We waste a shocking 40% of the food we buy. We throw away foods like carrot tops, beet greens, and spent coffee grounds. These ‘food scraps' stuff our landfills and drain our pockets. But we can eat these foods and many of them offer tons of healthy nutrients. Today's guest is Carleigh Bodrug. Carleigh's published a best-selling cookbook with over 140 recipes made from food scraps you might otherwise throw away. Her mission is simple: eat more plants. Her online community, PlantYou, has more than 10 million followers. She's joined by Dr. Will Bulsiewicz. Will is a board-certified gastroenterologist and ZOE's U.S. Medical Director. He reveals the hidden nutritional value of these food scraps, and how ‘scrappy cooking' can get you eating that all-important 30 plants per week. You'll walk away from today's episode saving your money and the planet, all while eating more plants.
Would you ever eat a banana peel? How about beet leaves? In this episode, Carleigh Bodrug, author of "Plant You" and host of "Scrappy Cooking", shares all the ways we can reduce food waste. One of Carleigh's main tips is to use food scraps creatively instead of discarding them. She suggests using vegetable peels, stems, and other "waste" parts in broths, sauces, or even as a base for new meals. This not only helps reduce waste but also maximizes the nutritional value of the food purchased Learn how agriculture, especially industrial farming, is a major contributor to greenhouse gas emissions, deforestation, and biodiversity loss. Carleigh advocates for a shift toward plant-based eating as a means to reduce our environmental footprint, noting that plant-based diets generally require fewer resources and produce fewer emissions than animal-based diets. By sharing her practical, easy-to-follow tips for eating more sustainably Carleigh emphasizes that we have more power than we think in contributing to a sustainable food system. By making mindful choices, reducing waste, and opting for plant-based meals, everyone can help reduce the negative environmental impact of the food system. Tim Kaufman was a triple addict. Alcohol and drug abuse combined with binge eating nearly claimed his life. Of the three deadly vices, it was food that had its hooks in him the deepest. It is an addiction more powerful than the fentanyl he was abusing. Ditto for what was in the bottomless liquor bottles he consumed each night. Tim was beaten raw by life until he fought back and clawed his way out of a self-made prison. His journey began at rock bottom, and he has soared to new heights as a leader in the plant-based world thanks to his Fat Man Rants. In this episode, Tim joins "The Weight Loss Champion" Chuck Carroll to talk about the personal hell he created for himself and how he was able to overcome his demons. The two recovering food addicts discuss their take of "cheat days" and why they are the downfall of good health. Especially after weight loss. Carleigh Bodrug is the CEO and Founder of PlantYou, a New York Times Bestselling cookbook author and self-taught plant-based chef. Carleigh founded PlantYou in 2016 after the World Health Organization announced that red and processed meat were now considered Group 1 and Group 2 Carcinogens which was especially shocking as Carleigh grew up on a “meat and potatoes” diet. With little-to-no cooking skills, and a tiny bachelor apartment kitchen, Carleigh started experimenting with plants. She began cooking vegan meals by simply replacing the meat in her favorite childhood recipes with plants. Carleigh's mission is to help people to save money, reduce food waste and eat healthier than they ever have before. In this conversation, we discuss: Carleigh's journey from working in radio broadcasting to becoming a vegan chef and how a plant-based diet improved her digestion and overall energy levels The health and environmental benefits of eating more plant-based foods & moral reasons for reducing animal product consumption The importance of focusing on your health and diet as part of your overall wellness and wealth Tips for reducing food waste at home through proper storage, repurposing vegetable scraps, and being flexible with recipes + much more! Today, we're diving into the world of sustainable, mouthwatering cuisine with none other than the culinary visionary herself, Carleigh Bodrug. Carleigh's journey is nothing short of inspiring. Growing up on a farm where meat reigned supreme, she later discovered the alarming truth about red and processed meats being classified as carcinogens by the World Health Organization. This revelation, coupled with her personal experience of her father's battle with colon cancer, propelled her toward a transformative shift in her diet. Fast forward to today, and Carleigh has become a household name, captivating millions with her blog, Plant You, and her latest cookbook, "PlantYou: Scrappy Cooking: 140+ Plant-Based Zero-Waste Recipes That Are Good for You, Your Wallet, and the Planet." Now, what sets Carleigh's cookbook apart? Well, it's all about scrappy cooking—making delicious, nutritious meals while minimizing food waste. Ever wondered how to turn those food scraps into culinary gold? Carleigh's got you covered! So join us as we explore plant-based recipes that not only tantalize your taste buds but also make a positive impact on your wallet and the planet! “Food waste creates more emissions than the airline industry. So that gives you a scale of how much impact this has. And then sort of your mind goes to, okay, where is this waste coming from? Is it restaurants? Is it grocery stores? Is it happening on farms? And shockingly, the largest percentage is in consumer's homes. So I felt really, as a plant-based food vlogger, that I needed to talk about this. So, one day, I threw up a candied orange peel recipe, and it was really funny because whenever I put up a video, I kind of walk away from it because I don't want to know what the first reaction is. I get very nervous. So I walked away from my phone, and I came back