially interesting due to its use of two water temperatures and a touch of water bypass at the end.

He is a full-time psychologist, a father of a seven-year-old, and an independent Brewers Cup competitor who is passionate about homebrewing.We were impressed by Serafim's dedication to his craft and his willingness to compete with coffee professionals. In these interviews I sit down with stellar presenters and lecturers to dig deep into a range of relevant and important topics that will help make you and your coffee business better. This time we are joined by Jesse Harriott, Jenna Gotthelf, and Anu Menon! To start us off on part 2 we are going to talk with Jesse Harriott of Copper Horse Coffee! Jesse is a long time friend of mine and Co-founder of Copper Horse Coffee in Ithaca, NY. He has been serving coffee for 20 years, Roasting, training, and consulting for 18 years and has accumulated a lot of recognitions and awards at Coffee Fest, Golden Bean, and has amassed an incredible amount of wisdom and experience over these decades of coffee craft and leadership. In this conversation we discuss what is at the core of a successful coffee shop's operations. Next we chat with Jenna Gotthelf of Counter Culture Coffee. Jenna Gotthelf is an advocate for creating progressive and approachable learning opportunities for anyone who brews coffee. Jenna is based in NYC and is the wholesale education manager for Counter Culture Coffee, where she oversees the barista training program carried out in Training Centers across the country. Jenna is also a long time US Coffee Championships competitor and has placed everywhere from first to last to somewhere in the middle in Brewers Cup and Barista Competitions Jenna and I discuss the need for coffee bars to educate their customers in ways that empower them and give them tools for success and how to meet them where they are in their coffee journey. Don't get me started that they called it the first annual because, until it happens again next year - is there any way of knowing it might be the last annual too? Anyway - 81 medals were given to 57 small and independent brewers across the state out of 131 breweries that entered. That amounts to 27 medal categories covering 150+ different beer styles that were awarded gold, silver, and bronze medals. They had a tough job anonymizing 755 entries to make sure only a select few knew what anyone was even judging! First - they picked up former Four Roses master distiller Jim Rutledge. That went off with a bang as the “liquid advisor” helped them sell out of some releases in minutes and win the 2021 San Francisco World Spirits Competition! Since then they have also added “the Buddha of Bourbon” protege of Wild Turkey master distillers Jimmy Russell, son, Eddie Russell. They've also named Blue Run's first whiskey director - Shaylyn Gammon of Louisville - to help expand the brand's portfolio. She created the Russell's Reserve 13-year-old Bourbon, which was named the Best American Whiskey of 2021 by Fred Minnick. I don't know what's in the water - but apparently there's magic in the whisky there! They're expanding their reach too with 10,000 bottles now available in 14 states and across three countries. While some seem to have cracked the code their own way (like Athletic Brewing and Zero Gravity) researchers at the University of Copenhagen say "What non-alcoholic beer lacks is the aroma from hops. When you remove the alcohol from the beer, for example by heating it up, you also kill the aroma that comes from hops. Other methods for making alcohol-free beer by minimizing fermentation also lead to poor aroma because alcohol is needed for hops to pass their unique flavor to the beer.” Small molecules called monoterpenoids seem to be the reason and the process the researchers found should also allow more flavorful NA beers to be made with a much les energy intensive process - saving brewers big bucks! The method is already being tested in breweries in Denmark and the plan is to have the technique ready for the entire brewing industry in October 2022. Italian coffee has shaped how the world understands coffee and cafe culture. These days there is a movement to take the traditional Italian way of of getting a coffee and elevate the quality and the experience making it a truly specialty coffee experience. At the heart of that movement is Aroma Caffe todays guest, Alessandro Galtieri. Alessandro has owned and operated Aroma Caffe since 1994 and has been a coffee professional since 1991. As he ran the cafe he began to shift it into a beacon of progressive specialty coffee amidst the traditional coffee culture landscape of his city of Bologna, Italy. Alessandro is the 2018 and 2019 Italian Brews Cup Champion and 3rd place finisher in the 2019 World Brewers Cup. On a very special edition of the Coffee Sprudgecast, we take you live to the event floor at the 2019 US Coffee Champs Qualifying Event in Denver, Colorado! There we join multimedia director Elizabeth Chai, who—in addition to helming our must-follow Instagram coverage of the event—taped a series of original interviews for this week’s episode of the podcast. In this episode Chai talks to Blair Smith, a Brewers Cup competitor for Augie’s Coffee in California’s Inland Empire region. Smith placed 9th overall in the qualifying event, earning a bid to move on and compete at the 2019 US Coffee Championships national event next March in Boston. Chai also sat down with Hana Kaneshige, a barista competitor and Regional Educator representing Counter Culture Coffee, a wholesale roaster hubbed in Durham, North Carolina and Emeryville, CA with satellite training centers nationwide. Kaneshige would also place ninth in the US Coffee Champs Barista Competition field, earning a coveted spot to move on and compete at nationals next year in Boston.
