Gelato Festival World Masters, la più prestigiosa competizione per gelatieri singoli al mondo, ha tenuto le semifinali per il Nord America nel weekend del Labor Day a Los Angeles e annuncia, insieme ai partner strategici Carpigiani e Sigep - Italian Exhibition Group, e al media partner Los Angeles Magazine, che Golan Chetrit della gelateria Noi Due Gelato di New York si è aggiudicato il primo premio come Miglior Gusto del Nord America 2023 per il suo gelato "Halva Nagila" (gelato all'halva con tahini, sciroppo di datteri e riso croccante tostato).

Stella in Alto Mare e Saverio Catellani vi presentano la prima edizione del concorso Racconti intorno al fuoco che nasce all'interno della ricorrenza del centenario della nascita di don Nino Levratti il quale, intorno alla metà degli Anni Cinquanta, introdusse il metodo scout tra i giovani di Mirandola e di Carpi.Il concorso, organizzato dall'Associazione “Intorno al fuoco” in collaborazione con il Comitato “Tracce di don Nino”, gode del patrocinio del Museo diocesano di Carpi.La premiazione del "contest letterario" avverrà giovedì 5 Ottobre alle ore 18.00 a Carpi (Mo) all'interno della rassegna Festa del Racconto (https://www.festadelracconto.it/evento/racconti-intorno-al-fuoco/) dove saranno proclamati i primi tre classificati e i vincitori dei 2 Premi speciali “don Nino Levratti” e Miglior Under 21.La scelta di lanciare un "contest letterario" è dovuta in certo qual modo al fatto che nel 1908 Robert Baden-Powell, il fondatore dello scautismo, pubblicò “Scouting for boys” e scrisse i capitoli come se fossero tante “chiacchierate” intorno al fuoco di bivacco: una scelta non casuale, perché la narrazione rivestiva un ruolo importante nella sua pedagogia. Era lo stesso B.-P. a inventare storie e avventure per i ragazzi adolescenti, mentre per i bambini cioè i lupetti, aveva scelto come testo guida e filo rosso delle attività i racconti dei libri del suo amico Rudyard Kipling, “I libri della Giungla”. Il nuovo calendario europeo di Gelato Festival World Masters 2022 - 2025 è ripartito da Budapest e ha selezionato i migliori 3 gelatieri ungheresi che accedono alla finale ungherese prevista nel 2024. La competizione di gelateria si è svolta il 18 ottobre nella sede del concessionario Bulfoni Bar & Gelato Design ed ha coinvolto 17 gelatieri ungheresi. La giuria ha decretato una classifica di 3 selezionati che parteciperanno alla finale dedicata all'Ungheria e proseguono il percorso di selezione di Gelato Festival World Masters, il campionato mondiale di gelateria organizzato con partner strategici Carpigiani e Sigep – Italian Exhibition Group. Gusto, struttura, creatività e presentazione sono i quattro parametri con i quali sono stati valutati i gelati artigianali promuovendo la scelta degli ingredienti, la maestria degli artigiani nell'elaborare la ricetta e il risultato complessivo valutato attraverso la vista, il gusto e l'olfatto.

La gara si è svolta il 3 ottobre nella sede del concessionario Carpigiani Cold Service Group ed ha coinvolto 16 gelatieri delle province di Cuneo e Savona.

Originally an engineer from Bologna, Italy, Lorenzo Scrimizzi arrived in Japan 26 years ago, and has been working for Carpigiani Japan for the last 19 years. He currently serves as the Representative Director. Previously, Mr. Scrimizzi worked in industries including consumer goods, automotive and trade, which has led him to gain a wealth of experience and knowledge.   According to Mr. Scrimizzi, hiring the right people and retaining them, as well as engaging and gaining trust from staff, customers and headquarter are all challenging aspects of leading in Japan. Mr. Scrimizzi tries to recruit people with a sense of individuality and creativity instead of focusing too much on language capability. In doing so, he has created a team that is capable of adjusting to the Italian work culture which sometimes values individuality and initiative over structure and organization.   Over the years Mr. Scrimizzi has worked to gain trust and encourage innovation from his staff by listening to them through smaller meetings, allowing some margin for mistakes, and being consistent with his words and actions. Moreover, Mr. Scrimizzi has found that having face to face meetings between his Japanese customers and headquarters has also helped increase a “certain level of awareness and sensitivity on both sides.” These efforts have benefited his organization as Mr. Scrimizzi claims, “the level of detail, the level of attention, and that level of a need that Japanese customers have, probably has no matches in any other country in the world. So, if you're able to satisfy that, then what you gain is that you already have something which is ready and very reliable and good to be marketed in any other country in the world. “   Mr. Scrimizzi advises to any foreigner looking to lead in Japan to learn the Japanese language and use body language to communicate. Despite living in Japan for 26 years, Mr. Scrimizzi is also open to new experiences. He explains: “I'm always curious to learn…we still have to be prepared to be surprised and to learn that there are other aspects of the Japanese business culture that we have not understood yet.”