to it about a couple hours later, and it had a non-exaggerated million views.” - Carleigh Bodrug What we discuss in this episode: - How food waste contributes to global warming. - The destructive power of methane vs. carbon dioxide. - Carleigh's tips to reduce food waste and save money. - Aquafaba and its uses. - How to make an amazing broth. - Making use of seeds. - How to make delicious vegan bacon. - Growing food from food scraps. In 2016, Carleigh Bodrug started her blog, PlantYou, with one goal - to show the world that eating plants is not only healthy, but also FUN. Since then, Carleigh and her ever-growing team have amassed over 10 million followers (and growing!) across her social platforms, and she's even released a New York Times Best Selling Cookbook, PlantYou.Today, we get a peek under the PlantYou curtain as Rip and Carleigh catch up and talk about her meteoric rise in the last eight years. Carleigh shares her authentic and fresh approach to content creation, inspiration for recipes, and tips for creating plant-based meals on a budget. We also get an exclusive sneak preview of her next book, Scrappy Cooking, which is being released in April, 2024. It will, no doubt, dazzle and inspire readers to save money, reduce food waste and eat healthier - all while having fun. The book equips readers with not only the tools to make the most of their scraps, but use up just about any vegetable, grain, or bean from their fridge and pantry. Scrappy Cooking not only puts the focus on eating a diet that's more conscious for our environment (and our wallets) but our health as well. Every recipe in the book is vegan, almost entirely oil free, and focuses on whole, plant-based foods that are good for our bodies and the planet.Rip encourages listeners to pre-order Scrappy Cooking as those numbers do count towards the first week sales numbers, but, more importantly, it's an opportunity to raise awareness of the goodness that is whole-food, plant-based nutrition. Are you looking to adopt more plants into your diet, build your personal brand, or maybe make a York Times best-selling cookbook? Team, today's episode is special. I had the pleasure of having Carleigh Bodrug, the creator of PlantYou, on the show today! Carleigh is truly a baller. After growing up on a meat and dairy diet, her father developed cancer. Shortly after, dairy and red meat became labeled as Group 1 and Group 2 Carcinogens. The very food her family was told to be eating day-in and day-out, almost took everything from them. Carleigh decided it was time to dive headfirst into plant-based cooking. While working at a hospital during the day, she began posting food pictures and recipes to a blog called PlantYou. After relentless hours of work, Carleigh built up her income from PlantYou to the point where her work with food was providing an equitable income to her hospital pay. Carleigh quit working at the hospital and never looked back. Since then, she has amassed over three million followers on social media and is now a New York Times Best-selling author for her new cookbook PlantYou.In today's episode we specifically dive into:How to make plant-based food deliciousHow to successfully become plant-basedHow you can build lean muscle on a plant-based dietHow you can get enough protein on a plant-based diet to achieve your fitness and health goalsHow plant-based diets improve your gut health Why a plant-based diet is better for the environmentThe plant-based food industry growthHow to write a cookbookHow to build your personal brandYou can connect with Carleigh at the following links:Order PlantYouFollow PlantYou on InstagramFollow PlantYou on TikTokSubscribe to PlantYou on YouTubeCheckout PlantYou's website

In her creative video content, she shows her millions of followers how to turn those scraps into simple, delicious, and nutritious foods that people will absolutely adore. Carleigh is a plantstrong ball of light raised in Ontario, Canada on a small family farm. Like so many others, she was raised on the standard western meat and potatoes diet. All of that changed, however, when her Dad was diagnosed with colon cancer. I remember in 2015, the World Health Organization announced that red and processed meat were now classed as Group 2 and Group 1 carcinogens, and what I remember most about when that news broke was my dad was actually angry because it was like he had had this super invasive surgery and chemotherapy and then gone back to eating the very thing that at least was not helping the situation, right? This feisty young woman (who really couldn't cook, by the way) took it upon herself to start experimenting with plants! Her goal? Make this lifestyle approachable, easy to follow, and so, so fun. You can't force it down people's throat, you kind of have to just lead by example so I try to talk as positively as possible about how many benefits that I've personally experienced from going plant-based rather than kind of shaming or dampering on people's food, because food is emotional and nostalgic, as you know. Her new book, PlantYou includes, not just photos of the gorgeous finished products, but also photos of every ingredient you need, making it so easy to follow. You know what else I love? It features over 140 recipes that are not only plantstrong, but also OIL-FREE! Instead of a glug of oil in the pan, why don't you try vegetable broth or water and I can guarantee the finished product of that dish is going to take almost identical if not identical, and you have now reduced the fat and caloric content dramatically. Rip and Carleigh also dish on: The support she receives from her family and fiance I was super lucky in that I was supported on that journey because I think a lot of people are going it alone, and the social aspect, I always say to people, the social aspect is the hardest I think, and in a way, because I wasn't doing it completely by myself, that was a little easier to swallow. Like you didn't have to explain as much if your parents were going the same