Giving edible gifts at Christmas is a winner I say! Some ideas take some forethought, like preserved lemons, fruit pastes, chutneys and sauerkraut, but there's plenty of other ideas that you can whip up over a day or weekend right before the big day. Think shortbreads, flavoured oils, scented salts or sugar meringues, spiced nuts, dukkah, gingerbread loaf, or one of my favourites, biscotti. Jars, bottles and small wooden or cardboard boxes can all be found in second hand shops, as can ribbon, wool, cotton etc to make them all look pretty. Tie some rosemary or bay leaves to jars and bottles for a festive look or decorate boxes with potato and paint stamps. Get creative! Pistachio and cranberry biscotti Homemade biscotti makes for a wonderful Christmas gift as it keeps well (so can be made ahead) and it's one of those things that's so much better than the store-bought variety. Makes about 30 Ingredients 3 medium sized eggs, at room temperature ½ cup olive oil (can use 5 tbsps. butter) ½ tsp orange zest 2 ¼ cups plain flour 1 tsp baking powder ½ tsp salt ½ cup caster sugar ½ cup brown sugar ½ cup roasted almonds, roughly chopped ½ cup shelled pistachios ¼ cup dried cranberries Method Preheat oven to 180 C and line a baking tray with baking paper. In a large bowl, lightly whisk eggs, olive oil, and orange zest. Add flour, baking powder, salt and sugars and stir until just incorporated. Fold in almonds, pistachios and cranberries and mix until combined. Divide dough into half. Place each half on lined tray and with damp fingers, shape into a log shape about 4cm x 30cm. Flatten slightly. Bake for 30-35 minutes or until golden brown in colour and hard on the outside but not all the way through. Let cool and use a serrated knife, slice at an angle about 1.5cm thick. Place slices back on the tray and bake for 12-16 minutes more, until firm. They will firm up more as they cool. Place on a wire rack to cool before filling jars with them as presents. Chili pickled vegetables Cook time: 5 minutes Prep time: 10 minutes Serves: 12 Pickled vegetables can include: Carrots, fennel, baby beetroot, radish, red onions, cucumbers or red cabbage 1 tbsp fennel seeds 1 tbsp coriander seeds 2 fresh chili, sliced 2 bay leaves 1 tsp mustard seeds 300 ml cider vinegar 250 ml water 1/4 cup sugar 1/2 tsp salt Jar and lid Firstly prepare the vegetables for pickling. Clean all the vegetables and cut in 1/2 or 1/4 or finely slice. Trying to make all the vegetable pieces roughly the same size. To make your pickle mixture, start by toasting your seeds in a pan until fragrant. Place the rest of the pickling mixture ingredients into a pot, adding seeds once toasted and heat until boiling. Remove the pickling mixture from the heat and carefully pour the hot mixture over the top of the vegetables and seal with a lid. (If pickling cucumbers or finely sliced veg allow mixture to cool first) Roasted beetroot & cummin hummus Cook time: 45 minutes Prep time: 10 minutes Serves: 6-8 2 cups chickpeas, soaked overnight in water 2 whole beetroot 1 tbsp cooking oil 2 tbsp tahini 1 tsp baking powder 11 tsp cummin powder Sea salt Pre-heat the oven to 180*c Individually wrap the beetroot in tin-foil, drizzle over a little oil and sprinkle over a touch of salt before wrapping. Place into the oven and cook for 30 minutes before testing. Test by inserting a small knife to see if the beetroot is cooked. Once cooked allow to cool before removing skin. While the beetroot is cooking, place the soaked chickpeas into a large pot, cover with cold water and add a touch of salt and the baking powder. Bring to the boil and cook until tender. Once cooked drain. Place the beetroot into a food processor and biltz until smooth. Add the chickpeas and biltz until smooth. Add the tahini, curry powder and seasalt to finish. Yoghurt flatbreads w coriander butter Cook time: 2 minutes Prep time: 10 Serves: 6-8 Flat breads 350g bread flour 2 tsp baking powder 350g natural yoghurt 1 tsp salt Coriander butter 200 gm unsalted-butter 1 cup fresh coriander, finely chopped 1/2 tsp sea salt 4 cloves garlic, peeled and crushed For the flat breads Combine all the bread ingredients together in a bowl and mix with a spoon, then use your hands to pat and bring everything together. Dust a clean work surface with flour, tip out the dough. Knead for a minute or so just to pull everything together, before leaving while you make the coriander butter. For the butter, Add to the butter and mix in the rest