Vi provsmakar på tre olika gelatoställen och möter olika sätt att göra "egentillverkad" glass. Från färdiga ingredienser som bara blandas ihop, till glass där allt görs från grunden. Gelato har blivit vanligt i Sverige. Den italienska glassen som är lite lättare och mindre fet. Skyltar utlovar "äkta italiensk gelato" och "egentillverkad" glass. Vad är "äkta"? Vi söker svaret på en gelatofestival på Sicilien - i ett reportage som sändes i Meny för nio år sen. Vad är "egentillverkad"? Jo, allt ifrån att blanda en inköpt färdig bas med en inköpt färdig smakpuré i sin glassmaskin, till att göra allt från grunden, utan några industritillverkade produkter. Många svenska gelatomakare har gått kurser på Carpigiani gelato university i Italien. Det är inget riktigt universitet, utan drivs av Carpigiani, en av de största tillverkarna av glassmaskiner. Fabbri och Galatea är två stora tillverkare av glassbaser och smakpuréer. Vi besöker gelatomakaren Zirian Khwaja som driver tre ställen tillsammans med släktingar. Glassen görs på baser och oftast också på färdiga smakpuréer. - Ibland gör vi jordgubbsgelato på färska svenska jordgubbar, säger Zirian. Skillnaden är som mellan Fiat och Ferrari. Men det blir dyrt. Vi ger tips om hur man kan lära sig att skilja på gelato gjord på glassbas och smakpuréer och gelato gjord från grunden.

Tra le novità dedicate al mondo della ristorazione, i nuovi mantecatori da banco Ready 6/9 e Ready 8/12 vanno a completare la gamma presentata nel 2019. Sono monofase e dotati di tre programmi di pastorizzazione. L’igiene garantita dal sistema di lavaggio a caldo e dal programma di pulizia posticipata. ReadyChef è invece la macchina da banco pensata per la pasticceria professionale e la ristorazione che racchiude in 58 cm tutta la tecnologia necessaria per aggiungere il gelato artigianale al menu. Vanta 32 programmi diversi e 6 cicli dedicati alla produzione di salse e topping. Anche in questo caso la pulizia è resa più semplice da un programma dedicato che far risparmiare tempo in cucina e laboratorio. Molto apprezzata a Rimini Ideauno, la macchina che in pochi minuti crea una porzione su ordinazione. Basta scegliere la miscela, inserire nel cilindro e selezionare il programma adatto. Un’altra novità tecnologica riguarda la funzione “Soft Serve Core” per i modelli 191, Mr Art e Super 3 Av Evo che impreziosisce il gelato soft con un cuore di “sciroppo” erogato contemporaneamente allo stesso gelato creando un nuovo mix. 161 G Sp è la macchina compatta autopastorizzante da banco facile e veloce da manutenere grazie all’alimentazione del cilindro a gravità. Ideale per bar, ristoranti, pasticcerie e gelaterie che vogliono offrire un gelato soft, un frozen yogurt o un sorbetto. Da oggi viene affiancata dalla nuova versione 161 T G Sp ancora più più potente e versatile. Nell’area dedicata al modello da banco 193 (Classic e Steel) e a quella da pavimento XVL è stato possibile sperimentare i due sistemi a pompa e a gravità per miscele di diversa densità e degustare mix di creme e sorbetti leggeri e rinfrescanti. Novità di rilievo è stata quella rappresentata dai 13 frastagliatori disponibili per tutte le macchine soft della nuova serie “Star” oppure per chi si doterà del portello con adattatore per i modelli precedenti. Il “Premium soft serve” è la nuova tendenza internazionale che ruota attorno al cosiddetto “gelato espresso” o “gelato soft” che viene erogato direttamente dalla macchina e che ha la caratteristica di terminare in un soffice ricciolo. Famoso tra gli anni’50 e ’60, sta riemergendo come proposta dagli ingredienti ricercati, primo fra tutti il latte, e dalle forme e colori più spettacolari. Carpigiani ha quindi lanciato il servizio “Soft Serve Consulting” che permette di seguire il cliente non solo offrendo le più indicate soluzioni tecnologiche, ma aggiungendo a questo know how anche la creazione delle ricette esclusive, la realizzazione del concept di food design e la consulenza dedicata su uno o più punti vendita.