route. Why she maximizes every ounce of food she can when preparing meals and snacks So this scrappy cooking concept was all born by this desire to kind of like reduce food waste within our own homes and also reduce the amount of money wasted and I think something like 40 to 50% of edible food in North America goes to waste, so it's a huge issue. And I think a lot of people are going aimlessly to the grocery store each week with really good intentions and buying a lot of fresh produce that ends up in the garbage. Tips and tricks with leftover aquafaba, ginger, date seeds, potato skins, pickle juice and more! Tools for your plant-based kitchen Favorite recipes in her new book Leading by example with positive energy I try to talk as positively as possible about how many benefits that I've personally experienced from going plant-based rather than kind of shaming or dampering on people's food, because food is emotional and nostalgic, as you know. Trust me, you'll be hearing a lot more from Carleigh in the coming months because the future is bright for this young broc-star. True story. Before she had millions of followers, Carleigh Bodrug struggled with her health. Her digestive issues had grown troublesome that she was taking prescription laxatives for her entire childhood. The problems then began multiplying as the years rolled by. By the time Carleigh was in her early 20's she was chronically fatigued and wore her poor health on her sleeve as her skin issues were now on display for the world to see. She wasn't the only member of her family facing challenges. Doctors had previously diagnosed her father with stage 2 colon cancer. He survived, but Carleigh remember being stunned in 2015 when red and processed meat were classified as carcinogenic. The same foods that her family had been eating years were also the reason they were sick?! An emotional mixture of anger, confusion, and motivation led Carleigh to seek a healthier path. And when she discovered a whole-food plant-based diet, suddenly all of her health challenges disappeared. The answer had been right in front of her the whole time and it wasn't in a pill bottle. It was in her kitchen. She joins “The Weight Loss Champion” Chuck Carroll on The Exam Room Podcast™ to share her story in detail and how her life-changing epiphany planted the seed for a booming career as an authority on simple, tasty and healthy plant-based recipes! Her PlantYou Cookbook became a No. 1 best seller before it was even released! Plus, Chuck details new research on the protective benefits a vegetarian diet offers against dementia. Carleigh Bodrug, better known as @PlantYou, has grown a massive following on Instagram because of her practical, easy-to-follow plant-based recipes. In today's episode, Matt and Doug chat with Carleigh about her low food waste philosophy, why these recipes are so successful, and her new cookbook.
Bailey sits down with Carleigh author and founder of plantyou. She has large online presence with her vegan food blog and has upcoming oil free vegan cookbook coming out this February 2022. They catch up and share insight on the world of plant based living, being food waste conscious, and navigating a platform with over a million viewers. She shares her story of transitioning to a whole food plant based diet. How in her words, she looks like someone that would be the least likely person to be vegan. She grew up on a farm and grew up surrounded by animal and dairy products her whole life, but when her father became ill, they decided to do research into healthier eating habits. After reading plant based books and watching documentaries, they eventually started swapping out their favorite comfort foods with plant based alternatives. Slowly over time Carleigh grew more and more confident with her cooking. By 2019 she was fully immersed into plant you and ran the business full time. Carleigh talks about her shift towards a food blogger and cookbook author, and the challenges she faced. Together Bai and Carleigh share their experiences of taking the leap in believing in yourself as an small business entrepreneur. The power and the responsibility that comes with running a full small business on your own. They talk about going vegan and transitioning to a plant based diet and about the connections you see more in your health, the animals, and the environment when eating plant based. How using resources like watching documentaries and researching into plant based lifestyle can be the best thing you can do for yourself. They feel and see a huge shift in attitude of the general society with regards to plant based recipes. It's accepted more than ever and there's more options more than ever. They touch base on the life of having a large online presence and the negatives such as people making assumptions including about her appearance. They chat about how they don't feed into all the negativity and explain how important the positive comments are and how they really help spread more goodness. They talk about online bulling and how out of hand it has gotten, especially towards female bloggers and influencers. They talk about how entrepreneurs online should shed more light on the negative comment epidemic going on in the shadows. Talking about this can hopefully help keep people more accountable for their comments. To think before you write it. Spread the positivity. Lastly, Carleigh gives us the deets on her upcoming new cookbook with 140 recipes! All oil free! All plant based! There's advice, pantry lists, and nutrition facts on each dish. Go to plantyou.com for your copy. They talk about the experience of finally seeing the first copy of the book in your hands, the non stop work that comes together to write a cookbook, and more. She talks about the personal challenges she overcame to write her book, especially the cover shot. How happy she was with all the positive feedback of writing a cookbook, and the large response she got from just the preorders alone. The cookbook Plantyou is Available on Feb. 15!