of the ingredients. Re-dust a clean surface with flour, divide the dough into small balls. Flatten with your hands, then using a rolling pin roll roughly 3mm thick. Either place dough into a griddle pan on a high heat or onto a tray in a very hot oven. These are ridiculously good and they just happen to be gluten-free! Chewy, densely rich and very, very moreish. Perfect to make for Coeliac Awareness Week – 9-14th June 2025. Makes 12–15 Ingredients 3/4 cup sugar 1 cup peanut butter 1 large egg 50g dark chocolate, roughly chopped 1 teaspoon vanilla extract (optional) Method Preheat the oven to 180°C and line a baking tray with baking paper. With an electric beater or a food processor, mix sugar, peanut butter and egg until combined. Add the chopped chocolate and vanilla and mix briefly. Roll dough into balls about the size of a walnut or golf ball, depending on how big you like your cookie. Flatten with your palm. Bake for 14–16 minutes, flattening again at the 8-minute mark. Most people find that their metabolism slows down in their 20s and 30s after a series of calorie-restrictive diets. Lowering calories increases hunger and cravings, which will require immense willpower and can stifle weight loss. The caloric deficit model is not sustainable! Insulin is the hormone that controls whether you burn or store fat. If you reduce insulin, you can tap into your body fat for energy. Carbohydrates have the most significant effect on insulin, while fat is neutral and protein has a moderate impact. All calories are not the same! To lose weight, you must lower insulin, which means you must reduce your carb intake. If you're on a low-carb diet, your body can use both food and body fat for fuel. This eliminates hunger and cravings between meals. Fat provides more than double the energy of glucose. It takes 2 to 3 days to get into ketosis and 2 to 3 weeks for fat adaptation. Fat adaptation means your body is burning the most fat possible. Your body can burn ketones and fat, which are two different fuel sources. To get your body into ketosis, carbohydrates should make up about 5% of your diet, protein 20%, and fat 75%. Visceral fat in the abdomen may prevent a flat belly, but you can eliminate it with this diet. Jo-Jo's Curried Crab Dip (Gertrude's Recipe) Ingredients (8 servings): 1/2 cup of Dried currants 1 lb of Cream cheese 2 tbsp of Madras Curry Powder 2 tbsp of Mayonnaise 1/3 cup of Coconut Milk 1/3 cup of Minced green onions or chives 1/3 cup of finely diced Red bell pepper 1 lb of Lump or Claw Crab meat 1 pack of Melba rounds, Water crackers or Ginger snaps. Directions: Preheat oven to 350 degrees Fahrenheit. In a small bowl place the currants and just enough water to cover. Let stand for 15 minutes. Drain, but reserve 2 tablespoons of liquid, and put the currants aside. In a large bowl combine the cream cheese, curry powder, mayonnaise, coconut milk, green onion, and red bell pepper. Beat until smooth and somewhat creamy. Mix in the crabmeat, currants, and 2 tablespoons of the reserved currant liquid. Transfer the mixture to a greased casserole dish and bake for 25 to 30 minutes. Serve hot or warm with Melba rounds, Water crackers, or Ginger snaps. Chocolate Bourbon Pecan Pie (Gertrude's Recipe) Ingredients (1-9 Inch Pie): 1 Pie Crust 3 Eggs 1/2 cup of Sugar 1/2 cup of Brown sugar 1 cup of Karo syrup 2 tsp of Vanilla extract 1/2 cup of Melted butter 2 tsp of Flour 2 oz of Unsweetened chocolate, melted 1 1/2 oz of Semi-sweetened chocolate, melted 1/4 cup of Locally distilled bourbon 1 1/2 cup of Pecan pieces (per pie) Directions: Preheat oven to 350 degrees Fahrenheit. Cream eggs and sugar together. Stir in the Karo syrup, vanilla, butter, and flour, Mix well. Add chocolate and bourbon. Spread pecan pieces around the bottom of each pie crust. Pour in filling and gently mix into the nuts. Bake for about 45 minutes to 1 hour, or until puffy and set. Cool and serve. Rosemary Hall's Fresh Cranberry Relish Tom's Mom makes this delicious cranberry concoction, which Tom and his Mom first learned from James Porterfield, a friend in Ithaca, NY. Ingredients: 1lb Cranberries 1/2 cup of White granulated sugar (Tom uses 1/4 of a cup) 1/2 cup of Firmly packed brown sugar (Tom uses 1/4 of a cup) 1 cup of water Directions: Grab a pot and bring the cranberries and sugar to a boil and cook for 10 minutes. When cool, mix in: 2 tbsp of Horseradish 2 tbsp of Dijon mustard Serve over Cream cheese as an Appetizer, or eat it as a side with