From ornamenting your pastries to adding embellishment to your table, Michael Davenport believed that for all the time we take preparing our food, it should be presented proudly. An elaborately, or even just a neatly set table can get the salivary glands going. Michael was a firm proponent of cloth napkins, candlelight, and a centerpiece - even if it’s just a bowl of lemons. Despite being a skeptic of many kitchen gadgets, when it comes to decorating food itself, Michael sings the praises of pastry tubes. They’re not only for wedding cakes; they don't have to be limited to cakes at all for that matter. Try using a pastry tube when dealing with butter, mashed potatoes or making deviled eggs. Finally, Michael shares a treat made in the kitchen and then broken over someone’s head - hear him out, he’s talking about cascarones. Cascarones are most commonly a part of Mexican fiestas. This festive activity requires hollowing out eggshells, filling them with confetti, and adding a layer of paint. A self-taught cake designer with a background in Landscape Architecture, Thao taught herself to bake cupcakes and macarons, and in 2013, she opened Don’t Tell Charles Coffee & Desserts, a small specialty coffee & dessert shop in the inner suburbs of Melbourne. In 2016 Thao’s focus shifted to cakes and the cafe became Don’t Tell Charles, a designer cake studio specializing in high-end contemporary buttercream cakes. Thao’s cakes became highly sought after, with clients even flying her internationally to make their wedding cakes. The workshops soon followed with the first ever being held in Singapore in April 2016. Since then Thao has taught workshops in Sydney, Indonesia, Auckland and London, and close to 100 physical workshops have been held in the Melbourne studio with students flying in from all over the world including the USA, UK, France, Canada, Panama, Argentina, Nigeria, Malaysia and Brazil. Have you ever heard of a Cake Decorator, or a Cake Artist being described as 'award-winning', or 'internationally famous' and wondered how that actually happens? Well, that's what we're going to be talking about, on today's episode. We're going to be discussing competitions, how to get into them, how to do them and even the emotional side of competing. Listen in to find out more. A couple of weeks ago, I came back from attending Cake International, which is held every year in November, in Birmingham, in the UK. It is the biggest Cake Show in the world. Although there are other Cake Shows, this is considered to be the golden one, because it really is so massive. In fact, it's quite overwhelming, with so many people there! One of the hallmarks of Cake International is that it has this really huge competition, with about fifteen hundred competition pieces submitted this year. It really is the most amazing thing you've ever seen in your life! (I have posted a couple of my favorites on Instagram.) Listen in today, as I discuss this incredible show with its fabulous competition and beautiful artwork and also, competitions in general and the emotional aspect of competing. Show highlights: How I felt about myself and my skills as a decorator, being around all that really beautiful artwork. So many of the pieces felt so far from cake - they were so untouchably incredible, more like sculptures. What I found very fascinating, about people's reactions and comments, around the competition. How to actually get into these kinds of competitions. Why it would be a good idea to get in touch with people who have entered a Cake Competition before, if you'd like to enter one yourself. The two basic types of competitions that there are in life. Using competition with others as a motivator. When healthy competition is a good thing for us. Why I've never been competitive with what I call value metrics. I will always ask for feedback if I did not win a competition. Sometimes the feedback can be really frustrating, though! I was in also in the UK to attend the Cake Master's Award Ceremony. What really excited me and made me proud about being nominated in the Best Book category. Looking for the silver lining, the lesson, or the gratitude in it, when entering a competition. Television Competitions- are they really worth entering? The stress level of competitions. How To Buy A Franchise Show | Dr. John Hayes provides insight on how to buy and operate a franchise
Kevin Johnson, CEO of Over the Top Cake Supplies, is our guest this week on the How To Buy A Franchise Show. This franchise is unique not only for the products it sells and the services it supplies, but for the fact that it doesn’t neatly fit into one category or industry. First, it’s a specialty cake decorating supply store. Second, it’s a party store! Over the Top Cake Supplies locations host parties for a variety of ages: birthday parties for young children, beginner decorating lessons for home-bakers, and more advanced courses where celebrity decorators teach the classes. This franchise is social! Most marketing is conducted on social media; networking with local cake clubs is vital for exposure; hosting a variety of classes: girls’ night out (similar to paint and sip parties), daytime classes for adults, and weekend birthday parties for children. According to Johnson, “No one leaves a party without buying supplies afterwards.” This retail franchise will cost between $150,000 and $200,000 and all of the existing franchisees were able to get financial assistance. The franchise is SBA approved, training takes two weeks at corporate headquarters and two weeks in the store, and this is a service-in-demand thanks to programming on the Food Network and similar channels.
