We waste a shocking 40% of the food we buy. We throw away foods like carrot tops, beet greens, and spent coffee grounds. These ‘food scraps' stuff our landfills and drain our pockets. But we can eat these foods and many of them offer tons of healthy nutrients. Today's guest is Carleigh Bodrug. Carleigh's published a best-selling cookbook with over 140 recipes made from food scraps you might otherwise throw away. Her mission is simple: eat more plants. Her online community, PlantYou, has more than 10 million followers. She's joined by Dr. Will Bulsiewicz. Will is a board-certified gastroenterologist and ZOE's U.S. Medical Director. He reveals the hidden nutritional value of these food scraps, and how ‘scrappy cooking' can get you eating that all-important 30 plants per week. Would you ever eat a banana peel? How about beet leaves? In this episode, Carleigh Bodrug, author of "Plant You" and host of "Scrappy Cooking", shares all the ways we can reduce food waste. One of Carleigh's main tips is to use food scraps creatively instead of discarding them. She suggests using vegetable peels, stems, and other "waste" parts in broths, sauces, or even as a base for new meals. This not only helps reduce waste but also maximizes the nutritional value of the food purchased Learn how agriculture, especially industrial farming, is a major contributor to greenhouse gas emissions, deforestation, and biodiversity loss. Carleigh advocates for a shift toward plant-based eating as a means to reduce our environmental footprint, noting that plant-based diets generally require fewer resources and produce fewer emissions than animal-based diets. By sharing her practical, easy-to-follow tips for eating more sustainably Carleigh emphasizes that we have more power than we think in contributing to a sustainable food system. By making mindful choices, reducing waste, and opting for plant-based meals, everyone can help reduce the negative environmental impact of the food system. Carleigh Wenzel jumps on to talk through the whirlwind last two weeks and discuss her goals for 2024-2025
Carleigh Bodrug is the CEO and Founder of PlantYou, a New York Times Bestselling cookbook author and self-taught plant-based chef. Carleigh founded PlantYou in 2016 after the World Health Organization announced that red and processed meat were now considered Group 1 and Group 2 Carcinogens which was especially shocking as Carleigh grew up on a “meat and potatoes” diet. With little-to-no cooking skills, and a tiny bachelor apartment kitchen, Carleigh started experimenting with plants. She began cooking vegan meals by simply replacing the meat in her favorite childhood recipes with plants. Carleigh's mission is to help people to save money, reduce food waste and eat healthier than they ever have before. In this conversation, we discuss: Carleigh's journey from working in radio broadcasting to becoming a vegan chef and how a plant-based diet improved her digestion and overall energy levels The health and environmental benefits of eating more plant-based foods & moral reasons for reducing animal product consumption The importance of focusing on your health and diet as part of your overall wellness and wealth Tips for reducing food waste at home through proper storage, repurposing vegetable scraps, and being flexible with recipes + much more! Today, we're diving into the world of sustainable, mouthwatering cuisine with none other than the culinary visionary herself, Carleigh Bodrug. Carleigh's journey is nothing short of inspiring. Growing up on a farm where meat reigned supreme, she later discovered the alarming truth about red and processed meats being classified as carcinogens by the World Health Organization. This revelation, coupled with her personal experience of her father's battle with colon cancer, propelled her toward a transformative shift in her diet. Fast forward to today, and Carleigh has become a household name, captivating millions with her blog, Plant You, and her latest cookbook, "PlantYou: Scrappy Cooking: 140+ Plant-Based Zero-Waste Recipes That Are Good for You, Your Wallet, and the Planet." Now, what sets Carleigh's cookbook apart? Well, it's all about scrappy cooking—making delicious, nutritious meals while minimizing food waste. Ever wondered how to turn those food scraps into culinary gold? Carleigh's got you covered! So join us as we explore plant-based recipes that not only tantalize your taste buds but also make a positive impact on your wallet and the planet! “Food waste creates more emissions than the airline industry. So that gives you a scale of how much impact this has. And then sort of your mind goes to, okay, where is this waste coming from? Is it restaurants? Is it grocery stores? Is it happening on farms? And shockingly, the largest percentage is in consumer's homes. So I felt really, as a plant-based food vlogger, that I needed to talk about this. So, one day, I threw up a candied orange peel recipe, and it was really funny because whenever I put up a video, I kind of walk away from it because I don't want to know what the first reaction is. I get very nervous. So I walked away from my phone, and I came back to it about a couple hours later, and it had a non-exaggerated million views.” - Carleigh Bodrug What we discuss in this episode: - How food waste contributes to global warming. - The destructive power of methane vs. carbon dioxide. - Carleigh's tips to reduce food waste and save money. - Aquafaba and its uses. - How to make an amazing broth. - Making use of seeds. - How to make delicious vegan bacon. - Growing food from food scraps. In 2016, Carleigh Bodrug started her blog, PlantYou, with one goal - to show the world that eating plants is not only healthy, but also FUN. Since then, Carleigh and her ever-growing team have amassed over 10 million followers (and growing!) across her social platforms, and she's even released a New York Times Best Selling Cookbook, PlantYou.Today, we get a peek under the PlantYou curtain as Rip and Carleigh catch up and talk about her meteoric rise in the last eight years. Carleigh shares her authentic and fresh approach to content creation, inspiration for recipes, and tips for creating plant-based meals on a budget. We also get an exclusive sneak preview of her next book, Scrappy Cooking, which is being released in April, 2024. It will, no doubt, dazzle and inspire readers to save money, reduce food waste and eat healthier - all while having fun. The book equips readers with not only the tools to make the most of their scraps, but use up just about any vegetable, grain, or bean from their fridge and pantry. Scrappy Cooking not only puts the focus on eating a diet that's more conscious for our environment (and our wallets) but our health as well. Every recipe in the book is vegan, almost entirely oil free, and focuses on whole, plant-based foods that are good for our bodies and the planet.Rip encourages listeners to pre-order Scrappy Cooking as those numbers do count towards the first week sales numbers, but, more importantly, it's an opportunity to raise awareness of the goodness that is whole-food, plant-based nutrition.