Turkey, Chicken, or Pork. Sweet Potato Biscuits (Blacksauce Recipe) Ingredients: 4.75 lbs of All-purpose flour 7 tbsp of Baking powder 4 tbsp of Sugar 2 tsp of Salt 1.75 lb of Cold butter, cut into parts 1 lb of a Peeled Sweet potato 64 oz of Buttermilk 2 oz of Heavy cream 2 tbsp of Turbinado sugar Directions: Preheat convection oven to 400°F. (if you're using a conventional oven, then 425°F). Line two half-size sheet pans with parchment paper. Measure dry ingredients (flour, baking powder, sugar, and salt) into a stainless steel bowl. Using a knife and sanitized cutting board, cut the butter into 1-ounce cubes. In small batches, pulse the flour mixture and butter in the bowl of a food processor until the mixture resembles a coarse cornmeal. Return mixture to stainless steel bowl. Add roasted sweet potato to the food processor; pulse in the buttermilk. Make a well in the center of the flour & butter mixture; using a stainless steel spoon, fold in sweet potato buttermilk mixture just until the dough comes together. Turn out the biscuit dough onto dry, lightly floured work table; bring together and knead twice. Flatten the mound of dough, with hands or rolling pin, to two inches in height. Cut biscuits using 2” biscuit cutter, and place next to each other on sheet pan. Bake for 9 minutes in full size electric convection oven Remove biscuits from the oven and, working quickly, brush the tops with heavy cream and sprinkle with turbinado sugar. Return to the oven and bake for 9 more minutes in full size electric convection oven. Remove pans from oven and place onto bun rack to cool. Epistemic status: Tried this on a single sweep and seems to work well, but it might definitely be a fluke of something particular to our implementation or experimental set-up. As there are also some theoretical reasons to expect this technique to work (adaptive sparsity), it seems probable that for many TopK SAE set-ups it could be a good idea to also try BatchTopK. As we're not planning to investigate this much further and it might be useful to others, we're just sharing what we've found so far. TL;DR: Instead of taking the TopK feature activations per token during training, taking the Top(K*batch_size) for every batch seems to improve SAE performance. During inference, this activation can be replaced with a single global threshold for all features. Introduction Sparse autoencoders (SAEs) have emerged as a promising tool for interpreting the internal representations of large language models. By learning to reconstruct activations using only a small number of features, SAEs can extract monosemantic concepts from the representations inside transformer models. Recently, OpenAI published a paper exploring the use of TopK activation functions in SAEs. This approach directly enforces sparsity by only keeping the K largest activations per sample. While effective, TopK forces every token to use exactly k features, which is likely suboptimal. We came up with a simple modification that solves this and seems to improve its performance. BatchTopK Standard TopK SAEs apply the TopK operation independently to each sample in a batch. For a target sparsity of K, this means exactly K features are activated for every sample. BatchTopK instead applies the TopK operation across the entire flattened batch: 1. Flatten all feature activations across the batch 2. Take the top (K * batch_size) activations 3. Reshape back to the original batch shape This allows more flexibility in how many features activate per sample, while still maintaining an average of K active features across the batch. Experimental Set-Up For both the TopK and the BatchTopK SAEs we train a sweep with the following hyperparameters: Model: gpt2-small Site: layer 8 resid_pre Batch size: 4096 Optimizer: Adam (lr=3e-4, beta1 = 0.9, beta2=0.99) Number of tokens: 1e9 Expansion factor: [4, 8, 16, 32] Target L0 (k): [16, 32, 64] As in the OpenAI paper, the input gets normalized before feeding it into the SAE and calculating the reconstruction loss. We also use the same auxiliary loss function for dead features (features that didn't activate for 5 batches) that calculates the loss on the residual using the top 512 dead features per sample and gets multiplied by a factor 1/32. Results For a fixed number of active features (L0=32) the BatchTopK SAE has a lower normalized MSE than the TopK SAE and less downstream loss degradation across different dictionary sizes. Similarly, for fixed dictionary size (12288) BatchTopK outperforms TopK for different values of k. Our main hypothesis for the improved performance is thanks to adaptive sparsity: some samples contain more highly activating features than others. Let's have look at the distribution of number of active samples for the BatchTopK model. The BatchTopK model indeed makes use of its possibility to use different sparsities for different inputs. We suspect that the weird peak on the left side are the feature activations on BOS-tokens, given that its frequency is very close to 1 in 128, which is the sequence length. This serves as a great example of why BatchTopK might outperform TopK. At the BOS-token, a sequence has very little information yet, but the TopK SAE still activates 32 features. Melt the butter and treacle in a pan together and cool. Mix the wholemeal flour, salt, sugar, oats, walnuts and self raising flour in a bowl. Sift in the baking soda and mix well. Make a well in the centre and add the buttermilk, stout and treacle mixture. Mix to a soft dough and place on a floured surface. Roll into a ball and place on a floured baking tray. Flatten the dough slightly and slash a cross into the middle. Bake for 10 minutes at 210°C then lower the heat to 160°C and continue to cook for about another 20 minutes or until the bottom sounds hollow when tapped. Cool on a wire rack.Onion and whiskey chutney 4 onions 2 tablespoons oil 75g brown sugar 2 teaspoons mustard seeds 75g balsamic ( I used a whiskey barrel aged one but any one is good or substitute malt vinegar) 50ml whiskey Salt and pepper Peel the onions and cut in half through the root, finely sliced. Heat the oil in a large pan and add the onions. Season with salt and pepper and place a lid on top over medium heat. Cook, stirring frequently until the onions have wilted down. Remove lid and add the mustard seeds and cook until onions are golden. Add the vinegar, sugar and whiskey. Cook for about 20 minutes until thick and syrupy. Cool. Slice the bread and serve with cheese, charcuterie or ham, and the chutney.

Wines of the Day: Carol Shelton 2022 Coquille Blanc Wild Thing 2023 Rendezvous Rosé Fast Five: Carol's "Asparagus Tart" - Or Fancy Pizza :) Instructions from Carol herself: Here are the FIVE (sort of, I cheated a bit): 1 roll of crescent roll dough (or puff pastry if you have to be fancy) 2 T. Dijon mustard 2 c. freshly grated gruyère cheese (or fontina or asiago) 1 # very skinny asparagus, tough ends snapped or cut off, then cut into 1” lengths ½ c. freshly grated parmesan cheese A squeeze of fresh lemon juice and its zest (optional) A sprinkling of Herbes de Provence (optional) Preheat oven to 400°F. Flatten out crescent roll dough into a rectangle (approx. 12”x9”) on parchment paper on a sheet pan. Prick it all over with a fork (called “docking it”). Spread the mustard evenly over the docked dough. Sprinkle grated gruyère over crust, avoiding edges so it won't bubble over when hot. Lay asparagus over the bed of cheese and sprinkle herbs, parmesan and lemon juice/zest on top. You can make a nice pattern of the asparagus if you want to get fancy! Bake at 400°F for 15-20 min or until pastry edges are brown and crispy and cheese is melted. Cut into squares and serve—top with a squeeze of balsamic glaze if desired. As the deadly bombing of Gaza continues, there is some progress towards a resumption of talks to release hostages held by Hamas and a cease-fire. Israel's Army Radio said the country's war cabinet approved sending emissaries to truce talks in Paris. But that slow progress toward a deal did nothing to stop the bombing and killing in Gaza. Combine flour, instant yeast, baking powder, and sugar in a bowl 2. Add milk, then knead by hand until a rough dough is formed 3. Let rest for 10 min. Knead again until smooth 4. Roll dough into a rope shape, then divide into equal pieces 5. Flatten into an oval shape with a rolling pin 6. Brush a thin layer of oil on top and fold in half 7. Place bao buns into steamer and let proof for 30-60 min 8. Put beaten eggs in one bowl and cornstarch in another. 2. Mix flour, salt, pepper, garlic salt, and paprika together in third bowl 3. Dredge chicken in cornstarch, then dip in eggs and dredge in seasoned flour. 4. Heat vegetable oil in wok and cook chicken for 6-7 min. 5. Remove chicken and drain on paper towels 6. Add sesame oil, minced garlic cloves, Chinese rice vinegar, honey, sweet chili sauce, ketchup, brown sugar, and soy sauce into the wok. 7.
